For Breakfast this morning I prepared a Breakfast Sandwich using; Boar’s Head Deluxe Ham, 1 Fried Egg, and 2 toasted slices of Healthy Life Whole Grain Bread. Also had the morning cup of Bigelow Decaf Green Tea. After Breakfast I went to Meijer for a few Items I needed and then took the car through the car wash. Extremely hot and humid out today. The heat index is around 104 degrees! Not a whole lot going on outside today. For Dinner tonight its Smoked Turkey Sausage Dogs w/ Baked Shoestring Fries.

 

 

 

Smoked Turkey Sausage Dogs w Vegetarian Baked Beans 003

I used the Butterball Hardwood Smoked Turkey Sausage. I cut one of the Sausage Links into to 2 pieces to give me a couple of Sausage Dogs. I absolutely love the Butterball Hardwood Smoked Turkey Sausage. It’s got such a fantastic flavor and always cooks up just right. To prepare them I used a large skillet, added about a 1/2 tablespoon of Extra Virgin Olive Oil and preheated it on medium heat. Put the Sausage in the skillet when it was heated up and covered with a lid. I turned the Sausage every few minutes to get an even char on them, cooked about 11 minutes total. As always they came out just bursting with flavor and flat-out delicious! I served it on a Healthy Life Whole Grain Hot Dog Bun and topped with French’s Spicy Brown Mustard.

 

 

Grilled Cheese and Baked Fries 003
To go with the Sausage I baked up some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 18 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fries! Plus they are only 120 calories and 15 net carbs. Served with a side of my favorite Ketchup, Hunt’s Ketchup. I had a Snapple Diet Trop-A-Rocka to drink. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

For Breakfast I had Gravy and Toast. I used Pioneer Peppered White Gravy and a couple of toasted slices of Healthy Life Whole Grain Bread. Went out to get the morning papers this morning and it was a bit nippy, about 19 degrees with cold wind. The day was sunny but cold. Can’t complain though we’ve had a very mild Winter so far. Helped Mom make Breakfast for her and Dad. After that it was house cleaning, vacuum, dusted, and cleaned the stove and oven also. Had to repair a shelf in the pantry that was loose. For dinner tonight I prepared a Shrimp and Smoked Turkey Sausage Gumbo.

I have a lot of favorite meals but this one is near or at the top, love the combinations of Gumbo, Shrimp, and Smoked Turkey Sausage. To make it I used a box of Zatarain’s Gumbo Pasta Dinner Mix for the Gumbo base, 1 Butterball Hardwood Smoked Turkey Sausage (sliced into bite size slices), a bag of Kroger Brand Jumbo Shrimp (that I precooked before adding to the Gumbo), and Frank’s Red Hot Sauce.

The Zatarain’s Gumbo Pasta Dinner Mix uses Pasta instead of Rice. Very easy to prepare, takes about 25-30 minutes. I just boil the stock that’s in the packet, add the sliced the Turkey Sausage to the stock along with a few shakes of Frank’s Red Hot Sauce and continued to cook for 10-15 minutes. Then I added Extra Large Shrimp and simmered another 3-6 minutes. And the Gumbo is ready to serve and It turns out fantastic! Nice flavor, incredible tasting stock, meaty Shrimp and Sausage, and plenty of Pasta, makes one easily prepared hearty and delicious dish. Plus enough leftovers for a couple of lunches too! I also baked a loaf of Pillsbury French Bread. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Shrimp Gumbo: Prepare as directed in Step 1, using 1 pound medium shrimp, peeled and deveined, in place of the sausage. Cook and stir 3 minutes or just until shrimp turn pink. Remove shrimp from skillet. Continue as directed, stirring shrimp back into skillet after pasta is tender.

Had a light Breakfast this morning and then on to my morning workout. Another beautiful Fall Day out again. I was all caught up on everything so I had the cart out early riding around. About noon went over to see dad at the rehab center, he’s doing so much better and eager to come home. He’ll be released Friday! For dinner tonight a personal comfort food for me. I prepared Shrimp and Smoked Turkey Sausage Gumbo with Baked Rustic French Bread.

