Oh yeah it was about 12 degrees this morning! Sunny but a cold day today. I hadn’t been to Costco in a while so they open at 10:00 am. so I was there when they opened, best time to get an electric cart that’s fully charged. Picked up 2 big and beautiful Walleye Fillets, after cutting them down I’ll get at least 6 nice size smaller fillets. Picked up some other bulk items that I was running low on and picked up some items that always gets me in the Holiday Spirit. I bought a case of Green Beans, Baked Beans, and a case of Turkey Stuffing and delivered to our local food shelter. I’m a firm believer that it is better to give than receive. And with so many people in need it feels good to help when you can. For dinner tonight, Mushroom and Sharp Cheddar Turkey Burger w/ Baked Fries.

 

 
I used Jennie – O Turkey Burger Patties (Lean). Only 180 calories and 9 g fat and already made into patties. Pan fried it in a 1/2 Tbs of Canola Oil and seasoned it with Sea Salt and Ground Black Pepper. I served it on an Aunt Millie’s Reduced Calorie Whole Grain Bun and topped with a slice of Sargento Reduced Fat Sharp Cheddar. I also baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Served these with a side Daisy Reduced Fat Sour Cream. For dessert later a Del Monte No Sugar Added Mango Chunk Cup.

Today’s Menu: Blackened Tilapia Fish Sandwich w/ Deviled Eggs and Baked Fries

Well we survived our first snowfall of the Winter/Fall, all less than a 1/4″ of it! A friend of mine called me last night when he got off work at a local Kroger. We were both laughing at people in this area and how they panic when the 4 letter word “SNOW” is mentioned! He said when he left at 9:00 last night the checkout were lined up with people and their panic buying, I tell you this are is nuts when they mention that 4 letter word! It is cold out though. When I went out and got the morning paper it 19 degrees with a stiff cold wind and it didn’t warm up much at all. For dinner tonight I warmed it up on the inside preparing a Blackened Tilapia Fish Sandwich w/ Deviled Eggs and Baked Fries.

 

 
I had the Tilapia in the freezer and let it thaw in the fridge overnight. To prepare it I rinsed the fillet off in water and patted dry with a paper towel. I seasoned it with a bit of Sea Salt. Then I melted a tablespoon of Blue Bonnet Light Stick Butter down and rubbed the fillet down with it, covering both sides. I then covered both sides, with Zatarain’s Blackening Seasoning. I added Canola Oil to my Cast Iron Skillet and preheated it until the Oil was almost ready to start smoking and I added the Tilapia. Just a word of warning have your window open and overhead stove fan a working, it will smoke! I cooked the fillet for 3 minutes each side and it was fork tender and ready. As usual anything that you use Zatarain’s on it’s going to be good and this was no exception! I love the smokey and heated flavor the seasoning provides. The fillet just melted in my mouth. I served it on an Aunt Millie’s Deli Style Whole Grain Mini Sub Bun. I topped it with some Hidden Valley Spicy Chipotle Pepper Sandwich Spread & Dip. If you haven’t tried this Spread, and you like some added heat this is your Spread! It’s not that over powering heat but it is Spicy. It’s a creamy and thick Spread so if you like Spicy give it a try.

 

 
For a side dish, I had posted about Deviled Eggs earlier and that got me wanting some! So I went to Deviled Egg expert, my Mom! I love her Deviled Eggs, rich and creamy with just an incredible taste. I also baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. For dessert later a Jello Sugar Free Chocolate Pudding.

Today’s Menu: Cast Iron Skillet Baked Pork Chop w/ Sliced New Potatoes, 3 Bean Salad, and Whole Grain Bread.

I had a Pork Chop stored in the freezer that I put in the fridge to thaw overnight. Next day I marinated the Chop in JB’s Fat Boy Haug Waush BBQ Sauce for 4 hours in the fridge. To prepare it I used a Cast Iron Skillet, just something about the Cast Iron Skillets that I love using them. Added about 1/2 tablespoon of Canola Oil to the Skillet and browned both sides I then moved to the oven, which I had preheated on 400 degrees. I then baked it for about 22 minutes. I pulled it out when it hit 155 degrees (internal temperature) and let it set for 5 minutes to let it finish cooking. I love Chops marinated in JB’s BBQ Sauce, and this one was delicious! The JB’s BBQ Sauce is the perfect marinade for any Pork.

 

 
For one side dish I heated up a can of Del Monte Sliced New Potatoes, boiled until heated and seasoned with Sea Salt, Ground Black Pepper, and Parsley Flakes. I also prepared a can of Read 3 Bean Salad. It comes in a can and you can prepare it various ways. I just opened the can and put it in a plastic bowl, put the lid on, and set in the refrigerator to chill for a couple of hours or so. I served these cold. I also had a slice of Klosterman Wheat Bread that I buttered with I Can’t Believe It’s Not Butter. For dessert later a Del Monte No Sugar Added Peach Chunk Cup.

