GRILLED SALSA STEAK APPETIZER
Ingredients

2 beef shoulder top blade (flat iron) steaks (about 8 ounces each)
1 cup prepared thick-and-chunky salsa, divided
1 to 2 tablespoons chopped fresh cilantro
24 large corn tortilla chips
1/2 cup prepared guacamole
24 fresh cilantro leaves (optional)

Directions

1 – Place beef steaks and 1/2 cup salsa in food-safe plastic bag; turn steaks to coat. Close bag securely and marinate in refrigerator 15 minutes to 2 hours. Combine remaining 1/2 cup salsa and chopped cilantro, as desired; cover and refrigerate until ready to use.
2 – Remove steaks from marinade; discard marinade. Place steaks on grid over medium, ash-covered coals. Grill, covered, 10 to 14 minutes (over medium heat on preheated gas grill, covered, 12 to 16 minutes) for medium rare (145°F) to medium (160°F) doneness, turning occasionally.
3 – Carve steaks into thin slices; cut slices into bite-size pieces. Arrange chips on platter. Top each chip evenly with reserved salsa mixture, beef and guacamole. Garnish with cilantro leaf, if desired. Serve immediately.
4 – One pound beef top loin steaks or top sirloin, cut 3/4 inch thick may be substituted for flat iron steaks. Grill top loin steaks 10 to 12 minutes (over medium heat on preheated gas grill, covered, 7 to 10 minutes) for medium rare (145°F) to medium (160°F) doneness, turning occasionally. Grill top sirloin steak 13 to 16 minutes (over medium heat on preheated gas grill, covered, 8 to 13 minutes) for medium rare (145°F) to medium (160°F) doneness, turning occasionally.

Recipe Yield: Makes 24 appetizers.

Black Bean-Avocado Salsa with Home-Baked Tortilla Chips
Enjoy this tasty heart healthy snack for your next celebration!

Recipe Ingredients:
Tortilla Chips:
6 (6-inch) soft corn tortillas
1 tablespoon canola oil
1/2 teaspoon garlic powder
1/2 teaspoon coarsely ground black pepper
1/4 teaspoon salt

Black Bean-Avocado Salsa:
1/2 ripe medium avocado, peeled, seeded and diced
1 medium tomatillo, papery skin removed, rinsed and diced
1 large jalapeno chili pepper, finely chopped (seeded, if desired)
1/3 cup chopped fresh cilantro leaves
1/4 cup diced red onion
1/2 of a (15-ounce) can no-salt-added black beans, rinsed and drained*
2 tablespoons canola oil
1 1/2 tablespoons fresh lime juice
1 1/2 tablespoons cider vinegar
1/4 teaspoon salt

Cooking Directions:
1 – Preheat oven to 350°F (175°C).
2 – For Tortilla Chips: Stack tortillas and cut into eight equal triangles (48 wedges total). Put triangles in single layer on two baking sheets. Drizzle triangles with canola oil and sprinkle with garlic powder and black pepper. Bake for 10 to 11 minutes or until chips are light brown and beginning to crisp. Remove from oven, place baking sheets on cooling racks, sprinkle evenly with 1/4 teaspoon salt and cool completely (about 10 minutes). As chips cool, they will become crisper. Store in airtight container up to 24 hours for peak flavor and texture.
3 – For Black Bean-Avocado Salsa: Combine avocado, tomatillo, jalapeno, cilantro, red onion, black beans, canola oil, lime juice, vinegar and salt in medium bowl. Serve with tortilla chips.
Makes 6 (1/3 cup) servings.

*Note: The leftover black beans may be stored in an airtight container in the freezer up to one month for later use.

Cheesy Turkey Chorizo Garlic Bread
A side dish that’s the star of the show. This inspired creation is guaranteed to be the talk of any meal or party. Its bold chorizo flavor pairs perfectly with fresh salsa and jalapeno slices.

INGREDIENTS
1 (16-ounce package) JENNIE-O® Chorizo Seasonings Turkey Sausage
2 tablespoons butter, melted
2 tablespoons olive oil
3 garlic cloves, minced
¼ cup chopped fresh cilantro leaves
1 (12-ounce) loaf Cuban bread, cut in half lengthwise
2 cups shredded Monterey Jack cheese
fresh salsa and jalapeno slices, if desired

DIRECTIONS
1) Cook turkey sausage as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
2) In small bowl, combine melted butter, oil and garlic. Brush cut sides of each bread slice with butter mixture. Sprinkle with cilantro and cheese and top with cooked chorizo. Place on foil-lined baking sheet.
3) Bake 20 minutes or until hot and bubbly. Cut into strips and serve with fresh salsa and jalapeno slices, if desired.
* Always cook to an internal temperature of 165°F.

Fiesta Turkey Dog

Time to turn up the heat on your hotdogs! This grilled turkey frank topping features a mouth-watering combination of pico-de gallo, avocado and jalapeño. Complete the scene with an ice-cold margarita and you’ve got yourself a fiesta in the making.

INGREDIENTS

8 JENNIE-O® Jumbo Turkey Franks
8 hot dog buns, split
2 cups pico-de gallo
2 avocados sliced
⅓ cup fresh cilantro leaves
garnish with queso blanco and jalapeño, slices, if desired.
DIRECTIONS

1) Prepare grill for medium-high heat. Grill turkey franks 4 to 5 minutes or until slightly charred and heated through. Place turkey franks into buns.
2) Top with pico-de gallo, avocado and cilantro . Garnish with queso blanco and jalapeño slices, if desired.