Downright miserable out again, hot and humid. Late afternoon/evening is our community Picnic and Swim Party, a bit too humid for me to go though. For dinner tonight a classic, (Beans and Weenies) Beans and Smoked Turkey Sausage w/ Cheddar Corn Bread Muffins.

 

 

 

 

 
Growing up I always loved those little cans of Campbell’s Beans and Weenies, that and Spaghetti-O’s! Well I wanted some Beans and Weenies but I jazzed it up a bit. I used 1 Butterball Hardwood Smoked Turkey Sausage (sliced into bite size pieces), a handful of Oscar Mayer Turkey Bacon Bits, 1 can of Joan of Arc Spicy Chili Beans, 1 can of Bush’s Reduced Sodium Black Beans (drained and rinsed), 1/4 of a medium-sized Red Onion (Chopped), 1/2 teaspoon Ground Cinnamon, 1 tablespoon Ground Mustard, 1 tablespoon Splenda Brown Sugar, a couple of shakes (or more) of Frank’s Red Hot Sauce, and a 3/4 cup of Jack Daniel’s Honey Smokehouse BBQ Sauce (or to taste).

 

 

 
To prepare everything, it can’t be much easier. I used a small size Dutch Oven that I had sprayed with Pam Cooking Spray. Added all the ingredients except for the Turkey Smoked Sausage to the Dutch Oven, and stirred until well mixed. I turned the stove on medium low, covered the pot and just let simmer. Another set it and forget recipe! You could make this in a crock pot on low and let it go all day or by using a medium size sauce pan and get done even quicker. I love dishes that you can set low and let them simmer. After a couple of hours I sliced up one of the Butterball Hardwood Smoked Turkey Sausage and added it to the Beans. I then increased the heat to medium for about another hour and then reduced it back down to medium low until it was time for dinner.

Then to go with my “Beans and Weenies” I baked some Cheddar Corn Bread Muffins. First time I made these and they are delicious! The recipe comes from the Taste of Home website. I lightened the recipe up by using 2% Milk, Sargento reduced Fat Shredded Cheddar Cheese, and Fat Free Greek Yogurt. The original recipe also had it as bread that you cut into squares but I baked as Muffins instead. Fantastic side to the “Beans and Weenies”! I left the full recipe along with a link to the original recipe at the end of the post. A good Hearty Meal tonight. For dessert later a Jello Sugar Free Dark Chocolate Mousse.

Cheddar Corn Bread Recipe (Taste of Home Photo)

MAKES: 12 servings
Ingredients
2 packages (8-1/2 ounces each) Corn Bread/Muffin Mix
1/2 cup Egg Beater’s
1/2 cup 2% Milk
1/2 cup Fat Free Greek plain Yogurt
1 can (14-3/4 ounces) cream-style corn
1/2 cup Sargento 2% Shredded Cheddar Cheese
Directions
In a large bowl, combine the corn bread mix, eggs, milk and yogurt until blended. Stir in corn and cheese. Pour into a greased 13-in. x 9-in. baking dish.
Bake at 400° for 18-22 minutes or until a toothpick inserted near the center comes out clean. Cut into squares. Serve warm. Yield: 12 servings.

A really cool day out today. A friend of mine is in town from Phoenix and we met for lunch. He was wearing a jacket and was freezing, he’s not used to this weather! The breeze is what’s making it so chilly, a really cold wind. Yesterday I had went to Meijer, who has the best selection of Jennie – O Turkey Products. I had picked up a package of Jennie – O Turkey Sausage Links. I made some for Breakfast and noticed the package was different and it had “Lean” on the package. I looked at the Nutrition on back and for 2 Turkey Links it was only 65 calories! I’ll have to buy the “Lean” from now on can’t beat that, the normal I believe was at 90 calories for 2. For dinner tonight a classic, (Beans and Weenies) Beans and Smoked Turkey Sausage.

