Today’s Menu: Cumin Spiced Pork Tenderloin w/ Roasted Savory Herb Potatoes and Whole Baby Carrots

To start the morning off I toasted a Healthy Life Whole Grain English Muffin and topped it with I Can’t Believe It’s Not Butter. I also had my early morning cup of Bigelow Decaf Green Tea. After Breakfast and my morning workout I headed of to Meijer. Mom needed some items as I did also. Cold morning, in the 20’s with a cold breeze. For the day it was a high around 45 degrees and partly sunny. After Meijer I had to stop by the bank and stopped and got gas. Not a lot going on this afternoon so I relaxed and got caught up on shows I had recorded. For Dinner tonight I prepared a Cumin Spiced Pork Tenderloin w/ Roasted Savory Herb Potatoes and Whole Baby Carrots.

 
Most of the time when I’m preparing Pork I use the Cumin Spiced Rub, as I did tonight. I had the Simple Truth Cumin Spiced Pork Tenderloin Red Potatoes Sugar Snap Peas 008Tenderloin Roast, Kroger Brand, in the freezer, I sat it in the fridge overnight to thaw. To prepare it I’ll need; 1 Simple Truth Pork Tenderloin, For the Rub: 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 350°. Combine all the ingredients; rub it all over the pork. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add Pork to pan; cook 4 minutes, browning on all sides. Bake at 375° for 15 minutes or until a thermometer registers 145° (slightly pink), turning after 7 minutes. Let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which makes one incredible Crust on the Pork with the inside being tender and moist! This is my favorite Pork Recipe!

While at Meijer I picked up a package of the Little Potato Company Savory Herb Potatoes. I had these a few times now and really enjoyed them. The Potatoes come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good item to have in the pantry! So easy to prepare and no clean up.

Then I also heated up a can of Kroger Brand Whole Baby Carrots. These are so much easier to prepare than boiling fresh Baby Carrots, and they taste just as fresh and good. I also baked a loaf of Pillsbury French Bread. Then for Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Microwave

In three easy steps, you have perfectly steamed and seasoned potatoes!

1. Simply remove the cardboard sleeve and seasoning pack. The plastic film stays on to aid in steaming the potatoes.

2. Place the convenience tray in the microwave. Cook on high for 5 minutes*.

3. Let the tray rest for 2 minutes then carefully remove plastic film and stir in seasoning pack. Caution – the contents will be very hot. If desired, add 1 tbsp. of butter or olive oil.

Today’s Menu: Cumin Spiced Boneless Pork Loin Roast w/ Mashed Potatoes, Cut Italian Beans, and Baked Italian Loaf Bread

 
Started the day off with a cup of Bigelow Decaf Green Tea. After Breakfast finished up somCumin Spiced Boneless Pork Loin Roast  Mashed Potatoes Cut Ita 001e house cleaning. Then outside we have a huge vine 1/2 the length of our driveway that I had to trim up. It started growing out into the driveway. Cloudy and temperatures in the 60’s with rain in the late afternoon. I had just read an article on we’ve had so much rain local farmers can not get their crops out. I couldn’t make it over to see Dad today at the rehab center, I had to wait around the house today for the carpet cleaners. I had the house carpets all cleaned today. Later on for dinner tonight I prepared a Cumin Spiced Boneless Pork Loin Roast w/ Mashed Potatoes, Cut Italian Beans, and Baked Italian Loaf Bread.

 
I used my favorite Rub for Pork, Cumin Spiced Rub. I had come across the recipe on-line, and use it all the time now. It gives the Pork a fantastic crust and great seasoning. I purchased the Pork Tenderloin Boneless Roast from Kroger Cumin Spiced Boneless Pork Loin Roast  Mashed Potatoes Cut Ita 011yesterday. Using Butcher’s Twine I tied the Roast together. Then to prepare it I’ll need; 1 Pork Tenderloin Roast, 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combined all the ingredients; rub it all over the Pork. Let stand 20 minutes. To Roast it I used a mall Broiler Pan with a Wire Rack in it. Sprayed the Rack with Pam Cooking Spray and put the Pork on it. I baked it for about 70 minutes, until my thermometer registered 145°. Let it stand 10 minutes before slicing. Then sliced into one delicious Pork Tenderloin Roast! Fantastic combo of Spices, which make one incredible Crust on the Pork and the inside being so tender and moist! The only thing I can compare it to would be Prime Rib, delicious!

For one side I made some of my favorite Mashed Potatoes, Bob Evans Mashed Potatoes. Just microwave for 6 minutes and serve. Just as good as homemade, if not better. Then for another side dish I heated a can of Allens Cut Italian Green Beans, our family’s favorite Bean Side. To prepare them just empty the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! I could have Beans every day and never get tired of having them.

 

 

Italian Loaf Bread
Finally I baked a loaf of Pillsbury Italian Loaf Bread, family’s favorite baked bread. For dessert later a Jello Sugar Free Double Chocolate Pudding.

