CRANBERRY SALAD
A great salad for the holidays, combining fresh or frozen cranberries, pineapple and chopped nuts in a sugar-free gelatin base. Plus, it has 58% fewer calories than the traditional recipe. Recipe for Cranberry Salad from our Dessert recipe section.

Ingredients

2 cups fresh or frozen cranberries
1 cup water
1 cup Equal Spoonful or Granulated*
1 four-serving size cranberry or cherry sugar-free gelatin
1 cup boiling water
1 cup diced celery
1 can (7-1/4 ounces) crushed pineapple in juice, undrained
1/2 cup chopped walnuts

Directions

1 – Bring cranberries and water to a boil. Remove from heat when cranberries have popped open. Stir in Equal. Set aside to cool.
2 – Dissolve gelatin in 1 cup boiling water. Add cranberry sauce; mix thoroughly. Add celery, pineapple with juice and walnuts. Pour into a mold or bowl. Refrigerate several hours or overnight until firm.
NOTES:

Cranberry Sweet Potatoes
Surprise your holiday guests with a new take on sweet potatoes this year! Topped with a mixture of shallots, cranberries, maple syrup and more, our Cranberry Sweet Potatoes will have them asking for seconds.

Total Time – 1 hour, 10 minutes
Serving Size – Makes 8 Servings

Ingredients
4 – sweet potatoes
1 – tablespoon butter
1/4 – cup finely chopped shallot
1 – cup cranberries
1/3 – cup maple syrup
1/4 – cup cranberry juice
1/2 – cup chopped walnuts
1 – teaspoon Dijon mustard
salt and pepper, to taste – 2
tablespoons minced fresh chives

Directions
1) Heat oven to 400°F. Scrub sweet potatoes; pierce several times with a fork. Bake 1 hour or until tender.

2) In small saucepan over medium-high heat, melt butter. Add shallots. Cook 3 to 5 minutes, stirring, until tender. Stir in cranberries, syrup and cranberry juice. Bring to a boil. Reduce heat; simmer, covered, 10 to 15 minutes or until berries pop, stirring occasionally. Stir in walnuts and mustard; heat through. Season to taste with salt and pepper.

3) When cool enough to handle, cut each potato lengthwise in half. Season each half with salt and pepper, to taste. Top with cranberry mixture. Sprinkle with chives.

Gorgonzola Bacon Polenta Bites
Slices of baked polenta are topped with a sweet onion, walnut and dried cherry compote, crisp bacon and a slice of gorgonzola cheese.

Recipe Ingredients:
24 (1/2-inch thick) slices of polenta from a prepared roll
2 tablespoons butter
2 cups sweet onion, thinly sliced
1/2 cup walnuts, chopped
1/4 cup dried cherries, coarsely chopped
1 teaspoon brown sugar, packed
1 tablespoon fresh rosemary, minced
Salt and ground black pepper, to taste
8 slices bacon, cut into 2-inch long strips and cooked
6 ounces Wisconsin Creamy Gorgonzola cheese, sliced

Cooking Directions:
Preheat oven to 350°F (175°C).
Arrange polenta slices on a baking sheet, and bake 5 to 7 minutes per side, until hot.
In a large skillet, heat butter over low heat. Add onion and cook 15 minutes, stirring occasionally.
Add walnuts, cherries, brown sugar, rosemary, salt and pepper and cook 8 to 10 minutes more, until onions are caramelized.
Top each polenta bite with a bacon slice, 1 tablespoon onion mixture and a slice of Wisconsin Gorgonzola cheese.
Serve immediately.
Makes 24 appetizer servings.

Winter Fruit and Spinach Salad
Requiring just five minutes and five ingredients, this fresh and healthy spinach salad makes the most of the cold-weather harvest!

Ingredients
Preparation time: 5 minutes

2 cups baby spinach leaves, washed and drained
1 medium (about 3 inches in diameter) apple
1 medium pear (about 3 ounces)
1/4 cup chopped walnuts
2 dried dates, chopped

Directions
Yield: 4 servings
Serving size: 1 cup

1 – Place spinach leaves in a salad bowl. Core and dice apple and pear, leaving skin on. Add to spinach leaves. Top with chopped walnuts and dates. Toss gently with salad tongs and serve. This salad does not need a dressing, but if one is desired, use a nonfat dressing or a drizzle of apple cider vinegar.

Greens and Pear with Maple-Mustard Dressing
A quick and easy salad that’s bursting with fall flavors!

Ingredients
1/4 cup maple syrup
1 tablespoon Dijon mustard
1 tablespoon olive oil
1 tablespoon balsamic or cider vinegar
1/8 teaspoon black pepper
4 cups torn mixed salad greens
1 medium red pear, cored and thinly sliced
1/4 cup sliced green onions
3 tablespoons dried cherries
2 tablespoons plus 2 teaspoons chopped walnuts, toasted*

Directions
Yield: 4 servings
Serving size: 1/4 of total recipe

1 – Whisk maple syrup, mustard, oil, vinegar, and pepper in small bowl until well blended.

2 – Combine greens, pear, green onions, cherries, and walnuts in large serving bowl. Drizzle with dressing; gently toss to coat.

*Note: To toast walnuts, spread in single layer on baking sheet. Bake in preheated 350°F oven 5 to 7 minutes or until fragrant, stirring occasionally.

Chewy Chocolate Brownies
Ingredients
Preparation time: 10 minutes
Baking time: 25 minutes

Vegetable cooking spray
1/4 cup plus 3 tablespoons all-purpose flour
1/2 cup cocoa
1/4 teaspoon salt
2 egg whites
1 whole egg
1/2 cup plus 2 tablespoons sugar
6 tablespoons unsweetened applesauce
2 tablespoons oil
1 1/2 teaspoons vanilla
2 tablespoons chopped walnuts or pecans

Directions
Yield: 12 brownies
Serving size: 1 brownie

* Preheat oven to 350°F. Spray an 8-inch square baking pan with vegetable cooking spray. In a medium bowl, combine flour, cocoa, and salt. Mix well. In a separate large bowl, whisk together egg whites, egg, sugar, applesauce, oil, and vanilla. Stir in the flour mixture until just blended; do not overmix. Pour batter into the prepared pan and sprinkle walnuts on top. Bake for 25 minutes, until a toothpick inserted in the center comes out clean. Cool the brownies on a wire rack for at least 15 minutes. Cut into 12 rectangles.
