Today’s Menu: 3 Bean Turkey Chili w/ Johnny Cakes

 

 

To start my morning off I Poached an Egg and served it on a toasted Thomas Light 100% Whole Grain English Muffin. Also had a cup of Bigelow Decaf Green Tea. Partly cloudy, humid, and a high of 97 degrees outside today.
Long day on the phone with my Supplement insurance, Anthem Blue Cross. I’ve had my policy since around 2004, I became disabled in 2001. I had always made my payments but for the last 2 years I have to call my payment in because for some reason they couldn’t take it out automatically. Well now I get a letter that I owe them $7,600 dollars because they said they increased my rates in 2017 because I’m disabled! I was never informed of this increase or I would have canceled my policy. Now they want $854 a month for a Supplement Policy!! And I owe them back pay to cover the new rate since early 2017! I’m not happy right now. And it’s still unresolved! NOT HAPPY! I’ll let you know how it turns out. So for Dinner tonight its 3 Bean Turkey Chili along with some Johnny Cakes.

 

I had the 3 Bean Chili in the freezer. So I sat a container of it in the fridge overnight to thaw. The Chili freezes and reheats so easy. I’ll have to make some more, it’s my last container! To reheat the Chili; I’ll use a small sauce pan, spray it with Pam Non Stick Cooking Spray, add the Chili to the pan, and heat slowly on medium low heat until heated through. The Chili is just as good as it was when it was made! To go with the Chili I made some Johnny Cakes. I love the combination of Chili and Cornbread! I’ve left the original post which gives the ingredients and directions on making the Chili. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

 

 

When I prepare my Chili I prepare the Ground Turkey and mix the Beans the night before. So the morning I’m making it everything is ready! I had the Crock Pot set up also. To make the Chili I’m using Jennie -O Lean Extra Lean Ground Turkey Breast. The 3 Beans I use are 1 Can (16 oz.) Bush’s Chili Beans (Black Beans), 1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans), 1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans) drained and rinsed, Then I mix in a 1/2 a Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Seeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste (2 cans), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 2 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). What’s good about this recipe you can use your own favorite Spices and make your own tweaks to it and it turns out delicious.

 

The first thing I do is get the Crock Pot out and put in a Glad Crock Pot Liner. The Liners are incredible, just line your Crock Pot with one and spray it with Pam Cooking Spray. Now you are set to go. It makes for one easy clean up, just remove it when done and give the inside of your Crock Pot a quick wipe down and your clean up is done! On with the recipe.

 

 

 

 

The Beans and Ground Turkey were prepared last night. I started by opening all 3 cans of Bush Beans into a large bowl and stirred until mixed. Then in the morning, I added the Beans to Crock Pot. To prepare the Turkey, I started by browning the Jennie -O Ground Turkey. Using a large skillet sprayed with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. Preheat the skillet on medium heat. When heated I add the Ground Turkey and all the Seasonings and Tomato Paste, stirring often. When the Turkey has browned I put it in a large plastic container and on into the fridge after it had cooled a bit. Then this morning I added everything to the Crock Pot. Throw in a 1/2 cup of Water, stirred twice, and put the lid on the Crock Pot and set on low for 5-6 hours.

 

Then sit back and enjoy the aroma, that usually starts after an hour or so of simmering! I love a thick Chili and this one works! The Jennie – O Ground Turkey combined with all those Beans and Spices is a perfect match. Served it topped with some Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a couple of shakes of Frank’s Red Hot Sauce. Also a side of Johnny Cakes, recipe below.

 

 

 

 

To prepare the Johnny Cakes (I love these…) all you’ll need is: Pam w/ Olive Oil Non – Stick Spray, 1/4 cup Extra Light Virgin Olive Oil, 1 3/4 cups Low Fat Buttermilk, and 2 cups Martha White Self Rising Enriched White Corn Meal Mix. Just mix all your ingredients in a large bowl. Spray your Pam on a Flat Top Griddle or large Skillet and preheat on medium low, I use the Flat Top Griddle. When the Griddle is heated add your batter. You can make the Cakes any size you want from half-dollar size to regular pancake size cakes. After the bottom side turns golden brown flip over and let the other side get golden brown. I love the combination of Chili and Cornbread!

