Today’s Menu: Crock Pot Pork Back Ribs w/ Applewood Smoked Bacon Potato Casserole and Vegetarian Baked Beans

 

 

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off! One delicious Breakfast!

 

 

 

Not long after Breakfast I started to prepare our Dinner tonight – Crock Pot Pork Back Ribs w/ Applewood Smoked Bacon Potato Casserole and Vegetarian Baked Beans. I prepared the Ribs early so we could take a big plate of everything to Dad over at the rehab center. 92 degrees and humid outside today. Did some yard work after Breakfast before it got too hot out there. All caught up with work and cleaning so I took a mid day nap. I haven’t slept good the past few nights, real restless for some reason. So for Dinner tonight its Crock Pot Pork Back Ribs w/ Applewood Smoked Bacon Potato Casserole and Vegetarian Baked Beans.

 

Mom and Dad’s favorite meal is my Crock Pot Pork Back Ribs and they both have been wanting some Ribs. So Ribs it is for dinner tonight. picked up a package at Meijer yesterday, they always have top quality Pork. And these were some Pork Back Ribs, 4 1/2 lbs. worth! Last night before I went to bed I cut the Ribs in half, so they’ll fit in the Crock Pot, and put each half in a Hefty Gallon Plastic Bag then seasoned them with JB’s Fat Boy All Purpose Rub and then covered the Ribs in JB’s Fat Boy Haug Waush BBQ Sauce to marinate all night in the fridge.

 

 

Then this morning I got out the Crock Pot, lined it with a Reynold’s Crock Pot Plastic Liner, and sprayed that with Pam Non-Stick Spray and added a 1/2 cup of water. Got the Ribs out of the fridge, discarded the Hefty Bags, and put them in the Crock Pot where I let them cook and simmer, on low, for about 7 hours. Long up in the afternoon you can start smelling the aroma of the Ribs, Rib intoxicating!

 

 

 

After 7 hours their ready and now for the hard part of cooking them, getting them out whole without breaking them up! Their that tender, when eating them you need no knife, the bones just slide out. Tender, moist and just full of flavor! For us JB’s Fat Boy Sauces and Rubs can’t be beat. The Ribs were incredible! Plus I love using that Crock Pot, no mess and with the plastic liner in the Crock Pot little to no clean-up. Just wipe it down and store it for the next time. I would like to thank who ever invented the Crock Pot Liners! I always use them when using the Crock Pot.

 

For 1 side I prepared Idahoan Applewood Smoked Bacon Homestyle Casserole. I’ve made these a few times now and like the other Idahoan dishes there a breeze to prepare and a delicious Potato Dish. And like he others this turned out fantastic! Very well seasoned, and you can taste that Applewood bacon flavor. Full description and recipe directions are at the end of the post.

 

 

 

For another side I prepared some Bush’s Reduced Sodium Vegetarian Baked Beans. I had these sometime back and fell in love with the flavor and taste of the Vegetarian Beans! Only 130 calories, 0 fat, and 24 net carbs per serving. To prepare the; just open the can and empty the Beans Into Saucepan. Heat To Simmer until heated through. Love these Beans! For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

 

 

 

 

Idahoan Applewood Smoked Bacon Homestyle Casserole
The saying is “everything is better with bacon” and we couldn’t agree more. That’s why we incorporated Applewood Smoked Bacon in with our rich cheesy sauce for this homestyle casserole that is sure to become a family favorite.

Oven Preparation
Preheat oven to 450°F. Combine potatoes and sauce mix in 1 1⁄2-quart baking dish.
Stir in 1 1/2 cups boiling water, 1/2 cup milk, and 1 1/2 Tbsp. margarine or butter with whisk.
Bake uncovered for 25 minutes or until top is golden brown and potatoes are tender (sauce will thicken slightly when cooling). Remove from oven and let stand a few minutes before serving.
Baking Notes: To prepare 2 casseroles at once, double all ingredients, increase baking dish size accordingly, and bake about 30 min.
Stove Top Preparation
Heat potatoes and sauce mix, 1 1/2 cups hot water, 1/2 cup milk, and 1 1/2 Tbsp. margarine or butter to boil in 2-quart saucepan over high heat, stirring occasionally. Watch carefully to avoid boilover.
Reduce heat, then cover and simmer 15 minutes, stirring occasionally, until potatoes are tender and sauce reaches desired consistency (sauce will thicken slightly when cooling).
Remove from heat and let stand a few minutes before serving.

