Chill out……………………..

When making Mousse, the mousse needs to chill in the refrigerator for 15-30 minutes before it can be served. If you’re planning to layer the mousse, each layer must set before you add the next layer on top. If you’re making a mousse cake, the mousse needs to set before the cake is unmoulded. Enjoy!

Today’s Menu: Grilled Buffalo Cheese Burger and Baked Fries

 

To start the day off I toasted Thomas Light English Muffin that I topped with some Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. 79 degrees and sunny out today. It was about 53 degrees this morning when I rolled out to grab the morning papers. Got some yard work done today, a beautiful day just to be outside! Later cleaned up the grill a bit to use for Dinner. For Dinner tonight Grilled Buffalo Cheese Burger and Baked Fries.

 

For the Buffalo Burger I used my favorite, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers as usual. Their meaty, juicy and just flat out delicious! I had the Burger in the freezer so I laid in the fridge overnight to thaw. Used a Paper Towel and rubbed it in some Extra Light Olive Oil. Then rubbed the Grill Grate down with it. Then fired up the Grill! Seasoned my Burger with McCormick Grinder Sea Salt and Peppercorn Medley. With the Grill heated I started grilling. I grilled the Buffalo Burger and Brat and Mett for Mom. I grilled the Burger about 3 minutes and flipped it over. After 2 minutes I added a slice of Boar’s Head Yellow Vermont Cheddar and cooked it another 1 minute and done! Served the Burger on a Healthy Life Wheat Hamburger Bun. The Burger was juicy and delicious, as all the Wild Idea Products are. Just love a good Burger, Buffalo Burger! Plus that added flavor by grilling it.

To go with my Burger I prepared some Ore Ida Golden Crinkle Cut French Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Stick Pretzels with a Diet Peach Snapple to drink.

This week’s Wild Idea Buffalo Recipe of the Week is – JILL’S FAVORITE BUFFALO BURGERS. Nothing like a good Burger. Especially when it’s a Wild Idea Buffalo Burger! The recipe uses Wild Idea Premium Ground Buffalo. I switched over to using Buffalo Meat over Beef after I was diagnosed with Diabetes 2. JILL’S FAVORITE BUFFALO BURGERS
This recipe adds a little extra savoriness to the 100% grass-fed goodness!

Ingredients:
(serves 6 to 8)
2 – pounds Wild Idea Premium Ground Buffalo
2 – tablespoons olive oil

1/2 – teaspoon mustard

1 – teaspoon ketchup

1 – teaspoon thyme

2 – teaspoon salt & pepper

Preparation:
1. Mix all ingredients, but Buffalo together.
2. Add Buffalo & mix thoroughly with hands. Pat into 6 patties.
3. Place in refrigerator to firm up burgers.
4. Grill over high heat for 3 minutes each side for Medium Rare. Dan & I like to drizzle a little more olive oil over and sear for another half minute per each side for medium. This give the burgers a bit of a crust on the outside.
5. Remove from the grill, and sprinkle with a high quality finishing salt. Allow to rest for a couple of minutes before serving.

Serve on high quality buns, with your favorite toppings.

GROUND BISON – BASIC COOKING INSTRUCTIONS
Our naturally lean ground buffalo is a healthy, delicious staple for all of your favorite ground meat dishes! You can literally go wild: grill, sear, bake, broil or sauté.

* Grilling: Cooking meat over hot coals or high gas fire. For best results, grill grate should always be clean and positioned close to heat. Inside grill temperature desired 500°. Recommend closing the grill lid during grilling time.

* Pan Searing / Pan Frying: Cooking meat in an oil rubbed heavy skillet, uncovered over medium high heat to high heat.

* Sautéing: Cooking meat quickly, in a small amount of oil or fat over medium high to high heat. If browning meat, sauté in small batches for best results.

* Broiling: Cooking meat in the oven on broil. Second rack placement is best.

* Baking: Cooking in oven at 325° to 375°. This method would be used for meatloaves and casseroles.

Summer Time Turkey Burgers
Grilling Menu Fresh Take

INGREDIENTS
4 JENNIE-O® Turkey Burgers – All White Meat
4 burger buns
2 ounces cotija cheese, if desired
¼ cup pico de gallo
8 large leaf lettuce
4 teaspoons fresh chopped cilantro
squeeze of fresh lime juice
4 ounces non-fat Greek yogurt
4 ounces WHOLLY GUACAMOLE® dip, if desired
4 ounces HERDEZ® salsa, if desired

DIRECTIONS
1) Cook turkey burgers as specified on the package. Always cook until well-done, 165°F as measured by a meat thermometer.
2) Toast buns and top with turkey burger, cheese, if desired, Pico de Gallo, lettuce, cilantro and squeeze of fresh lime. Spread yogurt on the bottom side of top bun. Serve dip and salsa, if desired.
* Always cook to an internal temperature of 165°F.

Its time to flip that burger……………………..

You’ll know to flip the patties when you see liquid pooling on the uncooked surface. Be careful not to char the meat or press down on the patties with a spatula while cooking, you’ll squeeze out all those flavorful juices.

Today’s Menu: Leftover Shrimp w/ Pasta Roni – Angel Hair Pasta with Herbs

 

 

 

For Breakfast I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam and had a cup of Bigelow Decaf Green Tea. A high of 79 degrees and rain in the morning and partly sunny for the afternoon. I had a rough night last night dealing with Phantom Pains all night into the morning. They were bad ones so I got little to no sleep. So I spent most of the day catching up on some sleep. Luckily I had an easy Dinner to prepare, Leftovers! I heated up the leftover Shrimp w/ Pasta Roni. I left the original post from yesterday below for instructions and description. Stay Safe and Take Care All!

