Pimento Turkey Burgers
Melted pimento cheese is the magic ingredient on this staple at Chicago’s Swill Inn, courtesy of Lamar Moore—a noted chef, restaurateur and TV personality.

INGREDIENTS
1 (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
8 slices Cheddar cheese
20 pickle slices
4 brioche buns, split and toasted
16 ounces pimento cheese, if desired

DIRECTIONS
1) Divide ground turkey into 4 portions and shape into patties.
2) Prepare grill for high direct heat. Grill burgers 8 to 12 minutes, turning once. Always cook to well-done, 165°F as measured by a meat thermometer. During last 2 minutes of cooking, top each burger with 2 cheese slices.
3) Place 5 pickle slices on each bun bottom. Top with burger, pimento cheese, if desired and bun top.
* Always cook to an internal temperature of 165°F.

Smoked Turkey Sandwich with Apple Slaw
Bring the orchard to your kitchen! Tarragon-apple slaw and apple cider marinade turn fruit from a side into an entrée. When you can do this with Honeycrisps, those turnovers are gonna have to wait!

INGREDIENTS

2 tablespoons brown sugar
2 tablespoons ground paprika
1 tablespoon garlic salt
1 tablespoon white sugar
2 teaspoons fresh ground black pepper
1 teaspoon ground cayenne pepper
½ cup apple cider
½ cup barbeque sauce
2-pounds JENNIE-O® All Natural Turkey Breast
2 red-skinned apples, cored and cut into julienne strips (honeycrisp works well)
¼ cup torn fresh tarragon
2 tablespoons lemon juice
1 tablespoon extra-virgin olive oil
16 slices JENNIE-O® Turkey Bacon
8 each Brioche buns, sliced
fresh arugula
½ cup honey mustard, if desired

DIRECTIONS

1 – In large bowl, mix rub ingredients: brown sugar, paprika, garlic salt, sugar, black pepper, cayenne pepper, apple cider and barbeque sauce. Coat turkey breast evenly with rub. Cover with plastic wrap and let marinate in refrigerator, 8 hours to overnight. Preheat smoker to 300°F. Smoke until well-done, 165°F as measured by a meat thermometer.
2 – To make slaw: In medium bowl combine apple strips, tarragon, lemon juice and olive oil.
3 – Preheat a skillet and spray with non-stick cooking spray. Add bacon slices and cook until desired crispness. Always cook until well-done, 165°F as measured by a meat thermometer.
4 – To assemble sandwiches, on bun bottom place turkey bacon, shredded turkey breast, apple slaw mixture and arulgula. Drizzle with honey mustard, if desired. Add bun top.
* Always cook to an internal temperature of 165°F.

You’ll be using a couple of Jennie – O Turkey products to make this week’s recipe – a package JENNIE-O® ⅓ LB Turkey Burgers and JENNIE-O® Turkey Bacon. Grilled Corn Guac Turkey Burger
What makes a grilled turkey burger even better? A great guacamole! This crowd pleaser is specially made with a charred ear of corn. It requires just a little more effort, but it’s totally worth it! Served up brioche buns, guests will be kissing the cook long after this meal ends.

INGREDIENTS

1 ear of corn
1 tablespoon canola oil
1 or 2 ripe avocados, peeled, pitted and diced
1 chili pepper, finely diced
½ small red onion, finely diced
1 lime, juiced
¼ cup chopped cilantro leaves
salt and pepper, if desired
1 (2-pound) package JENNIE-O® ⅓ LB Turkey Burgers
6 slices JENNIE-O® Turkey Bacon
2 each red bell pepper, char-grilled and sliced
6 each brioche buns, sliced
DIRECTIONS

1) Prepare grill for medium-high heat.
2) Brush ear of corn with oil. Grill 5 minutes or until kernels are golden brown. With knife remove kernels from ear of corn.
3) In medium bowl, mash avocado with fork. Add corn, chili peppper, onion, lime juice, cilantro and salt and pepper, if desired. Gently stir to combine.
4) Cook turkey burgers as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
5) While burgers are cooking, place bacon slices on grill and cook until crips. Always cook to well-done, 165°F as measured by a meat thermometer.
6) Grill red bell peppers until slightly charred; slice.
7) Place burger on bun bottom. Add peppers, bacon, corn guac mixture and bun top.
* Always cook to an internal temperature of 165°F.
