BUFFALO TORTILLA SOUP
This traditional Mexican soup takes on a whole new “el yumo” taste with our easy to use, heat and eat Pulled Buffalo Chuck Roast. My recipe is simple, but I promise it will not disappoint! I do have one warning though, when making the tortilla strips, be sure to have celery sticks close at hand to try to keep you from eating all of the hot, limed & salted crispy strips! No guarantee’s on that though. *Recipe can easily be halved.

Ingredients:
2 – 1 pound, Heat & Eat Wild Idea Buffalo Pulled Chuck Roast
½ – cup coconut oil, or other oil
10 – corn tortillas, 4 – cut into strips & 6 – quartered
2 – onions, coarse chopped
8 – whole garlic cloves, peeled
2 – whole dried pasilla chiles, de-stemmed, seeded, and coarse chopped
1 – tablespoon cumin
1 – teaspoon coriander
1 – teaspoon cardamom
1 – teaspoon salt
1 – quart tomatoes (blackened, or canned)
2 – quarts organic chicken broth
1 – lime, halved

Toppings:
1 to 2 – avocado, peeled, seeded, and chopped
4 – ounces Queso Chihuahua, shredded
½ – cup cilantro, chopped
1 – lime, cut into wedges

Preparation:

1 – In a medium saucepan, heat oil over medium high heat.
2 – Add ¼ of the tortillas strips and fry until crispy, about 3 minutes. Remove from oil and place on a brown bag, sprinkle with salt and a squeeze of lime. Repeat until all of the strips are cooked.
3 – Transfer 1 tablespoon of the oil used to fry tortillas into a soup pot, over medium high heat.
4 – Add the onions, garlic, chilies, and seasonings to the pot. Allow vegetables to lightly brown, stirring occasionally.
5 – Add the tomatoes, broth, and remaining 6 tortillas and bring to a boil. Reduce heat to medium-low and cook for about one hour.
6 – Remove from heat and let set for half an hour.
7 – Transfer the soup to a blender in batches and mix until smooth. Return soup to medium high heat and bring to a gentle boil.
8 – Add the two packages of the Pulled Buffalo Chuck Roast and and stir to incorporate. Heat for 5 minutes, then stir in the juice of half of a fresh lime and season to taste.
9 – To serve, ladle soup into bowls, top with crispy tortillas strips, avocado, grated cheese, and fresh cilantro. Accompany with fresh lime wedges.

Lime Cilantro Baja Tacos
Get ready for a quick and easy dinner featuring cayenne and chili powder seasoned turkey and a honey lime dressing, it’s a flavorful twist on taco night.

Total Time – 30 Minutes
Serving Size – Makes 6 Servings

Ingredients
1 – tablespoon avocado oil
1 – (17.6-ounce) JENNIE-O® Extra Lean Turkey Breast Cutlets
2 – teaspoons chili powder
3/4 – teaspoon salt
1/4 – teaspoon cayenne pepper
freshly ground black pepper, to taste
6 – corn tortillas, warmed
2 – cups shredded red cabbage
1 – avocado, thinly sliced
1/4 – cup chopped cilantro
6 – lime wedges

Honey Lime Sauce
2 – tablespoons honey
juice of 1 lime

Directions
1) In skillet over medium-high heat, heat oil. Add turkey to skillet and season with chili powder, salt, cayenne pepper and black pepper. Cook according to package directions. Always cook to well-done, 165°F as measured by a meat thermometer. Shred turkey.

2) Fill corn tortillas with red cabbage, avocado, shredded turkey, and cilantro. Drizzle with Honey Lime Sauce and serve with lime wedges.

Honey Lime Sauce

3) In small bowl, combine honey and lime juice. Set aside until ready to use.

Cheese Enchiladas with Green Chiles
Cheese enchiladas are rich in flavor; make them even better with garden style salsa and whole green chiles. Serve with pinto beans and savory Spanish rice.

Recipe Ingredients:
1 (10-ounce) can ORTEGA Enchilada Sauce
1 cup ORTEGA Salsa – Homestyle Recipe
12 (6-inch) corn tortillas
16 ounces Monterey Jack cheese, cut into 12 strips
1 (7-ounce) can ORTEGA Whole Green Chiles, cut into 3 strips each, 15 strips total
1 cup shredded Monterey Jack cheese

Cooking Directions:
1 – Preheat oven to 350ºF (175ºC).
2 – Combine enchilada sauce and salsa in a medium bowl; mix well. Pour 1 1/2 cups of the sauce mixture onto bottom of ungreased 13 x 9-inch baking pan.
3 – Heat tortillas, one at a time, in a lightly greased medium skillet over medium heat for 20 seconds on each side or until soft. Place 1 strip of cheese and 1 strip of chile in the center of each tortilla; roll up. Place seam-side down in baking pan. Repeat with remaining tortillas, cheese and chiles. Ladle remaining sauce over enchiladas; sprinkle with shredded cheese.
4 – Bake, covered, for 20 minutes. Remove cover; bake for additional 5 minutes or until heated through and cheese is melted.

