Today’s Menu: Savory Buffalo Meatloaf w/ Mashed Potatoes, Mushroom Brown Gravy, Green Beans, and Baked Crescent Rolls

 

 

 

To start this day off I Scrambled a couple of Eggs, fried up 2 Johnsonville Turkey Breakfast Sausage Links, and a cup of Bigelow Decaf Green Tea. 92 degrees and partly cloudy out, rain shower late in the day. Then took Mom to Jungle Jim’s International Market and stopped at Wendy’s and Picked up Breakfast for her. I love shopping at Jungle Jim’s! There is is so many items to choose from. After Lunch I ran a friend of mine to pick her car up at the mechanics. Back home did a few thing around the house. For Dinner tonight I prepared a Savory Buffalo Meatloaf w/ Mashed Potatoes, Mushroom Brown Gravy, Green Beans, and Baked Crescent Rolls.

Wild Idea Buffalo now has a Wild idea Buffalo Savory Meatloaf, and couldn’t wait to try it! So I recently ordered a few items and 1 of them being their Meatloaf! It’s a 2 lb. Meatloaf and its already seasoned and ready to bake. Its Seasoned with Ketchup, Onion, Rolled Oats, Eggs, Olive Oil, Worcestershire Sauce (white vinegar, molasses, sugar, water, salt, onions, anchovies, garlic, cloves, tamarind extract, natural flavors, chili pepper extract), Garlic Powder, Ground Mustard, Sea Salt, Black Pepper, Thyme.

 

I had it in the freezer so all I had to do was set it in the fridge overnight to thaw. To prepare it is the easy part! I first preheat the oven to 375 degrees. Next I formed into a loaf shape and placed it in a loaf pan. Placed the Meatloaf in pre-heated oven and baked for 40 minutes, uncovered. With about 10 minutes of cooking time left I brushed with the sauce I had made earlier I left the recipe for the Sauce at the end of the post). ) Removed the Meatloaf from oven, tented it with foil and rest for 10 minutes before serving.

 

 

Served, and we have a Winner! This is just flat out Delicious! It came out moist and so flavorful and fresh tasting! The Sauce I made up worked perfect with it. Meatloaf made healthier and more delicious!

 

 

 

To go with the Meatloaf of course you have to have Mashed Potatoes. I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better.

 

 

 

 

I also prepared a Quart Jar of the Canned Green Beans. I cooked them with a piece of Fatback Pork in the kettle. Love these Canned Green Beans, they are so fresh tasting! Then I also baked a loaf of Pillsbury French Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

 

 

 

 

 

 

 

 

 

 

Wild idea Buffalo Savory Meatloaf
Our Heat and Eat Savory Meatloaf is here! It’s perfect for when we are needing a little convenience and a lot of comfort! Dinner is ready in less than an hour!
Preparation:
1) Preheat oven to 375 degrees
2) Form into a loaf shape and place on a baking sheet or in a loaf pan
3) Place meatloaf in pre-heated oven and bake for 35 – 40 minutes – uncovered.
**Optional you can brush with ketchup or sauce of your choice and continue baking for the last 10 minutes**
4) Remove meatloaf from oven – cover – and rest for 10 minutes before serving.

Ingredients: Grass-Fed Buffalo, Organic : Ketchup, Onion, Rolled Oats, Eggs, Olive Oil, Worcestershire Sauce (white vinegar, molasses, sugar, water, salt, onions, anchovies, garlic, cloves, tamarind extract, natural flavors, chili pepper extract), Garlic Powder, Ground Mustard, Sea Salt, Black Pepper, Thyme.

3 tablespoons Heinz 57 Sauce
1 teaspoon Worcestershire sauce
1 teaspoon Hot Sauce

Today’s Menu: 5 oz. Petite Buffalo Top Sirloin Steak w/ Baked Potato, Salad, and Baked Texas Lite Toast

 

 

For Breakfast I had Poached Egg that I served on a Thomas Light English Muffin. I also had a cup of Bigelow Decaf Green Tea. Rain showers early, not quite as heavy as the last 2 days. We ended up getting just over 4 inches of rain the last 2 days. High of 60 degrees and windy also. I did a load of laundry after Breakfast. Did a few small jobs around the house, not much going on. The Ohio Gov. lifted the Stay at Home orders. Now it’s just a a Recommendation to stay in. We have to wear a face mask to go to any stores or such. Plus there seems to be a bit more selections in the grocery stores now. For dinner tonight I prepared a 5 oz. Petite Buffalo Top Sirloin Steak w/ Baked Potato, Salad, and Baked Texas Lite Toast.