Had a light Breakfast of a Healthy Life Whole Grain English Muffin topped with I Can’t Believe It’s Not Butter. A quick morning workout and off to Walmart and Meijer. I wish one store would carry all items, instead you have to go to two or three different stores to find items. Back home got everything put away and cleaned the house, vacuum and dusting. Just puttered around the house after that. For dinner tonight it’s a Cumin Spiced Boneless Pork Loin Roast w/ Mashed Potatoes and Golden Hominy.

 

 

 

I purchased the Pork Tenderloin Boneless Roast from Kroger and used only half of it and froze the other half. So I grabbed the half out of the freezer and let it thaw overnight in the fridge. To prepare it I’ll need; 1 Pork Tenderloin Cumin Spiced Boneless Pork Loin Roast w Mashed Potatoes and Gold 006Roast, 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. Golden Hominy

For one side I reheated the leftover Bob Evan’s Mashed Potatoes from last night’s meal. Just microwaved for 1 1/2 minutes and serve, always as good as homemade, if not better. Then for another side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. My favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish!

Hello from Ohio! Started my day off with a Poached Egg and a slice of Klosterman Wheat Bread, also my morning cup of Bigelow Decaf Green Tea. Need a few items for tonight’s dinner so I ran up to the Kroger up the road. figured I better go early and avoid the crowds, people buying for the upcoming 4th of July weekend. Back home did a little housekeeping and got some of the prep work done for tonight’s dinner. So for dinner tonight it was one of those Comfort Food Meals. I prepared Cumin Spiced Boneless Pork Loin Roast w/ Spiced Carrots & Butternut Squash and Cut Green Beans.

For the Roast,I’ve been using the Cumin Spice Rub for a while now. I had come across the recipe on-line, and use it all the time now. It gives the Pork a fantastic crust and great seasoning. Cumin Spiced Boneless Pork Loin Roast w Spiced Carrots & Buttern 002

For one side dish a new recipe, Spiced Carrots & Butternut Squash. Came across this one in the latest issue of Taste of Home/Simple and Delicious. Minute I seen it I knew I to try it! I had tried Butternut Squash for the first time just last year and fell in love with it. So when I saw this with the added Spices and Carrots, had to try it! It’s an easy recipe to prepare, using my favorite the Crock Pot. To make I’ll need the following; 5 large Carrots cut into 1/2-inch pieces (about 3 cups), 2 cups cubed peeled Butternut Squash (1-inch), 1 tablespoon Balsamic Vinegar, 1 tablespoon Extra Virgin Olive Oil, 1 tablespoon Honey, 1 teaspoon Ground Cinnamon, 1/2 teaspoon Sea Salt, 1/2 teaspoon Ground Roasted Cumin, 1/4 teaspoon Chili Powder, and 1/2 teaspoon Ground Nutmeg. The original recipe doesn’t call for the Nutmeg but I like using Nutmeg as a Spice when using Squash, it just seems to go perfect with Squash.

 

 
Then to prepare it I got the round Crock Pot out, put the plastic bag liner in and sprayed it with Pam Cooking Spray. Cumin Spiced Boneless Pork Loin Roast w Spiced Carrots & Buttern 013Placed carrots and squash in a 3-qt. slow cooker. In a small bowl, mixed the remaining ingredients; drizzled over vegetables and tossed to coat. Cook, covered, on low 4-5 hours or until vegetables are tender. Gently stir before serving. Squash and the Carrots are hard Vegetables so I took it the full 5 hours. When done I opened that Crock Pot lid up and the aroma was incredible! What a dish, both Carrots and Squash came out tender with just a fantastic flavor. I think the addition of the Nutmeg helped with that flavor. So I have another Keeper Recipe. And before I forget a special thank you to the Kroger Produce Department for peeling and dicing my Butternut Squash. Squash is tough to dice if you don’t have a good knife, which I don’t (Yet).

 

 
Then for my other side I heated up a can of Del Monte Cut Green Beans and I had a slice of Klosterman Wheat Bread. For dessert later a Jello Sugar Free Dark Cherry Jello Cup.

Spiced Carrots & Butternut Squash RecipeTaste of Home

Ingredients
5 large carrots, cut into 1/2-inch pieces (about 3 cups)
2 cups cubed peeled butternut squash (1-inch)
1 tablespoon balsamic vinegar
1 tablespoon olive oil
1 tablespoon honey
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon chili powder

Directions
Place carrots and squash in a 3-qt. slow cooker. In a small bowl, mix remaining ingredients; drizzle over vegetables and toss to coat. Cook, covered, on low 4-5 hours or until vegetables are tender. Gently stir before serving.
Yield: 6 servings

Nutritional Facts
2/3 cup equals 85 calories, 3 g fat (trace saturated fat), 0 cholesterol, 245 mg sodium, 16 g carbohydrate, 3 g fiber, 1 g protein. Diabetic Exchanges: 1 vegetable, 1/2 starch, 1/2 fat.