Makes 6 (2 enchilada) servings.

Turkey Enchilada Lasagna
Spice up your normal lasagna with this quick Turkey Enchilada Lasagna recipe. It will quickly become a family favorite with prep time under 10 minutes and 29g of protein in every serving!

Total Time – 1 Hour 5 Minutes
Serving Size – 6 Servings

Ingredients
1 – (1-pound) package JENNIE-O® Lean Ground Turkey

2 – tablespoons tomato paste

1 – (15-ounce) can pinto beans, rinsed and drained

1 – (15-ounce) diced tomatoes and green chilies

2 – (15-ounce) cans mild enchilada sauce, divided

½ – teaspoon kosher salt

9 – corn tortillas

1 ½ – cups shredded Mexican 4-cheese blend

garnish: chopped fresh cilantro leaves, sliced fresh jalapeños, sliced ripened olives, sour cream

 

Directions

1) Add ground turkey to a nonstick cooking sprayed hot skillet over medium-high heat. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.

2) Stir in tomato paste and cook 1 minute.

3) Add beans, tomatoes, 1 can enchilada sauce and salt.

4) Heat oven to broil and place rack 5 inches under broiler.

5) Place tortillas on baking rack and broil 3 to 5 minutes or until slightly charred on each side.

6) Place 3 corn tortillas in bottom of 13 x 9-inch baking dish.

7) Spoon half turkey mixture over tortillas. Repeat layers ending with tortillas. Pour remaining enchilada sauce over tortillas.

8) Cover and bake 30 minutes or until bubbly. Remove foil, sprinkle with cheese, and bake 15 minutes more or until cheese is melted.

9) Garnish, if desired.

FISH TACOS WITH AVOCADO SALSA

Ingredients

1/4 cup all-purpose flour, spooned into measuring cup and leveled (60 mL)
1/4 cup cornmeal (60 mL)
1/2 tsp onion powder (2 mL)
1/2 tsp chili powder (2 mL)
4 fish fillets (1 lb/500 g), such as tilapia or cod, rinsed, patted dry, and cut into 8 strips total
2 Tbsp canola oil (30 mL)
1/4 tsp salt (1 mL)
8 corn tortillas, warmed
1/2 medium avocado, peeled, pitted, and diced
1/2 cup fresh pico de gallo, salsa verde, or picante sauce (125 mL)
1 medium lime, cut into 8 wedges

Directions

1 – Combine flour, cornmeal, onion powder, and chili powder in a shallow dish, such as a pie pan. Coat fish with mixture.
2 – Heat canola oil in a large nonstick skillet over medium high heat. Add fish; cook 3 minutes on each side or until browned and fish flakes with a fork. Place on a serving platter and sprinkle evenly with salt.
3 – Place fish in warmed tortillas, and top with equal amounts of avocado and pico de gallo. Squeeze a lime wedge over each tortilla.
NOTES:
Experts recommend eating seafood at least twice a week, so take a break from the standby beef taco and go with fish.

Turkey Tacos with Salsa
You haven’t really had salsa until you’ve had fresh salsa—made in just five minutes. Add it in this easy Turkey Tacos with Salsa recipe and you’ll never look back.
Total Time 30 Minutes
Serving Size 8 Servings

Ingredients

TACOS
2 – tablespoons fresh lime juice

1 – tablespoon chipotle chili powder or chili powder

1 – teaspoon ground cumin

1 ½ – teaspoons paprika

¾ – teaspoon salt

1 – teaspoon cornstarch

1 – (16-ounce) package JENNIE-O® Lean Ground Turkey

8 – corn tortillas

SALSA

1 – pint cherry tomatoes, chopped

2 – avocado, diced

2 – tablespoons chopped cilantro leaves

1 – teaspoon olive oil

TOPPINGS

½ – cup thinly sliced cabbage

½ – cup thinly sliced red onion

½ – cup thinly sliced radishes

1 – lime, cut into 8 wedges

 

Directions
1) In medium bowl, combine lime juice, chipotle powder, cumin, paprika, salt and cornstarch; stir to combine. Add turkey and mix well. Cover tightly with plastic wrap and refrigerate 5 minutes.

