Enchiladas American-Style
Flour tortilla enchiladas, filled with both cheddar and Monterey Jack cheese and chopped onion, are baked in a simple chili-seasoned tomato sauce.

Recipe Ingredients:
3 (8-ounce) cans tomato sauce
1 1/2 teaspoons chili powder
1/4 teaspoons salt, or to taste
8 (7-inch) flour tortillas
1 cup (4 ounces) Wisconsin cheddar cheese
1 cup (4 ounces) shredded Wisconsin Monterey Jack cheese
1 cup chopped onion

Cooking Directions:
1 – Simmer the tomato sauce, chili powder and salt together, stirring occasionally.
2 – In a separate dish, mix shredded cheeses and onion together.
3 – Dip tortillas, one at a time, in the sauce; place on baking pan. Put 3 or 4 tablespoons of the cheese-onion mixture on each tortilla. Roll and place folded side down; cover with remaining sauce.
4 – Bake in a preheated oven at 350°F (175°C) for 10 minutes.

Makes 4 (2 enchilada) servings.

Today’s Menu: Seasoned Haddock w/ Creamy Cheddar Pasta

 

 

To start this snowy morning off I toasted a couple of slices of Healthy Life Whole Grain Bread, Scrambled a couple of Eggs, fried 2 Jennie – O Turkey Breakfast Sausage Links, and made the daily morning cup of Bigelow Decaf Green Tea. It started snowing late yesterday but the ground was to warm and it didn’t stick, at first. Eventually though it started sticking. We’ve had snow flurries on and off most of the day. It was 16 degrees this morning and we had a high of only 31. What happened to our early Spring! The cold looks as though it’s killed all the early flowers that had come out. The cold is here for a few days they say. Sure be glad for warmer weather! Dad is doing better. They thought he had shingles but it turned out to be a rash from an anti biotic they had given him. Not sure when he’s coming home. So for Dinner tonight I prepared a Seasoned Haddock w/ Creamy Cheddar Pasta.

 

I had purchased 2 Haddock fillets from Kroger a while back. I had rinsed both fillets and cut into smaller pieces. I ended up with 3 bags, I had one the day I purchased them and froze the other 2. So I grabbed one of the plastic bags and laid it in the fridge overnight to thaw. So to prepare them I seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. Shook off the excess and pan fried them in Extra Virgin Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love Haddock it cooks up so nicely and I love the flavor and how meaty it is.

 

 

To go with my Seasoned Haddock I prepared a new dish, Bear Creek Creamy Cheddar Pasta Mix. I had tried the Bear Creek Potato Soup Mix and Creamy Chicken Pasta, which both were excellent! To prepare it; Grabbed a 2 quart sauce pan, added 4 cups of water. Heated to a rolling boil. Whisked in the Pasta and Sauce Mix. Brought the mixture back to a rolling boil. Reduced the heat to a medium boil and cooked for 15 minutes, stirring occasionally.

 

 

 

Removed from the heat and let it sit for 8 minutes. The Sauce thickened up beautifully as it cooled. Another excellent product from Bear Creek. Really enjoy these all these Products! I seasoned the Pasta with just a little sea Salt and Ground Black Pepper. The Pasta and Haddock make a perfect pairing! For Dessert later a Weight Watcher’s Divine Triple Chocolate Ice Cream Bar.

Well Happy Mother’s Day to all the Moms out there and a special Happy Mother’s Day to my Mom, I love you so much!

 

White Cheddar Chipotle Pasta and Hardwood Smoked Turkey Sausage 006
For Breakfast this morning it was toast and gravy. I toasted a couple of slices of Healthy Life Whole Grain Bread and I topped them with my favorite Gravy, Pioneer Peppered White Gravy! I’m having a problem with my right leg. It’s been giving me a lot of pain if I’m upon my walker or crutches. Aches like it did when I had my hip replaced 7 years ago. Hope that’s not it and nothing serious. Anyway Mom left about noon to go over to the rehab center to see Dad, who is not doing too good. Really worried about him. I stayed home today and caught up on some laundry for Mom and some house cleaning. Mom had dinner with Dad tonight so I was cooking for 1 tonight. I prepared some White Cheddar Chipotle Pasta and Hardwood Smoked Turkey Sausage.

 

 

White Cheddar Chipotle Pasta and Hardwood Smoked Turkey Sausage 001
I came across this while at Meijer a couple of weeks ago and just getting around to trying it, Zatarain’s White Cheddar Chipotle Pasta Dinner Mix. To make it I’ll need; 1 package Zatarain’s® White Cheddar Chipotle Pasta Dinner Mix, 1 package Butterball Hardwood Smoked Turkey Sausages (cut into 1/2-inch slices), 2 cups 2% Milk, and 1 cup Water.