 

 

 

3 Bean Turkey Chili
Ingredients
1 lb. package Jennie – O Extra Lean Ground Turkey Breast
2 Cans (6 oz.) Hunt’s Tomato Paste
1 Can (16 oz.) Bush’s Chili Beans (Red Beans)
1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans)
1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans), drained and rinsed
1 Packet McCormick Chili Mix
1/2 Red Onion (medium), Chopped or Minced
1 Jalapeno Pepper, Unseeded and Chopped
4 Cloves Minced Garlic
1/2 Tsp Ground Cocoa Chili Blend (McCormick)
1/2 Tsp Ground Chipotle Chili Pepper (McCormick)
2 Tbs. Ground Roasted Cumin
2 Tsps Ground Cinnamon
1 Tbs of Cilantro Leaves
5 Dashes of Frank’s Hot Sauce or to taste.
1/2 Cup of Water
Shredded Cheese, I use Grated Dutch Gouda or Sargento Reduced Fat Shredded Cheddar Cheese (Topping)
Oyster Crackers
Frank’s Hot Sauce or to taste.

Directions:
*Brown Turkey in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining spices and ingredients except 1 can of the tomato paste and water.
*ADD to slow cooker and add in the remaining 1 can of tomato paste and 1/2 cup of water.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).
*Serve in bowl or mug with cheese and oyster crackers, A Tablespoon of fat-free sour cream, Chopped Onions, or serve with some home made cornbread.

For Breakfast on this Monday morning I Poached an Egg and toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread that I lightly buttered with I Can’t Believe it’s Not Butter. Also had my morning cup of Bigelow Decaf Green Tea. It’s quite a weather day out there today. When I got up this morning it was snowing. After Breakfast it was sleeting. Then by 11:00 it was freezing rain! So we’ve had it all today. We had a high of 38 degrees, which is the highest we’ve had in 3 weeks. They say 40’s tomorrow and 50’s by Wednesday, hope they have it right! It’s a good day to have some Slow Cooker 3 Bean Turkey Chili! So for Dinner tonight its 3 Bean Turkey Chili along with some Johnny Cakes.

Went out to get the morning paper and it was 30 degrees with a cold breeze, 53 degrees and cloudy out for the day. Did some house cleaning after Lunch and finished up some laundry for Mom. Pretty quiet Monday today. A good day to make a Slow Cooker 3 Bean Turkey Chili! Dinner tonight its 3 Bean Turkey Chili along with some Johnny Cakes.

Ingredients
1 lb. package Jennie – O Extra Lean Ground Turkey Breast
2 Cans (6 oz.) Hunt’s Tomato Paste
1 Can (16 oz.) Bush’s Chili Beans (Red Beans)
1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans)
1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans), drained and rinsed
1 Packet McCormick Chili Mix

Today’s Menu: Cheese and Turkey Chili Dogs

 

 

For Breakfast this morning I made a 2 Egg Cheese Omelet along with 2 Jennie – O Turkey Breakfast Patties, toasted a slice of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Outside it’s a bit cooler, 47 degrees this morning and a high of 73 degrees. It looks like more of Fall like weather has moved in finally! Cleaned the brushes of our vacuum then cleaned the house, dusted and vacuum. Then outside got my handy leaf blower out and cleaned the deck and driveway off. After Lunch I repotted a couple of flowers for Mom, sure is nice out! Then got the cart out and enjoyed the rest of the afternoon. Went around the neighborhood and down to the lake. For Dinner tonight Cheese and Turkey Chili Dogs.

