Today’s Menu: Fried Oysters w/ Roasted Cauliflower and Summer Crisp Corn

 

 

For Breakfast this morning I toasted a Aunt Millie’s Living Carb Smart English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. Well it’s been a while since I’ve made a Dinner Post. But now I’m fully recovered from the fall I took. It took a while but I’m 100% again. I never want to go through that again! It’s a beautiful Fall day outside, we’ve had about beautiful Fall Days in a row! Sunny and 68 degrees out. Did some raking leaves and took care of remaining Pepper Plants. For Dinner tonight I prepared Fried Oysters w/ Roasted Cauliflower and Summer Crisp Corn.

 

I had this trio of Oysters, Cauliflower, and Corn a while back, it was so good that I’m having it again! As usual I used Hilton’s Fresh Farm Raised Pacific Willapoint Oysters, my favorite. To prepare them; Place shucked oysters in a colander, rinse in cold water and drain. Dredge drained Oysters in the Flour, then Egg Beater’s, and then in Panko Crumbs seasoned with Sea Salt and Pepper (coating each oyster thoroughly). Set aside to dry for at least 1/2 hour. An easy way to coat the oysters with the Panko Crumbs is to place the Crumbs in a resealable plastic bag, add egg-dipped oysters, seal bag, and then shake.

 

Next, heat I heat some Cooking Olive Oil in a skillet. Then fry the Oysters until golden brown on one side, then turn over each Oyster carefully to brown the other side, approximately 1 to 2 minutes on each side. Fry oyster until golden brown and edges are curled. Do not overcook or overcrowd in the frying pan. Remove from the frying pan and serve immediately. Serve with Cocktail Sauce and/or your favorite hot sauce. I served mine with a side of my favorite hot sauce Frank’s Hot Sauce. These are so delicious, golden brown and with an incredible fresh flavor.

 

I roasted a bag of Cauliflower Florets. One of our favorite sides! To prepare it I’ll need a baking pan. I ‘ll be roasting it at 425 degrees until knife tender. To season it I’ll need Cooking Olive Oil, Salt and Ground Pepper. I first washed off the Cauliflower. Next I sliced the bigger florets in half, they bake better when they aren’t so big. I baked them at 425 degrees. I checked them a few times until I could stick a paring knife through them. And they did come out so tender and delicious! I served them with some Hidden Valley Buffalo Ranch Dressing.

 

Then for another side I opened a can of Del Monte Summer Crisp White Shoepeg Corn. It comes in a can, just heat it up in a small saucepan and serve. It’s tough finding this, Meijer finally had some on the shelf. Enjoyed this Dinner! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder Pretzels with a diet Peach Snapple to drink. Pan-Fried Oysters Recipe:
Ingredients:

12 large-medium Oysters, shucked
1 tablespoon Flour
1 Eggs, beaten or 1/4 cup egg Beater’s
1 cup Shake and Bake Seasoned Panko Bread Crumbs
Sea Salt and Pepper, to taste
2 to 3 tablespoons Extra Light Olive Oil
Lemon Wedges, optional
Hot sauce, optional
Seafood Cocktail Sauce, optional

Preparation:

Place shucked oysters in a colander to drain.

1 – Dip drained oysters in flour, then beaten eggs, shake off excess, and in panko crumbs seasoned with salt and pepper (coating each oyster thoroughly). Set aside to dry at least 1/2 hour. NOTE: An easy way to coat the oysters with the panko crumbs is to place the crumbs in a resealable plastic bag, add egg-dipped oysters, seal bag, and then shake.

2 – Heat canola oil in a frying pan (I like to use my cast-iron frying pan) to 370 degrees F. or until quite hot.

3 – Fry oysters until golden brown on one side, then turn over each oysters carefully to brown the other side, approximately 1 to 2 minutes on each side Fry oyster until golden brown and edges are curled. Do not overcook or overcrowd in frying pan. Remove from frying pan and serve immediately.

Serve with Lemons Wedges, Tartar Sauce, Cocktail Sauce and/or your favorite hot sauce.

Makes 2 servings.

For Breakfast this morning I had a Poached Egg, 2 Johnsonville Turkey Sausage Links, a toasted slice of Aunt Millie’s Live Carb Smart Wheat Bread, and a cup of Bigelow Decaf Green Tea. Heavy rains overnight again. Light showers on and off all day, high of 68 degrees. Enough Rain! After Breakfast I did a couple of loads of laundry and cleaned the house today. Light Lemon Cauliflower for Diabetics
This delicious side dish is easy to prepare, cheesy, and delightfully low carb!

