Spent one long day at the hospital today. I went for my yearly scans for my upcoming Melanoma Cancer check-up. This normally takes about 1 1/2 hours, max, and I’m home. Until today! They over scheduled and I went in at 7:30 and was there till 11:45! No excuses except they were over scheduled. The staff was none too happy over it either. They were working their tails off plus having to deal with a lot of complaining patients, I wasn’t one of those though. So the last thing I wanted to do later was to prepare a dinner so tonight it was a return to Izzy’s! I had an Izzy’s Lean Corned Beef Sandwich.

 

 

 

The sandwich was Izzy’s famous corned beef, 96% lean cut, on whole wheat bread, it comes with a small container of Pasta Salad. I also had some Ruffle’s Light Chips at 80 calories and 17 carbs per serving along with a Diet Peach Snapple. There’s 360 calories and 32 carbs for a full sandwich. I had half of it and saved the other half for lunch tomorrow, half sandwich 170 calories and 16 carbs. Not only do they look delicious, they are delicious! Izzy’s by far has the best and most tender Corned Beef there is! For dessert later a slice of Pillsbury Nut Quick Bread topped with a scoop of Breyer’s Carb Smart Vanilla Ice Cream.

I was making a light Breakfast this morning around 6:30 and it was 64 degrees. At noon it was 40 degrees and by nightfall they say subway-turkey-ham-003around 35 degrees with a frost warning for in the morning. A very odd Spring this year. I spent the afternoon at the hospital visiting my Dad who is getting a lot better but will have to spend some time in rehab to regain his strength. So after that I really didn’t want to cook so once again the kitchen was closed and it was Subway to the rescue! I had a 6″ Black Forest Ham and Turkey Sub on a 9 grain Wheat Bun w/ Black Olives, Lettuce while Mom had a Subway Club. The total calories for the sub is 320 calories and 44 carbs. I added Hellman’s Light Mayo and French’s Yellow mustard to the Sandwich when I got home. I also had a side of Ruffle’s Light Fat Free Potato Chips, 80 calories and 17 carbs per serving (15 Chips). For dessert/snack later tonight a 100 Calorie Mini Bag of Jolly Time Pop Corn.

This wacky weather around here continues. It’s been 80 the last two days and by Friday a high in the low 50’s. Well both my Mom and Dadsubway-turkey-ham-003 are down with head colds. Neither wanted anything heavy for dinner so I went to Subway and made them a Salad for dinner tonight and that hit the spot for both and myself. I had a 6″ Black Forest Ham and Turkey Sub on a 9 grain Wheat Bun w/ Black Olives, Lettuce while Mom and Dad had a Subway Club. The total calories for the sub is 320 calories and 44 carbs. I added Hellman’s Light Mayo and French’s Yellow mustard to the Sandwich when I got home. I also had a side of Ruffle’s Light Fat Free Potato Chips, 80 calories and 17 carbs per serving (15 Chips). For dessert later a Jello Sugarless Dark Chocolate Pudding.

Busy, busy day today running errands and helping to move and clean a room of ours around. So when it came to dinnertime everyone was tuckered out and did not feel like cooking. So the kitchen was closed! Now that doesn’t happen very often here. So it was Taco Bell to the rescue. Just picked them up at the drive-thru and home.

 

 

I purchased the Taco 12 pack which is more than enough for 3 people. The 12 pack can include Crunchy Tacos, Cool Ranch Tacos, Locos Tacos, and Nacho Cheese Tacos varieties. I enjoy any of them! They range from 160 calories to 170 calories each and 12 or 13 carbs depending on which ones you order. It’s good to eat something out from time to time. For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.

Egg White Delight McMuffin: McDonald’s To Roll-Out Breakfast Item Nationally
McDonald’s is rolling out a yolk-free version of its Egg McMuffin this spring.

The world’s biggest hamburger chain says the “Egg White Delight” will be made with a whole grain muffin, Canadian bacon and white cheddar cheese. It will be available nationally April 22 and clock in at 250 calories, compared with 300 calories for a regular Egg McMuffin.

The Oak Brook, Ill.-based chain says the egg whites will be cooked on the grill with a spatula. Customers can request the egg whites for Egg White Delight McMuffinother breakfast sandwiches as well. When asked whether there would be an extra charge for the egg white substitutes, McDonald’s spokeswoman Ofelia Casillas said in an email that the company doesn’t stipulate pricing to franchisees.

McDonald’s had announced last year that it was testing the breakfast sandwich. It was revealed as part of the company’s announcement that it would begin posting calorie counts on menu nationwide ahead of a new federal regulation.

The move was also intended to address criticism that fast-food chains such as McDonald’s Corp. contribute to rising obesity rates and appeal to customers looking for healthier menu options.

The launch date was reported earlier by The Daily Meal, a website that covers food news.

Well the rainy and snowy weather was pushed back until early tomorrow and today was gorgeous out, for a late February day! For dinner I prepared I think my favorite Tortilla, the Old El Paso Stand ‘n Stuff Soft Flour Tortillas. I see them now more often in stores, so there a whole lot easier to find now. Love these things, their only 160 calories and 24 carbs for 2 Soft Shells, more than enough for 1 person by the time you load it up. So for dinner tonight it was Old El Paso Stand ‘n Stuff Soft Flour Tortillas w/ Ground Turkey and all the Fix’ins!

 

 
I filled mine with Jennie – O Extra Lean Ground Turkey – 99/1. I pan fried it in Canola Oil and seasoned it with Ground Cumin, Sea Salt, Cilantro Flakes, and a 1/2 packet of Old El Paso Taco Seasoning. I also added Dole Chef’s Cut Diced Pineapple and Mango, Green Giant Summer Crisp Sweet Corn, Sliced Black Olives, Bush’s Best Low Sodium Dark Red Kidney Beans, Lettuce, Kraft Mexican Taco Shredded Cheese, and Taco Bell Creamy Chipotle Sauce. If you’ve never tried the Taco Bell Creamy Chipotle Sauce it’s another you have to try. It’s got a nice creamy thick sauce with just the right amount of Chipotle heat! A little high in calories and fat but it’s one of those that’s so good it’s worth it every now and then. For dessert later a Jello Sugar Free Dark Chocolate Pudding.