 

I had just enough of my 2 Bean Turkey Chili leftover to make some Cheese and Turkey Chili Dogs. To make them I’ll need; 3 Bean Turkey Chili, Ball Park Smoked Turkey Franks, Aunt Millie’s Reduced Calorie Whole Grain Hot Dog Buns, French’s Yellow Mustard, and Sargento Reduced Fat Shredded Sharp Cheddar Cheese. Them are some good fixings to make some Coneys with!

 

 

 

 

To prepare them; Heat the Chili in a medium saucepan until just heated through. Next I cooked the Hot Dogs. I used a medium size sauce pan, filled 3/4 full of water and heated to a boil. When water was boiling I added the Franks, boiled for 5 minutes. Removed the pan from the heat, drained the water, and prepared the Cheddar Chili Dogs. Spread each Bun with Mustard. Place a Hot Dog in each Bun and top with Beans. Sprinkle each with Cheese. These turned out fantastic, love the Chili and Cheddar toppings.

 

 

Served it with some Ruffles Reduced Fat Potato Chips and some Lay’s Ranch Dip. Also had a Caffeine Free Diet Coke. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Outside we had a high of 91 degrees and a bit humid out. But the temps are going to start to fall everyday a bit from here. By the weekend highs in the 60’s and low 70’s. After Lunch I got the Cart out of the shed and the leaf blower and trimmer and got some yard work done. Tonight’s Dinner, 3 Bean Turkey Chili w/ Johnny Cakes.

 

I’m having my 3 Bean Turkey Chili for Dinner! I’m using my last container that I had in the freezer, so I’ll be making more soon! I sit the container in the fridge overnight to thaw. So today I’ll just empty the contents into a small sauce pan and let it slowly heat on medium low until heated through. The Chili freezes and reheats so easy and tastes like it’s made that day! I also made a small batch of Johnny Cakes which I love having with Chili. I topped my Chili with some fresh shredded Smoked Gouda and a splash or two of Frank’s Hot Sauce. This hit the spot! Below I’ve left the original post on the ingredients and instructions on how to make the 3 Bean Turkey Chili and the Johnny Cakes. Enjoy!

 

When I prepare my Chili I prepare the Ground Turkey and mix the Beans the night before. So the morning I’m making it everything is ready! I had the Crock Pot set up also. To make the Chili I’m using Jennie -O Lean Extra Lean Ground Turkey Breast. The 3 Beans I use are 1 Can (16 oz.) Bush’s Chili Beans (Black Beans), 1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans), 1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans) drained and rinsed, Then I mix in a 1/2 a Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Seeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste (2 cans), 1/2 Tsp Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 2 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). What’s good about this recipe you can use your own favorite Spices and make your own tweaks to it and it turns out delicious.

 

The first thing I do is get the Crock Pot out and put in a Glad Crock Pot Liner. The Liners are incredible, just line your Crock Pot with one and spray it with Pam Cooking Spray. Now you are set to go. It makes for one easy clean up, just remove it when done and give the inside of your Crock Pot a quick wipe down and your clean up is done! On with the recipe.

 

 

 

The Beans and Ground Turkey were prepared last night. I started by opening all 3 cans of Bush Beans into a large bowl and stirred until mixed. Then in the morning, I added the Beans to Crock Pot. To prepare the Turkey, I started by browning the Jennie -O Ground Turkey. Using a large skillet sprayed with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. Preheat the skillet on medium heat. When heated I add the Ground Turkey and all the Seasonings and Tomato Paste, stirring often. When the Turkey has browned I put it in a large plastic container and on into the fridge after it had cooled a bit. Then this morning I added everything to the Crock Pot. Throw in a 1/2 cup of Water, stirred twice, and put the lid on the Crock Pot and set on low for 5-6 hours.

