Tuna casserole just out of the oven

Tuna casserole is a casserole primarily made with pasta (or rice) and canned tuna, with canned peas and corn sometimes added. The dish is often topped with potato chips, corn flakes, bread crumbs or canned fried onions. Tuna casserole is a common dish in some parts of the United States, prepared using only nonperishable pantry ingredients.

Casseroles became popular in American households in the 1950s mainly because the ingredients were cheap and easy to find at the supermarket. A can of tuna, a can of vegetables, a can of soup, and a package of egg noodles becomes a prepared family dinner in around half an hour. Tuna casserole can also be frozen or refrigerated and then reheated to be eaten the next day. Tuna casserole is popular to take to potlucks. In small communities, it may be taken to the home of someone who is sick or going through bereavement as a gesture of kindness.

While there are countless variations on tuna casserole, historically it is made with egg noodles, chopped onion, shredded cheddar cheese, frozen green peas, canned and drained tuna, condensed cream of mushroom or cream of celery soup, sliced mushrooms and crushed potato chips. The cooked noodles, onion, cheese, peas, tuna, soup and mushrooms are mixed in a baking dish, with the potato chips and more cheese sprinkled on top, and then baked.

Also common in most parts of Australia this casserole is also called tuna mornay and served with a Mornay sauce (Béchamel with cheese added, or cheese sauce). Peas and corn are usually added. Additionally, wheat pasta is used rather than egg noodles.

Honey-Garlic Chicken Thighs with Carrots and Broccoli
In this easy and healthy dinner recipe, sweet and savory baked honey-garlic chicken thighs come with a side of veggies that cook on the same sheet pan as the chicken. The honey-soy-garlic marinade for the chicken does double duty as an irresistible sauce to drizzle over everything. Lining your baking sheet with foil will protect your pan from the sticky honey-soy-garlic sauce, so cleanup will be a breeze too. If you can’t find small carrots, cut medium carrots in half lengthwise……

One-Skillet Bourbon Chicken
Coating the chicken in cornstarch might seem like an extra step, but the reward is twofold: it gives the chicken a crispy exterior and also thickens the sauce. Legend has it that bourbon chicken was originally named after Bourbon Street in New Orleans; it can often be found on menus at Chinese American restaurants……

Chicken Parmesan Casserole
We took the best parts of chicken Parmesan–ooey-gooey cheese, crispy breadcrumbs and plenty of tomato sauce–and spun them into an easy family-friendly casserole. We simplified it by skipping the breading on the chicken and, instead, loaded the top of the casserole with cheese and breadcrumbs. Serve with a crisp green salad to complete the meal……

Prime Rib Sandwich w/ Mashed Potatoes

Today’s Menu: Prime Rib Sandwich w/ Mashed Potatoes

Just a cup of Bigelow Decaf Green Tea for Breakfast this morning. Another cloudy and gloomy day out. But a lot cooler. We had a high of 32 degrees but the wind chill made it feel like the low twenties! Did a load of laundry after Breakfast. Then cleaned the house, dusted and ran the vacuum. That was it for me today! It’s Leftovers tonight. For Dinner tonight I reheated the Prime Rib and made Sandwiches with it. Also heated up some Bob Evan’s Mashed Potatoes.

I wrapped the Prime Rib in foil and reheated it at 250 degrees. After heating it I let it sit for 10 minutes before slicing. I served it on Aunt Millie’s Live Carb Smart Hamburger Buns. The Prime Rib came out Delicious! Tender and flavorful.

For a side I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. For Dessert later a Jello Sugar Free Dark Cherry Jello. I’ve left the post description of the Prime Rib from yesterday below. Take Care and Stay Safe all!

For the Prime Rib, I purchased it at GFS (Gordon Food Service). It’s a 6 1/4 lb. Prime Rib. It’s already cooked so all I do is reheat it. I had it in the freezer and sat it in the fridge overnight to thaw. Then to prepare it I heated the oven to 425 degrees. Took it out of the package and heated it in a baking pan for 3 1/2 hours at 250 degrees. Removed it from the oven when done and let it rest for 15 minutes.

The Prime Rib turned out perfect! So very tender and moist with excellent flavor. Came out a nice Medium Rare. We’ll purchase one from GFS again next time we have one! I sliced off an extra slice. I prepared a plate for a elderly woman who lives up the street. I usually make her a plate of our Holiday Meals and take them to her.

Today’s Menu: Prime Rib w/ Au Gratin Potato Casserole and Cut Green Beans

To start this 1st day of 2022 off I Fried up some slices of a Cook’s Ham Steak, Simply Potatoes Southwest Style Hash Browns, i Egg Sunny Side Up, and a cup of Bigelow Decaf Green Tea. Great way to start the New Year! Another day of rain, clouds, and gloomy weather, high of 60 degrees. The rain was steady and heavy at times all day. I was all caught up on everything so I watched some Football Bowl Games and got the Prime Rib Roast in the oven! For Dinner tonight I prepared a Prime Rib w/ Au Gratin Potato Casserole and Cut Green Beans.

For one side dish I prepared a Idahoan Au Gratin Homestyle Casserole. I love using these, Delicious and easy to prepare. I left the Idahoan Product info and instructions at the end of the post.

Then I also heated up a can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and heat until heated through. I just love Green Beans, all Beans! I also baked a loaf of New York Bakery Garlic Bread. For Dessert/Snack later a bowl of Skinny Pop – Popcorn with a Coke Zero to drink.
