Today’s Menu: Blue and ‘Shroom Bison Burger w/ Baked Steak Fries

Just not a Burger and Fries, a Bison Burger and Fries! I had a Ground Sirloin Bison Burger that I seasoned with McCormick Grinder Steakhouse Seasoning and fried in Extra Virgin Olive Oil, about 4 minutes per side. Topped it with Murray’s Crumbled Maytag Blue Cheese and Sauteed Mushrooms. The Blue Cheese and Sauteed Mushrooms are great on any Burger! It was served on an Healthy Life Whole Grain Bun. As a side I had Ore Ida Baked Steak Fries. For dessert/snack later a Breakstone 100 Calorie Cottage Cheese & Pineapple Cup.

Today’s Menu: Teriyaki and Pineapple Turkey Burger w/ Baked Steak Fries

Turkey Burger and Fries for dinner. I used Jennie O Savory Turkey Burger Patties. Seasoned it with Sea Salt and Pepper and fried in Extra Virgin Olive Oil (1/2 Tbs) and after flipping the Burger I added a tablespoon of Kikkoman Less Sodium Teriyaki Sauce to it along with a Pineapple Ring on top. Served on an Healthy Life Whole Grain Bun. The combination of the Teriyaki Sauce and the sweetness of the Pineapple Ring makes one great tasting Turkey Burger! As a side I had Ore Ida Baked Steak fries. For dessert/snack later a Mini Bag of Jolly Time Pop Corn.

It was back to the Bison for dinner tonight. I had a Ground Bison Sirloin Burger. Seasoned with McCormick Grinder Steakhouse Seasoning and fried in Extra Virgin Olive Oil about 4 minutes per side. I topped it with Sauteed Mushrooms and Murray’s Maytag Crumbled Blue Cheese served on an Healthy Life Whole grain Bun. Had Ore ida Baked Steak Fries as a side. For dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with Del Monte Sugarless Sliced Peaches.

Today’s Menu:  Bison Sirloin Steak and Sauteed Mushrooms w/ Green Beans, Polenta, and Rustic French Bread

Nothing better than a Bison Sirloin Steak! I seasoned the Steak with McCormick Grinder Steakhouse Seasoning. Then fried in Extra Virgin Olive Oil about 4 minutes per side. Came out just as I like it Medium Rare. I topped the Steak with Sauteed Mushrooms that were seasoned with Sea Salt, Ground Pepper, Ground Smoked Cumin, and Parsley. I also had sides of Green Beans and something new Quinoa Organic Fat Free Polenta. I like this Polenta! It’s easily fixed and really good tasting. I finished it up with a slice of Pillsbury Simply Rustic French Bread. For dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with Del Monte Sugarless Sliced Peaches.

Today’s Menu: Turkey Melt with Smoked Gouda on Whole Grain Bread w/ Baked Steak Fries

Made a Ground Turkey Pattie using Honeysuckle White 93/7 Ground Turkey. Seasoned it with McCormick Grinder Sea Salt, McCormick Grinder Black Peppercorn, and Ground Smoked Cumin and fried in Extra Virgin Olive Oil. Topped it with Smoked Gouda Cheese and served on Healthy Life Whole Grain Bread. Had Ore Ida Baked Steak Fries as a side. For a dessert/snack later some Chip‘ins Pop Corn Chips along with Kroger Naturally Preferred Black Bean and Corn Organic Salsa.

Today’s Menu: Turkey Joes and Pressed Potatoes with a Apple Brown Betty for Dessert

It was a Diabetic Friendly Comfort Food Dinner tonight! Thank you Food Network for the Pressed Potatoes and the Apple Brown Betty recipes. I’ll leave the recipes for all three at the end of the post. The family had some friends over to celebrate my Dad’s 90th Birthday so I made enough for all.

I usually make the Chicken Joes but went with the Extra Lean Ground Turkey, even less calories and carbs than Ground Chicken. I topped some of the Joes with crumbled Bleu Cheese, some with a slice of Smoked Gouda and others no topping.  The Pressed Potatoes called for Red Potatoes but I used Golden Potatoes instead. It also called for fresh Basil, which I was out of so I used some dry Basil I had. The Brown Betty was a recipe from Ellie Krieger of the Food Network. The only thing I did different from the recipe is I used Splenda Brown Sugar and for the Butter I used I Can’t Believe It’s Not Butter (Stick). Serve the Brown Betty warm with a side of Breyer’s Vanilla Carb Smart Ice cream. Everything turned out great and everyone loved it!