Today’s Menu: Bluegrass Lean Bratwurst w/ Baked Vegetarian Beans

 

 
For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. After Breakfast headed to Meijer for a few items, stopped and got gas, then stopped at McDonald’s and picked up Breakfast for Mom. High of 75 degrees with showers on and off. Made Dad a couple of small loaves of Pillsbury Nut Quick Bread, his favorite. Then later in the afternoon took them over to him. It looks as though he’s got a couple more weeks of rehab before possibly coming home. Back home did a few things around the house. For Dinner tonight its Bluegrass Lean Bratwurst w/ Baked Vegetarian Beans.

 

 

It’s Brats and Beans for Dinner! Last time I was at Jungle Jim’s I picked up a couple of packages of Bluegrass Deliciously Lean Bratwurst. I had them in the freezer and got a couple of the Brats out and let them thaw overnight in the fridge. Love using these Blue Grass Lean Bratwurst, which are 100 calories and 4 carbs per Brat. To prepare them; Just add the Brats to a large skillet and add water, until the Brats are half way covered. Bring them to a brisk boil but then immediately turn down the heat to a very low boil, more of a simmer than an active boil. Simmer for about 15 to 20 minutes, then finish off in a pan with just the Brats and a little Extra Virgin Olive Oil to get a nice crispy finish. Love this method, if you’re not grilling them. Delicious, plump, and they cook up great! Served it on a Aunt Millie’s Reduced Calorie Whole Grain Hot Dog Bun topped with French’s Spicy Brown Mustard.

Today’s Menu: 5 oz. Petite Buffalo Top Sirloin Steak w/ Vegetarian Baked Beans and Baked Potato

 

 

 

For Breakfast I toasted a Healthy Life Whole Grain English Muffin (lightly buttered), Scrambled 2 Eggs, and my morning cup of Bigelow Decaf Green Tea. About 75 degrees out there again but mostly cloudy with showers, lot of rain lately around here. After Breakfast I headed up to the hospital to see Dad. He feels good but he so weak, I don’t know what we are going to do? We would like to have him here but he’s so weak he just can’t. We sure hope to keep him out of an assisted living center but it may be our only choice. Back at home did a few things around the house. For Dinner tonight I prepared a 5 oz. Petite Buffalo Top Sirloin Steak w/ Vegetarian Baked Beans and Baked Potato.

 

 

I’ll be using Wild Idea Buffalo Petite Top Sirloin Steak (5 oz.). To prepare the Steak; I rubbed the Steak with a 1/2 teaspoon of Extra Virgin Olive Oil. Then seasoned it with Dried Rosemary, McCormick’s Grinder Sea Salt and Peppercorn Medley. As the Steak rested I preheated a Cast Iron Skillet on medium heat. When the skillet was heated I added my Buffalo Sirloin, cooked it 4 1/2 minutes per side to a beautiful Medium Rare! The Wild Idea Buffalo Steaks are just incredible. So juicy and the best flavor of any Steak, Beef or Buffalo I’ve ever had. As always when cooking Buffalo, keep an eye on it will get done quickly. They cook faster than marbled meat and when overcooked will be tough and dry. Buffalo is best cooked medium-rare or rare. I topped it with some Sauteed Mushrooms.

 

 


For one side I prepared a Baked Potato. Seasoned that with the McCormick Grinder Sea Salt and Peppercorn Medley, and topped with I Can’t Believe It’s Not Butter.