Cloudy all day but no snow or rain, about 38 degrees out. A big thank you to one of my neighbors for finding Driveway Salt! It’s really hard to come by, even Highway Maintainance Departments are finding it hard to come by. And we’ll need it the way it sounds with heavy snow coming in Sunday and Monday. Hope they miss this forecast! For dinner something new, I prepared Hardwood Smoked Turkey Sausage Sandwich w/ Spicy Asian Carrot Soup.

To make the Hardwood Smoked Turkey Sausage Sandwich, I used Butterball Hardwood Smoked Turkey Sausage. I took one of the Sausages and cut it up into 3 equal pieces. Then I split those pieces in half, slicing them in the middle length wise. Using a medium size skillet, I sprayed it with Pam cooking Spray, added a tablespoon of Extra Virgin Olive Oil, and heated it on medium. When the skillet was heated up I added the Turkey Sausageskin down. I cooked it until the skin casing started to brown and then flipped it over and continued cooking for another 4 minutes. When browned and heated through I served it on an Aunt Millie’s Reduced Calorie Whole Grain Bun. On the bottom bun I laid a slice of Murray’s Dutch Gouda Cheese. Then the split Sausage and topped it all with Kraft Reduced Fat Mayo w/ Olive Oil. One delicious Sandwich!

 

 

 

Spicy Asian Carrot Soup 002
Then to go with the Sandwich I made a pot of Spicy Asian Carrot Soup. First time I prepared this, and it won’t be the last! It turned out to be one thick and rich Soup. I had come across it in a Pillsbury Magazine and it looked and sounded like a winner. Among other ingredients it has Carrots, Yellow Onions, 1/2 and 1/2, Garlic, Ginger, Honey and Soy Sauce. Sound Good? You mix all but 2 of the ingredients in a Crock Pot and let them cook on low for 9 hours. When the Carrots and all the ingredients have heated and softened carefully ladle 4 1/2 cups soup mixture into blender. Cover; blend on low-speed until smooth. Transfer to large bowl. Repeat with remaining soup mixture. Return soup to slow cooker. Stir in 1/2 cup of the half-and-half. Increase heat setting to High. Cover; cook 15 to 20 minutes or until soup is hot. Ladle the soup into serving bowls. To garnish, drizzle about 1 tablespoon of the remaining half-and-half over top of each bowl; swirl gently with tip of knife. Sprinkle with cilantro. And you have one decadent hot bowl of Spicy Asian Carrot Soup! Plus it’s only 100 calories and 11 net carbs per serving. The full recipe along with its web link is at the bottom of the post. I really enjoyed this dinner. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

 

 

 

 

 

Spicy Asian Carrot Soup

Looking for spicy Asian side dish? Then check out this slow-cooked carrot soup that’s sprinkled with cilantro.
Ingredients:

4 – cups sliced carrots (3/4 to 1 inch thick; about 6 large)
1 – medium yellow onion, chopped (1/2 cup)
3 – cloves garlic, cut in half
1 – piece (1 inch) ginger root, peeled, sliced
2 – tablespoons rice vinegar
2 – tablespoons soy sauce
2 – teaspoons honey
1/4 – to 1/2 teaspoon crushed red pepper flakes
1/2 – teaspoon salt
1/4 – teaspoon pepper
1 – carton (32 oz) vegetable broth
1 – cup half-and-half
Chopped fresh cilantro leaves

Directions:

1 Spray 3 1/2- to 4-quart slow cooker with cooking spray. In slow cooker, place all ingredients except half-and-half and cilantro; stir well.
2 Cover; cook on Low heat setting 8 to 9 hours or until carrots are very tender.
3 Carefully ladle 4 1/2 cups soup mixture into blender. Cover; blend on low speed until smooth. Transfer to large bowl. Repeat with remaining soup mixture. Return soup to slow cooker. Stir in 1/2 cup of the half-and-half. Increase heat setting to High. Cover; cook 15 to 20 minutes or until soup is hot.
4 Ladle soup into serving bowls. To garnish, drizzle about 1 tablespoon of the remaining half-and-half over top of each bowl; swirl gently with tip of knife. Sprinkle with cilantro.

