Hot Turkey Sandwiches
Here’s a great recipe for your holiday leftovers that’s ready in under 15 minutes. Enjoy layers of lean turkey breast, cranberry sauce and toasted sourdough, topped with gravy.

INGREDIENTS
½ cup cranberry sauce
4 slices sourdough bread, toasted
1 pound thinly sliced JENNIE-O® Oven Roasted Turkey Breast, heated
1 cup mashed potatoes, heated
1 cup prepared stuffing, heated
½ cup turkey gravy, heated

DIRECTIONS
1) Spread cranberry sauce on bread slices.
2) Place turkey over cranberry sauce.
3) Top turkey with mashed potatoes and stuffing. Pour gravy over potatoes and stuffing.

Turkey Tenderloin Crostini
The term “crostini” in Italian means “little toast”. With various toppings, they’re the perfect appetizer before any meal. Our Turkey Tenderloin crostinis combine sweet and savory with whole canberry sauce, blue cheese crumbles and tender turkey on top. Make them, and you might be the toast of your next dinner!

INGREDIENTS
1 (20-ounce) package JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins
1 teaspoon seasoned salt
½ teaspoon garlic powder
½ teaspoon freshly ground pepper
15 crostini bread slices
¾ cup whole-berry cranberry sauce
1 tablespoon country-Dijon mustard
⅓ cup blue cheese crumbles
fresh marjoram leaves, if desired

DIRECTIONS
1) Season turkey with seasoned salt, garlic powder and pepper. Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Let stand 15 minutes and slice into about 15 ¼-inch slices.
2) In small bowl, stir together cranberry sauce and mustard.
3) Place 1 tenderloin slice on each crostini bread slice and top with cranberry mixture and blue cheese crumbles.
4) Garnish with fresh marjoram leaves, if desired.
* Always cook to an internal temperature of 165°F.

Monte Cristo Turkey Breakfast Sandwich
The Monte Christo is the undisputed king of sweet/savory breakfast sandwiches. This take on the classic French recipe makes for a delightful morning with a sweet cranberry cream cheese spread.

INGREDIENTS
CRANBERRY SPREAD
⅓ cup jellied cranberry sauce
3 tablespoons orange juice
1 tablespoon cream cheese
BATTER
½ cup skim milk
½ cup liquid eggs
¼ cup water
½ teaspoon vanilla extract
1 cup flour
2 teaspoons ground cinnamon
2 teaspoons sugar
1 teaspoon baking powder
SANDWICHES
8 slices crusty bread
1 cup liquid eggs, scrambled
8 slices JENNIE-O® Turkey Bacon, cooked according to package directions
8 slices JENNIE-O® sliced All Natural Oven Browned Turkey Breast, from the service deli
powdered sugar, if desired

DIRECTIONS
1) To make cranberry spread, in small bowl, combine cranberry sauce, orange juice and cream cheese; set aside.
2) To make batter, in medium bowl, whisk together milk, ½ cup liquid eggs, water and vanilla.
3) In medium bowl, combine flour, cinnamon, sugar and baking powder. Make well in center. Add milk mixture; mix to smooth batter.
4) To make sandwiches, heat flat griddle. Dip each bread slice in batter. Cook on griddle 2 to 3 minutes per side or until golden.
5) Spread half the bread slices with cranberry mixture. Top with scrambled eggs, bacon and turkey. Top with remaining battered bread slices. Cook in heated Panini press or two-sided grill for 2 to 3 minutes or until golden. Cut sandwich in half. Secure with toothpicks. Arrange on plate. Sprinkle with powdered sugar, if desired. Always cook to well-done, 165°F as measured by a meat thermometer.
* Always cook to an internal temperature of 165°F

Cranberry Goat Cheese Crostini

Looking for an easy Holiday appetizer recipe? This delicious crostini takes less than 15 minutes to make.

INGREDIENTScranberry-goat-cheese-crostini

½ (8-ounce) package cream cheese, softened
1 (4-ounce) package goat cheese, softened
¼ teaspoon freshly ground pepper
1 (14-ounce) can whole berry cranberry sauce
¼ cup chopped fresh basil leaves
1 package deli crostini
garnish with small fresh basil leaves

 
DIRECTIONS

1) In small bowl, combine cream cheese, goat cheese and pepper until smooth.
2) In another small bowl, stir together cranberry sauce and basil.
3) Spread about 1 tablespoon cream cheese mixture on crostini. Top with cranberry mixture. Garnish with basil leaves, if desired. Serve immediately.

Don’t get rid of that leftover Cranberry Sauce, instead make some Cranberry Meatballs! Meatballs are simmered in a cranberry sauce/bbq sauce combination. Make your own small meatballs or buy some Jennie – O or Honeysuckle White Turkey Meatballs. Just stick them on toothpicks, and you’ve got a festive holiday appetizer.

Delicious Cranberry Applesauce Muffins
Ingredients:

1 1/4 cups unsweetened applesauce
2 tablespoons extra virgin olive oil
2 large eggs, beaten or 1/2 cup Egg Beater’s
2 cups cake flour
1/4 cup Splenda No Calorie Sweetener, Granulated
1 1/2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon sea salt
1 cup fresh or frozen cranberries, chopped
2 tablespoons finely chopped pecans

 

 
Directions:

Preheat oven to 350°F. Grease and flour a muffin pan, or use paper liners.
In a small bowl, mix together applesauce, oil, and eggs. In a large bowl, combine cake flour, SPLENDA® Granulated Sweetener, baking soda, cinnamon, and salt. Make a well in the center, and pour in egg mixture. Stir until just moistened, and then fold in cranberries. Spoon batter into muffin cups, 2/3 full. Sprinkle nuts over the top of batter.
Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan for 2 minutes before removing.
Makes 12 muffins.