Today’s Menu: Panko Crusted Cubed Pork Steak w/ Gravy, Mashed Potatoes, and Vegetarian Baked Beans

I fasted overnight I had to got the Urologist for my yearly checkup at 8:00 this morning. After that I headed off to Meijer, I just needed a few items. Back home I did some house cleaning and finished up a couple of loads of laundry for Mom. After Lunch I went to spend the afternoon with Dad at the rehab center. He’s taking therapy twice a day still and getting stronger!. So for dinner tonight I prepared a Panko Crusted Cubed Pork Steak w/ White Gravy, Mashed Potatoes and Vegetarian Baked Beans.

 

 

I bought a of packages of Cubed Pork Steak at Kroger the other day. To prepare them, I got the big three out to bread it with; Flour,Egg Beater’s, and Panko Bread Crumbs. I seasoned the Steak with Sea Salt and Black Ground Pepper. Cubed Pork Steak Sandwich Shake and Bake 001Next I seasoned the Flour with Hungarian Paprika and rolled the Cube Pork in that and shook off the excess. Then I dipped it in the Egg Beater’s shaking off the excess and then pressed both sides in the Shake and Bake Seasoned Panko Bread Crumbs, making sure both sides was well covered. I heated up a medium size skillet, that I drizzled with Extra Virgin Olive Oil, on medium high heat. Added my Cubed Pork and fried both sides about 4 minutes per side, till each side was golden brown. Topped it with some Pioneer Peppered White Gravy. The Cubed Pork Steak came out delicious! Moist and very tender with a good flavor from the Paprika and all the other ingredients. As you can tell in the picture, the Steaks are huge so I cut them half, I’ll have the other half for Breakfast in the morning.

For one side dish I prepared my favorite Mashed Potatoes, Bob Evans Mashed Potatoes. Easy to fix and delicious. Topanko-crusted-cubed-pork-steak-w-gravy-mashed-potatoes-and-gre-002 prepare it just heat it up in the microwave for 6 minutes and it’s ready. To top my Mashed Potatoes and Cubed Pork Steak I made some Pioneer Peppered White Gravy. Another quick and easy prep and comes out piping hot and delicious. I topped both my Mashed Potatoes and Cubed Steak with it.

Today’s Menu: Buffalo 10 oz. New York Strip Steak w/ Baked Steak Fries and Baked Vegetarian Beans

For Breakfast I had a toasted Healthy Life English Muffin that I topped with I Can’t Believe It’s Not Butter. I also had a cup of my favorite Tea, Bigelow Decaf Green Tea. Not quite as cold as yesterday, about 39 degrees. And the day was a beautiful Fall Day, 70 degrees and sunny! So after Breakfast I headed out Meijer, and did some Christmas shopping while there, and then on to Kroger for Mom. Back home cleared out some leaves around the house. Then got the cart out for an afternoon of riding around the neighborhood and lake. A lot of Geese and Mallard Ducks out on the water today. Really a nice day out today. For Dinner tonight I prepared a Buffalo 10 oz. New York Strip Steak w/ Baked Steak Fries and Baked Vegetarian Beans.

 

I had ordered a couple of Wild Idea Buffalo 10 oz. New York Strip Steaks and had them in the freezer. So I grabbed Buffalo 10 oz New York Strip 002one out of the freezer last night and let it thaw in the fridge overnight. What beautiful cuts of Buffalo these Steaks are, so lean and delicious. To prepare it all I’ll need is McCormick Grinder Sea Salt and Peppercorn Medley, Dried Rosemary, and Extra Virgin Olive Oil. I started by preheating a Cast Iron Skillet on medium high. Then rubbed a very light coat of the Extra Virgin Olive Oil on both sides of the Steak then seasoned both sides with the Rosemary, Sea Salt and Peppercorn Medley. Once the skillet is hot I added the Steak let it sear on the medium heat for about 6 minutes. Then turned it once and cooked for 7 more minutes. The Steak is a thick cut so I had to cook it longer than normal. Served it with some Sauteed Mushrooms.