 I guess we’re in for a cold week or so from I’m hearing on the news. This weather is really getting old, it seems as the Ground Hog was right! It was sunny out all day but we had a wind chill that made feel in the teens to the single digits all day. Think warm Spring Days! For dinner tonight it’s Hardwood Smoked Turkey Sausage and Shrimp w/ Red Beans and Rice.

 

 
To make this I used one of my favorites Smoked Turkey Sausage, Butterball Hardwood Smoked Turkey Sausage. For me this is a perfect Smoked Turkey Sausage; fantastic flavor, great seasoning, and cooks up just right. To prepare it I pan fried it in a medium size skillet. Just sprayed the skillet with Pam and fried them on medium heat about 12 minutes, turning the sausages frequently until done. When done I sliced 1 1/2 of the two sausages up into quarter size pieces and set aside. Then for the Shrimp I had a bag of Kroger Jumbo Shrimp in the freezer. I sat them in the fridge overnight to thaw. I rinsed them cold water and they were ready to go when it was time to add them to Red Beans and Rice. I added the Shrimp to the mix last because the Shrimp doesn’t take long to get done.

Then for the Red Beans and Rice I used Zatarain’s New Orleans Style Reduced Sodium Red Beans and Rice. Easy way to have some excellent Red Beans and Rice, plus it’s Reduced Sodium. If you love Red Beans and Rice you’ll love this! To prepare; In a 2 quart saucepan, combine 2 3/4 cups water, 2 tablespoons olive oil or margarine and Zatarain’s Black Beans and Rice. Stir well and bring to boil. Stir, reduce heat, cover and simmer over Low heat for 25 minutes. Stir occasionally to prevent sticking. Remove from heat and let stand 5 minutes. Stir and serve. Black Beans and Rice will be saucy. Before serving this I added the sliced Smoked Turkey Sausage and a few shakes of the Frank’s Red Hot Sauce, too good! I also had a slice of Klosterman Wheat Bread.

Not a bad day out, considering the weather we’ve been having. Partly sunny and it got up to around 28 degrees. Had a little skiff of snow this morning so I cleared that off around the door walk and ramp and my neighbor blew the rest off with a snow blower. Spent the day cleaning the computer and the disaster around it! Scanned and uninstalled some old programs and then cleaned the computer desk and around that. Amazing how much junk one person can accumulate! Wanted something different for dinner so tonight I prepared Beans and Smoked Turkey Sausage with a slice of French Bread.

 

 

 
Growing up who didn’t like the old-fashioned Campbell’s Beans and Weenies, that and Spaghetti-O’s! Well I wanted some Beans and Weenies but I jazzed it up a bit. I used 1 Butterball Hardwood Smoked Turkey Sausage (sliced into bite size pieces), 1 can of Joan of Arc Spicy Chili Beans, 1 can of Bush’s Reduced Sodium Black Beans (drained and rinsed), 1/4 of a medium-sized White Onion (Chopped), 1 teaspoon Ground Cinnamon, 1 tablespoon Splenda Brown Sugar, a couple of shakes (or more) of Frank’s Red Hot Sauce, and a 1/3 cup of Jack Daniel’s Honey Smokehouse BBQ Sauce (or to taste).

To prepare everything, it can’t be much easier. I used a small size Dutch Oven that I had sprayed with Pam Cooking Spray. Added all the ingredients except for the Turkey Smoked Sausage to the Dutch Oven, and stirred until well mixed. I turned the stove on medium low, covered the pot and just let simmer. Another set it and forget recipe! I started simmering everything around 1 pm this afternoon. You could make this in a crock pot on low and let it go all day or by using a medium size sauce pan and get done even quicker. I like dishes that you can set low and let them simmer. After a couple of hours I sliced up one of the Butterball Hardwood Smoked Turkey Sausage and added it to the Beans. I then increased the heat to medium for about another hour an

 d then reduced it back down to medium low until it was time for dinner.