 

I’ll be using the Wild Idea Buffalo Petite Top Sirloin Steak (5 oz.). To prepare the Steak; I rubbed the Steak with a 1 teaspoon of Extra Virgin Olive Oil. Then seasoned it with McCormick’s Grinder Sea Salt and Black Peppercorn. As the Steak rested I preheated the oven on 400 degrees and heated up a small Cast Iron Skillet on medium heat. When the skillet was heated I added my Buffalo Sirloin, I cooked it 1 minute per side. Then moved the skillet to the oven and cooked it another 5 minutes to a beautiful Medium Rare! The Wild Idea Buffalo Steaks are just incredible. So tender and juicy and the best flavor of any Steak, Beef or Buffalo, I’ve ever had.

 

For one side I had a baked Russet Potato. Seasoned that with the McCormick Grinder Sea Salt and Peppercorn Medley, and topped with I Can’t Believe It’s Not Butter. Perfect side for any Steak Dinner!

 

 

For another side we had a Salad. I used a bag of Dole Greener Selections Salad Mix. For the Dressing I used Kraft Classic Catalina Lite Dressing. I also baked a slice of the New York Bakery Light Texas Toast. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Waffle Pretzels and a Diet Dr. Pepper To drink.

Love that Buffalo (Bison)……………………….

Buffalo meat contributes significantly more iron to your diet than beef, with higher levels of vitamins and minerals and twice as much Beta-carotene as strictly grain-fed meats. Because buffalo has very little fat and contains more protein than beef, it doesn’t shrink in cooking and it’s more satisfying to eat.

Buffalo Meat is Better Quality. Across all cuts, buffalo meat is lower in calories and fat than beef is, and higher in protein. … Bison offers more omega-3 fats than beef, and a better omega-6 to omega-3 ratio. Bison doesn’t give up any micronutrition to beef either. Some are surprised to learn that many cuts of bison have less fat, fewer calories and less cholesterol than chicken. In addition, it has less sodium. Bison gives you nutrient-rich red-meat taste that’s often better for you than chicken.

Today’s Menu: Pulled Buffalo Chuck Roast Hoagie w/ Reduced Fat Potato Chips

 

 

For Breakfast I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam and had a cup of Bigelow Decaf Green Tea. More Rain showers and 48 degrees out today. After a light Lunch I took my Hoveround outside under the carport and gave it a good cleaning. It needed a good cleaning. Cleaned the outside frame and then got the leaf blower out and blew out all dust and grime around the wheel base and batteries. Looking good! For Dinner tonight one of my favorites, the Wild Idea Buffalo – Pulled Buffalo Chuck Roast. For Dinner tonight; a Pulled Buffalo Chuck Roast Hoagie w/ Reduced Fat Potato Chips.

I’m using the Wild Idea Buffalo Pulled Chuck Roast. This is so tender and incredibly flavorful. It comes already cooked and seasoned, so just heat and serve! It’s Seasoned with, Organic Apple Cider, Organic Lime Juice, Onion Powder, Cumin, Sea Salt, Black Pepper, Chili Powder, Paprika, Garlic Powder, Oregano, Cayenne Pepper. And that’s why it’s so flavorful! Delicious Pulled Buffalo that you just heat and serve.

 

 

 

I used a small sauce pan that I sprayed with Pam Non Stick Cooking Spray. Added the Buffalo and heated it on medium low until heated through. I served it on a Kroger 100% Whole Wheat Hoagie Roll. Put a slathering of Kraft Reduced Fat Mayo with Olive Oil on the bottom half of the Roll. I love that word “Slather”, It just sounds like good food! Added the Pulled Chuck Roast. Next I topped it with some Jack Daniel’s Honey Smokehouse BBQ Sauce. What a sandwich, just incredible flavor! The Wild Idea Buffalo Pulled Buffalo Chuck Roast is so flavorful and tender. It just has such a deep and rich flavor to it.

I served my Sandwich with a side of Meijer Reduced Fat Potato Chips with a Caffeine Free Diet Coke to drink. For Dessert later some slices of a Honey Crisp Apple.

