Cooking Oils……………

Each cooking oil has a unique flavor profile and different smoke points. That means some oils (like canola or peanut oil) are better suited for high-temperature frying, while fats like butter or lard are best for stir-frying and to sauté. Learn what the best oils are for frying. Super fragrant oils, like extra-virgin olive oil and sesame oil, are best used raw as finishing oils or for salad dressings.

Nutty oils……..

 

Oils that are made from nuts, such as walnut or hazelnut, have rich, intense flavors, making them ideal for use in salads or flavoring savory dishes. Once opened store them in the refrigerator , since they deteriorate quickly.

Lentils are delicious – and great for you! When cooking them, make sure to add a few teaspoons of oil. It will prevent the pot from spilling over, and actually helps in the cooking process.

To reuse cooking oil without tasting whatever was cooked in the oil previously, cook a 1/4″ piece of ginger in the oil. It will remove any remaining flavors and odors.

Avoid crowding food that is deep-fat-fried. The food must be surrounded by bubbling oil, and you must keep the temperature from falling too much. If you add too much food to a small   amount of oil, the temperature will plummet, and the food will wind up greasy and soggy.
