Today’s Menu: Catfish Nuggets w/ Hash Browns and Cut Green Beans

To start the day I prepared a Poached Egg that I served on a toasted Healthy Life Whole Grain English Muffin. Cloudy with a high of 28 degrees and snow flurries. Finished cleaning the house after Lunch and cleaned the fridge. For dinner tonight I prepared Catfish Nuggets w/ Hash Browns and Cut Green Beans.

Picked up the Catfish Nuggets at Meijer the other day. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty. You can bake Catfish but for me you just can’t beat frying Catfish.

Simply Potatoes Hash Browns

For one side I prepared some Simply Potatoes Hash Browns, which I always use when making Hash Browns. Fried them in Extra Light Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. Just love Potatoes with Fish. I also heated up a can of Del Monte Low Sodium Cut Green Beans. For Dessert later a Del Monte Sugar Free Diced Peach Cup.

Simply Potatoes Shredded Hash Browns

Simply Potatoes Shredded Hash Browns fry up perfectly to a crisp, golden brown because they’re made from quality potatoes. They’re always fresh, never frozen so you’ll never have to worry about freezer burn. Fresh, delicious potatoes mean you never have to sacrifice great homemade taste.

Today’s Menu: Catfish Nuggets w/ Potato Pancakes and Cut Italian Green Beans

Started the day off with 1 Egg Sunnyside Up, fried a SayersBrook Bison Ranch Fillet Mignon, toasted 2 slices of Healthy Life Whole Grain Bread, and my morning cup of Bigelow Decaf Green Tea. I love those Fillet Mignon! After I had my Breakfast I went to Meijer for a few items and to pick some Catfish Nuggets up for tonight’s Dinner. Mostly sunny and 52 degrees out today. For Dinner tonight I prepared Catfish Nuggets along with Potato Pancakes and Cut Italian Green Beans.

Picked up the Catfish Nuggets at Kroger earlier. You can bake Catfish but for me you just can’t beat fried Catfish.

The whole family love’s Potato Pancakes! So for a side I prepared some Manischewitz Potato Pancake Mix, my favorite (Never made a potato cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes).

For one side dish I heated a can of Allens Cut Italian Green Beans. To prepare them just empty the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! For Dessert later a bowl of Breyer’s Vanilla Carb Smart Ice Cream.

Today’s Menu: Cajun Catfish Nuggets w/ Potato Pancakes and Whole Kernel Roasted Corn

For Breakfast I toasted a Healthy Life Whole Grain English Muffin that I lightly Buttered with I Can’t Believe It’s Not Butter. Also had my morning cup of Bigelow Decaf Green Tea. Outside it was cloudy to start the day and a high of 64 degrees, sun finally came out later in the day. After Breakfast I headed out to the stores, needed quite a few things and also picked up some things for Mom. On my way to Meijer I stopped by Walmart and picked up some boxes of Bigelow Decaf Tea and a couple of other items. Then on to Meijer to do my shopping and then to Kroger for Mom. stopped and got gas and went to Wendy’s and picked up a Tossed Salad and Baked Potato for Lunch. Did a load of laundry after Lunch and then got out the leaf blower out and cleaned off the deck and driveway areas. For Dinner tonight I prepared Cajun Catfish Nuggets w/ Potato Pancakes and Whole Kernel Roasted Corn.

Picked up the Catfish Nuggets at Meijer earlier today. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Cajun Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. First time trying the Zatarain’s Crispy Cajun Fish Fri Breading Mix. The Zatarain’s Crispy Cajun Fish Fri Breading Mix worked great on the Catfish. The Mix had nice Cajun Heat to it but nothing over powering.

So for a side I prepared some Manischewitz Potato Pancake Mix, my favorite (Never made a cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes).

