Today’s Menu: Leftovers – Ham and Swiss Sandwich w/ Mashed Potatoes and Deviled Egg

 

 

For Breakfast I toasted a Thomas Light English Muffin and topped it with Smucker’s Sugarless Blackberry Jam. Also had my morning cup of Bigelow Decaf Green Tea. Sunny and 36 degrees out today. Not a thing going on today. Did some small chores around the house, changed the furnace filters and such. Then caught up on some shows I had recorded. For Dinner it’s Christmas Dinner Leftovers. I made a Ham and Swiss Sandwich w/ Mashed Potatoes and Deviled Egg. Stay safe everyone!

 

Plenty of leftovers from the Christmas Dinner Feast! And thank goodness for leftovers because I really didn’t feel like cooking. We almost always use Cook’s Ham when we bake a Ham. So with the Ham we baked yesterday, we made some into some delicious Ham Sandwiches. Just took a few slices and serving it on Aunt Millie’s Light Whole Grain Bread. The Ham is so delicious and moist. And as always with Cook’s Ham, perfect seasoning! We’ll have quite a few Breakfasts and Lunches out of this. To make the Sandwich I used Aunt Millie’s Light Whole Grain Bread. Topped it with a bit of Kraft Light Mayo with Olive Oil, French’s Yellow Mustard, and a slice of Boar’s Head Swiss Cheese. Love this Sandwich!

 

For a side I heated up the leftover Bob Evan’s Mashed Potatoes and I had a leftover Deviled Eggs. Just love these leftovers! It’s sometimes better the second time around! For Dessert/Snack a 100 Calorie Mini Bag of Snyder’s Pretzels with a Coke Zero to drink.

I toasted a Thomas Light English Muffin and topped it with Smucker’s Sugarless Blackberry Jam and heated up 2 Johnsonville Turkey Breakfast Sausage Links. Also had morning cup of Bigelow Decaf Green Tea. Rain and windy out today. We had a high of 58 degrees in the morning but the temps dropped through out the day to the 40’s. I’m not real active today. My sinuses are really bothering me today. This weather doesn’t help! So just a lot of rest today. For Dinner it’s Easter Dinner Leftovers. I made a Ham and Swiss Sandwich w/ Mashed Potatoes and Deviled Egg. Stay safe everyone!

Today’s Menu: Baked Ham, Green Beans, Mashed Potatoes, Sweet Potatoes, Gravy, and Apple Pie

Hope everyone is enjoying their Easter! This one is a bit different, most of us are at our own homes and no eating out today because of the Virus. It seems to be getting some what better but we still have a ways to go. I just hope people don’t start getting out more and the Virus rebounds. Let’s just stay the course and finish riding this thing out. Everyone enjoy your Easter and stay safe. Take care all!

Today’s Menu: Ham and Swiss Sandwich w/ Mashed Potatoes and Deviled Egg

 

 

I toasted a Thomas Light English Muffin and topped it with Smucker’s Sugarless Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. Cloudy and 41 degrees outside today. Had a delicious Thanksgiving Dinner! Everything was so good. Mom even made a Apple Pie made with Splenda and it was just incredible! But shortly after Dinner I had to deal with some extremely painful Phantom Pains! They continued through out the night into the morning. The finally let up around noon today and I was drained. These took about everything out of me. So I tried to catch up on some sleep and relaxation. Still hoping for a cure to Phantom Pains! On some good news I went for my exam and blood work to my Oncologist Wednesday. Everything came back completely clean! So now I just have to go for a yearly exam instead of twice and no more scans and x-rays! Really pleased over that. For Dinner it’s Thanksgiving Dinner Leftovers. I made a Ham and Swiss Sandwich w/ Mashed Potatoes and Deviled Egg.

I toasted a Thomas Light 100% Multi Grain English Muffin and topped it with Smucker’s Sugarless Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. Mostly Cloudy and 76 degrees out today. After Lunch I got the rake, leaf blower, and the cart out. Did yard work today. Later on I took a ride around the neighborhood. Then went down by the lake. Not too bad out. For Dinner it’s Easter Dinner Leftovers. I made a Ham and Swiss Sandwich w/ Mashed Potatoes and Deviled Egg.

Today’s Menu: Ham Sandwich w/ Applewood Smoked Bacon Potato Casserole

 

 

For Breakfast this I toasted a Healthy Life Whole Grain Muffin and topped it with Smucker’s Sugarless Blackberry Jam, Love that Jam. I also had my morning cup of Bigelow Decaf Green Tea. Well Winter just will not go away! Overnight a snow system moved through and gave us over an inch of snow. It melted pretty quick though as we had a of 52 degrees for the day. After Breakfast I went up to Kroger, they had Hams on sale and Bought a Cook’s Semi-Boneless Ham. It was close to 7 3/4 lbs. and got it for $6.21. We usually have a Ham for Easter but went to Easter Dinner at a Family member. I love a good baked Ham and to me the leftovers are the best part! Ham Sandwiches like tonight and fried Ham for Breakfast. Dad is doing a lot better today, he’s getting to know everyone and adjusting to it. We sure do miss him here at home! For Dinner tonight I prepared a Ham Sandwich w/ Applewood Smoked Bacon Potato Casserole.

I served the Ham on Aunt Millie’s Light Whole Grain Bread. I was going to add Mayo or Mustard but I just wanted the taste of that delicious Ham!

 

 

 

 

 

To go with the Ham I prepared a box of Idahoan Applewood Smoked Bacon Homestyle Casserole. Like the other Idahoan dishes their a breeze to prepare and a delicious Potato Dish. And like the others this turned out fantastic! Very well seasoned, and you can taste that Applewood bacon flavor. I love my Potatoes! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

Idahoan Applewood Smoked Bacon Homestyle Casserole
The saying is “everything is better with bacon” and we couldn’t agree more. That’s why we incorporated Applewood Smoked Bacon in with our rich cheesy sauce for this homestyle casserole that is sure to become a family favorite.

Oven Preparation
Best for Golden Browning

1 – Preheat oven* to 450°F. Combine potatoes and sauce mix in 1 1/2-quart baking dish.
2 – Stir in 2 cups boiling water, 3/4 cup milk, and 2 Tbsp. butter or margarine with whisk.
3 – Bake uncovered for 25 minutes or until top is golden brown and potatoes are tender. Remove from oven and let stand a few minutes before serving (sauce will thicken slightly when cooling).
* At 400 degrees, bake 30 – 35 min. or until tender
