Molasses and Honey Marinated Chicken Breasts

Recipe Ingredients:
4 large boneless, skinless chicken breast halves
1/2 teaspoon salt
1/8 teaspoon freshly ground pepper
3/4 cup whiskey
2 tablespoons coarse grain mustard
2 tablespoons molasses
2 tablespoons honey
1 lime, juiced
2 tablespoons olive oil
1 cup chicken stock
1/4 cup butter

Cooking Directions:
1 – Sprinkle chicken with salt and pepper.
2 – In small saucepan, place whiskey; boil over medium heat about 5 minutes, reducing liquid by half (all alcohol will evaporate). Remove from heat and add mustard, molasses, honey and lime juice. Stir to mix well; remove half of mixture and reserve.
3 – In remaining half, place chicken and marinate in refrigerator at least l hour or overnight.
4 – In large skillet, place oil over medium heat. Add chicken and cook, turning once, about 10 minutes or until fork can be inserted with ease. Remove chicken from skillet and keep warm.
5 – To skillet, add chicken stock and cook to reduce by two-thirds. Add reserved marinade and butter; simmer, stirring, until butter melts. Pour over chicken.

For this week’s second recipe I have a recipe for Habañero Apricot Cocktail Sausages. The perfect part Appetizer, Habañero Apricot Cocktail Sausages. These are made using JENNIE-O® Habañero Apricot Seasoned Turkey Sausages, which I haven’t tried yet but looking forward to! You’ll also need BBQ Sauce, Crushed Pineapple, Apricot Jam, Cider Vinegar, Light Soy Sauce, Coarse-Grain Mustard, and Jalapeño. Habañero Apricot Cocktail Sausages
Your party is not complete without these tasty cocktail sausages. Mix seasoned turkey sausage with an exciting blend of flavors for a bite-sized appetizer with big-time appeal.

INGREDIENTS
2 (19.5-ounce) packages JENNIE-O® Habañero Apricot Seasoned Turkey Sausage
1 (18-ounce) bottle barbecue sauce
1 (8-ounce) can crushed pineapple
⅓ cup apricot jam
2 tablespoons cider vinegar
1 tablespoon lite soy sauce
1 tablespoon coarse-grain mustard
1 jalapeño, sliced

DIRECTIONS
1) Cook sausage as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Cut into 2-inch pieces.

2) In Dutch-oven add sausages, barbecue sauce, pineapple, apricot jam, vinegar, soy sauce, mustard and jalapeño. Cook over medium-low heat 20 minutes. Serve with wooden picks.
* Always cook to an internal temperature of 165°F.

Spray skillet with nonstick cooking spray. Preheat skillet over medium-high heat. Place dinner sausage in hot skillet. Cook uncovered, turning occasionally, 17-19 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.
CONSUMER GAS GRILL:
TO GRILL:
Spray grill rack with nonstick cooking spray. Preheat grill over medium-high heat. Place dinner sausages on grill rack 4 inches from heat source. Grill approximately 16 to 18 minutes, turning occasionally. Always cook to well-done, 165°F. as measured by a meat thermometer
* Always cook to an internal temperature of 165°F.