For a 2nd side I prepared a can of Del Monte Whole Kernel Fire Roasted Corn Blend. Just emptied the can into a small sauce pan and heated it on medium heat, stirring often until heated through. First time trying this also. The Corn was mixed with Onion, Garlic, and Sea Salt. I’ll have to pick up a couple of cans of this, excellent Corn. I also baked a slice of New York Bakery Lite Texas Toast. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Catfish Nuggets w/ Potato Pancakes and Cut Green Beans

For Breakfast this morning I fried up a package of Thin Cut Breakfast Pork Chops. I purchased these at Meijer. I had been wanting something different and I saw the Chops. So I seasoned them with Sea Slat and Ground Black Pepper and then put a light coat of flour on them. I sprayed a large skillet Pam Cooking Spray and added a 1/2 tablespoon of Extra Light Olive Oil. Fried them on medium heat for 2 minutes per side, and done! To go with the Chops I fried some Simply Potatoes Shredded Hash Browns, Scrambled some Eggs, and toasted slices of Aunt Millie’s Light Whole Grain Bread. I skipped the Eggs, they were for Mom and Dad. Cloudy and 65 degrees today, rain moved in later in the day. After Lunch I went to a Medical service Warehouse and picked up a wheel chair for Dad. He really needed this. Back home just did some odds and ends jobs around the house. For Dinner tonight one of my favorites, Catfish Nuggets w/ Potato Pancakes and Cut Green Beans.

Picked up the Catfish Nuggets at Meijer yesterday. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Next I heated up a can of Del Monte Cut Green Beans. Just open the can and heat the beans up in a small sauce pan. The Beans are done! I also baked a loaf of Pillsbury French Bread, Mom has to have Bread with every meal. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Catfish Nuggets w/ Mac and Cheese

For Breakfast this morning I prepared some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Love this Breakfast! Outside a bit warmer, 83 degrees and mostly sunny. Did some light house work after Breakfast and then finished up some laundry for Mom. After Lunch got the cart out and gave Mom a hand with planting some flowers. Then sprayed around the house for weeds, Took a spin around the neighborhood after everything was done. For Dinner tonight Catfish Nuggets w/ Mac and Cheese.

Picked up the Catfish Nuggets at Kroger yesterday. Had them in the fridge overnight. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty.

To go with the Catfish, Stouffer’s Classic Mac and Cheese Cups. just microwave and serve. A great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. I baked a loaf of La Brea Bakery Multi Grain Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snaple to drink.

Today’s Menu: Catfish Nuggets w/ Mac and Cheese

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with I Can’t Believe It’s Not Butter. And as always my morning cup of Bigelow Decaf Green Tea. Out side another beautiful Fall like day. Started out at 49 degrees and had a high of 75 degrees, and mostly sunny! This was our coolest August that I can ever remember, we had 2 days where it hit 91 degrees. Right after Breakfast went to see Dad. The doctor told us his lungs and heart have about had it. We’ll just have to wait and see if we can ever get him home again. Back home got the cart out and did some yard work. For Dinner tonight Catfish Nuggets w/ Mac and Cheese.

Picked up the Catfish Nuggets at Meijer and had it in the freezer. Set the bag in the fridge overnight to thaw.

To go with my Catfish I made a single cup serving of Annie’s Real Aged Cheddar Microwavable Mac and Cheese Cup. I picked a cup of this for free last week at Kroger on their Free Friday Give Away. I believe it’s the first time I’ve tried this. I’ve had several of the Annie Products before but not this one until today. It comes in a microwavable, single serving cup. Just remove the lid and take out the Cheese Sauce Packet. Add cool water to the fill line in the cup and microwave on high for 2 minutes. Remove the cup from the microwave and stir in the Cheese Packet. It’s ready! It makes a good cup of Mac and Cheese. Pasta was good and plenty of Cheese. I’ll have to get more of these. For Dessert/Snack alter a bowl of Skinny – Pop Pop Corn and Diet Dr. Pepper to drink.

Today’s Menu: Catfish Nuggets w/ Potato Pancakes and Fresh Green Beans

For Breakfast this morning I toasted a couple Eggo Waffles. Still love these after all these years! I also had a cup of Bigelow Decaf Green Tea. Outside its 83 degrees and humid, some places got a brief shower. After Lunch I took Mom over to the office of where Dad is at for rehab. They briefed us on how Dad was doing and when he might be released. Hope all goes well but Dad’s Dementia is getting worse, not much we can do about that though. Back home not a lot going on, did a few things in and around the house. For Dinner tonight one of my favorites, Catfish Nuggets w/ Potato Pancakes and Fresh Green Beans.

Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes).

Next I cooked some fresh Green Beans. Mom’s Cousin dropped some off to us that they had grown. Had to string them and break them up. Then boiled them with a piece of Fatback Pork in the kettle. Love these fresh Green Beans! For Dessert/Snacks I had a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

Today’s Menu: Catfish Nuggets w/ Creamy Cheddar Pasta

For Breakfast this morning I prepared some Waffles. I used Bisquick Heat Smart Flour to make them with and used Egg Beater’s to replace the Egg. I’ve got a large Waffle Maker and a smaller on that makes 2 Waffles, I used the smaller one. I also heated up a couple Jimmy Dean Turkey Breakfast Sausage Links. Really enjoy waffles and Pancakes and by using the Bisquick Heart Smart Flour it makes them a bit healthier. I also had my usual cup of Bigelow Decaf Green Tea.

Outside it’s Hot and Humid with a passing shower. After Breakfast I headed to Walmart, needed some printing ink and copy paper. Looked at a couple of new TVs while there also. I might get a larger one for our spare room If I can find a good buy. Stopped and got my car a much needed car wash and had the inside cleaned also. Then stopped and got gas and back home. Just did some of those odd and ends jobs around the house. For Dinner tonight it’s Catfish Nuggets w/ Creamy Cheddar Pasta.

Picked up the Catfish Nuggets at Meijer yesterday. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty. You can bake Catfish but for me you just can’t beat fried Catfish.

To go with my Fried Catfish Nuggets I prepared some Bear Creek Creamy Cheddar Pasta Mix. I’ve had this a few times now and really like it. Grabbed a 2 quart sauce pan, added 4 cups of water. Heated to a rolling boil. Whisked in the Pasta and Sauce Mix. Brought the mixture back to a rolling boil. Reduced the heat to a medium boil and cooked for 15 minutes, stirring occasionally.

Removed from the heat and let it sit for 8 minutes. The Sauce thickened up beautifully as it cooled. Another excellent product from Bear Creek. Really enjoy these all these Products! I seasoned the Pasta with just a little sea Salt and Ground Black Pepper. The Pasta and Catfish make a great pairing! For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Catfish Nuggets w/ Potato Pancakes and Cut Italian Green Beans

Started the day off with 1 Egg Sunnyside Up, 3 slices of Jennie – O Turkey Bacon, toasted 2 slices of Healthy Life Whole Grain Bread, and my morning cup of Bigelow Decaf Green Tea. After I had my Breakfast I went to Walmart for a few items and by Kroger to pick some Catfish Nuggets for tonight’s Dinner. Not a bad day outside today, partly cloudy and 76 degrees out. A little cooler today and no humidity. Got the cart out and did a little yard work and then took a ride around the neighborhood and down by the lake. For Dinner tonight I prepared Catfish Nuggets along with Potato Pancakes and Cut Italian Green Beans.

Picked up the Catfish Nuggets at Kroger earlier. You can bake Catfish but for me you just can’t beat fried Catfish.

The whole family love’s Potato Pancakes!

Today’s Menu: Catfish Nuggets w/ Hash Browns and Cut Green Beans

No Breakfast or even Green Tea this morning! I’ve been fasting since 10:00 last night. I had to be at my Family Doctor this morning at 8:15 for my 4 month check up for sugar, cholesterol, etc. I’ll have the results in about 5 days they say. Hopefully I’ll get a good report on all. I also did the Cologaurd test for Colon Cancer. Another beautiful day out, 86 and mostly sunny but a bit humid. Ran a couple of errands for Mom later in the day. Still not sure if Dad is going to make it or not. We may have to put him in assisted living, he’s so weak at times. Just praying for the best. For dinner tonight I prepared Catfish Nuggets w/ Hash Browns and Cut Green Beans.

Picked up the Catfish Nuggets at Kroger yesterday. You can bake Catfish but for me you just can’t beat frying Catfish. I love using all these Zatarain’s Products!

Simply Potatoes Hash Browns

For one side I prepared some Simply Potatoes Hash Browns, which I always use when making Hash Browns. Fried them in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. Just love Potatoes with Fish. I also heated up a can of Del Monte Low Sodium Cut Green Beans. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.