Ingredients
1/4 cup chopped fresh parsley, divided
1/2 teaspoon grated lemon peel
6 cups (about 1 1/2 pounds) cauliflower florets
1 tablespoon reduced-fat margarine
3 cloves garlic, minced
2 tablespoons fresh lemon juice
1/4 cup grated Parmesan cheese
Lemon slices (optional)

Directions
Yield: 6 servings
Serving size: about 2/3 cup cauliflower with 1 1/2 tablespoons sauce and 2 teaspoons cheese

1 – Place 1 tablespoon parsley, lemon peel, and about 1 inch water in large saucepan. Place cauliflower in steamer basket; place in saucepan. Bring water to a boil over medium heat. Cover; steam 14 to 16 minutes or until cauliflower is crisp-tender. Remove to large bowl; keep warm. Reserve 1/2 cup hot liquid.

2 – Heat margarine in small saucepan over medium heat. Add garlic; cook and stir 2 to 3 minutes or until soft. Stir in lemon juice and reserved liquid.

3 – Spoon lemon sauce over cauliflower. Sprinkle with remaining 3 tablespoons parsley and cheese before serving. Garnish with lemon slices.

Vegetable Florets with Cheddar Sauce
An easy, homemade cheddar sauce adds zip to this baked medley of vegetables.

Recipe Ingredients:
2 cups cauliflower florets
2 cups broccoli florets
1/3 cup water
1 tablespoon margarine or butter
1 tablespoon all-purpose flour
1/2 cup NESTLÉ® CARNATION® Evaporated Milk
1/2 cup shredded cheddar cheese
1 (4-ounce) can sliced mushrooms, drained

Cooking Directions:
1 – Place cauliflower, broccoli and water in large saucepan. Bring to a boil. Reduce heat to low; cover. Cook for 12 to 15 minutes or until vegetables are crisp-tender. Drain; remove vegetables from saucepan.
2 – Melt margarine in same saucepan over medium heat. Stir in flour. Add evaporated milk; cook, stirring constantly, until mixture comes to a boil and is thickened. Add cheese; stir until melted. Stir in mushrooms; remove from heat. Stir in cauliflower and broccoli.

Garden Italian Salad
Get a hearty dose of veggies with this easy and authentic Mediterranean dish!

Ingredients
Preparation time: 15 minutes
Chilling time: at least 4 hours

1 cup broccoli florets
1 cup cauliflower florets
1/2 cup sliced carrot
1/4 cup chopped green pepper
1/4 cup chopped celery
1/2 medium cucumber, sliced
1/2 cup prepared fat-free Italian salad dressing
1/2 cup cherry tomatoes, halved
1/2 cup sliced fresh mushrooms

Directions
Yield: 5 servings
Serving size: 1 cup

1 – Bring 4 quarts of water to a boil in a large pot. Drop in broccoli, cauliflower, and carrots and blanch for 3 minutes. Remove vegetables and run cold water over them to cool. Drain well. In a large bowl, toss together broccoli, cauliflower, carrots, green pepper, celery, and cucumber. Pour dressing over mixed vegetables. Cover the bowl and allow to marinate for at least 4 hours. Add tomatoes and mushrooms just prior to serving.

Potato-Cauliflower Mash
Adding cauliflower to this otherwise traditional mashed potato dish reduces the carbohydrate content — and ups the taste factor!

Ingredients
3 cups water
2 cups cubed unpeeled Yukon Gold potatoes (about 12 ounces)
10 ounces frozen cauliflower florets
1/4 cup fat-free evaporated milk
2 tablespoons trans-fat-free margarine
3/4 teaspoon salt
1/4 teaspoon black pepper

Directions
Yield: 4 servings
Serving size: 1/2 cup

1 – Bring water to a boil in large saucepan. Add potatoes and cauliflower; return to a boil. Reduce heat; cover and simmer 10 minutes or until potatoes are tender.

2 – Drain vegetables; place in blender with evaporated milk, margarine, salt, and pepper. Blend until smooth, scraping side frequently.