These Steaks are every bit as delicious as they look! The taste is so fresh and has that slight sweet Grass Fed Buffalo taste to it. Moist and tender and so delicious! You just can’t beat these Wild Idea Buffalo Steaks, Bison or Beef. The Steak was plenty big so I saved some it for my Breakfast in the morning, Steak and Eggs!

For Breakfast on this chilly Fall Sunday Morning I prepared a Poached Egg that I served on a toasted Healthy Life Whole Grain English Muffin. Also had the morning cup of Bigelow Decaf Green Tea. As I had mentioned it was a bit chilly this morning at 39 degrees. Beautiful Fall Day out today, Sunny and a high of 71 degrees! After Breakfast I cleaned the house today, vacuum and dusted. Then outside grabbed the leaf blower and cleaned off the deck and the driveway area. Everything done by 1:00 and settled in for a day of NFL Football. For Dinner tonight I prepared Crispy Chicken Strips w/ Mashed Potatoes and Vegetarian Baked Beans.

 

 

Perdue Crispy Chicken Strips

I used the PERDUE® Crispy Chicken Strips, my favorite frozen Chicken to prepare. So to prepare it, I preheated the oven to 425°F . Sprayed a small baking sheet with cooking spray. Placed frozen strips in single layer on baking sheet. Baked for 16 to 18 minutes, or until heated through. Internal temperature should reach 150°F – 160°F. For one side dish I prepared my favorite Mashed Potatoes, Bob Evans Mashed Potatoes. Easy to fix and delicious. To prepare it just heat it up in the microwave for 6 minutes and it’s ready. Then for another side I prepared some Bush’s Reduced Sodium Vegetarian Baked Beans. I had tried these a while back and fell in love with the flavor and taste of the Vegetarian Beans! Only 130 calories, 0 fat, and 24 net carbs per serving. To prepare the; just open the can and empty the Beans Into Saucepan. Heat To Simmer until heated through. Love these Beans! I also baked a loaf of Pillsbury French Bread. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

For Breakfast I baked a small can of Pillsbury Grand Biscuits. I made a Breakfast Sandwich out of them using Boar’s Head Deluxe Ham and a 1/2 slice of Kraft Sharp Cheddar. Very good, just wish there was some lower calorie and lower carb Biscuits out there. After Breakfast I did a load of laundry for Mom. Then some outside sprucing up! Got the trusty leaf blower out and cleaned out around the house. Got the cart out and went around the house spraying for weeds. Then repaired the Flag stand we have of the wooden deck, and got the American Flag out and displayed. Then I trimmed up the vines alongside the driveway. Nice day to be out, about 82 and sunny with lower humidity! For dinner tonight I prepared Crispy Chicken Strips w/ Mashed Potatoes and Vegetarian Baked Beans.

I used the PERDUE® Crispy Chicken Strips. To prepare it I preheated the oven to 425°F . Sprayed a small baking sheet with cooking spray. Placed frozen strips in single layer on baking sheet. Woke up to about 3″ or more of snow, with more on the way! Temperature wise it’s not too bad out, in the 20’s. It is Winter. For Breakfast I fried some slices of Boar’s Head Black Forest Ham and served it on toasted Healthy Life Whole Grain Bread and topped the Ham with a slice of Sargento Ultra Thin Swiss Cheese. Gave Mom a hand with a couple of loads of laundry and then it was outside to clear what snow I could off the drive and the cars. My neighbor brought over his Snow Blower to get most of it cleared for us. For dinner tonight I prepared a Smoked Turkey Sausage Dogs w/ Vegetarian Baked Beans.

I used the Butterball Hardwood Smoked Turkey Sausage. I cut one of the Sausage Links into to 2 pieces to give me a couple of Sausage Dogs. I absolutely love the Butterball Hardwood Smoked Turkey Sausage. It’s got such a fantastic flavor and always cooks up just right. To prepare them I used a large skillet, added about a 1/2 tablespoon of Extra Virgin Olive Oil and preheated it on medium heat. Put the Sausage in the skillet when it was heated up and covered with a lid. I turned the Sausage every few minutes to get an even char on them, cooked about 11 minutes total. As always they came out just bursting with flavor and flat-out delicious! I served it on a Healthy Life Whole Grain Hot Dog Bun and topped with French’s Spicy Brown Mustard.

