Diabetic Low Fat Blue Cheese Dressing Recipe
Learn how to make blue cheese salad dressing with low-fat cottage cheese, buttermilk, and nonfat yogurt.

Ingredients
1/2 cup low-fat cottage cheese
1/2 cup nonfat yogurt
1/2 cup low-fat buttermilk
1/4 cup crumbled blue cheese
2 tablespoons sliced green onion
1/4 teaspoon garlic powder
1/8 teaspoon white pepper

Directions
Yield: 2 cups
Serving size: 1 tablespoon

1 – Combine all ingredients. Cover and chill.

INSIDE-OUT GRILLED STEAK SALAD
Ingredients

2 beef Strip Steaks Boneless, cut 1 inch thick (about 10 ounces each)
16 Boston or butter lettuce leaves (about 4 to 5-inch diameter)
2 cups thin assorted vegetable strips, such as cucumber, red onion, carrots, bell pepper, sugar snap peas
1/4 cup frozen shelled edamame, thawed or frozen peas or corn, thawed
1/4 cup reduced-fat or regular vinaigrette (any variety)
1/3 cup crumbled goat or blue cheese (optional)
1/3 cup toasted chopped almonds, walnuts, pecans or hazelnuts (optional)

Rub:
2 teaspoons sweet paprika
2 cloves garlic, minced
1 teaspoon coarse grind or cracked black pepper

Directions

1 – Combine Rub ingredients; press evenly onto beef steaks.
2 – Place steaks on grid over medium, ash-covered coals. Grill, covered, 11 to 14 minutes (over medium heat on preheated gas grill 11 to 15 minutes) for medium rare (145F) to medium (160F) doneness, turning occasionally.
3 – Carve steaks into slices. Place lettuce leaves on serving platter. Evenly layer vegetables onto lettuce leaves. Top evenly with steak. Drizzle with vinaigrette; sprinkle with cheese and nuts, if desired.
4 – To pan-broil steaks, preheat large nonstick skillet over medium heat until hot. Place steaks in skillet; cook steaks 12 to 15 minutes for medium rare (145F) to medium (160F) doneness, turning occasionally.

NOTES:
Grilled Strip steaks wrapped in crunchy lettuce leaves and topped with your favorite veggies.

Recipe Yield: Makes 16 hand-held salads, 2 per serving

With an eclectic mix of sweet, sour and savory ingredients, this Autumn Pear Salad recipe is a crisp meal of fresh flavors to brighten the end-of-summer blues. Under 300 calories per serving!

Ingredients
4 cups mixed salad greens
1 red onion, thinly sliced

BONELESS BUFFALO WINGS
Ingredients

1-1/2 teaspoon hot sauce
Pinch cayenne
1/4 teaspoon paprika
1/2 pound chicken tenders

Dressing Ingredients:

1/2 cup reduced-fat blue cheese dressing
1/4 cup low-fat mayonnaise
3 tablespoons crumbled blue cheese
Celery Sticks

Directions

1 – Preheat the oven to 375 degrees F.
2 – In a shallow bowl, combine the hot sauce, cayenne, and paprika. Roll the chicken tenders in the mixture.
3 – Place the chicken tenders on a small nonstick baking sheet.
4 – Bake, uncovered, for 15 minutes until chicken is tender.
5 – Combine the dressing ingredients.
6 – Serve the dressing with the chicken and celery sticks.

Recipe Yield: Yield: 4 servings “Serving Size: 2 oz. chicken per serving

Tangy Pear Salad
Chopped walnuts provide a delightful crunch for this light, low-carb pear salad while a drizzle of seasoned rice vinegar adds a bit of kick.

Ingredients
Preparation time: 20 minutes

1 head red or green leaf lettuce, deveined (optional) and torn into bite-size pieces (about 10 cups of lettuce)
1 fresh pear, peeled and cut into bite-size pieces
5 tablespoons crumbled blue cheese
1/4 cup walnuts, chopped
1/4 cup seasoned rice vinegar (such as Nakano)

Directions
Yield: about 11 cups
Serving size: 2 cups

1 – Combine lettuce, pears, blue cheese, and walnuts in a large salad bowl. Drizzle with rice vinegar and toss to coat. Serve immediately.

Turkey Bacon, Strawberry Breakfast Wrap
This savory, sweet brunch recipe doesn’t disappoint. Fresh strawberries, crunchy almonds and crumbled blue cheese come together with turkey bacon for a wrap that’s under 300 calories per serving.

INGREDIENTS
8 slices JENNIE-O® Turkey Bacon
2 ounces crumbled blue cheese
1 cup sliced strawberries
¼ cup sliced almonds, toasted
4 (6-inch) flour tortillas
1 tablespoon butter, melted
1 teaspoon sugar
fruit and yogurt, if desired

DIRECTIONS
1) Cook bacon as specified on the package. Always cook patties to well-done, 165°F as measured by a meat thermometer.
2) Layer bacon, cheese, strawberries and almonds down center of tortilla leaving 1-inch space at bottom of tortilla. Fold bottom of tortilla up; roll up to enclose filling.
3) Brush tortilla with butter; sprinkle with sugar. Place seam side down in skillet or sandwich maker. Cook 2 minutes per side or until golden and crisp. Serve with fruit and yogurt, if desired.
* Always cook to an internal temperature of 165°F.
