Today’s Menu: Crock Pot 3 Bean Buffalo Chili w/ Cornbread

For breakfast I reheated some leftover Pioneer Peppered White Gravy and toasted a couple of slices of Healthy Life Whole Grain Bread, love gravy on everything! It was another night of heavy rain that continued through the day. One of those rainy days to stay in and kick back. Which is what I did for most of the day, I’m in a huge Slug Mode. For dinner tonight I wanted a major comfort food so tonight it’s Crock Pot 3 Bean Buffalo Chili w/ Cornbread.

 

 

 

I got my last container of my Crock Pot 3 Bean Buffalo Chili out of the freezer and let it thaw overnight in the fridge. Which also means I’ll be making another batch before too long! I’ll leave full details on how to make it.

It’s loaded with nothing but good things. I use Wild Idea Buffalo Ground Round (99% Lean) which is the best tasting Ground Buffalo that I’ve found. The 3 Beans I use are 1 Can (16 oz.) Bush’s Chili Beans (Red Beans), 1 Can (16 oz.) Bush’s chili Beans ( Kidney Beans), 1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans) drained and rinsed, Then I mix in 1 Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Unseeded and Chopped), and 4 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste, 1 Tbs Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 2 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!).

To prepare it I start by browning both packages of the Wild Idea Ground Buffalo. Using a large skillet sprayed with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. Preheat the skillet on medium heat. When heated I add the Ground Buffalo and all the seasonings and Tomato Paste, stirring often. When the Buffalo has browned I add from the skillet to the liner lined Crock Pot. Throw in a 1/2 cup of Water and put the lid on the Crock Pot and set on low for 5-6 hours.

Then the serious eats begin, comfort food with Chili! With the sweetness of the Buffalo combined with all those spices and beans, it’s just hard to beat! This may have been my best batch of Chili yet, Mom and Dad both had a couple of bowls of it. You can serve it many ways; in a bowl or mug and top it with your favorite Cheese or Chopped Green Onions with a side of Oyster Crackers. Another way to have it is served on top of a Johnny Cake (Cornbread) or have a side of Cornbread with it. I made a Mini Cast Iron Skillet of Cornbread. I used Martha White Corn Meal Mix. For me Chili and Cornbread are the perfect pairing! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

 

 

Crock Pot 3 Bean Buffalo Chili
Ingredients:

2 lb. Wild Idea Ground BuffaloCrock Pot 3 Bean Buffalo Chili w Cornbread 001
2 Cans (6 oz.) Hunt’s Tomato Paste
1 Can (16 oz.) Bush’s Chili Beans (Red Beans)
1 Can (16 oz.) Bush’s chili Beans ( Kidney Beans)
1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans), drained and rinsed
1 Packet McCormick Chili Mix
1 Red Onion (medium), Chopped or Minced
1 Jalapeno Pepper, Unseeded and Chopped
4 Cloves Minced Garlic
1 Tbs Ground Cocoa Chili Blend (McCormick)
1/2 Tsp Ground Chipotle Chili Pepper (McCormick)
2 Tbs. Ground Roasted Cumin
2 Tsps Ground Cinnamon
1 Tbs of Cilantro Leaves
5 Dashes of Frank’s Hot Sauce or to taste.
1/2 Cup of Water
Shredded Cheese, I use Grated Dutch Gouda or Sargento Reduced Fat Shredded Cheddar Cheese (Topping)
Oyster Crackers
Frank’s Hot Sauce or to taste.

Directions:
*Brown Buffalo in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining spices and ingredients except 1 can of the tomato paste.
*ADD to slow cooker and add in the remaining 1 can of tomato paste and 1/2 cup of water.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).

*Serve in bowl or mug with cheese and oyster crackers, A Tablespoon of fat-free sour cream, Chopped Onions, or serve with some home made cornbread.

