Cantaloupe-Berry Salad with Mint-Yogurt Dressing
A delightfully light and refreshing summer salad featuring fresh and juicy cantaloupe and blueberries!

Ingredients
Preparation time: 15 minutes

1 whole cantaloupe, about 5 inches in diameter
1 cup fresh blueberries, washed and drained
4 sprigs fresh mint (for garnish)
1 cup fat-free plain yogurt
1 tablespoon finely chopped fresh mint leaves
1 tablespoon honey
2 packets Splenda
1 teaspoon grated lemon zest

Directions
Yield: 4 servings
Serving size: 1 cup

1 – Cut cantaloupe in half and remove seeds from internal cavity. Carefully remove flesh from rind with a sharp knife. Cut melon into bite-size pieces (should yield about 3 cups). In a medium bowl, mix melon with berries. In a small bowl, combine dressing ingredients with a small whisk or spoon. Scoop 1 cup of fruit into a serving dish, and top with 1/4 cup of dressing. Add 1 sprig of mint for garnish.

MELON BANANA SORBET
Here’s a frozen treat to keep on hand for hot days or July 4th parties. Recipe for Melon Banana Sorbet from our Desserts recipe section.

Ingredients

1 small cantaloupe, peeled, seeded, and cut into chunks
1 banana, sliced
1/4 cup Splenda Sugar Blend
2 tablespoons corn syrup
2 teaspoons creme de menthe liqueur
1 tablespoon fresh lime juice
2 teaspoons grated lime peel
1/4 teaspoon ground cinnamon

Directions

1 – In a food processor or blender, combine all ingredients.
2 – Process until smooth, then scrape into an ice-cream maker and freeze according to manufacturer’s directions. Or scrape into a shallow metal pan, cover, and freeze 4 to 6 hours.
3 – Break mixture into chunks and pulse 10 to 20 seconds in the food processor or just until no longer chunky and somewhat creamy in texture. Freeze up to 1 month. Pulse briefly in the food processor just before serving.

NOTES:
Here’s a frozen treat to keep on hand for hot days.

FRUIT SALAD WITH MOJITO DRESSING
Ingredients

Fruit Salad

1 mango, peeled and cut into bite-size pieces (about 1 cup/250 mL)
1/2 fresh pineapple, cut into bite-size pieces (about 2 cups/500 mL)
1-1/2 cups sliced strawberries (375 mL)
1/2 small cantaloupe, cut into balls or bite-size pieces (about 1-1/2 cups/375 mL)
1 small papaya, cut into bite-size pieces (about 1-1/2 cups/375 mL)
2 medium bananas, peeled and sliced

Mojito Dressing

1/4 cup canola oil (60 mL)
2 Tbsp lime juice (30 mL)
1 tsp lime zest (5 mL)
1/2 cup club soda (125 mL)
2 Tbsp white rum (30 mL)
2 Tbsp fresh mint leaves (30 mL)
1 tsp granulated sugar (5 mL)

Directions

1 – In bowl, combine all fruits and toss lightly.
2 – In container, combine canola oil, lime juice, zest, club soda, rum, mint leaves and sugar. Drizzle dressing over fruit salad. Serve immediately.
NOTES:
The Mojito dressing adds a real sparkle to this colorful fruit salad. Salad can be prepared in advance; add bananas just before serving.

Recipe Yield: Yield: 10 servings.

Serving serving: 1 cup

Full of the flavors of in-season, juicy cantaloupes, this refreshing drink is ready in just 5 minutes!

Yield: 1 serving
Serving size: 1 cooler
Preparation time: 5 minutes

Ingredients
1 cup cubed cantaloupe
1/2 cup nonfat, no-sugar-added vanilla yogurt
1/4 teaspoon lemon juice
1 packet NutraSweet
Dash cinnamon

Directions
Combine all ingredients in a blender and blend until smooth.

Colorful Fruit Medley for Diabetics
Yield: 12 cups
Serving size: 1/2 cup
Preparation time: 30 minutes

Ingredients
2 cups strawberries, sliced
1 cup blackberries
1 cup green grapes
1 kiwifruit, peeled, halved lengthwise, and sliced
3 cups cubed cantaloupe
1 can (11 ounces) mandarin oranges in juice, drained
1 can (8 ounces) pineapple chunks in juice, drained
1 red apple, cubed
1 nine-inch banana, sliced
Artificial sweetener (optional)

Directions
1 – In a large bowl, combine all ingredients and toss to mix. Sweeten to taste with artificial sweetener, if desired. If not serving immediately, wait and add apple and banana at serving time.

Fruit Salad with Creamy Banana Dressing

Ingredients
2 cups fresh pineapple chunks
1 cup cantaloupe cubes
1 cup honeydew melon cubes
1 cup blackberries
1 cup sliced strawberries
1 cup seedless red grapes
1 medium apple, diced
2 medium ripe bananas, sliced
1/2 cup vanilla nonfat Greek yogurt
2 tablespoons honey
1 tablespoon lemon juice
1/4 teaspoon ground nutmeg

Directions
1 – Combine pineapple, cantaloupe, honeydew, blackberries, strawberries, grapes, and apple in large bowl; gently mix.

2 – Combine bananas, yogurt, honey, lemon juice, and nutmeg in blender or food processor; blend until smooth.

3 – Pour dressing over fruit mixture; gently toss to coat evenly. Serve immediately.

Yield: 8 servings.

Cantaloupe scores “very good” for potassium, and “good” for a host of B vitamins (B1, B3, B6, and folate) as well as vitamin K, magnesium, and fiber. When the edible seeds of the cantaloupe are eaten, this melon also provides a measurable about of omega-3 fat in the form of alpha-linolenic acid.

Minty Cucumber and Cantaloupe SaladPBS3

Ingredients
1 large ripe cantaloupe
4 medium cucumbers (or 2 large ones)
1/2 tsp. salt
8 oz feta cheese, cubed or crumbled
About a dozen medium-sized mint leaves, very finely chopped
For the Honey-Lime Dressing:
1/4 cup olive oil
2 tbsp. white wine vinegar
Juice of one lime
2 tbsp. honey
Salt and pepper to taste
Directions
1 – Cut the cantaloupe in half and scoop out the seeds.
2 – With a melon baller, carve out as many balls as you can get out of your cantaloupe.
3 – Chop the cucumbers in thin, quartered slices.
4 – Place the cucumber slices and melon balls in a colander and sprinkle with 1/2 tsp salt, toss gently with your hands. Place the colander over a bowl and allow the juices to drain for about 20 minutes. (Keep the juice for smoothies!)
5 – Place the cucumber and cantaloupe balls in a salad bowl. Add the cubed feta and chopped mint.
6 – Place all salad dressing ingredients in a lidded jar and shake vigorously.
7 – Pour on the salad, toss gently, and serve cold.
