Low-Calorie Mushroom Recipes

Wild Mushroom and Polenta Casserole
In this vegetarian polenta casserole recipe, the choice of cheese is as important as which wild mushroom you use. Morel or hen of the woods (maitake) mushrooms give a more “meaty” experience, while chanterelle or cremini mushrooms will have a milder flavor. The polenta recipe calls for rich, nutty Taleggio or fontina cheese, but you can also use a good-quality washed rind cheese like Brie or Gouda………….

Spinach and Warm Mushroom Salad
In this hearty mushroom and spinach salad recipe, sturdier “mature” spinach leaves hold up better than baby spinach when tossed with the warm mushroom-and-bacon vinaigrette……..

Spinach and Tuna Noodle Casserole
Homemade mushroom sauce kicks the can of soup out of the picture in this veggie-centric, healthy riff on a classic tuna-noodle casserole recipe. Serve with steamed green beans……..

Trout Amandine
Trout Amandine is a classic French dish with a crunchy almond crust that’s fried in a brown butter sauce. Our makeover version is baked instead of fried, and because the fillets are coated in buttermilk and breadcrumbs, you’ll still enjoy a crispy and golden crust………

Eggplant Tortilla Casserole
This layered casserole is inspired by classic cheese enchiladas, minus the fuss of rolling and stuffing individual tortillas. You’d never guess that within this comforting Tex-Mex casserole hides a layer of thinly sliced eggplant. The thin slices become tender when roasted and add a subtle savory note………

Lemon Chicken and Rice
This easy Persian-inspired chicken and rice dish has a beautiful golden color and a wonderful fragrance. If you have saffron in the cupboard, do add that optional pinch; just a little will enhance the flavor and aroma of the dish……..

Fish and Seafood Recipes for Picky Eaters
If you want to eat more fish, but don’t really love it, or if you have a fish hater or your hands, give these healthy fish recipes a try. For non-fish eaters, cook up some white fish, that’s milder in flavor than salmon. Or make your own fish sticks for a healthy dippable option kids will love.

Skillet Tuna Noodle Casserole
Known as Tuna-Pea Wiggle to some, this family-friendly tuna noodle casserole tends to be made with canned soup and whole milk, which means high fat and sodium. We remedy this by making our own creamy mushroom sauce with nonfat milk thickened with a bit of flour. Look for whole-wheat egg noodles–they have more fiber than regular egg noodles (but this dish will work well and taste great with either)…………

Baked Popcorn Shrimp with Sweet Chili Sauce
This healthy popcorn shrimp recipe uses tiny shrimp to make crunchy bites perfect for popping in your mouth. We also swap out mayo-based tartar sauce for a healthier Greek yogurt dip flavored with Thai chili sauce………

New England Clam Chowder
Chopped clams, aromatic vegetables and creamy potatoes blended with low-fat milk and just a half cup of cream gives this chunky New England-style clam chowder plenty of rich body. Serve with oyster crackers and a tossed salad to make it a meal……..

Creole Eggplant Eggs Benedict
Eggs Benedict is a popular choice for breakfast or brunch, but the traditional recipe is high in calories and fat. Cheesy Mushroom Casserole
A Southern breakfast favorite, hominy grits form the base of this hearty egg casserole. Team it with a fresh-fruit compote and bran muffins for a terrific brunch………..

Healthy Mexican Recipes for Weeknights

From the EatingWell website and Magazine its Healthy Mexican Recipes for Weeknights. Enjoy Healthy Mexican Recipes for Weeknights with recipes like; Vegetarian Spinach Enchiladas, Vegetarian Spinach Enchiladas, and Quick Shrimp Enchilada Bake. Find these recipes and more all at the EatingWell website. Enjoy and Eat Healthy in 2018! http://www.eatingwell.com/

Healthy Mexican Recipes for Weeknights
We love Mexican cuisine, but often going out for Mexican food means extra calories, fat and salt. It doesn’t have to be that way, because the key ingredients that make Mexican recipes naturally healthy—beans, rice, salsa, avocados—are so delicious. Stock up on these healthy foods and whip up a mouthwatering Mexican meal at home any night of the week.

Vegetarian Spinach Enchiladas
This vegetarian enchilada recipe is weeknight-fast when you skip the step of filling and rolling the enchiladas and make a stacked enchilada casserole instead. Just layer the tortillas, sauce and cheesy spinach filling the way you would lasagna and have the casserole in the oven in 20 minutes…….

Quick Shrimp Enchilada Bake
Shrimp enchiladas offer a taste of coastal Mexican cuisine but some versions contain so much cheese, butter and sour cream that they can pack a whopping 50 grams of fat per serving. Our version has vibrant flavor and only half the calories and 6 grams of fat per serving, plus we use precooked peeled shrimp so you can get the dish on your table fast enough for a weeknight supper. The addition of refried beans helps makes these enchiladas an excellent source of fiber as well……………..

Chilaquiles Casserole
Our version of this enchilada-style chilaquiles casserole is packed with nutritious beans and vegetables. Canned prepared enchilada sauce has great flavor and keeps the prep time quick. It can vary in heat level so find one that suits your taste. If you want to eliminate the heat altogether, try a green enchilada sauce (which is often milder than red) or substitute two 8-ounce cans of plain tomato sauce……………….
