Louisiana Stir-Fry

Louisiana Stir-Fry
Ingredients
Preparation time: 5 minutes (when using frozen cooked shrimp)
Cooking time: about 12–15 minutes.

Cooking spray
2 teaspoons corn oil
1 pound shrimp, shelled and deveined (for convenience, use frozen cooked shrimp that have been thawed)
1 bag (14 ounces) frozen broccoli florets
1 can (11 ounces) corn with red and green pepper, drained
1/2 cup coarsely chopped onion
1/8 to 1/4 teaspoon hot pepper sauce (such as Tabasco)
1 tablespoon Cajun seasoning (look for low-salt or no-salt Cajun seasoning if you limit your sodium intake)
1 can (14 1/2 ounces) diced tomatoes
Hot rice (optional)
8 lemon wedges (optional)

Directions
Yield: 8 cups
Serving size: 2 cups

1 – Coat a cool, nonstick wok with cooking spray. Preheat wok, then add oil. When the oil is hot, add shrimp and cook until they turn pink. (If using precooked shrimp, add shrimp during the last minute of cooking).

2 – Remove shrimp from the wok and set aside. Place frozen broccoli in the wok and cook for 3 minutes, stirring constantly. Add corn with peppers, onion, hot pepper sauce, and Cajun seasoning. Cook 2 minutes more, stirring frequently. Add tomatoes and cook until hot and bubbly, about 3 minutes. Add cooked shrimp and heat 1 minute more, stirring frequently. Serve immediately (over hot rice and with a squeeze of lemon if desired).

These are made using Laura’s 92% Lean Ground Beef, Onion, Cajun Seasoning, Kosher Salt, Ground Black Pepper, canned Low salt Yellow Corn, Salsa, Tomato Paste, Wonton Wrappers, Cooking Spray, Salsa, and Reduced Light Sour Cream. BAKED BEEF EMPANADAS

Ingredients
1/2 pound Laura’s 92% Lean Ground Beef or 96% Lean Ground Round
1/4 cup finely chopped onion
1/4 teaspoon Cajun seasoning
1/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
1/4 cup canned low-salt yellow corn, drained
1/3 cup salsa
1 tablespoon tomato paste
20 wonton wrappers
Cooking spray
Salsa, low-fat sour cream (optional)

Directions
1 -Preheat oven to 400F.
2 – Cook ground beef, onion and next 3 ingredients in a large nonstick skillet 5 minutes or until beef is browned; drain. Add corn and next 2 ingredients and cook until heated through. Remove and let cool.
3 – Working with one wonton wrapper at a time, spoon 1 tablespoon beef mixture into center of each wrapper. Bring 2 opposite corners together and pinch the points to seal, forming a triangle. Place wrappers on a wire rack and repeat procedure with remaining wrappers and beef mixture.
4 – Place empanadas on lightly greased baking sheets and coat lightly with cooking spray. Bake 4 to 6 minutes on each side, turning once or until golden. Serve with salsa and sour cream, if desired.

Recipe Yield: Yield: Makes 20 servings.

Total Time 15 Minutes
Serving Size 4 Servings

INGREDIENTS
1 (17.6-ounce) package JENNIE-O® Extra Lean Turkey Breast Cutlets, cut into 1-inch strips
2 teaspoons Creole, Cajun or Mexican seasonings
1 teaspoon minced fresh garlic
8 cups packed assorted torn salad greens
½ cup low-fat shredded Cheddar cheese
2 hard-cooked coarsely chopped egg whites
1 cup halved cherry tomatoes
½ cup yellow or red bell pepper, cut into strips
¼ cup herb or garlic croutons
⅔ cup fat-free thousand island dressing
freshly ground black pepper, if desired

DIRECTIONS
1) Toss turkey strips with seasoning and garlic. Coat a large non-stick skillet with cooking spray. Heat at medium-high. Add turkey strips. Cook the turkey as specified on the package. Always cook to well-done, 165ºF as measured by a meat thermometer. Transfer to a bowl; set aside to cool or refrigerate until serving time.
2) In a large bowl, add salad greens, cheese, hard-cooked egg whites, cherry tomatoes, bell pepper strips and croutons. Add cooled turkey and dressing; toss well. Arrange on 4 chilled serving plates; top with black pepper, if desired.
* Always cook to an internal temperature of 165°F.