 

 
I had leftover Pillsbury Rustic French Bread from last night’s dinner that I warmed up to deserve with the Beans and Sausage. The Beans/Sausage came out delicious! It had a good Smokey Flavor to it and the Jack Daniel’s BBQ Sauce is perfect for Beans and the Turkey Sausage. Then I had a slice of the French Bread to mop up all the Sauce. A good Hearty Meal tonight. For dessert later a Del Monte No Sugar Added Peach Chunk Cup.

Cleaned out a couple of closets today, which was way over due.Amazing the stuff you can find that you had forgot about. That was about the extent of my day. For dinner tonight a Hardwood Smoked Turkey Sausage w/ Red Beans and Rice along with a slice of Whole Grain Bread.

 

 

 

 

 

I had this a while back and had frozen the leftovers, I wasn’t sure how the Beans and Rice would hold up after freezing. I let it thaw in the fridge overnight. To reheat it I emptied the container in a small sauce pan on medium heat. When done I added a few shakes of Frank’s Red Hot Sauce and it was ready! The Beans and Rice along with the Sausage froze and reheated perfectly and tasted as good as the first time I had made it!

Another beautiful day out to be Dec. 28th, 50 degrees and sunny! Got the Hoveround Chair out and went around the street for a bit, good to get outdoors. My Mom is back at full strength and was able to get out herself for a while. For dinner tonight I prepared a Cajun Chicken Breast w/ Smoked Turkey Sausage Red Beans and Rice.

 

 

 

I used Perdue Perfect Portions Boneless, Skinless Chicken Breasts. I seasoned them with Sea Salt and Zatarain’s Creole Seasoning, also sprinkled a light coat of flour on them. I pan fried them in Canola Oil about a total of 10 minutes, turning them twice. The Creole Seasoning gave the Chicken a great flavor, spicy but not overpowering hot.

 

 

 
While the Chicken was frying I cut up 1 Butterball Smoked Turkey Sausage and lightly fried it in Extar Virgin Olive Oil. I didn’t fully get the Sausage done, I let them finish in the Zatarain’s Reduced Sodium Red Beans and Rice. To prepare the Red Beans and Rice I just used a 2 quart saucepan combined 3 1/4 cups water, 1 tablespoon of Blue Bonnet Light Stick Butter and Zatarain’s Red Beans and Rice. Stirred thoroughly and brought back to a boil. Kept stirring, reduced the heat, and added the Smoked Turkey Sausage covered and simmer over low heat for about 25 minutes. stirred occasionally to prevent sticking. Removed from the heat, let it stand for 5 minutes. stir and served. I made a bed of it on my plate and topped it with a sprinkle of fresh grated Parmesan Cheese and the Cajun Chicken Breast. Made one fine hearty dish! For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

A New Orleans tradition since 1889. Serves 4. This easy-to-prepare dinner mix has just the right blend of ingredients for a great tasting, authentic New Orleans style meal. Ingredients
Enriched parboiled long grain rice (niacin, reduced iron, thiamine mononitrate, riboflavin, folic acid), whole (precooked) dehydrated red beans, enriched wheat flour (niacin, reduced iron, thiamine mononitrate, riboflavin, folic acid), salt, dehydrated vegetables (onion, bell pepper), modified corn starch, garlic, yeast extract, spices, soy sauce (100% soybean), cayenne pepper, dextrose, natural smoke, caramel color, partially hydrogenated soybean

Directions
Stovetop: 1. in a 2 quart saucepan combine 3 1/4 cups water, 1 tablespoon butter or margarine (optional) and zatarain’s red beans and rice. stir thoroughly and bring to boil. 2. stir, reduce heat, cover and simmer over low heat for 25 minutes. stir occasionally to prevent sticking. 3. remove from heat, let stand 5 minutes. stir and serve. red beans and rice will be saucy. for a less saucy product reduce water by 1/4 cup. Microwave: 1. in a 1 1/2