 

Then sit back and enjoy the aroma, that usually starts after an hour or so of simmering! I love a thick Chili and this one works! The Jennie – O Ground Turkey combined with all those Beans and Spices is a perfect match. Served it topped with some Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a couple of shakes of Frank’s Red Hot Sauce. Also a side of Johnny Cakes, recipe below.

 

 

 

To prepare the Johnny Cakes (I love these…) all you’ll need is: Pam w/ Olive Oil Non – Stick Spray, 1/4 cup Extra Light Virgin Olive Oil, 1 3/4 cups Low Fat Buttermilk, and 2 cups Martha White Self Rising Enriched White Corn Meal Mix. Just mix all your ingredients in a large bowl. Spray your Pam on a Flat Top Griddle or large Skillet and preheat on medium low, I use the Flat Top Griddle. When the Griddle is heated add your batter. You can make the Cakes any size you want from half-dollar size to regular pancake size cakes. After the bottom side turns golden brown flip over and let the other side get golden brown. The Cornbread works perfect with Chili! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

 

 

 

3 Bean Turkey Chili
Ingredients
1 lb. package Jennie – O Extra Lean Ground Turkey Breast
2 Cans (6 oz.) Hunt’s Tomato Paste
1 Can (16 oz.) Bush’s Chili Beans (Red Beans)
1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans)
1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans), drained and rinsed
1 Packet McCormick Chili Mix
1/2 Red Onion (medium), Chopped or Minced
1 Jalapeno Pepper, Unseeded and Chopped
4 Cloves Minced Garlic
1/2 Tsp Ground Cocoa Chili Blend (McCormick)
1/2 Tsp Ground Chipotle Chili Pepper (McCormick)
2 Tbs. Ground Roasted Cumin
2 Tsps Ground Cinnamon
1 Tbs of Cilantro Leaves
5 Dashes of Frank’s Hot Sauce or to taste.
1/2 Cup of Water
Shredded Cheese, I use Grated Dutch Gouda or Sargento Reduced Fat Shredded Cheddar Cheese (Topping)
Oyster Crackers
Frank’s Hot Sauce or to taste.

Directions:
*Brown Turkey in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining spices and ingredients except 1 can of the tomato paste and water.
*ADD to slow cooker and add in the remaining 1 can of tomato paste and 1/2 cup of water.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).

*Serve in bowl or mug with cheese and oyster crackers, A Tablespoon of fat-free sour cream, Chopped Onions, or serve with some home made cornbread.

 

Johnny Cakes (My way)

Ingredients:

Pam w/ Olive Oil Non – Stick Spray
1/4 cup Extra Virgin Olive Oil
1 3/4 cups Buttermilk

Directions:

Just mix all your ingredients in a large bowl.
Spray your Pam on a Flat Griddle or large Skillet and preheat on medium low, I use the Flat Griddle.

Today’s Menu: Pulled Chicken, Black Bean, and Corn Soft Tacos

 

 

 

For Breakfast this morning I had something a little different, Grilled Cheese and Egg Spam Sandwich. Came across this recipe on Spam’s Facebook page. The Sandwich turned out fantastic! Very good combination of ingredients and easily prepared. Your using; 2 slices Turkey SPAM® , 2 slices Healthy Life Whole Grain Bread, 1 slice Sargento Ultra Thin Sharp Cheddar Cheese, and 1 large Egg. Mom even had one and loved it, so its Parent Approved! I also had my morning cup of Bigelow Decaf Green Tea. After Breakfast I headed over to the rehab center to see Dad. I went with him for his morning therapy. He did real good today, proud of him! Still up in the air whether or not he can back home, hope so! Back home did a few things around the house. Outside it’s mostly cloudy, windy, and a high of 53 degrees. For Dinner tonight I prepared Pulled Chicken, Black Bean, and Corn Soft Tacos.

