CHICKEN WITH CASHEWS
Recipe Ingredients:
1 pound chicken breast, boned and sliced thin
2 tbsp soy sauce
1 tbsp corn starch
4 tbsp sesame oil
1/2 tsp salt
1 small chopped onion
1/2 pound mushroom, trimmed and sliced
1 small cabbage head
1 tsp sugar
2 cups Roasted Cashews
1 tsp cornstarch
1/4 cup soy sauce
3 ounces Chinese noodles

Cooking Directions:
1. – Place chicken, 2 tablespoons soy sauce and 1 tablespoon cornstarch in a bowl; let stand for 15 minutes. Heat 2 tablespoons oil with salt in wok or heavy skillet over high heat. Add chicken and stir-fry until white and firm. Add onion and mushrooms and stir-fry until vegetables are soft.

2. – Remove from pan.

3. – Add 2 tablespoons oil to wok. Stir in cabbage and sugar. Stir-fry 3 or 4 minutes until cabbage is crisp tender. Return chicken-vegetable mixture to wok. Add cashews and toss to combine. Add 1 teaspoon cornstarch to 1/4 cup soy sauce. Stir into chicken-cashew mixture. Cover and steam 1 minute. Uncover and stir until sauce is slightly thickened. Sprinkle with Chinese fried noodles before serving. Makes 4 to 6 servings.

The deep-fried version of the dish is closely associated with the city of Springfield, Missouri. Deep-fried cashew chicken was apparently first served in 1963 at the Grove Supper Club in Springfield. David Leong, the chef, who moved to the United States from China in 1940, struggled to gain acceptance for the foods of his homeland so he began searching for a dish that would appeal to local residents’ taste buds. His famous deep-fried cashew chicken recipe was so popular he soon opened Leong’s Tea House in Springfield. The dish became exceedingly popular in the Springfield area and is often cited as the unofficial “dish of the city”. Springfield even hosts an annual festival that is centered on this chicken dish: Springfield Sertoma’s Cashew Craze.

 

Borrowing from the local love of fried chicken, Leong came up with a variation of the preexisting dish. Instead of stir-frying the chicken, as is normally done, he deep-fried the chicken chunks. He then covered them with the typical sauce made from chicken stock, soy sauce and oyster sauce, and added the handful of cashews. He also included chopped green onions as a twist and it became an immediate hit with the local crowd. As word spread about the dish, so did the recipe. Leong’s Tea House closed its doors in 1997, but Springfield-style cashew chicken is still being served at over 70 Chinese restaurants, as well as many non-Chinese restaurants, in and around the Springfield metropolitan area, and elsewhere in Missouri and other states. Springfield-style cashew chicken has been mentioned on The Food Channel, a nationwide syndicated radio program, and the floor of the U.S. House of Representatives.

 

In 2010, Leong’s son, with his father’s assistance, opened a new restaurant in Springfield serving the same style of cashew chicken.

 
In Thai cuisine, there is a related stir-fry dish called kai pad med mamuang himmapan or gai pad med ma muang.

In Haitian cuisine, there is an unrelated chicken stew with cashews called poul ak nwa.

A Handful of Nuts a Day

If your nut-eating is limited to the occasional snack on an airplane or smear of peanut butter on your toast, you could be missing out on some major health benefits. It’s been known for a while that eating nuts is linked with a reduced risk of major diseases, including type 2 diabetes and cardiovascular disease. But only recently has nuts’ connection with longevity become clear.

New Science on Nuts

A few small studies previously suggested that eating nuts may decrease risk of dying prematurely. Then a large study in the New England Journal of Medicine (November 21, 2013) found that eating nuts seven or more times per week was linked with a 20 percent lower risk of dying, in general, compared with not eating nuts. Even eating nuts just once a week was linked with an 11 percent lower risk of dying. The study also showed that the more frequently people ate nuts, the lower their risk for most major causes of death, including cancer and heart disease.

To conduct the study, researchers periodically surveyed 119,000 women and men over a 30-year period, asking how frequently they ate a 1-ounce serving of nuts, as well as tracking changes in their health and other diet and lifestyle influences. Although this type of study can’t prove cause and effect, the fact that it was a large study with a lengthy follow-up period strengthens its findings. Additionally, this new study is supported by previous clinical studies showing that eating nuts might help lower cholesterol levels, decrease high blood sugar, reduce insulin resistance, and keep blood vessels healthy…..

In 1929, on the brink of the Depression, our father and grandfather “Poppy” Sol took a bold step. 22 years old, he had already worked full time for 10 years to support his family. Yet he was ambitious, and wanted to live the American Dream and make the lives of everyone around him better. So, donning his best of suits and an assured smile on his face, Sol walked away from the bank with a loan to start his own business, the Newark Nut Company. The rest is history. Let us tell you all about it:

OUR STORY

He began selling premium bulk nuts and dried fruit at the popular Mulberry Street open-air market. Sol quickly developed a reputation for providing the very finest and freshest nuts available. Sol believed in choosing only the highest quality super colossal nuts from the world’s best growers. He would then roast the nuts to perfection for a fresh, delicious flavor.

Now, 87 years later, my cousin David and I represent the third generation of our family business. Although much has changed, our basic philosophy has not, and we continue the family tradition of providing the same superb quality and service as in the past. Our customers, some in their 80’s and 90’s, still rave about the splendid quality and luscious flavor of the products that have made our company famous throughout the years. A visit to the shop today will make your mouth water as the aroma of the freshly roasted peanuts and corn kernels popping tempt your taste buds. We love when customers come to our new location in Cranford to pick up orders and say hello. However, please keep in mind it is a warehouse location and you are unable to walk around and shop.

In 1999, we launched NutsOnline to bring our savory selection of more than 2,000 items right to your door. By 2011, NutsOnline became pretty well known across North America for great quality and service across a growing product offering. Our slogan, “We’re more than just nuts,” continued to ring true.

That being said, I can’t tell you the number of times I would make new friends and, before saying goodbye, they would say, “I’m excited to check you guys out. Nuts.com, right?” Even Rachael Ray made this mistake on her show! So, in January 2012, we decided to officially change our nuts to Nuts.com. Despite the name change, we are still the same – the same family, the same values, the same quality, and the same level of care. We buy directly from growers, so whether you want one pound or 1,000 pounds, we will gladly accommodate any of your needs, including wholesale. We roast our nuts and pop our corn the same day we ship so they reach you deliciously fresh as if you bought them NUTS1from our shop.
