Today’s Menu: Guthrie’s Chicken Fingers – Snack Box

 

 

 


For Breakfast this morning I just had a cup of Bigelow Decaf Green Tea. Partly Cloudy and 91 degrees out today, rain moving in later. Very long day they put in the new carpet in my bedroom and bathroom. I moved everything I could and they moved the heavy stuff. I hate moving even if it’s moving things like I did today! But It’s done and now getting everything back in place. Very tired so the Kitchen is closed. Mom was in the mood for Chicken so I went to Guthrie’s Chicken Fingers and brought home Dinner.

 

 

 

 


The Chicken Fingers are always nice size and have an excellent Breading and Seasoning. It comes with a container of the Guthrie’s Signature Sauce. Very good Dipping Sauce, good recipe! It also comes with Crinkle Cut Fries which are excellent also! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink. Today’s Menu: Guthrie’s Chicken Fingers – Snack Box

 


For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hash Browns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. I love combinations of Potatoes and Ham. Partly cloudy, 95 degrees and humid out there today. We have an excessive heat alert Friday till Sunday. They say temperatures will be around 95 degrees and up with a heat index of around 105 degrees! Hello air-conditioner! Anyway I got some yard work done today. I got lazy and didn’t feel like cooking and Mom was in the mood for Chicken so I went to Guthrie’s Chicken Fingers and brought home Dinner.

Today’s Menu: 3 Chicken Fingers, Fries, and Guthrie’s Signature Sauce

 

 

 

To start my morning off I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam and heated up a couple of Johnsonville Turkey Breakfast Sausage Links. I also had a cup of Bigelow Decaf Green Tea. Outside it’s a beautiful day, 60 degrees and sunny this morning! 82 degrees, sunny, and the humidity wasn’t too bad. Well we agreed to terms with a land scape service to redo the front flower bed. We’re doing away the what’s left of the Roses and replacing it all will different Bushes. It should look good when done. They can’t start until August, booked solid. I was driving around a bit and I don’t think I’ve ever seen so many places wanting people to work! It seemed every business had signs out wanting to hire people. Sure wish I was able to get back in the job market. There’s a lot of money to be made out there! I got lazy and didn’t feel like cooking so I went to Guthrie’s Chicken Fingers and brought home Dinner.

Just a cup of Bigelow Decaf Green Tea for Breakfast, just not feeling up to par today. I haven’t felt real good the few days. Hope it passes soon! 79 degrees and partly cloudy out today. Had a passing shower also. I laid back down after Breakfast. Later on went to see Dad for a while. Back home didn’t feel like cooking so I went to Guthrie’s Chicken Fingers and brought home Dinner.

Chicken fingers, also known as chicken tenders, chicken goujons, chicken strips or chicken fillets, are chicken meat prepared from the pectoralis minor muscles of the animal. These strips of white meat are located on either side of the breastbone, under the breast meat (pectoralis major).

Chicken fingers are prepared by dipping chicken meat in a breading mixture and then deep-frying them, in a manner similar to the preparation of Schnitzel.

 

 

In the Northeastern United States, chicken fingers served in Chinese restaurants are often made with an egg batter and have a smooth texture. They are commonly served either as an appetizer or as a main dish.

In other recipes, the breading mixture for chicken fingers can lack eggs and the texture of the dish itself can often be rather coarse. This version is often served alongside various dipping sauces. The dipping sauces can include: ketchup, blue cheese dressing, ranch dressing, barbecue sauce, honey mustard, Buffalo wing sauce, butter and garlic, plum sauce, curry mayonnaise, or sweet and sour sauce. Chicken fingers of this kind are often served in a basket with French fries, served on a garden salad, or in a sandwich, such as a wrap or on a bun.

Chicken fingers are offered by various fast food chains such as Chick-fil-A, Zaxby’s, Raising Cane’s, Guthrie’s, Dairy Queen, KFC, Spatola Restaurant, McDonald’s “Chicken Select Strips” and Church’s Chicken “Tender Strips”. They are also a common offering on children’s menus in American restaurants.