So for the Shrimp part of the dish I used Meijer Brand Frozen Jumbo Shrimp. This is my frozen Shrimp of choice, best I’ve found. I had them in the freezer so I let them thaw overnight in the fridge. I love Shrimp and all Seafood. For the Shrimp; I started by rinsing the Shrimp off in cold water and letting it dry in a colander. Using a medium size skillet, that I sprayed with Pam Cooking Spray and a 1 tablespoon of Extra Virgin Olive Oil, that I heated on medium heat. I seasoned them with Old Bay Seasoning and a sprinkle of Morton’s Lite Salt and added the Shrimp to the skillet. Cooked them 2 minutes per side, turning the Shrimp once. And as the Shrimp was cooking I started to prepare the Pasta.

I love having Shrimp with the Pasta Roni – Angel Hair Pasta with Herbs. It comes with the Pasta Special Seasonings Packet and I added; 1 1/3 cups of water, 2/3 cups of 2% milk, and 2 tablespoons of Blue Bonnet Light Butter. Then to prepare it; In a medium saucepan bring water, milk, margarine or butter to a boil. Then slowly stir in pasta and Special Seasonings. Separate pasta with a fork, if needed. Return to a boil. Reduce heat to medium. Boil uncovered, 4-5 min. or until pasta is just tender, stirring frequently. Sauce will be thin. Let stand 3-5 min. to thicken. There’s 2 servings per box, leftovers coming tomorrow. Nice seasoning and the Parmesan Sauce is very flavorful. I topped the Pasta with some Kraft Reduced Fat Grated Parmesan Cheese and the Shrimp. Too good, this makes one easily prepared and delicious Shrimp and Pasta Dish! For Dessert/Snack later a Diet Mango/Tea Snapple to drink.

 

 

 

 

 

Pasta Roni Angel Hair Pasta with Herbs

Our Pasta Roni Angel Hair Pasta with Herbs flavor blends delicate angel hair pasta in a creamy herb sauce with other natural flavors. This delicately flavored dish is the perfect complement to your family’s favorite Italian-inspired recipes.

What You’ll Do
1 – In a medium saucepan bring water, milk and butter or margarine to a boil. Then slowly stir in pasta and Special Seasonings. Separate pasta with a fork, if needed. Return to a boil.
2 – Reduce heat to medium. Boil uncovered, 4-5 min. or until pasta is just tender, stirring frequently.

Chicken, Shrimp and Steak Skewers With Sofrito

Chicken, Shrimp and Steak Skewers With Sofrito

Ingredients
Preparation time: 25 minutes
Marinating time: 24 hours
Cooking time: 15 minutes.

1 1/4 pounds skinless chicken thigh meat, cut into 20 one-ounce segments
1 1/4 pounds lean skirt steak, fat removed, cut into 10 two-ounce segments
20 large shrimp
1 onion, chopped
1/4 red bell pepper, chopped
1/4 yellow bell pepper, chopped
1/4 green bell pepper, chopped
3 sweet chilies, chopped
2 cloves garlic, minced
1/2 cup fresh cilantro leaves
1 tablespoon vegetable oil
1 green pepper
1 red onion
1 medium papaya (optional)

Directions
Yield: 10 skewers
Serving size: 1 skewer

Sofrito:

1 – Place chicken pieces, steak pieces, and shrimp in a shallow dish. Place all sofrito ingredients in an electric blender. Blend into a coarse puree. Pour entire contents of blender over chicken, steak, and shrimp. Cover and marinate 24 hours in the refrigerator.

2 – When ready to grill skewers, slice green pepper into 20 strips, cut red onion into 20 wedges, and peel papaya and cut into 20 cubes. To assemble skewers, place 2 pieces of chicken, 1 piece of steak, 2 shrimp, 2 strips of green pepper, 2 wedges of red onion, and 2 cubes of papaya on each skewer, alternating for color and variety. Discard any remaining sofrito. Place the skewers on a hot grill and cook thoroughly, turning to heat evenly, for approximately 15 minutes until chicken and beef are cooked through. (If desired, you may instead broil skewers using the oven broiler.) Serve immediately.

Low to medium heat for sausages………………..

Most people cook brats and sausages way too hot. Those casings are really thin and rupture at anything over medium heat. Ruptured casings means a lot of flavor lost. Indirect grilling is a safe way to cook raw meat sausages. You don’t want your grill too hot. When you grill sausages, be sure to turn them regularly for even heating and to avoid bursting on the side.

Today’s Menu: Shrimp w/ Pasta Roni – Angel Hair Pasta with Herbs

 

 

For Breakfast I Scrambled a couple of Eggs, heated up 2 Johnsonville Turkey Breakfast Sausages, prepared some Simply Potatoes Hash Browns and had a cup of Bigelow Decaf Green Tea. 85 degrees with passing rain showers. Went to Menard’s after Breakfast. I was checking to see if their outdoor runway carpet came in yet, it didn’t. We are going to put it on the ramp outside leading to the kitchen. Hopefully it will work and it will save us from having to touch up the ramp twice a year. Taking my Hoveround Mobility Chair up it many times a day it wears it out. Took care of a few things in and around the house. For Dinner tonight a favorite of mine, Shrimp w/ Pasta Roni.
