Waffled Stuffing Turkey Sandwich

Total Time 20 minutes
Serving Size Makes 2 Servings

Ingredients
2 cups leftover stuffing

1 egg

1/2 cup chicken broth

Non-stick cooking spray, as needed

1/2 cup leftover mashed potatoes, warmed

4 ounces leftover JENNIE-O® turkey, warmed

6-8 leftover steamed green beans, if desired

2 tablespoons cranberry sauce

1/2 cup turkey gravy, warmed

Directions
1) In large bowl, combine stuffing, egg and chicken broth until stuffing is moistened. Prepare 4-waffle iron for medium heat. Spray with non-stick cooking spray. Distribute stuffing evenly into prepared waffle iron. Cook waffles 10 minutes or until crisped and browned or according to manufacturer’s instructions.

2) Spread mashed potatoes on 2 waffles. Divide turkey, beans and cranberry sauce on top of each. Drizzle with gravy. Top with remaining waffles.

Cranberry sauce

Cranberry sauce or cranberry jam is a sauce or relish made out of cranberries, commonly served as a condiment or a side dish with Thanksgiving dinner in North America and Christmas dinner in the United Kingdom and Canada. There are differences in flavor depending on the geography of where the sauce is made: in Europe it is generally slightly sour-tasting, while in North America it is typically more heavily sweetened.

The recipe for cranberry sauce appears in the 1796 edition of The Art of Cookery by Amelia Simmons, the first known cookbook authored by an American.

Although the Pilgrims may have been aware of the wild cranberries growing in the Massachusetts Bay area, sugar was scarce, so it’s unlikely that cranberry sauce would have been among the dishes served at the First Thanksgiving meal. Cranberries aren’t mentioned by any primary sources for the First Thanksgiving meal. The only foods mentioned are “Indian corn”, wild turkey and waterfowl, and venison. The rest remains a matter of speculation among food historians. Although stuffings are not mentioned in primary sources, it was a common way to prepare birds for the table in the 17th century. According to a “Thanksgiving Primer” published by the Plimoth Plantation, cranberries may have been used in the stuffing recipes, but it’s unlikely they would have been made into a sauce because sugar was very scarce.

Cranberry sauce was first offered to consumers in North America in 1912 in Hanson, Massachusetts. Canned cranberry sauce appeared on the market in 1941, allowing the product to be sold year-round. Cranberry sauce can be used with a variety of meats, including turkey, pork, chicken, and ham.

The most basic cranberry sauce consists of cranberries boiled in sugar water until the berries pop and the mixture thickens. Some recipes include other ingredients such as slivered almonds, orange juice, zest, ginger, maple syrup, port, or cinnamon.

Commercial cranberry sauce may be loose and uncondensed, or condensed or jellied and sweetened with various ingredients. The jellied form may be slipped out of a can onto a dish, and served sliced or intact for slicing at the table.

Cranberry sauce is often eaten in conjunction with turkey for Christmas in the United Kingdom and Canada or Thanksgiving in the United States and Canada, and it is only rarely eaten or served in other contexts there.

4 slices sourdough bread, toasted

1 cup mashed potatoes, heated
1 cup prepared stuffing, heated
½ cup turkey gravy, heated

DIRECTIONS
1) Spread cranberry sauce on bread slices.
2) Place turkey over cranberry sauce.
3) Top turkey with mashed potatoes and stuffing. Pour gravy over potatoes and stuffing.

Turkey Tenderloin Crostini
The term “crostini” in Italian means “little toast”. With various toppings, they’re the perfect appetizer before any meal. Our Turkey Tenderloin crostinis combine sweet and savory with whole canberry sauce, blue cheese crumbles and tender turkey on top. Make them, and you might be the toast of your next dinner!

INGREDIENTS
1 (20-ounce) package JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins
1 teaspoon seasoned salt
½ teaspoon garlic powder
½ teaspoon freshly ground pepper
15 crostini bread slices
¾ cup whole-berry cranberry sauce
1 tablespoon country-Dijon mustard
⅓ cup blue cheese crumbles
fresh marjoram leaves, if desired

DIRECTIONS
1) Season turkey with seasoned salt, garlic powder and pepper. Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Let stand 15 minutes and slice into about 15 ¼-inch slices.
2) In small bowl, stir together cranberry sauce and mustard.
3) Place 1 tenderloin slice on each crostini bread slice and top with cranberry mixture and blue cheese crumbles.
4) Garnish with fresh marjoram leaves, if desired.
* Always cook to an internal temperature of 165°F.

Monte Cristo Turkey Breakfast Sandwich
The Monte Christo is the undisputed king of sweet/savory breakfast sandwiches. This take on the classic French recipe makes for a delightful morning with a sweet cranberry cream cheese spread.

INGREDIENTS
CRANBERRY SPREAD
⅓ cup jellied cranberry sauce
3 tablespoons orange juice
1 tablespoon cream cheese
BATTER
½ cup skim milk
½ cup liquid eggs
¼ cup water
½ teaspoon vanilla extract
1 cup flour
2 teaspoons ground cinnamon
2 teaspoons sugar
1 teaspoon baking powder
SANDWICHES
8 slices crusty bread
1 cup liquid eggs, scrambled
8 slices JENNIE-O® Turkey Bacon, cooked according to package directions
8 slices JENNIE-O® sliced All Natural Oven Browned Turkey Breast, from the service deli
powdered sugar, if desired

DIRECTIONS
1) To make cranberry spread, in small bowl, combine cranberry sauce, orange juice and cream cheese; set aside.
2) To make batter, in medium bowl, whisk together milk, ½ cup liquid eggs, water and vanilla.
3) In medium bowl, combine flour, cinnamon, sugar and baking powder. Make well in center. Add milk mixture; mix to smooth batter.
4) To make sandwiches, heat flat griddle. Dip each bread slice in batter. Cook on griddle 2 to 3 minutes per side or until golden.
5) Spread half the bread slices with cranberry mixture. Top with scrambled eggs, bacon and turkey. Top with remaining battered bread slices. Cook in heated Panini press or two-sided grill for 2 to 3 minutes or until golden. Cut sandwich in half. Secure with toothpicks. Arrange on plate. Sprinkle with powdered sugar, if desired. Always cook to well-done, 165°F as measured by a meat thermometer.
* Always cook to an internal temperature of 165°F

Cranberry Goat Cheese Crostini

Looking for an easy Holiday appetizer recipe? This delicious crostini takes less than 15 minutes to make.

INGREDIENTScranberry-goat-cheese-crostini

½ (8-ounce) package cream cheese, softened
1 (4-ounce) package goat cheese, softened
¼ teaspoon freshly ground pepper
1 (14-ounce) can whole berry cranberry sauce
¼ cup chopped fresh basil leaves
1 package deli crostini
garnish with small fresh basil leaves

 
DIRECTIONS

1) In small bowl, combine cream cheese, goat cheese and pepper until smooth.
2) In another small bowl, stir together cranberry sauce and basil.
3) Spread about 1 tablespoon cream cheese mixture on crostini. Top with cranberry mixture. Garnish with basil leaves, if desired. Serve immediately.