 


I wanted something light and delicious so what better than some Soft Tacos, haven’t had any in a while and it sounded good. To make these I’ll need the following; Old El Paso Flour Tortillas, 1 Rotisserie Chicken (Pulled Chicken), various Spices (to season the Chicken), 1 can Bush’s Chili Beans (Black Beans in Mild Chili Sauce), 1 can Green Giant Steam Crisp Nibblets (Whole Kernel Sweet Corn, sliced Black Olives, chopped Lettuce, Daisy Light Sour Cream, and Old El Paso Taco Sauce (Smoky Chipotle). The makings of something good!

 

 

I had purchased the Rotisserie Whole Chicken from Kroger yesterday afternoon. After getting it home I pulled all the meat and stored it in a plastic container in the fridge until today when it was time to make the Tacos. I put the Chicken in a skillet and reheated it on medium heat. As the Chicken was heating I seasoned it with Ground Cumin, Dried Cilantro, Chili Seasoning, McCormick Grinder Sea Salt and McCormick Grinder Peppercorn Medley.

 

 

 

 

As the Chicken was heating I got my other ingredients ready. I opened up a can of Early California Whole Large Black Olives (Reduced Salt) and sliced them up. Then I got 2 small sauce pans; 1 for the Chili Beans and 1 for the Corn. Heated both until heated through.

 

 

 

 

With all the ingredients heated and ready I got the Soft Tortillas ready. I wrapped the Tortillas in paper towels and microwaved them for 40 seconds. Now to make the Soft Tacos. I first layered in the Chicken, followed by the Taco Sauce, Chili Beans, Corn Kernels, Taco Sauce, Lettuce, and topped with a dab of Light Sour Cream. Loaded and ready to eat! Love these Soft Tacos. All the ingredients just come together to make one flavorful meal. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Simple Grilled Cheese and Egg SPAM® Sandwich

This SPAM® sandwich recipe calls for eggs. But we’re not going to use all kinds of silly made-up egg words to describe it. Like, for example, we could say the taste is “eggscellent” or “eggstraordinary.” And that it’ll fill you with “eggscitement.” But that just feels too “eggspected” and there’s no “eggspletive” way we’re going to go there.

Ingredients

2 slices SPAM® Single Classic
2 slices bread
1 slice cheese
1 large egg

 

1.In small skillet, fry SPAM® Singles over medium-high heat, turning once, about 15 mintues.
2.In separate small skillet, cook egg to desired doneness.
3.Spread 1 side of each slice bread with butter. Place in skillet, butter-side-down; top 1 slice with cheese. Cook until cheese starts to melt and bread is toasted. Top cheese with SPAM® and egg. Cover with top slice bread.

For Breakfast this morning I got the Egg Poacher out and made a Poached Egg. I served it on a toasted Healthy Life Whole Grain English Muffin also had my morning cup of Bigelow Decaf Green Tea. It’s another beautiful Fall Day out there, Sunny and 81 degrees. Finally got all the yard work done yesterday so today we gathered all the tables and chairs off the deck and driveway and stored them all in the shed. Our Fall Outside Cleaning is done! Took the cart out for a spin and picked up the mail. Tuckered out, rested up before Dinner. And for Dinner tonight I prepared Popcorn Shrimp w/ Mac and Cheese.

Today’s Menu: Pulled Chicken, Black Bean, and Corn Soft Tacos

 
For Breakfast I made some hash Browns and a slice of Toast. I used Simply Potatoes Hash BroPulled Chicken, Black Bean, and Corn Soft Tacos 012wns and for the Toast I used Healthy Life Whole Grain Bread. Did a few things around the house and then I was off to the hospital. My best friend was going to have surgery this morning. I went up to be with his sister and we waited together. He’s going to be fine as everything went well. It seems like I’ve been at this hospital way too much of late, 2 friends of mine and my dad all have been up here the last few weeks. So often that the Parking Valets know me by name. Back at home I laid down for a bit for a short nap and to relax a bit. For dinner tonight it’s Pulled Chicken, Black Bean, and Corn Soft Tacos.
