Cucumbers……….

When buying – Look for firm cucumbers, without blemishes or soft spots, which can indicate they have started to rot. They should be dark green without any yellow spots, which develop as the cucumber is getting overly ripe. At that point, it will often produce off-flavors and odors.

To Store them – Cucumbers can last about 2 weeks at maximum quality before they start to soften. Due to their high water content, the quicker you use a fresh cucumber, the better. Chilling cucumbers in the fridge can make them last, but only if you do so carefully.

Chicken Dinner Salad with Green Onion Dressing

Ingredients
Preparation time: 10 minutes
Cooking time: 30 minutes to cook chicken.

4 cooked chicken breasts (3 ounces each), boneless, skinless
4 cups iceberg lettuce, washed and torn into bite-size pieces
4 small tomatoes (about 3 1/2 inches in diameter) or 24 grape tomatoes
1 large cucumber (about 8 inches), sliced thinly
1 cup grated carrot
4 ounces green onions
1/4 cup canola oil or extra-virgin olive oil
1/3 cup red wine vinegar
1 teaspoon Worcestershire sauce
1 teaspoon dry mustard
2 packets Splenda
2 tablespoons water
1/4 teaspoon black pepper
2 dashes salt
1/4 cup fresh cilantro leaves (optional)

Directions
Yield: 4 servings
Serving size: 1 breast on 1 1/2 cups salad

Dressing:

1 – Cut chicken into bite-size cubes and set aside. Place 1 cup torn iceberg lettuce on each of four salad plates. Quarter each tomato and place quarters around each plate, or place 6 grape tomatoes on each plate. Distribute cucumber slices evenly between tomato slices on each plate. Top with grated carrots (1/4 cup per plate) and chicken.

2 – Trim the roots and 2 inches from the tops of the green onions. In a blender or food processor, combine all dressing ingredients and blend thoroughly until well mixed. Pour approximately 1/4 cup dressing over each salad. Top with cilantro if desired.

Sweet and Sour Chinese Turkey Salad
INGREDIENTS

1 (17.6-ounce) package JENNIE-O® Extra Lean Turkey Breast Cutlets
6 cups torn romaine lettuce
6 slices pineapple, cut crosswise into ½-inch thick slices, then cut in quarters
2 oranges, peeled and cut in slices crosswise
1½ cups sliced cucumber
8 radishes, sliced
4 tablespoons orange juice
4 tablespoons honey
4 teaspoons low-sodium soy sauce
2 teaspoons sesame oil
4 tablespoons chopped roasted cashews

DIRECTIONS
1) Cook the turkey cutlets as specified on the package. Always cook to well done, 165°F as measured by a meat thermometer. Slice turkey crosswise into 1-inch thick slices.
2) On four plates, divide lettuce. Layer turkey, pineapple, oranges, cucumber and radishes on lettuce.
3) In small bowl, whisk orange juice, honey, soy sauce and sesame oil. Pour dressing over salads; sprinkle with cashews.
* Always cook to an internal temperature of 165°F.

Chilled Spring Avocado-Cucumber Soup
This chilled avocado and cucumber soup is full of fresh flavors and bursting with colors. It is simple to make using a blender. Garnish with finely chopped red onion, diced cucumber and chopped fresh dill for a festive flourish that will impress friends and family. Perfect for a simple entertaining option.

Recipe Ingredients:
1 (12-ounce) can NESTLÉ® CARNATION® Evaporated Low-fat 2% Milk
1/4 cup red wine vinegar
2 large or 3 small ripe avocados, halved, pitted, peeled and diced (about 2 1/2 cups total)
1 cup water
1 cup sliced unpeeled cucumber
1/3 cup snipped fresh dill
Diced cucumbers, finely chopped red onion and chopped fresh dill for garnish (optional)

Cooking Directions:
1 – Combine evaporated milk and vinegar in small bowl; let stand for 15 minutes.
2 – Place avocados, water, evaporated milk mixture, 1 cup cucumber and 1/3 cup dill in blender; cover. Blend until smooth. Season with coarse salt and ground black pepper. Cover; refrigerate for 1 hour (can be made up to 4 hours in advance).
3 – Pour soup into eight small bowls or glasses; garnish with cucumber, red onion and dill.
Makes 8 servings (about 2/3 cup per serving).