Spicy Shrimp and Sausage Skewers
Bold flavor meets balanced nutrition in the sensational summer dish. The perfect main course for dinner on the patio, you’ll love the combination of sweet and heat in every delicious bite.

INGREDIENTS
1 (19.5-ounce) package JENNIE-O® Lean Sweet Italian Turkey Sausage
1 tablespoon olive oil
2 tablespoons Cajun seasoning
1 pound large shrimp, peeled, deveined and patted dry, tails on
chives
sriracha mayonnaise

DIRECTIONS
1) Grill turkey sausage as specified on the package. Always cook until well done, 165°F as measured by meat thermometer. Slice sausage.
2) In medium bowl, combine oil and seasoning. Add shrimp and toss to coat.
3) Thread shrimp and turkey onto skewers. Cook skewers on grill 5 to 7 minutes or until shrimp are cooked through.
4) Garnish with chopped chives. Serve with sriracha mayonnaise if desired.
* Always cook to an internal temperature of 165°F.

Bayou Cajun Fries
Paprika and Cajun seasoning give these oven-baked fries some kick, while extra virgin olive oil adds healthful fats.

Ingredients
Nonstick cooking spray
1 baking potato (6 ounces), scrubbed
1/2 teaspoon extra virgin olive oil
1/4 teaspoon paprika
1/4 teaspoon Cajun seasoning
1/8 teaspoons salt

Directions
Yield: 2 servings
Serving size: 2/3 cup

1 – Preheat oven 475°F. Spray nonstick baking sheet with nonstick cooking spray.

2 – Cut potato lengthwise into 1/4-inch slices, then cut each slice into 1/4-inch strips. Place on prepared baking sheet. Drizzle with oil and sprinkle with paprika; toss gently to coat. Arrange potato strips in single layer (potatoes should not touch).

3 – Bake 5 minutes; stir and bake 5 minutes more or until potatoes are golden brown and tender when pierced with fork. Immediately sprinkle with Cajun seasoning and salt; toss gently to coat.

The Juiciest Turkey Ever
Show your holiday guests that you care with the juiciest turkey EVER. With a sweet and savory Cajun rub, this unbelievably juicy recipe makes the perfect centerpiece to an unforgettable holiday meal.

INGREDIENTS
2 tablespoons light brown sugar
1 tablespoon Cajun seasoning
2 teaspoons ground oregano
2 teaspoons dried thyme leaves
2 teaspoons garlic powder
1 (8 to 12-pound) JENNIE-O® Premium Fresh Young Turkey
3 tablespoons butter, softened

DIRECTIONS
1) Combine brown sugar, Cajun seasoning, oregano, thyme and garlic powder in a small bowl. Rub turkey with butter and sprinkle with brown sugar mixture. Place turkey in v-rack, upside down, over roasting pan. Cooking your turkey upside down makes for a juicy, tender turkey.
2) Cook turkey as specified on the package. Roast until timer pops up and turkey is fully cooked, 180°F as measured by a meat thermometer inserted into the thickest part of the thigh. ALWAYS confirm doneness with a meat thermometer. Juices should run clear. Let turkey stand 20 minutes before carving.

Cajun Orange Turkey Tenderloin

INGREDIENTS
¾ cup orange juice
3 green onions, chopped
3 tablespoons orange marmalade
3 cloves garlic, minced
1½ teaspoons Cajun seasoning
1 (24-ounce) package JENNIE-O® Savory Roast Turkey Breast Tenderloin, cut into 6 pieces
6 Bibb lettuce leaves
6 orange wedges, if desired

DIRECTIONS
1) In small bowl, combine orange juice, onion, marmalade, garlic and seasoning. Pour ½ cup marinade into resealable food storage bag; add tenderloins. Seal bag and refrigerate 1 hour or overnight.
2) In saucepan, bring reserved marinade to boil. Reduce heat; simmer, uncovered 5 to 7 minutes or until thickened; keep warm.
3) Remove turkey; discard any marinade. Grill turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Brush turkey with sauce.
4) Place on lettuce. Serve with orange wedges, if desired.
* Always cook to an internal temperature of 165°F.
