Today’s Menu: Ham, Turkey, and Swiss Pocket Sandwich w/ Potato Soup

We set a record day low this morning, minus 3 degrees, but help is on the horizon! In the 40’s over the weekend and 50’s and 60 degrees next week, a heat wave! With a whole lot of sunshine along with it. So that will be a nice change of pace. Laundry day and ran the vacuum. Not much going on after that. For dinner something new, I prepared a Ham, Turkey, and Swiss Pocket Sandwich w/ Potato Soup.

 

 

On my last visit to Kroger I searched around for some different things to have for dinner. I came across the Brownberry Pocket Thins Flatbread Healthy Multi-Grain in the Bread aisle. Then at the Deli I ordered some Boar’s Head Smoked Honey Ham and Boar’s Head Maple Glazed Honey Coat Cured Turkey Breast. I also grabbed a small head of Boston Bib Lettuce and a package of Sargento Ultra Thin Swiss Cheese. First time I’ve tried the Brownberry Pocket Thins Flatbread Healthy Multi-Grain. The Pocket Thin was very fresh and only 100 calories, 15 net carbs, and 1.5 g fat per serving (1/2 flatbread). Plus there’s 10 g of whole grains and 5 grams of fiber. Easy to use; Each piece comes pre-sliced in half. Just tear along the seam and open the pocket up and stuff with your ingredients.

So my stuffing ingredients are Boar’s Head Smoked Honey Ham, Boar’s Head Maple Glazed Honey Coat Cured Turkey Breast, Kroger Private Selection Sweet Hot Stone Ground Mustard, and Boston Bib Lettuce. So easy to prepare and makes one delicious sandwich! I love all the Boar’s Head meat and cheese products, always fresh. You can stuff these with any ingredients so there’s an endless variety of sandwiches.

To go with my Pocket Sandwich I heated up some Campbell’s Chunky Baked Potato Soup with Cheddar and Bacon Bits. Comes in a microwavable container, just microwave for 1 minute and 45 seconds and you have my favorite Chunky Soup! The homemade Potato Soup I made last week was good but the Campbell’s Chunky Baked Potato Soup with Cheddar and Bacon Bits is the best there is. For a dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Break out the shorts and sunscreen it was in the 40’s today! Went and got the car washed which was covered with dirt and salt. From there I went to the post office and Walmart to pick up a few things. It was one of those days, trying to figure out what to have for dinner. Nothing really sounded good so when it’s one of those days you always go with Chili or Soup. I went with Soup, I prepared a Baked Ham and Muenster Cheese sandwich w/ Chunky Soup – Baked Potato with Cheddar & Bacon Bits.

 

 
To make the Sandwich I used Kroger Private Selection Off the Bone Smokehouse Sliced Ham, Murray’s Muenster Cheese (Sliced thin), and Meijer Bakery Wheat Mini Sub Buns. To prepare, started by spreading some Kraft Reduced Fat Mayo w/ Olive Oil on the inside bottoms of the Sub Buns, then layered my Ham, and then the Cheese. Heated up the oven on 375 degrees and put the Sub in a small baking pan and heated until warmed throughout the Sandwich and Cheese started to melt. Makes one delicious Ham and Cheese Sub!

 For my Soup I used Campbell’s Chunky Soup Baked Potato with Cheddar & Bacon Bits. I love a thick Soup, the thicker the better! And this one hits the mark, thick and loaded with Chunky Potatoes. For dessert later tonight a Healthy Choice Chocolate Swirl Frozen Yogurt.

Directions

Do not add water. Stove: Pour soup into medium saucepan. Heat slowly until hot, stirring occasionally. Microwave: Pour soup into medium microwave-safe bowl or 2 individual microwave-safe bowls. Cover; microwave on high for 3 1/2 minutes or until hot, stirring once during heating. Careful, keep covered 1 minute. Stir before serving. Promptly refrigerate any unused portion in separate container. Recommend use by date on can end. Store unopened can at room temperature.

Another day and another 2″ of snow! We just get our driveway and walks clear and snows again, HO HO HO! They say by Thursday though it’s going to hit 50 degrees. Dropped of the food I had bought for the Free Food Store and that was about it for the day. I did get in an on-line Scrabble Tournament, love playing Scrabble! For dinner I kept it simple and a real comfort food meal. I prepared a Grilled Ham and Swiss Sandwich w/ Chunky Baked Potato with Cheddar and Bacon Soup.

My cousin gave my Mom an Appleton Farms Smoked Ham-Shank Portion, which quite possibly be the best tasting Baked Ham we had ever tasted or prepared! Just an incredible taste and very moist and tender. This is one good Ham. My cousin and her family buy them all the time from Aldi, at 99 cents a lb. We’ll be buying our Hams there from now on. I sliced some Ham off for the Sandwich. I used Klosterman Wheat Bread and 2 slices of Sargento Ultra Thin Swiss Cheese. Put the Ham and Cheese on the Bread and got out the flat top griddle. I heated the griddle up putting a 1/2 tablespoon of I Can’t Believe It’s Not Butter on it and then grilling my SandwicH, about 3 minutes each side till golden brown.

For my Soup I used Campbell’s Chunky Baked Potato With Cheddar and Bacon Bits. I love thick Soups and this one works! It’s thick with nice chunks of Potato, it’s 200 calories and 20 net carbs per serving. As always the simplest meals are sometimes the best! For dessert later a Del Monte No Sugar Added Mango Chunk Cup.
