Hold the Salt…..

When making homemade soup – Depending on the ingredients you’re adding, you don’t always know how much salt is going in. Many stocks have high levels of sodium, as do canned beans, vegetables and tomato paste. For this reason, save most of your seasoning until the end. Taste and adjust with salt and pepper as needed. Enjoy a hot homemade bowl of soup to warm these Winter’s Days!

Baked Potato………..

Wrapping a potato in foil won’t actually make it bake faster. Rubbing it lightly with vegetable oil, however, will. Also pierce the skin of the potato with a fork to allow the steam to escape. Doing this will give it a fluffy texture.

Save that Mustard Jar……..

When a mustard jar is almost empty, leave the last scrapings in the jar, and use it to make a salad dressing. Measure the other ingredients into the jar, and shake well. The remaining mustard will flavor the dressing.

When buying Spinach…….

Choose leaves that are crisp and have dark green with a nice fresh fragrance. Avoid those that are limp, damaged, or spotted. 1 pound of fresh spinach leaves will cook down to about 1 cup cooked spinach.

Get the tongs out…….

Always use tongs or a long handled metal spatula to turn the food, never a fork. Why allow all the flavorful juices out?

Say Cheese…..

Always bring cheese to room temperature one hour before serving it. Even if the cheese becomes a bit melty, the flavor will be much better.

For a tender pork loin….

When roasting a pork loin, cook it with the fat side down for the first 20 minutes, so that the fat begins to liquefy. Then turn the roast over for the balance of the cooking time, and the fat will baste the meat.

When buying Lobster……

Live lobsters should be active and should curl their tails under when picked up. Frozen lobster should be completely frozen. Thaw them according to frozen fish instructions.

Waste not…

Don’t throw away the outer leaves from a head of lettuce. They’ll com in handy when you need to cover foods in the microwave. You won’t have to use a paper towel, and the leaves will keep your food moist.

Beef patties…..

Use a gentle touch when shaping ground beef patties. Over handling will result in a firm, compact texture after cooking. Don’t press or flatten with spatula during cooking.
