Another cold day around here again but it’s predicted to be a little warmer over the weekend, but rain. Well for dinner I made another sandwich with sides for dinner,Fried Panko Coated Sandwich w/ Baked Seasoned Potato Grillers.

 

 

I had an Orange Roughy fillet left in the freezer so I laid it out overnight in the fridge to thaw. To prepare it I rinsed the fillet off and patted it dry then rolled it in Flour that I had seasoned with Garlic Powder, Lemon Pepper, and Onion Powder. I then dipped it into Egg Beater’s, shaking off the excess. Then rolling the fillet in a Panko Bread Crumbs that I seasoned with Sea Salt and Paprika. I rolled the fillets until they were covered on both sides. I then lightly fried them about 4 minutes per side in Canola Oil. It came out golden brown and delicious! I served it on a Aunt Millie’s Light Whole Grain Bun along with a slice of Bordon’s Smoked Cheddar Cheese and also just a touch of Lemon Juice to top the fillet off. The full recipe is at the end of the post, recipe makes 4 sandwiches.

 
For a side to go with my Fish I baked up some Ore Ida Grillers Seasoned Thick Cut Potatoes. A real good product from Ore Ida, nice and thick cut that’s seasoned just right. For dessert later a Healthy Choice Greek Frozen Yogurt Vanilla/Chocolate Swirl.

 

 

 

 

Orange Roughy with Panko

 

Ingredients
(4) 4oz. Orange Roughy Fillets

1 c. Panko Italian Style Bread Crumbs

Sea Salt and Ground Black Pepper, to taste

1/2 tsp lemon pepper

1 tsp. onion powder

1/2 tsp. garlic powder

1/2 tsp. paprika

1/2 c. Egg Beater’s

1/2 c. Flour

1 1/2Tbs. Extra Virgin Olive Oil

Lemon Juice to taste, optionalPanko orange Roughy 001

 

 

Directions
Rinse fillets and pat dry and season with Sea Salt and Pepper. Press both sides of fillet into flour for a light dusting , shaking off any excess flour. Mix bread crumbs, onion powder, garlic powder, and paprika in a separate bowl. Meanwhile, heat Olive Oil in skillet. Dip floured fillets into Egg Beater’s, allowing excess to drip off. Place fillets, one at a time, in Panko Bread Crumbs, and lightly toss until both sides are covered. Place in oil and saute 4 minutes each side, or until fillet flakes easily with a fork.

Really enjoyed the day, out spreading Christmas Cheer! I was out delivering Christmas cards and Gifts this afternoon. I love giving friends and family gifts, It’s my favorite part of Christmas! I dropped off Candy and Gift Cards to my Family Doctor and his staff and cards and candy to my long time Oncologist along with his staff. Also while at my Oncologist, as I always do every month, I dropped off a huge box of Snacks – Doritos, Lay’s Potato Chips, Cheese Crackers, and such the treatment center in his office. It’s so sad, they enlarged their in office treatment center for cancer patients and it’s still not large enough to treat all the patients fighting cancer. I received treatment there myself once and I hold a very soft spot in my heart for all those fighting the various forms of cancer. So I make sure I drop off snacks for the patients to snack on while receiving their treatments. I finished up my gift deliveries by dropping a few cards off to my neighbors. I’ve got some great neighbors, they are always there to help and assist me with what ever help I need. Being in a wheelchair having good neighbors like I do is a blessing!

 

Well for dinner I prepared Mushroom & Smoked Cheddar Bison Burgers w/ Crinkle Fries. yes I’ve got my Mom eating a Bison Burger, she’s coming around! I used Great Range Ground Bison Sirloin. I seasoned it with McCormick Grinder Steakhouse Seasoning and pan fried them about 3 – 4 minutes per side, 3 minutes for mine I like medium rare. I served them on a Healthy Life Whole Grain Bun and topped them with Sauteed Baby Bella Mushrooms and a slice of Borden Smoked Cheddar Cheese.