Today’s Menu: Cincinnati Style 4 Way – Spaghetti, 3 Bean Buffalo Chili, and Cheese

Another cold and windy morning, about 11 degrees. I had a bowl of Kashi 7 Grain Puffs Cereal for Breakfast. Did a load of laundry and some light house work. After Lunch I went out and let the car warm up a bit and I went and dropped off some Valentine Candy at my cousin’s house for all Grand Kids. Back home not much going on today so I kicked back and caught up on some I had recorded. For dinner tonight it was comfort food, I prepared Cincinnati Style 4 Way – Spaghetti, 3 Bean Buffalo Chili, and Cheese.

 

 

Cincinnati Style 4 Way – Spaghetti, 3 Bean Buffalo Chili, and Ch 001
Usually when making a Cincinnati Style 4 Way I’m using Skyline Chili or Hormel Turkey Chili w/ Beans as my Chili, which all make a delicious Cincinnati Style 4 Way. But when I have some 3 Bean Buffalo Chili I like using it to make a Cincinnati Style 4 Way. I had made the Crock Pot 3 Bean Buffalo Chili the day before and froze 1 container and kept enough out for tonight’s dinner! I got a bowl of it out and reheated it in a small sauce pan on medium heat. When heated it removed it from the heat and put a lid on the pan and set it aside.

For the Spaghetti I’ll be using my regular Pasta, the Ronzoni Healthy Harvest Whole Grain Spaghetti. The Spaghetti is 180 calories and 35 net carbs, which isn’t too bad for Pasta. While at Meijer the other day I picked a few boxes of different Ronzoni Healthy Harvest Pastas, one being Spaghetti. Meijer is the only store where I can find all the Healthy Harvest Pasta Products. Easy to prepare; Using a large sauce pan half way filled with water. Salted the Water and brought it to a boil and added the Spaghetti. Boiled it for 11 minutes; drained and served.

 

 
Now for my Cheese, I’m using Sargento Reduced Fat Shredded Sharp Cheddar. To serve I used a bowl and made a bed of Spaghetti, topped it with the 3 Bean Buffalo Chili, and topped everything with Sargento Cheese. I also added aCincinnati Style 4 Way – Spaghetti, 3 Bean Buffalo Chili, and Ch 002 few shakes of Frank’s Red Hot Sauce to the Chili as it was being heated. Some mighty fine Chili Spaghetti! Some people like adding fine diced Onions also, which would make it a 5 Way. Then for a side, one of the most important parts, Oyster Crackers! Chili Spaghetti is always served with a bowl of Oyster Crackers. I used Skyline Chili Oyster Crackers with a side of Frank’s Red Hot Sauce. To properly eat an Oyster Cracker you have to put 2 or 3 drops of Hot Sauce on it! It’s a Cincinnati thing! I also had a slice of leftover Pillsbury Italian Loaf Bread that I had baked yesterday. At the end of the post I’ve left the Crock Pot 3 Bean Buffalo Chili Recipe. For dessert later a Jello Sugar Free Dark Chocolate Mousse.

Ingredients:

I had a Simple Truth Breakfast Sandwich to start the day, egg White and Canadian Bacon. After Breakfast I went out and started the car and let it warm up a bit. Another cold one out there at 9 degrees! Had to get out for a while today, I had a bad case of Cabin Fever! Felt great to get out. Stopped for gas, then the bank, and on to Kroger. I picked up a Birthday Cake for my Mom, her Birthday is tomorrow. Mom will be 88 Friday! Moms my best friend, cherish every day she’s around. Tonight I prepared my Crock Pot 3 Bean Buffalo Chili w/ Cornbread.

 

 
What better than a big bowl of Chili on a cold Winter’s Day! I’ve been out of Chili for a while now, so its high time to solve that problem! Plus I’ve been wanting some for a while now so it’s time. After a light Breakfast I went to Walmart to finish up some Christmas Shopping done. And what a warm morning to start, about 60 degrees! We had a high near 70 but cloudy with light showers. Better than 20 degrees and snow! Did manage to get the cart out for a while in between showers. Early today I got a Crock Pot full of 3 Bean Buffalo Chili on! Couldn’t wait for dinner tonight!