For Breakfast this morning I just had a cup of Bigelow Decaf Green Tea. Light rain and snow showers out today, high of 37 degrees. After lunch I went to the post office, then by the bank to the ATM, and then stopped and got gas. Cleaned and straightened the fridge and pantry. Just trying to find stuff to do to stay busy. For Dinner tonight a Buffalo 5oz. Petite Top Sirloin w/ Fried Okra and Cut Green Beans.

 

 

 

 

I’ll be using the Wild Idea Buffalo Petite Top Sirloin Steak (5 oz.). To prepare the Steak; I rubbed the Steak with a 1 teaspoon of Extra Virgin Olive Oil. Well this is a first, I’m having Fried Okra. I’ve had Okra in Gumbo but never on its own, until tonight! Mom said it had been forever since she had some so I thought I would give it a try. I bought a package at Meijer. I found many recipes for it online. I combined a few of them and came up with this recipe for Fried Okra. I’ll be needing fresh Okra (cut into 1/4 or 1/2 inch slices), Cornmeal, Flour, Cayenne Pepper, Black Pepper, Sea Salt, Egg, Low Fat Buttermilk, and Extra Light Olive Oil. I’ll be preparing them in a small Dutch Oven. To prepare it; Heat about 2 inches of Olive Oil in a small Dutch Oven, to about 350 F. As the skillet was heating, using a pie pan, whisk together the Cornmeal, Flour, Cayenne, Black Pepper, and Salt. Then in another bowl, beat the egg into the buttermilk. Next I dipped the Okra slices in the Buttermilk, then the cornmeal mix, tossing to coat. Added the Okra slices to the hot oil and cooked until Golden Brown. After they turned Golden Brown I removed them to a paper towel lined plate, to drain on paper the towels, added a sprinkle of the Sea Salt and served. Well Okra has a new fan! I really enjoyed these and can’t wait to have them again!

 

I also opened up a can of Del Monte Cut Green Beans. I heated them up in a small sauce pan on medium heat. Stirred often until heated, then served.I also baked a slice of the New York Bakery Light Texas Toast. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Hanover Stick Pretzels along with a Sprite Zero to drink.

Today’s Menu: Bison Chopped Sirloin Steak w/ Sauteed Mushrooms and Baked Potato

 

 

 

For Breakfast this morning I had a Fried Egg Sunny Side Up, fried 2 Jennie – O Turkey Breakfast Sausage Links, and toasted 2 slices of Aunt Millie’s Light Whole Grain Bread. I also had my morning cup of Bigelow Decaf Green Tea. 46 degrees and partly cloudy out today. Cleaned the house today, dusted and ran the vacuum. With everything done I caught up on some shows I had recorded. For Dinner tonight I prepared a Bison Chopped Sirloin Steak w/ Sauteed Mushrooms and Baked Potato.

 

 

For Dinner tonight it’s Mom’s favorite Meal, SayersBrook Ranch Bison Chopped Sirloin Steak. We love this Chopped Steak! To start I preheated the oven on 400 degrees. To prepare it I’ll need McCormick Grinder Sea Salt and Peppercorn Medley, McCormick Crushed Rosemary, and McCormick Thyme Leaves (all seasoning to taste). I got the Cast Iron Skillet out to prepare it. I first sprayed it with a very light coat of Pam Cooking Spray and then added a tablespoon of Extra Light Olive Oil. Heated it on medium heat. When the pan was heated I added the Chopped Steak. I cooked each side 2 minutes.Then finished it in the oven, at 400 degrees for 7 minutes. It cooked up beautifully, perfect medium rare! Had a nice little char on the outside and moist and juicy inside. These are so tender you could slice them with a spoon and have an excellent taste to them. Another very good item from SayersBrook Ranch! I topped the Chopped Steak with some A-1 Sauce Thick/Hardy. Also cooked up some Sauteed Mushrooms.

For a side I prepared a Baked Potato. Seasoned that with the McCormick Grinder Sea Salt and Peppercorn Medley, and topped with I Can’t Believe It’s Not Butter. I also baked a slice of the New York Bakery Garlic Texas Toast Light. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

Use that leftover chili all week! Chili doesn’t have to go into a bowl and eaten with a spoon. Make chili dogs, have a taco night, eat it for breakfast with eggs on top, or in a omelet. Toss it with pasta, or serve on top of baked potatoes. Enjoy that CHILI!