A chicken nugget is a chicken product made from either meat slurry or chicken breasts cut to shape, breaded or battered, then deep-fried or baked. Fast food restaurants typically fry their nuggets in vegetable oil, such as coconut oil.

The chicken nugget was invented in the 1950s by Robert C. Baker, a food science professor at Cornell University, and published as unpatented academic work. Dr. Baker’s innovations made it possible to form chicken nuggets in any shape. McDonald’s recipe for Chicken McNuggets was created on commission from McDonald’s by Tyson Foods in 1979 and the product was sold beginning in 1980.

Some fast food restaurants have launched vegetarian alternatives. McDonald’s served Garden McNuggets made of beans, Irish fast food chain R. Haecker’s offers a veggie nugget meal made with beans and cabbage, and Swedish fast food restaurant Max Hamburgare offers a dish containing nuggets made of falafel.
The largest recorded chicken nugget weighed 51.1 pounds (23.2 kg) and was 3.25 feet (0.99 m) long and 2 feet (0.61 m) wide and was created by Empire Kosher. It was unveiled at Kosherfest in Secaucus, New Jersey on October 29, 2013.

Smart Ones Chicken and Fries
Muggy day out there today, showers on and off and in the 80’s. Finished cleaning the shed today, finally. Took a lot of garbage out to the curb. Got the cart out and helped Mom spray wash the outside of the house siding also today. Life in a wheelchair can be real frustrating at times. Certain things you just can’t do, back when I had both legs I was able to do and help with everything. But all I can do is make the best of it. As my favorite saying says, “The world is what you make of it. If it doesn’t fit you make alterations.” It’s still frustrating at times though. For dinner tonight a new one Weight Watchers Smart Ones Smart Creations Chicken Strips & Fries.

 

 

 

While at Meijer the other day I bought a few Smart Ones Frozen Dinners. Meijer has a fantastic selection of these dinners. They’re produced by Weight Watchers with a nice variety of different dinners and desserts. So this one must be one their new dinners, Weight Watchers Smart Ones Smart Creations Chicken Strips & Fries. It heats up in the microwave in their new Crisping Tray, 3 minutes and 15 seconds. They’re 310 calories, 3g fat, and 28 net carbs. Nice size portions, seasoned good, and a good Chicken Strips and Fries meal all for under 400 calories! I did add a bit of Sea Salt to the Chicken and Fries. I also purchased a couple of other new Smart Ones Meals, Loaded Potato Soup and Fish and Chips. For dessert later a Weight Watcher’s Triple Chocolate Brownie Bliss, another new favorite of mine!

A bit nippy out this morning and really the whole day. It was around 36 degrees this morning when I went out to get the morning paper. It really didn’t get to warm all day, around 58 degrees with a cool breeze. Tis the Season! For dinner tonight I prepared Whole Grain Breaded Chicken Strips w/ Rice A Roni Whole Grain Blends Chicken and Herb Classico and Boiled Mini Carrots.

 

 

For the Chicken Strips I used Perdue Whole Grain Breaded Chicken Breast Strips. I used these a while back and I always have a package in the freezer ready to use! Love these, good seasoning, breading, and their nice size strips breaded in whole grain. Easy to prepare; just bake them for 12 minutes at 425 degrees , flipping them over after 6 minutes and their done.

 

 

To go with the Chicken I boiled some Mini Carrots and, for the first time, I prepared some Rice A Roni Whole Grain Blends Chicken and Herb Classico. Another keeper product! Just bring some water to a boil, simmer everything, and let stand and it’s done! Excellent Rice Dish, very good tasting and really seasoned well. Great side dish for any Chicken Dishes. Later tonight for dessert I had some Baked Whole Grain Tostios Scoops with some of the Kroger Brand Peach and Mango Salsa I purchased for a dish for last night’s dinner.

