Today’s Menu: Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Cornbread

 

 

To start this Morning off I had a cup of Bigelow Decaf Green Tea. 84 degrees, rain showers, and humid. outdoors today. My allergies and sinuses were a lot better today, thankfully! I was starting to get a little worried. Cleaned and straightened up the shed today. Then later Mom wanted to go to Walgreen’s so I took her up there and back home. For Dinner tonight its Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Cornbread.

I bought the Catfish Nuggets from Meijer. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty.

For one side we had Fried Potatoes! I’ve loved these all my life! I bought a bag of Medium Size Red Potatoes, which we’ll be using. To prepare them; first wash the Whole Potatoes and dry with a paper towel. Next grab a Cast Iron Skillet and add 1 tablespoon of Extra Light Olive Oil and heat the Skillet on high.

With the skillet heated add the Potatoes. After adding the Potatoes add your Seasoning, we just used Salt and Pepper. Then fry until the Potatoes start to turn brown. Then flip them with a spatula and continue frying until done. I love these Potatoes and they are so easy to prepare.

 

 

 

I also heated up a can of Del Monte Cut Green Beans. Then made a small Cast Iron Skillet of Cornbread, for Mom, using Martha White White Corn Meal. What a meal Catfish, Fried Potatoes, Green Beans, and Corn Bread. Then for Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Hanover Pretzel Sticks with a Sprite Zero to drink.

To start this Morning off I had a cup of Bigelow Decaf Green Tea. 91 degrees and mostly sunny outside. After my Tea I did a load of laundry for Mom. Then got the cart out and took a spin around the neighborhood before it got too hot out. Also did a little yard work while I had the cart out. After Lunch I took Mom out to Ross to where we bought the fresh Vegetables. She wanted some tomatoes, corn, peaches, and a cantaloupe. That was my day. For Dinner tonight its Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Cornbread.

 

We had this meal a few weeks back and Mom wanted to have it again, who am I to say no! I had purchased the Catfish Nuggets from Kroger yesterday. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. To start this Morning off I toasted a Thomas Light English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam, also had a cup of Bigelow Decaf Green Tea. One HOT day out there today, it was 98 degrees at 5:00 this afternoon. Anyway I went to Kroger after Breakfast, at least around here the stores are having less and less items on the shelves. The Meat department had a good selection as the Dairy Department but canned goods and frozen foods were really low! Too hot to be out there today for me. For Dinner tonight its Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Cornbread.

I had purchased the Catfish Nuggets from Kroger earlier today. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. To start this Morning off I Scrambled a couple of Eggs, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Change in the weather here. We had a low of 49 degrees this morning and a high of 74 degrees, a bit cooler. Took care of a few things around the house and outside. Got the cart out a bit later and took a spin around the neighborhood.For Dinner tonight its Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Cornbread.

I also had a cup of Bigelow Decaf Green Tea. Rain and more Rain with a high of 56 degrees. After Breakfast I headed to the ATM and then stopped by McDonald’s to pick up Breakfast for Mom. Nothing going on outside with the rain. Cleaned the stove and oven and then the fridge. For Dinner tonight its Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Corn Bread.

Just a cup of Bigelow Decaf Green Tea. Had one of those long nights last night dealing with those Phantom Pains! Oh how I wish that they would find a cure for Phantom Pains! But for now nothing I can do except to wait them out. They continued until the early afternoon before stopping. So just tried to rest up today when I could. For Dinner tonight its Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Corn Bread.

Today’s Menu: Catfish Nuggets w/ Mac and Cheese

 

 

For Breakfast this morning I prepared Scrambled Eggs, heated up some Johnsonville Turkey Sausage Links, a toasted slice of Aunt Millie’s Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. After Breakfast I did a load of laundry. Everything is caught up around the house so I caught up on some shows I had recorded. For Dinner tonight Catfish Nuggets w/ Mac and Cheese.

 

 

 

 

 

Picked up the Catfish Nuggets at Meijer last week and had them in the freezer. Laid the bag of them in the fridge overnight to thaw. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty.

 

 

 

 

To go with the Catfish, Stouffer’s Classic Mac and Cheese Cups. just microwave and serve. A great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack later some slices of Boar’s Head Colby Longhorn Cheese and Kroger Wheat Saltine Crackers.

Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Corn Bread

 

 

 

For Breakfast this morning I prepared a favorite of mine. I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Snow Flurries and 24 degrees this morning with rain showers and 41 degrees out for the afternoon. Gave Mom a hand in doing a couple of loads of laundry. Then I went to Walmart to pick up a couple of boxes of small Christmas Lights later in the day. For Dinner tonight its Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Corn Bread.

 

 

 

 

 

I had purchased some Catfish Nuggets from Kroger yesterday. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. For one side we had Fried Potatoes! I’ve loved these all my life and my Mom makes the best! I bought a bag of Medium Size Red Potatoes, which we’ll be using. To prepare them; first wash the Whole Potatoes and dry with a paper towel. Next grab a Cast Iron Skillet and add 1 tablespoon of Extra Light Olive Oil and heat the Skillet on high.

 

 

 

 


With the skillet heated add the Potatoes. After adding the Potatoes add your Seasoning, we just used Salt and Pepper. Then fry until the Potatoes start to turn brown. Then flip them with a spatula and continue frying until done. I love these Potatoes and they are so easy to prepare.

 

 

 

 

 


Then I also heated up a can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and heat until heated through.

 

 

 

 

 


I also made a small Cast Iron Skillet of Corn Bread using Martha White White Corn Meal. First Corn Bread I’ve made in a while and it’s just as good as it always was! What better side for Fried Catfish, Fried Potatoes, and Green Beans than Corn Bread. Then for Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Just a cup of Bigelow Decaf Green Tea for Breakfast. I had a real rough night dealing with Phantom Pains. I didn’t get an hours worth of sleep. They finally let up around 10:00 this morning. I’m really exhausted, these were the worst I’ve had in a while. I just wish someone would come up with a cure for Phantom Pains! Anyway after Lunch I went back to bed for most of the afternoon. For Dinner tonight its Catfish Nuggets w/ Savory Herb Potatoes and Savory Herb Potatoes and Green Beans.

The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty. You can bake Catfish but for me you just can’t beat frying Catfish.

 


For one side dish I prepared the Little Potato Co. Savory Herb Potatoes. We love these! The Potatoes come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good item to have in the pantry! So easy to prepare and no clean up.

 

 

 

 


Then I also heated up a large can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and heat until heated through. I also Baked a Loaf of Garlic Loaf Bread. This has become the family’s favorite Baked Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.