 

 
I love this stuff! Made with Wild Idea Buffalo Ground Round 99% Lean Buffalo, 3 different Beans, and a load of Spices. I enjoy this with Cornbread, Johnny Cakes, or just a big bowl of it with a sprinkle of Sargento Reduced Fat Shredded Cheddar or Shredded Smoked Gouda and a teaspoon of Daisy Reduced Fat Sour Cream. Due to limited freezer space around the Holidays I hadn’t had or made any in a while. But I just got an order of Wild Idea Buffalo Products I had ordered, made room in the freezer and made a big batch of it. Hope you love it as much as I do!

As I said I’ve been out of Chili for a while now so I’m ready! It’s loaded with nothing but good things. I use 2 lbs. of Wild Idea Buffalo Ground Round (99% Lean) which is the best tasting Ground Buffalo that I’ve found. The 3 Beans I use are 1 Can (15 oz.) Chili Beans, 1 Can (15 oz.) Kidney Beans (rinsed), and 1 Can (15 oz.) Great Northern Beans (rinsed). Then I mix in 1 Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Unseeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste, 1 Tbs Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 1 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Chopped Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). Throw in a 1/2 cup of Water and put the lid on the Crock Pot and set on low for 5-6 hours. After about 3 hours in the Crock Pot, the kitchen is filled with an incredible aroma of Chili!
* A note on the Beans I used. I normally use Bush Beans and used Bush Beans this time but i used the new Bush’s Chili Beans (Red Beans) in Mild Chili Sauce, Bush’s Chili Beans (Kidney Beans) in Mild Chili Sauce, and then my usual Bush’s Cannellini Beans (White Kidney Beans). The new Bush’s Beans in Chili Sauce work great, the Beans are bit bigger, excellent flavor, and a hint of heat.

When ready let Chili Fest begin! With the sweetness of the Buffalo combined with all those spices and beans, it’s just hard to beat! You can serve it many ways; in a bowl or mug and top it with your favorite Cheese or Chopped Green Onions with a side of Oyster Crackers. Another way to have it is served on top of a Johnny Cake (Cornbread) or have a side of Cornbread with it. I’ll even use some of the Chili to make a Chili and Cheese Omelet in the morning for Breakfast! Anyway you want to have it will work. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

This week’s Saturday’s Chili is one of my own recipes, Crock Pot 3 Bean Buffalo Chili. I love this stuff! Made with Wild Idea Buffalo Ground Round 99% Lean Buffalo, 3 different Beans, and a load of Spices. I enjoy this with Cornbread, Johnny Cakes, or just a big bowl of it with a sprinkle of Shredded Dutch Gouda or Sargento Reduced Fat Shredded Cheddar and a teaspoon of Daisy Reduced Fat Sour Cream. Due to limited freezer space around the Holidays I hadn’t had or made any in a while. But I just got an order of Wild Idea Buffalo Products I had ordered so I made a big batch of it. * A note on the Beans I used. Started my morning with a bowl of Cheerios Honey Nut Medley Crunch, my favorite Cheerios Cereal. After my morning workout I did some light housekeeping. It’s one beautiful day in the neighborhood outside today! Still a light cool breeze bu t a high in the 60’s and sunny. Ran an errand for Mom, stopped by the bank, and the post office and back home. For dinner tonight one of my favorites, Crock Pot 3 Bean Buffalo Chili.

 

 
Well I’m using my last container of the Crock Pot 3 Bean Buffalo Chili I had in the freezer, time for another batch soon! I sat in the fridge overnight to thaw. To reheat it I just got the amount I wanted and put it in a small sauce pan and reheated it on medium low heat, till heated through. I love this Chili!