2) In large skillet, place turkey mixture and cook over medium-high heat stirring to crumble 11 minutes and until 165°F. as measured by a meat thermometer. Always cook to well-done.

3) Remove from heat and cover with foil. Set aside until ready to serve.

4) To prepare salsa, in medium bowl combine cherry tomatoes, avocado, cilantro, and olive oil. Mix together and transfer to a smaller serving bowl to serve with tacos.

5) Arrange toppings on large platter or in small serving dishes.

6) In medium skillet set over medium heat, warm tortillas one at a time 20 to 30 seconds per side or until soft and flexible.

7) Wrap the finished tortillas with a paper towel to keep warm between batches.

8) Divide cooked turkey evenly between the warmed tortillas and serve with salsa and toppings.

Baked Lime Chili Corn Tortilla Chips
These delightfully crunchy chips aren’t your typical fried party fare. They take just 25 minutes to prepare and are perfect for pairing with salsa or guacamole. Set them out at kickoff and have a second helping ready for halftime!

Ingredients
Preparation time:
25 minutes
12 6-inch corn tortillas
3 tablespoons lime juice
1 teaspoon ground cumin
1 teaspoon chili powder

Directions
Yield: 10 servings
Serving size: 10 chips

1 – Preheat oven to 350°F. With clean scissors, cut each tortilla into 8 triangles and arrange in single layer on baking sheet. Pour lime juice into mister, and spray each wedge lightly. Combine cumin and chili powder in sprinkler, and sprinkle each wedge. Bake for about 7 minutes. Remove from oven and turn each wedge over. Remist with lime juice, and resprinkle with cumin and chili powder. Bake for an additional 8 minutes until the chips are crisp but not brown. Serve with salsa.

Grilled Steak and Black Bean Tacos
If you’re hosting a barbecue this Father’s Day, be sure to dish up some of these tasty tacos. With hearty skirt steak and a hint of chili powder for some kick, they’re sure to be a hit!

Ingredients
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon garlic salt
12 ounces skirt steak, trimmed of fat
4 slices red onion (1/4 inch thick)
Nonstick cooking spray
2 cloves garlic, minced
1/2 cup salsa
1 cup canned no-salt-added black beans, rinsed and drained
1/2 cup chopped fresh tomato
8 corn tortillas, warmed
1/2 cup chopped fresh cilantro
Lime wedges and lime juice (optional)

Directions
Yield: 4 servings
Serving size: 2 tacos

1 – Prepare grill for direct cooking. Combine cumin, chili powder, and garlic salt in small bowl; sprinkle evenly over both sides of steak. Coat steak and onion slices lightly with nonstick cooking spray.

2 – Grill steak and onions, covered, over medium-high heat 4 to 5 minutes per side or until steak is barely pink in center and onion is tender.

3 – Spray large skillet with cooking spray; heat over medium heat. Add garlic; cook and stir 30 seconds. Add beans, salsa, and tomato; cook and stir 5 minutes or until heated through.

4 – Slice steak crosswise into thin strips; separate onion slices into rings. Serve in warm tortillas with salsa mixture and cilantro. Garnish with lime wedges and lime juice, if desired.

Grilled Fish Tacos

Ingredients
1 pound skinless mahimahi, halibut or tilapia fillets
3/4 teaspoon chili powder
1/2 cup salsa, divided
2 cups packaged coleslaw mix or cabbage
1/4 cup reduced-fat sour cream
4 tablespoons chopped fresh cilantro, divided
8 (6-inch) corn tortillas, warmed

Directions
Yield: 4 servings
Serving size: 2 tacos (1/3 cup filling each)

1 – Prepare grill for direct cooking. Sprinkle chili powder evenly over fish. Spoon 1/4 cup salsa over fish; let stand 10 minutes.

2 – Meanwhile, combine coleslaw mix, remaining 1/4 cup salsa, sour cream, and 2 tablespoons cilantro in large bowl; mix well.

3 – Grill fish, salsa side up, covered, over medium heat 8 to 10 minutes or until fish is opaque in center and begins to flake when tested with fork.

4 – Slice fish crosswise into thin strips or cut into chunks. Fill warm tortillas with fish and coleslaw mix. Garnish with remaining 2 tablespoons cilantro.

Corn tortillas have lower fat, carbs and calories contents than flour tortillas. However, corn tortillas provide less protein than flour tortillas. In comparison, corn tortillas make a healthier choice since corn is a whole grain and provides all essential nutrients.