To prepare it, cook the sausage in large skillet on medium heat for 5 minutes or until lightly browned; stirring occasionally. Drain fat from skillet. Stir in the milk, water and Pasta Dinner Mix. Bring to boil, stirring occasionally. Reduced the heat to low; covered and simmered 15 minutes (until pasta is tender), stirring occasionally. When done removed it from the heat. Let it stand 5 minutes. The sauce thickened upon standing. Just stir before serving.

 

 

 

 

Italian Loaf Bread
And it’s another winning dish from Zatarain’s! The White Cheddar Chipotle Pasta is fantastic. Nice and Cheesy with a hint of heat, and I added a few shakes of Frank’s Hot Sauce and a sprinkle of Kroger Private Selection Shredded 3 Cheese Blend. Excellent Pasta and Sausage Dish! I also had baked a loaf of Pillsbury Italian Loaf Bread. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

 

 

 
Zatarain’s White Cheddar Chipotle Pasta Dinner Mix

Made of savory white cheddar cheese with a chipotle kick, Zatarain’s White Cheddar Chipotle Pasta Dinner Mix infuses the authentic flavor of New Orleans with the fun of pasta. Add smoked sausage or ground beef of your choice, and bring more deliciousness to the table tonight.

Usage tips

Prep Time: 5 minutes Zatarain's White Cheddar Chipotle Pasta Dinner Mix
Cook Time: 20 minutes
Makes 5 (1-cup) servings.

YOU WILL NEED:
1 package Zatarain’s® White Cheddar Chipotle Pasta Dinner Mix
1 package (14 to 16 oz.) smoked sausage, cut into 1/2-inch slices*
2 cups milk
1 cup water
DIRECTIONS:
1. COOK sausage in large skillet on medium heat for 5 minutes or until lightly browned; stirring occasionally. Drain fat from skillet.
2. STIR in milk, water and Pasta Dinner Mix. Bring to boil, stirring occasionally. Reduce heat to low; cover and simmer 12 to 15 minutes or until pasta is tender, stirring occasionally.
3. REMOVE from heat. Let stand 5 minutes. Sauce will thicken upon standing. Stir before serving.

*Substitute 1 pound ground beef for the sausage. Drain fat from skillet.

VARIATIONS
Chicken & Broccoli: Omit smoked sausage. Heat 1 tablespoon oil in large skillet on medium-high heat. Add 1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes. Continue as directed, adding 2 cups fresh broccoli florets after pasta mixture comes to boil in Step 2.

Sausage & Pepper: Omit smoked sausage. Heat 1 tablespoon oil in large skillet on medium-high heat. Add 1 medium red bell pepper, cut into thin strips, and 1/2 cup thinly sliced onion; cook and stir 3 minute or until tender-crisp. Remove from skillet. Brown 1 pound bulk Italian sausage in skillet. Drain fat. Continue as directed, stirring in vegetable mixture at the end of Step 2.

Turkey Bacon Breakfast Bake
Ingredients
1 (8-ounce) can crescent roll dough
3 cups shredded frozen hash browns, thawed
3 cups egg substitute or 12 eggs
6 slices JENNIE-O® Turkey Bacon, cooked and chopped
1 cup shredded Cheddar cheese
Directions
Heat oven to 350°F. Cook turkey bacon as specified on the package; set aside. Spray 9×13-inch baking pan with cooking spray. Place crescent roll dough in bottom of pan, pinching seams together to seal.

Spread hash browns over dough. In mixing bowl, whisk eggs and pour over hash browns. Top with crumbled bacon. Bake 40 to 45 minutes or until set. Sprinkle cheese over top and return to oven until melted.

Another day and another 2″ of snow! We just get our driveway and walks clear and snows again, HO HO HO! They say by Thursday though it’s going to hit 50 degrees. Dropped of the food I had bought for the Free Food Store and that was about it for the day. I did get in an on-line Scrabble Tournament, love playing Scrabble! For dinner I kept it simple and a real comfort food meal. I prepared a Grilled Ham and Swiss Sandwich w/ Chunky Baked Potato with Cheddar and Bacon Soup.

My cousin gave my Mom an Appleton Farms Smoked Ham-Shank Portion, which quite possibly be the best tasting Baked Ham we had ever tasted or prepared! Just an incredible taste and very moist and tender. This is one good Ham. My cousin and her family buy them all the time from Aldi, at 99 cents a lb. We’ll be buying our Hams there from now on. I sliced some Ham off for the Sandwich. I used Klosterman Wheat Bread and 2 slices of Sargento Ultra Thin Swiss Cheese. Put the Ham and Cheese on the Bread and got out the flat top griddle. I heated the griddle up putting a 1/2 tablespoon of I Can’t Believe It’s Not Butter on it and then grilling my SandwicH, about 3 minutes each side till golden brown.

For my Soup I used Campbell’s Chunky Baked Potato With Cheddar and Bacon Bits. I love thick Soups and this one works! It’s thick with nice chunks of Potato, it’s 200 calories and 20 net carbs per serving. As always the simplest meals are sometimes the best! For dessert later a Del Monte No Sugar Added Mango Chunk Cup.