Today’s Menu: Skillet Chicken with Toasted Sesame and Garlic/Ginger w/ Creole Roasted Chicken Rice and Mini Carrots

 

 
Our prayers and thoughts go out to all those affected by the devastating Tornado in Oklahoma, just hope you have a speedy recovery. Still hot and humid around here, what happened to our Spring weather! For dinner I tried a couple of new ones out for dinner. I prepared Skillet Chicken with Toasted Sesame, Garlic, and Ginger w/ Creole Roasted Chicken Rice.

 
I used Weight Watchers Chicken Tenders. They come frozen trimmed and ready and are only 60 calories, 99% fat free, and 0 carbs per Skillet Chicken Creole Rice 004serving (1 Chicken Tender). Just thaw and prepare them anyway you want. I skillet fried these in Canola Oil and seasoned them with Sea Salt and Ground Black Pepper. After browning them I added Campbell’s Toasted Sesame with Garlic and Ginger Skillet Sauce. I just brought the Sauce and Chicken to a boil, reduced the heat and covered and continued to cook for about 5 minutes. First time I’ve tried the Campbell’s Skillet Sauce and I’ll have to keep in stock! Quick and easy way to prepare your Chicken. Fantastic taste with a good Garlic and Ginger taste. They have several different kinds of Skillet Sauces, which I’ll be trying! I’ve left the product info at the end of the post.

 
I also prepared another first timer, Tony Chachere’s Creole Roasted Chicken Flavored Dinner Mix (Rice). Another quite easy one to prepare also. Just bring the mix to a boil,in water, and simmer for 25 minutes and your done. Made a delicious Rice dish! To serve I made a bed of the Rice and topped it with the Chicken and Sauce, makes one tasty dish! I’ll have to have this again. I also had a side of boiled Mini Carrots. For dessert later a Skinny Cow Ice Cream Bar.

Today’s Menu: Baked Parm Chicken Tenders w/ Green Beans and Sliced New Potatoes

 

 

 

I had planned on another Chicken Tender dish than the one I ended up preparing but by mistake I picked up the wrong Sriracha Sauce up at Walmart this morning. I didn’t know there was a much more hotter version of the normal Sriracha Sauce, and bu hotter I MEAN HOTTER! I sampled it when I was making the sauce and it set me on fire! So needless to say I went with Baked Parm Chicken Tenders. Tonight I prepared Baked Parm Chicken Tenders w/ Green Beans and Sliced New Potatoes.

 

 

To prepare them I’ll need; 1 Pound Chicken Tenders, 1 Cup Bread Crumbs, 1/2 Cup Grated Parm Cheese, 1 Cup of Flour, 1/2 Cup Egg Baked Parm Chicken Tenders 003Beater’s (2 Eggs), and 2 Teaspoon Sea Salt and Ground Black Pepper to taste. first preheat the oven on 350 degrees. Then In a small bowl,pour Egg Beater’s. In medium bowl combine flour, salt and black pepper. In another small bowl, add bread crumbs and parm cheese. Dredge each strip of chicken in flour, then egg, then bread crumbs. Repeat for all chicken strips. Lay coated chicken strips on sheet pan. Use parchment paper for less sticking. Bake the chicken strips in oven for about 25-30 minutes, or until chicken is completely cooked and crisp. Remember to turn the chicken strips about 1/2 way through cooking. To serve with your ranch dressing, bleu cheese dressing, ketchup, mustard or favorite dip. I used Litehouse Lite Bleu Cheese Dressing/Dip.

 

 

 

For side dishes I heated up a can of Del Monte Sliced New Potatoes and a single serving can of Del Monte Cut Green Beans. For Dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.

 

 

 
Baked Parm Chicken Tenders
Ingredients:
1 Pound Chicken Tenders
1 Cup Bread Crumbs
1/2 Cup Grated Parm Cheese
1 Cup of Flour
1/2 Cup Egg Beater’s (2 Eggs)
2 Teaspoon Sea Salt
Fresh Cracked Black Pepper to taste
Directions:
* Pre heat oven to 350 degrees.
* In small bowl,pour Egg Beater’s. In medium bowl combine flour, salt and black pepper. In another small bowl, add bread crumbs and parm cheese.

