Lemon Pepper Chicken Wings
Looking for a twist on your typical plate of buffalo chicken wings, laden with salt, fat and — if they’re slathered in barbecue sauce — sugar? You’ll love this easy recipe! With just six ingredients and 2 grams of carbohydrate per serving, it’s the perfect homemade comfort food.
Ingredients

Large baking sheet, lined with foil, with a wire rack set on top
2 pounds free-range chicken wings
2 tablespoons grated lemon zest
2 tablespoons freshly squeezed lemon juice
1 tablespoon freshly ground black pepper
1 teaspoon sea salt

Directions

1 – Preheat oven to 375°F (190°C).

2 – Pat chicken dry with paper towels, removing as much moisture as you can. Arrange on the wire rack over the prepared baking sheet, leaving space in between, if possible.

3 – Roast in preheated oven for 30 to 35 minutes, flipping them over halfway through, until juices run clear when chicken is pierced.

4 – Meanwhile, in a large bowl, combine lemon zest, lemon juice, pepper, and salt.

5 – Add wings to the lemon sauce and toss until evenly coated. Serve hot.

Yield: 4 servings. Serving size: 1/4 of recipe.

Fajita Chicken Wings with Avocado Dipping Sauce

Recipe Ingredients:
2 1/2 pounds chicken wings, split at the joint, wingtips removed
2 packages of fajita or taco seasoning
3/4 cup ketchup
1/4 cup vegetable oil
1/4 cup Worcestershire sauce
1 teaspoon salt

Cool Ranch Avocado Dipping Sauce:
2 Hass Avocados from Mexico
1 package ranch dressing mix
1/2 cup sour cream
1 tablespoon lemon juice

Cooking Directions:
1 – Mix the fajita seasoning, ketchup, vegetable oil, Worcestershire sauce and salt in a one gallon zipper-style plastic bag. Add chicken wings, seal bag and shake until the wings are completely covered in the marinade. Refrigerate at least one hour, or overnight.
2 – Preheat oven to 375°F (190°C).
3 – Place wings in a single layer onto a lightly greased or nonstick baking sheet. You may have to use two baking sheets to fit all of the wings.
4 – Place wings in oven and bake for 25 to 30 minutes. Serve warm with the Cool Ranch Avocado Dipping Sauce (recipe below).
5 – For Cool Ranch Avocado Dipping Sauce: In a small bowl, combine the avocado, ranch dressing mix, sour cream, and lemon juice. Mix thoroughly until smooth.
Makes 4 servings.

Broiled Chicken Wings with Two Sauces
Broiled chicken wings served with two sauces are sure to satisfy everyone’s taste buds.

Recipe Ingredients:
Chicken Wings:
2 pounds chicken wings, tips removed and discarded, then cut into 2 pieces
3 tablespoons canola oil
Seasoning salt and seasoning pepper to taste

Peach Sauce:
3/4 cup peach jam or preserves
1/3 cup lime juice
2 cloves garlic, minced
1/2 teaspoon cumin
1/2 teaspoon dried chili flakes

Jalapeño Chile Pepper Sauce:
2 jalapeño chile peppers, seeded and finely chopped
2 cloves garlic, minced
1/3 cup granulated sugar
2 tablespoons water
1/2 cup white wine vinegar
1 tablespoon grated ginger

Cooking Directions:
1 – For Chicken Wings: Preheat broiler. Prepare chicken wings. Brush wings with canola oil and sprinkle liberally with salt and pepper. Spread wings on rack of broiler pan. Broil 4 to 5 inches from heat, turning once until wings are cooked, about 20 minutes. While wings are broiling, prepare sauces.
2 – For Peach Sauce: Combine peach jam, lime juice, garlic, cumin, chili flakes in a food processor and blend mixture until smooth. Pour into small saucepan and heat and simmer mixture over low heat, about 10 minutes. Pour into sauce dish and cool to room temperature.
3 -Jalapeño Chile Pepper Sauce: Combine chopped jalapeño chile peppers, garlic, sugar, water, vinegar and ginger in saucepan. Simmer over low heat for about 10 minutes or until slightly thickened. Pour into sauce dish and cool to room temperature. Serve sauces with hot wings.
Makes 4 to 5 servings.

Butterflied Grilled Chicken with a Chile-Lime Rub
A quick and efficient way to cook a whole bird on the grill is to butterfly, or “spatchcock” it. When cooking a whole chicken on the grill, try searing the chicken first over direct heat then finish cooking over indirect heat (as instructed in this recipe). Baked Chicken Wings w/ Baked Fries and Light Texas Toast

Today’s Menu: Baked Chicken Wings w/ Baked Fries and Light Texas Toast

 

For Breakfast I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. 68 degrees and more rain moving in later in the afternoon. I had one of those rough nights dealing with Phantom Pains! So with very little to no sleep overnight I caught up on sleep after the Phantom Pains finally let up around 11:00 this morning. For Dinner tonight its Baked Chicken Wings w/ Baked Fries and Light Texas Toast.

 

I’m using Kroger Oven Roasted Chicken Wings. I started by heating the oven on 425 degrees F., same temperature I’ll need for my Fries and Texas Toast. I took a small Baking Sheet and lined it with foil. Then sprayed it with Pam Non Stick Cooking Spray. Spread the Wings out across the sheet and baked them for 33 minutes, turning them once after 17 minutes. I love Wings, and these are excellent Wings! Served them with Dipping Sauces of Hidden Valley Buffalo/Ranch Dressing and Litehouse Light Blue Cheese Dressing.

 

With the oven already heated I baked my Fries. I used Ore Ida Crinkle Cut Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup.

 

 

I also baked up some slices of New York Bakery Light Texas Toast. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.