Vegan Buffalo Cauliflower Wings
A great finger food for sports events, these vegan buffalo cauliflower wings are even better when some of the hot sauce is mixed with the batter so that the cauliflower really marinates in it.
Ingredients
1 cup water
1/2 cup plus 2 tablespoons hot sauce of choice (I used Frank’s red hot), divided
3/4 cup all-purpose flour
1 teaspoon onion powder
1/2 teaspoon ground paprika
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1 head of cauliflower, cut into florets
Handful of celery, trimmed and cleaned
Ranch dressing of choice (I used a store-bought vegan dressing)

Directions
1 – Preheat oven to 350 degrees F. To a measuring cup or small bowl, whisk together the water and 2 tablespoons of wing sauce. Set aside.
2 – In a large bowl, whisk together the flour, onion powder, paprika, salt and freshly ground pepper. Pour the water mixture into the flour mixture and mix until combined.
3 – Add the cauliflower and toss until combined. Transfer to a baking sheet and place in the oven to bake until cooked, about 15 minutes. (I used an air-fryer and it only needed about 10 minutes). Add the cauliflower to a bowl and toss with the additional wing sauce. Serve with slices of celery and ranch dressing.

Had a bowl of Kashi 7 Whole Grains Puffs for Breakfast, love this cereal! Did some things around the house. Then out to the shed and repaired a wooden shelf that the bracket broke that was holding up one end. Another breezy and cold day out there, mostly sunny though. Got into the shower this morning and the shower curtain rod broke as I got in the shower. So it was off to Walmart and bought a new rod and shower curtain, needed a shower curtain anyway. So for dinner tonight it was appetizers, I prepared Bourbon Glazed Chicken Breast Chunks w/ Crispy Parmesan Cauliflower Bites.

According to Basic Food Math, doesn’t 2 appetizers equal 1 dinner? Hope so because that’s my dinner tonight! I prepared Bourbon Glazed Chicken Breast Chunks w/ Crispy Parmesan Cauliflower Bites. I used PERDUE® Bourbon Glazed Chicken Breast Chunks and a container of Kroger Produce Cauliflower Florets.

As all the Perdue Chicken products it’s easy to prepare. Preheated the oven to 375°F. Sprayed a baking sheet with Pam Cooking Spray and placed the frozen Chicken pieces in single layer on the baking sheet. Baked on the middle over rack for 25 minutes, until heated through. Turned the pieces halfway through heating time. I’ve got another Perdue Chicken Product that makes a delicious dinner! The Bourbon Glaze is outstanding. Thick and spicy, but over powering. Another great Item to have on hand in the freezer!

I came across this recipe from one of my favorite blogger/web sites, Closet Cooking. Fantastic site with a load of delicious and creative recipes like the one I’m preparing tonight,Crispy Parmesan Cauliflower Bites. I had bought a package of the Cauliflower Florets at Kroger the other day with this recipe in mind. To prepare them I needed; 1 Package of Cauliflower Florets, 1/2 cup Flour, 1/2 cup Egg Beater’s, 1 cup Shake and Bake Seasoned Panko, 1/2 cup Kraft Reduced Fat Parmesan Grated Cheese, 1 tablespoon Zatarain’s Creole Seasoning, and Extra Virgin Olive Oil for frying. To prepare them; Working in batches dredge the cauliflower florets in the flour, dip into the eggs, and coat in the mixture of the breadcrumbs, Parmesan and creole seasoning before frying them in oil heated to medium-high (~350F/180C) until golden brown and setting them aside on paper towels to drain. Love these! You could make a meal out of these alone. The only problem with this dish is trying to get them to the the table before eating them! Huge KEEPER RECIPE!! • Turn pieces halfway through heating time. MICROWAVE OVEN:

• Heat, uncovered on HIGH for 2-1/2 to 3-1/2 minutes turning halfway through heating time.
• Let stand 1-2 minutes before serving. Appliances may vary. Heating times are approximate.

Crispy Parmesan Cauliflower Bites
Prep Time: 10 minutes Cook Time: 20 minutes Total Time: 30 minutes Servings: 4
Crispy bite sized pieces of tender cauliflower coated in a panko and parmesan crust seasoned with a creole/cajun spice mix that is so addictive that you will never reach for that bag of microwave popcorn again!

ingredients
1 large cauliflower, cut into bite sized florets
1/2 cup flour (gluten-free for gluten-free)
2 eggs, lightly beaten
1 cup panko breadcrumbs (gluten-free for gluten-free)
1/2 cup parmigiano reggiano (parmesan), grated
1 tablespoon creole seasoning
oil for frying
directions