Sloppy Chicken Joes

Ingredients

1 pkg. McCormick Sloppy Joe Seasoning Mix
1 lb. Lean Ground Turkey
1 can (6 oz.) Tomato Paste *
1¼ cups Water
Crumbled Bleu Cheese for topping
Healthy Life Whole Grain Sandwich Buns

Directions:

Brown Turkey in large skillet on medium-high heat. Drain fat.
STIR in Seasoning Mix, tomato paste and water.
BRING to boil. Reduce heat and simmer 10 minutes, stirring occasionally.
Serve on buns top Turkey with Crumbled Bleu Cheese.

* Substitution: Use 1 can (15 oz.) tomato sauce in place of tomato paste and water.

Pressed Potatoes

* 6 Servings

Ingredients

* 2 lbs. baby red potatoes
* 3/4 cup EVOO
* Salt and pepper
* 1/2 cup fresh basil
* 1 clove garlic

Directions:

1.   Boil potatoes until fork-tender. Drain; toss with 1/4 cup EVOO, salt and pepper. Press 1/4 inch thick with a drinking glass. Bake on lined baking sheets at 400° until crisp, 25 minutes. Puree basil, garlic and 1/2 cup EVOO; drizzle over potatoes.

Apple Brown Betty

Ingredients

* 5 large Golden Delicious apples (about 2 pounds), peeled and thinly sliced
* 1 cup apple cider
* 3 tablespoons brown sugar, divided
* 1 teaspoon vanilla extract
* 1 teaspoon ground cinnamon, divided
* 2 tablespoons butter, divided
* 3 slices whole-wheat bread (1-ounce each) crusts included (to make about 2 1/4 cups crumbs)
* 3 tablespoons chopped walnuts

Directions

Preheat the oven to 350 degrees F.

Combine apples, apple cider, 1 tablespoon brown sugar, vanilla, 1/2 teaspoon cinnamon in a large saucepan over medium-high heat. Cook, stirring occasionally, until apples are tender but not mushy, about 10 minutes. Stir in 1 tablespoon butter until melted, remove from heat and transfer apple mixture to a 9-inch glass pie plate.

Place bread in food processor and process until crumbs are formed, about 15 seconds. Melt remaining 1 tablespoon butter in microwave for 20 seconds. Toss crumbs with melted butter, walnuts, remaining 2 tablespoons brown sugar and remaining 1/2 teaspoon cinnamon. Scatter crumb mixture on top of apples and bake for 30 minutes, until topping is crisped and lightly browned.

Today’s Menu: Bleu and ‘Shroom Bison Burger w/ Baked Steak Fries

To me the best tasting Burgers are Bison Burgers! I had a Bison Ground Sirloin Burger that I seasoned with Sea Salt and Ground Black Pepper. Fried in Extra Virgin Olive Oil about 4 minutes per side. Topped with Sauteed Mushrooms and Murray’s Maytag Crumbled Bleu Cheese. If you love Bleu Cheese as much as I do you have to try the Maytag Bleu, Murray’s if you can find it. I served it on an Healthy Life Whole Grain Bun. As a side I had Ore – Ida Steak Fries with a couple of splashes of Heinz 57 Sauce. For dessert later a bowl of Del Monte Sugarless Sliced Pears.

Today’s Menu: Monterrey/Jack and Mushroom Bison Burger w/ Baked Steak Fries


Love that Bison! I had a Ground Sirloin Bison Burger seasoned with Sea Salt and Ground Black Pepper. Fried in Extra Virgin Olive Oil for 4 minutes per side. I topped with a slice of Monterrey/Jack Cheese and Sauteed Mushrooms. The Mushrooms were seasoned with Ground Smoked Cumin, Thyme, Parsley Ground Black Pepper, and Sea Salt. Sauteed in Extra Virgin Olive Oil about 4 1/2 minutes. Served it on an Healthy Life Whole Grain Bun. As a side I had Baked Ore Ida Steak Fries. For dessert later a bowl of Breyer’s Vanilla Carb Smart Ice Cream topped with Del Monte Sliced Sugarless Peaches.

Light, filling and easy to make. Was outside most of the day and wanted something light. I used Oscar Mayer Smoked Turkey Breast and Boar’s Head Prosciutto. Topped with a slice of Smoked Gouda Cheese,Kraft Reduced Fat Mayo w/ Olive Oil and French’s Spicy Brown Mustard, and Lettuce. Served on Healthy Life Whole Grain Bread. As a side I had Ore – Ida Baked Steak Fries. For dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with Del Monte Sugarless Slicec Peaches.