 

 

To make this Chili Comfort Food I needed; 2 lbs. Wild Idea Buffalo Ground Round (99% Lean) which is the best tasting Ground Buffalo that I’ve found. The 3 Beans I use are 1 Can (15 oz.) Chili Beans, 1 Can (15 oz.) Kidney Beans (rinsed), and 1 Can (15 oz.) Great Northern Beans (rinsed). Then I mix in 1 Red Onion (medium Chopped), 1 Jalapeno Pepper (Unseeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste, 1 Tbs Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 1 Tbs. Ground Roasted Cumin (McCormick), 2 Tbs Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). Throw in a 1/2 cup of Water and put the lid on the Crock Pot and set on low and let this baby simmer for 5-6 hours. Then get ready to enjoy some serious Buffalo Chili! You can top it with Cheese or Diced Onions. Then you can serve it by itself, with Cornbread, topping a Johnny Cake, over Spaghetti, Hot Dog topping, I even use it to make a Chili and Cheese Omelets. I had tonight’s with a topping of Cheese and Oyster Crackers, Cincinnati Style! I’ve left the recipe at the end of the post. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

 

 

 

 

 

Crock Pot 3 Bean Buffalo Chili

Ingredients:

2 lb. Ground Wild Idea Ground Buffalo,99% Lean
2 Cans (6 oz.) Hunt’s Tomato Paste3-bean-buffalo-chili-0011
1 Can (15 oz.) Chili Beans
1 Can (15 oz.) Kidney Beans, rinsed
1 Can (15 oz.) Great Northern Beans, rinsed
1/2 Cup of Water
1 Packet McCormick Chili Mix
1 Red Onion (medium), Chopped or Minced
1 Jalapeno Pepper, Unseeded and Chopped
3 Cloves Minced Garlic
1 Tbs Ground Cocoa Chili Blend (McCormick)
1/2 Tsp Ground Chipotle Chili Pepper (McCormick)
1 Tbs. Ground Roasted Cumin
2 Tsps Ground Cinnamon
1 Tbs of Cilantro Leaves
5 Dashes of Frank’s Hot Sauce or to taste.
Shredded Cheese, I used Grated Dutch Gouda (Topping)
Oyster Crackers

Directions:
*Brown Buffalo in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining spices and ingredients except 1 can of the tomato paste.
*ADD to slow cooker and add in the remaining 1 can of tomato paste and 1/2 cup of water.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).

*Serve in bowl or mug with cheese and the oyster crackers, A Tablespoon of fat-free sour cream, or serve with some home made cornbread.

Today’s Menu: Crock Pot 3 Bean Buffalo Chili w/ Cornbread Ears

 
Another cloudy day here in good old West Chester. We had a high in the mid 30’s with, from what we’re hearing, much colder weather a day away. Did some laundry and some house cleaning for my day. For dinner tonight it’s Crock Pot 3 Bean Buffalo Chili w/ Cornbread Ears!

 
I had the Chili freezer so I set the container in the fridge overnight to thaw. I had this batch a while back and always make enough to freeze. It stores great in the freezer and reheats perfectly. Below is the full recipe and directions. I also baked up some Cornbread Ears. I love this Chili!

 

3 Bean Buffalo Chili 001

I use Wild Idea Buffalo Ground Round (99% Lean) which is the best tasting Ground Buffalo that I’ve found. The 3 Beans I use are 1 Can (15 oz.) Chili Beans, 1 Can (15 oz.) Kidney Beans (rinsed), and 1 Can (15 oz.) Great Northern Beans (rinsed). Then I mix in 1 Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Unseeded and Chopped), and 3 Cloves Minced Garlic. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). Throw in a 1/2 cup of Water and put the lid on the Crock Pot and set on low for 5-6 hours.

