Molten chocolate cake

Molten chocolate cake is a popular dessert that combines the elements of a flourless chocolate cake and a soufflé. The name derives from the dessert’s liquid chocolate center. Some other names used are chocolate fondant, chocolate moelleux and chocolate lava cake.

 

 

 

The United States-based chef Jean-Georges Vongerichten claims to have invented molten chocolate cake in New York City in 1987, but the French chef and chocolatier Jacques Torres disputes this, arguing that such a dish already existed in France. According to Vongerichten, he pulled a chocolate sponge cake from the oven before it was done and found that the center was still runny, but was warm and had both a good taste and texture. Regardless of who invented the dish, Vongerichten has been credited with popularizing it in the United States, and it became almost a de rigueur inclusion on high-end restaurant dessert menus.

 

 

Chocolate lava cake smothered in chocolate sauce

Molten chocolate cakes characteristically contain five ingredients: butter, eggs, sugar, chocolate, and flour. The butter and chocolate are melted together, while the eggs are either whisked with the sugar to form a thick paste, producing a denser pastry, or separated, with the white whipped into an meringue to provide more lift and a lighter result. A tablespoon of strong coffee is sometimes added to enhance the chocolate flavor.

The cakes are typically baked in individual portions in ramekins.

 

 

Fresh raspberries, a drizzling of raspberry and/or chocolate sauce, and dustings of powdered sugar are typical enhancements. Also, a sprig of mint is sometimes used as a garnish.

Raspberry-Almond Buttermilk Coffee Cake

INGREDIENTS

1½ cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
¾ cup granulated sugar
½ cup butter, softened
2 large eggs, lightly beaten or 4 ounces egg substitute
1 teaspoon vanilla extract
½ teaspoon almond extract
1 cup buttermilk
2 cups frozen raspberries, thawed
⅓ cup sliced almonds
1 tablespoon turbinado sugar

DIRECTIONS

Heat oven to 350°F.
1) In large bowl, combine flour, baking powder, baking soda and salt.
2) In bowl of electric stand mixer, cream together sugar and butter, with paddle attachment until light and fluffy. Add eggs one at a time, beating after each addition; add extracts
3) Gradually add flour mixture alternately with buttermilk, beating until smooth. Spoon half batter into a lightly greased and floured 9-inch cake pan. Top evenly with 1 cup raspberries. Spoon remaining batter over raspberries and top with almonds, remaining 1 cup raspberries and turbinado sugar.
4) Bake 50 minutes or until cake tester inserted in center comes out clean.

BUFFALO-GIRL’S BEST CHOCOLATE CAKE

If you love chocolate and you love cake, you’ll love this recipe. Dark, dense, moist and lick-your-plate-delicious (if plate licking is allowed in your house). This one’s a keeper for the recipe box.

Ingredients:
6 – tablespoons salted butterbuffalo-girls-best-chocolate-cake
2 – oz. bitter chocolate
12 – oz. semi-sweet chocolate
6 – tablespoons cocoa powder
1 – cup + 2 tablespoons sugar
½ cup water
½ – cup milk

2 – tablespoons rum
1½ -teaspoon vanilla
5 – eggs

¾ – cup + 2 tablespoons flour
¾ – teaspoon baking powder
¾ – teaspoon baking soda
½ – teaspoon salt
¼ – cup vegetable oil

Butter
Wax paper
Water

Preparation:

* Preheat oven to 350°. Place a rack in the middle of the oven and one on the bottom. Place a pan of water on the lowest rack.
* In a saucepan over low heat, add the first seven ingredients and allow them to melt, stirring occasionally.
* Transfer melted ingredients to a mixing bowl. On medium speed, add rum, vanilla and the eggs, one at a time, mixing well after each before adding the other.
* Add the remaining ingredients in the order listed, mixing well to ensure all ingredients are incorporated, stopping and scraping the bottom of the bowl a couple of times.
* Butter two 8” round cake pans with butter and line the bottom with a circle of wax paper. Buttering the top of the wax paper too.
* Divide batter into cake pans. Tap the pan bottom on the counter top a few times to remove any air bubbles. Place the pans in the oven and bake for about 35 minutes.
* Remove cakes from the oven and run a knife around the edge of the cake. Invert onto racks that are lined with a piece of wax paper, tapping the bottom of the pan to release cakes. Allow the cakes to completely cool.
* Frost with Sour Cream Ganache, recipe follows.

Sour Cream Ganache

A perfect not-too -sweet, chocolate frosting with just the right amount of tang!

Ingredients:
24 – ounces semi-sweet chocolate, broken in bits or use chips
2 – tablespoons butter
16 – ounces sour cream, at room temperature.
1 – teaspoon vanilla

Preparation:Wild Idea

* In double boiler, melt chocolate with butter.
* Place sour cream in a glass bowl and microwave for about 20 seconds.
* Whisk in melt chocolate and stir until well incorporated.
8 Whisk in vanilla.
* Let the ganache rest until it has set up a bit for ease in frosting cakes. *Or, you can pour over cakes if you prefer less frosting.

If you need to store cake more than a day, put half an apple in the container. The apple will provide just enough moisture to keep the cake from drying out too soon.

I’m passing along the perfect cake for your Halloween Party, Halloween Poke Cake. I found this version on the Kraft website (http://www.kraftrecipes.com/). Check the Kraft website out for any recipe that you may be looking for! Happy Halloween!

 

Halloween Poke Cake

What You Need
1 pkg. (2-layer size) white cake mix
1 cup boiling water
1 pkg. (3 oz.) JELL-O Orange Flavor GelatinKraft 2
1/2 cup cold water

1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
1/2 tsp. yellow food coloring
1/4 tsp. red food coloring
3 Tbsp. Halloween sprinkles

Make It
1 – Prepare cake batter and bake in 13×9-inch pan as directed on package. Cool cake in pan 15 min. Pierce cake with large fork at 1/2-inch intervals.
2 – Add boiling water to gelatin mix in small bowl; stir 2 min. until completely dissolved. Stir in cold water; pour over cake. Refrigerate 3 hours.
3 – Tint COOL WHIP with food colorings; spread onto cake. Refrigerate 1 hour. Decorate with sprinkles just before serving.

How to Thaw COOL WHIP
* Place unopened 8-oz. tub of whipped topping in refrigerator for 4 hours. Do not thaw in microwave.

* Prepare using COOL WHIP LITE Whipped Topping.

* If orange food coloring is available, use that instead of the yellow and red food colorings. Add enough drops of food coloring until frosting is of desired shade.