Today’s Menu: Sharp Cheddar Buffalo Burger w/ Baked Fries

A perfect Fall Day out today! Sunny and about 60 degrees. Got the cart out and rode around and spent some time down by the lake. Talked to a couple of people fishing, they had caught a few small Bass. A local Church here in the area was going around the neighborhood raking people’s lawn for them, and we had a ton of leaves so thank you to all of them! For dinner, Sharp Cheddar Buffalo Burger w/ Baked Fries.

 

 

 

I used my favorite Buffalo Burger, Wild Idea Buffalo 1/4 Buffalo Burger. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it in Canola Oil about 3 1/2 minutes per side. Buffalo gets done rather quickly due to it’s so lean. I topped it with a slice of Sargento Ultra Thin Sharp Cheddar Cheese and served it on an Aunt Millie’s Reduced Calorie Whole Grain Bun.

 

 

For a side with my Burger I baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Tried these for the first time earlier and really like them. Served these with a side of Hunt’s Ketchup for dipping. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Some friends of mine had me over a while back for dinner, Firey Chicken Pepper Skillet. I finally got the recipe and wanted to pass it along.

 
Ingredients:

1 tablespoon Canola Oil
12 ounces skinless, Boneless Chicken Breasts, cut into 1/2-inch strips
2 garlic cloves, finely minced
3 Bell Peppers (red green and yellow) cut into thin strips
1 medium Onion, sliced
1 teaspoon Roasted Ground Cumin
1 1/2 teaspoon dried Oregano Leaves
2 teaspoons chopped fresh Jalapeno Peppers (or to taste)
3 tablespoons fresh Lemon Juice
2 tablespoons chopped fresh Parsley
1/4 teaspoon Sea Salt
Freshly ground Black Pepper, to taste
Frank’s Red Hot Sauce (optional)

* Option, sprinkle Peanuts or Walnut pieces when dish is done *

 
Directions:

In a large non-stick skillet, heat oil oven medium-high heat; add chicken and stir-fry until done and lightly browned, about 3 to 4 minutes.
Add garlic and cook 15 seconds, stirring constantly. Add bell pepper strips, sliced onion, cumin, oregano, and chilies. Stir-fry for 2 to 3 minutes or until crisp tender.
Add lemon juice, parsley, salt and pepper; toss to combine well and serve.
Makes 4 servings.

Lot of rain early and then a cold and windy day, only a high of about 41 today. Ran some errands and filled the car up with gas before it went back up. I had some Yellow Lake Perch in the freezer, had purchased it from Meijer a couple of weeks ago. Laid in the fridge overnight to thaw. For dinner tonight, Fried Yellow Lake Perch w/ Potato Pancakes and Sliced Carrots.

 

 

I like using Lake Perch, fries up a beautiful golden brown and like most fresh water fish has a fantastic taste. After thawing I rinsed the fillets in water and patted dry. I then seasoned them with Sea Salt and rolled the fillets in Zatarain’s Crispy Southern Fish Fri. Pan fried them in Canola Oil, 3 minutes per side. They came out with a golden brown crust and delicious! My Mom says I get my love of Fish from my Great Grandfather. Mom said they always knew he was coming to visit because my Grandmother would always fry up a big batch of Fish and a cast iron skillet of Cornbread, and doesn’t get any better than that!

For a side dish I made some Potato Pancakes. I used Manischewitz Potato Pancake Mix, my favorite (Never made a cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes). I also heated up a single serving can of Kroger Brand Sliced Carrots. For dessert tonight a Healthy Choice Chocolate Swirl Frozen Yogurt.

Makes 18-24 pancakes. You Will Need: Medium bowl, 2 eggs, 2 1/4 cups cold water, vegetable oil, large skillet. 1. Mix: In a medium bowl, beat two eggs with a fork until blended. Add 2 1/4 cups cold water and mix well. Stir in the contents of this package. Allow batter to thicken for 3 to 4 minutes. Stir. 2. Fry: Drop tablespoons of batter into 1/8 inch hot vegetable oil in a large skillet and brown on both sides.

Today’s Menu: Seasoned Fried Haddock Sandwich w/ Mac and Cheese

It was mostly cloudy and about 73 out today, still waiting for this cold front to move through and drop the temperature. I love weather in the 50’s and 60’s. Not a lot going on, went to the bank and a couple of errands and that was it for the day. For dinner Seasoned Fried Haddock Sandwich w/ Mac and Cheese.

 

 
I had a couple of small pieces of Haddock leftover from dinner the other night so I had that to make my Fish Sandwich with. To prepare I rinsed the Haddock pieces in cold water and patted dry with a paper towel. I then seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. I then pan fried them in Canola Oil, frying them about 3 minutes per side until golden brown. I served them on a Aunt Millie’s Light Whole Grain Sandwich Bun. Love that Haddock!