Then the serious eats begin, comfort food with Chili! With the sweetness of the Buffalo combined with all those spices and beans, it’s just hard to beat! You can serve it many ways; in a bowl or mug and top it with your favorite Cheese or Chopped Green Onions with a side of Oyster Crackers. Another way to have it is served on top of a Johnny Cake (Cornbread) or have a side of Cornbread with it. I made the Cornbread Ears. It’s normal baked Cornbread but in a cast iron baking mold in the shape of Ears of Corn. I used Martha White Corn Meal Mix. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Chili is a favorite year – around, but especially in the Fall and Winter months. Starting this Saturday I’ll be posting Chili recipes of my own and around the on-line world to pass along, The first one I’m posting is my personal favorite, which I’ll be making a batch of soon, Crock Pot 3 Bean Buffalo Chili. It’s made with the finest Buffalo Meat I’ve found, Wild Idea Buffalo Ground Round, 99% Lean

Ingredients:

2 lb. Wild Idea Ground Buffalo Ground Round, 99% Lean

A very cool, cloudy, and windy Fall day out. Had rain on and off and it barley hit 50 degrees. Mom went with her Church today over to a place in Indiana for lunch today. So I caught up on laundry, house cleaning, and taking care of Dad today. She needed the break! Tonight I prepared a Buffalo Chili Loaded Spud and baked Sourdough Bread.

 

 

 

 

 
For dinner tonight I prepared a Buffalo Chili Loaded Spud. It just sounded like a fantastic Comfort Food Meal. For the Chili I used the Crock Pot 3 Bean Buffalo Chili that I had in the freezer. I sat a container out in the fridge to thaw overnight. To make it, couldn’t be easier. I used a large Russet Potato, McCormick Grinder Sea Salt and Black Peppercorn, 3 Bean Buffalo Chili, fresh grated Dutch Gouda Cheese, and a few slices of Jalapeno Pepper. The recipe for the 3 Bean Buffalo Chili is at the end of the post.

I preheated the oven on 400 degrees. Then, on the stove I heated up some of the Chili in a Cast Iron Skillet on medium heat for about 12 minutes. Removed it from the heat and topped it with the grated Dutch Goda Cheese and Jalapeno Slices. Put it in the oven and let it until the Cheese was melted. It looks good enough to eat right now! As I put the Chili in the oven I microwaved my Potato for 7 minutes and 15 seconds, came out piping hot. I slit the Potato in half and seasoned it with the Sea Salt and Black Peppercorn. As the Potato was coming out of microwave I also removed the Chili from the oven. I then topped the Potato with Chili, Cheese, and Jalapeno mix. And dinner was ready! Everything just mixed together into one incredible meal. I really packed the Spud with Chili, more than enough for a meal. Plus the Dutch Gouda gave it added flavor and creaminess and the Jalapeno slices gave it just the right amount of heat. Jalapeno added to any dish makes it better! I also baked a small California Sourdough Mini Boule. This would be a good one to hollow out and put Chili in it, future meal. Well for dessert/snack later some Ritz Whole Grain Crackers topped with slices of Cracker Barrel 2% Sharp Cheddar and slices of Hormel Turkey Pepperoni.

Autumn is in full swing here in west Chester. The trees are turning and the air is crisp and cool. I love the fall, my favorite time of the year! I got in the closet and moved up my flannel shirts and fleece sweat shirts, time to get comfortable! So for dinner tonight I wanted a hot and hearty meal tonight so what better than my Crock Pot 3 Bean Buffalo Chili! absolutely love this stuff! I’ve even got Mom hooked on this Chili now.

 

 
I’ve been wanting some of this Chili for quite sometime now. I usually have a few containers in the freezer but have been out of it for a while now, too long. It’s loaded with nothing bu good things. I use Wild Idea Buffalo Ground Round (99% Lean) which is the best tasting Ground Buffalo that I’ve found. The 3 Beans I use are 1 Can (15 oz.) Chili Beans, 1 Can (15 oz.) Kidney Beans (rinsed), and 1 Can (15 oz.) Great Northern Beans (rinsed). Then I mix in 1 White Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Unseeded and Chopped), and 3 Cloves Minced Garlic.