Today’s Menu: Cheddar Bacon Chicken Breasts w/ Kicked Up Chili Beans and Seasoned Diced Potatoes

 

 

Typical March weather here today. Woke up with the ground covered with new snow, then the sun came out and melted the snow, then it started to snow so hard you couldn’t see anything out, and now more sunshine, and so on and so for March weather! For dinner tonight, Cheddar Bacon Chicken Breasts w/ Kicked Up Chili Beans and Seasoned Diced Potatoes.

 

 

I think the original recipe for Chicken called for Chicken Tenders but I used Then Cut Chicken Breasts instead and they came delicious!Baked Cheesey Crumb Chick Breasts 006 To make these I needed 1 Egg, OR 1/4 Cup Egg Beater’s, 1/2 Cup Progresso Italian Bread Crumbs, Sea Salt and Ground Pepper for Seasoning, 1/2 cup finely shredded Cheddar cheese (2 oz), 1 Package or jar (3 oz) Cooked Real Bacon Bits or Pieces, and 1 package uncooked Thin Cut Chicken Breasts. To prepare them I pre-heated the oven to 400°F. Sprayed large foil covered cookie sheet with cooking spray. Then in shallow bowl added my 1/4 cup Egg Beater’s. In large resealable food-storage plastic bag, placed bread crumbs, cheese and bacon. Dipped the chicken into Egg Beater’s then placed them in the bread crumb bag; seal and shaken to coat. Placed chicken on cookie sheet and baked for 20 to 25 minutes, turning once, until chicken is no longer pink in center and bread crumbs are golden brown. I served them with a side of Litehouse Bleu Cheese Dressing/Dip. The Chicken came out moist, tender, and very flavorful! And Bleu Cheese with Chicken anytime!

 

 

For sides to go with the Chicken Kicked Up Chili Beans and Seasoned Diced Potatoes. For the Beans I used Joan of Arc Spicy Chili Beans and added Jack Daniel’s BBQ Sauce, Crumbled Turkey Bacon Bits, Splenda Brown Sugar, and a few dashes of Frank’s Red Hot Sauce. I left the recipe at the end of the post. The Potatoes were Simply potatoes Steakhouse Seasoned Diced Potatoes that were leftover from the other night, just reheated and served. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

 

 

Cheddar Bacon Chicken Breasts

Ingredients:

1 Egg, OR 1/4 Cup Egg Beater’s
1/2 Cup Progresso Italiain Bread Crumbs
1/2 cup finely shredded Cheddar cheese (2 oz)
1 Package or jar (3 oz) Cooked Real Bacon Bits or Pieces
1 package uncooked Thin Cut Chicken Breasts (not breaded)
Chive and Onion Sour Cream potato topper, if desired

Directions:

1 Pre-Heat oven to 400°F. Spray large cookie sheet with cooking spray.
2 -In shallow bowl, beat egg. In large resealable food-storage plastic bag, place bread crumbs, cheese and bacon. Dip chicken into egg. Place in bread crumb bag; seal and shake to coat. Place chicken on cookie sheet.
3 -Bake 20 to 25 minutes, turning once, until chicken is no longer pink in center and bread crumbs are golden brown. Serve with topper.

 

 

Kicked Up Chili Beans

Ingredients:

1 Can Spicy Chili Beans, Brand your choice. I use Joan of Arc
3 Pieces Crumbled Turkey Bacon. You can use Turkey or Turkey Bacon Crumbles
4 Shakes Frank’s Red Hot Sauce, or to taste
1/2 Cup Jack Daniel’s Honey Smokehouse BBQ Sauce
1/2 Tablespoon Splenda Brown Sugar or to taste
1 Teaspoon Ground Mustard
Directions:

Empty can of Beans into a medium sauce pan
Add Turkey Crumbles, Brown Sugar, Ground Mustard, Frank’s Red Hot Sauce, Honey BBQ Sauce, stir and mix.
Heat until desired temperature, and serve