 

 
For a side to go with my Fish Sandwich I heated up the other cup of the Bob Evans Macaroni and Cheese. Just microwave for 1 1/2 minutes and you have your Mac and Cheese. Had this for the first time just the other day and plan to keep this handy in the fridge! Very good and easily fixed Mac and Cheese. For dessert later to night, it’s all fruit, 1/2 a Banana and a couple of slices of a Honey Crisp Apple.

Today’s Menu: Panko Crusted Veal Cutlet w/ Peppered White Gravy, Green Beans and Mashed Potatoes

Just a drop dead gorgeous Autumn Day out today! We’ve been lucky with the weather this year. Cooler weather coming in though with highs around 60 or mid 50’s. The trees around here are really starting to turn and a few have lost their leaves. For dinner tonight another comfort food classic; Panko Crusted Veal Cutlet w/ Pepper White Gravy, Green Beans and Mashed Potatoes.

 

 

 

While at Jungle Jim’s Market last week I purchased some Veal Cutlets. I always have to pick up some Veal while at Jungle Jim’s, they have the best around! I got the big three out to bread these beautiful Veal Cutlets; Flour, Egg Beaters, and Panko Bread Crumbs. I seasoned the flour with Sea Salt and Ground Pepper and added some Hungarian Paprika to the Egg Beater’s. These were thick cutlets so I had to fry them a little bit longer than you would normally fry Veal. I fried them in Canola Oil about 5 minutes per side. The coatings gave it a fantastic golden brown coating and the cutlet was tender and moist, and seasoned just right. You could cut by using a fork! Topped it with some Pioneer Peppered White Gravy that I whipped up.

 

 

For sides I warmed up some leftover Green Beans that my Mom had made the night before. Nice size and full Green Beans. I also heated up an individual serving of Bob Evans Mashed Potatoes and topped them with a bit of Peppered White Gravy also.. I had a couple of slices of Klosterman Wheat Bread also. For dessert later a Skinny Cow Ice Cream Bar.

Today’s Menu: Seasoned Fried Haddock w/ Macaroni and Cheese and French Bread

Beautiful outside and spent most of it at a local County Park, Winton Woods. It’s located in the neighboring County, Hamilton County. It’s the largest County Park around. A good size lake and some beautiful scenery. Another 2 or 3 weeks and the leaves will have turned colors and it will be a gorgeous site. For dinner I prepared a Seasoned Fried Haddock w/ Macaroni and Cheese and French Bread.

 

 

Love that Haddock that I’ve been buying from our local Kroger Seafood Department. To prepare it I rinsed the fillet in cold water and patted dry with a paper towel. Then sliced the fillet into four pieces. I then seasoned it with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. I then pan fried them in Canola Oil, frying them about 3 minutes per side until golden brown. Delicious! Haddock and Zatarain’s is a perfect combo!

 

 

I had been craving some Macaroni and Cheese for some time now. So for a side I heated up an individual cup of Bob Evan’s Macaroni and Cheese. Just microwave for 1 1/2 minutes and you have your Mac. First time I tried the Bob Evan’s Mac and Cheese and was very pleased with it. Excellent Cheesy flavor and the Pasta was spot on, Good job there Bob! I baked a loaf of Pillsbury Rustic French Bread also. For dessert/snack tonight some Cheese and Crackers! Bought some Boar’s Head Colby Longhorn Cheese, at Jungle Jim’s Market, and served it on some Ritz Whole Grain Crackers. My favorite pair of sweat pants, t-shirt, remote, and in my favorite chair, it’s going to be a good night!

Today’s Menu: Cheddar Bacon Turkey Burger w/ Baked Fries

Well they were right when they said it would be cooler! Rolled out to get the Morning Paper and the old unofficial Outdoor thermometer said 38 degrees and with the cool breeze that was blowing it felt a bit cooler than that. But I love this weather! It was a beautiful Autumn Day out, sunny and cool. For dinner tonight I prepared a Cheddar Bacon Turkey Burger w/ Baked Fries.

 

 

While at Mejier last week I had picked up some Jennie – O Turkey Burger Patties (Lean). I had one for dinner last week and it was so good I decided to have it again for dinner tonight. Easy to prepare and only 180 calories and 9 g fat and already made into patties. Pan fried it in Canola Oil about 17 minutes, flipping three times. While the pattie was frying, in another skillet I fried up some Jennie -O Turkey Bacon, another low calorie and lean Jennie – O Turkey Product. The bacon is only 30 calories, 0 carbs and .05 g fat. I served the burger on an Aunt Millie’s Reduced Calorie Whole Grain Bun and topped with a slice of Sargento Reduced Fat Sharp Cheddar and a slice of Turkey Bacon. Love these Burgers!

 

 

For a side with my burger I baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Served these with a side Daisy Reduced Fat Sour Cream. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Grill approximately 15 to 17 minutes, turning occasionally (2-3 times).
Always cook to well-done, 165°F. as measured by a meat thermometer.