Then for a side dish I prepared a 16 oz. can of Bush’s Vegetarian Baked Beans. I had tried these in a dish I prepared a while back and fell in love with the flavor and taste of the Vegetarian Beans! Only 130 calories, 0 fat, and 24 net carbs per serving. To prepare the; just open the can and empty the Beans Into Saucepan. Heat To Simmer until heated through. Love these Beans, becoming my favorite real quick. A simple but delicious dinner tonight! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

For Breakfast I made a packet of Pioneer White Peppered Gravy, 2 Jennie – O Turkey Breakfast sausage Links, a Toasted Slice of Healthy Life Whole Grain Bread, and my morning cup of Bigelow Decaf Green Tea. Love Breakfast! So after Breakfast it was house cleaning day; dusting, vacuum, and did a load of laundry for Mom. It wasn’t quite as cold this morning, 7 degrees with a wind chill of minus 3. They say we have that dreaded 4 letter word moving in tomorrow, S-N-O-W! Knowing this are like I do the grocery stores will be packed all day! Just to mention the word snow sends this are into a panic, it’s so funny! They say Friday could be our big snow day though, 5-7 inches if it comes in right. But life will go on somehow in this area (LOL). For dinner tonight I prepared Beans and Smoked Turkey Sausage (Beans and Weenies). Love this dish!

While growing up I would live on Campbell’s Beans and Weenies! So tonight it’s Beans and Weenies, but I kicked this version up a bit. I used 1 Butterball Hardwood Smoked Turkey Sausage (sliced into thin bite size pieces), 3 slices of Jennie – O Turkey Bacon (Fried and Crumbled), 1 can of Bush’s White Chili Beans, 1 can Bush’s Vegetarian Reduced Sodium Baked Beans, 1/4 cup of Red Onion (Chopped), 1 teaspoon Ground Cinnamon, 1 teaspoon Ground Mustard, 1 tablespoon Splenda Brown Sugar, Liquid Smoke (Optional and to taste), a couple of shakes (or more) of Frank’s Red Hot Sauce, and 2 cups of Jack Daniel’s Honey Smokehouse BBQ Sauce (or to taste).

Not only is it a delicious dish but it’s a one pot meal. I used a small size Dutch Oven that I had sprayed with Pam Cooking Spray. Added all the ingredients except for the Turkey Smoked Sausage to the Dutch Oven, and stirred until well mixed. I turned the stove on medium low, covered the pot and just let it simmer. Another set it and forget recipe! After I got the Beans started I fried up 1 1/2 Butterball Hardwood Smoked Turkey Sausages. I first sliced them up into bite size pieces then fried them on medium until they started to brown and removed them from the heat and put them in a small bowl and set aside.

Then using the same skillet I fried the Sausage in I fried 3 slices of Jennie – O Turkey Bacon, actually I fried 5 slices actually. Always remember when preparing Bacon to always add 2 extra slices. Because you know you’ll grab a couple of slices, it’s called the Bacon Factor or Bacon Math. I fried it up nice and crisp and when done crumbled it up into small pieces and added it to the Beans. Sausage, Bacon, and Beans are such a natural combo, Bacon gives it that wonderful smoky flavor.

You could make this in a crock pot on low and let it go all day or by using a medium size sauce pan and get done even quicker. I love dishes that you can set low and let them simmer. After a couple of hours I added the Butterball Hardwood Smoked Turkey Sausages and added it to the Beans. Kept the heat on low until it was time for dinner. A good Hearty Meal tonight. You have the smokiness of the Bacon and Liquid Smoke, the Sweetness and Tang of the BBQ Sauce, the Spices, along with the Smoked Turkey Sausage and Beans. I just love all the flavors, a real comfort food favorite of mine! Another plus is the cleanup, just one dutch Oven to clean. I also baked a loaf of Pillsbury French Bread. For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.