 

For a side I baked some Alexia Crinkle Fries with a dipping side of Hunt’s Ketchup. For a dessert/snack later I prepared some BBQ Bison burger great range 001Pineapple Turkey Meatballs. 3 ingredients; 1 package Honeysuckle White Turkey Meatballs, 1 bottle BBQ Sauce (I used Montgomery Inn Sauce), and 1 small can Dole Pineapple Tid Bits. Just add all ingredients to a medium size sauce pan set it on low and let it simmer till warmed through out. Makes a great little quick snack or appetizer.

Today’s Menu: Bison Smoked Cheddar Burger w/ Baked Crinkle Fries
I’m having one of those Wild Idea 1/4 lb. Buffalo Burgers. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I pan fried it in Extra Virgin Olive Oil about 3 1/2 minutes per side. It fried up perfectly! Great tasting and juicy Burger and as good as it looks in the picture it tasted even better. I topped it with a slice of Bordon’s Smoked Cheddar Cheese and served it on a Healthy Life Whole Grain Bun. I love these Buffalo Burgers!

For a side I had I baked some Alexia Crinkle Fries. Baked at 450 degrees for 20 minutes and I seasoned them with Sea Salt and Ground Black Pepper. For dessert later/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Today’s Menu: Smoked Cheddar Bison Burger w/ Baked Crinkle Fries

 
A laid back day today! Outside riding the 4 wheeler around and watching Football. Went with a light and easy to prepare dinner, Smoked Cheddar Bison Burger w/ Baked Crinkle Fries. I used Great Range Ground Bison. I seasoned it with McCormick Grinder Steakhouse Seasoning and fried it in Extra Virgin Olive Oil, about 4 minutes per side. It came out just like I wanted medium rare! It’s tough to beat the taste of Bison and how easy it is to prepare. Bison’s a lean meat so it fries up or grills in a short period of time. I just hope it doesn’t keep going up in price like it has been. I topped my Burger with a slice of Borden’s Smoked Cheddar and served it on a Healthy Life Whole Grain Bun.

For a side I baked up some Alexia Crinkle Fries. Crisp and great tasting fries plus only 120 calories and 19 carbs. I had a side of a new Ketchup that I purchased on my last trip to Jungle Jim’s Market, Captain Thom’s Slappin’ Fat Bacon Ketchup. It’s a very sweet, tangy, smoky – with just a hint of spiciness from the red pepper. This really is a great tasting catsup. Great to keep on hand when you want that bit of bacon flavor added to your meals. this ketchup would be great for a Meatloaf! Then for dessert later I baked 3 mini loaves of Pillsbury Nut Quick Bread. I’ll keep I loaf out while freezing the other 2.

Ingredients:

Today’s Menu: Blackened, Smoked Cheddar, Mushroom Bison Burger!

 

Not much of an appetite tonight. Went with a Bison Burger. Seasoned with Blackening Season and fried in Extra Virgin Olive Oil about 4 minutes per side. I served it on a Healthy Life Whole Grain Bun and topped it with sautéed Baby Bella Mushrooms and a slice of Bordon Smoked Cheddar Cheese. I just love the taste of Bison! I always use Great Range Fresh Ground Bison. I purchase it from Kroger. Kroger, at least around here, is the only store that sells fresh Bison. They carry the Ground Bison and Bison Sirloin. If you’ve never tried Bison you should give it a try, you’ll never use Beef unless you have to again. For dessert later a bowl of Blue Bunny Chocolate/Vanilla Swirl Frozen Yogurt.

Today’s Menu: Loaded Bison Burger w/ Smoked Cheddar, Mushrooms, and Turkey Bacon

 

 

Had one tasty burger for dinner tonight! I had a Ground Bison Sirloin that I seasoned with McCormick Steakhouse Seasoning. I fried it in Extra Virgin Olive Oil about 4 minutes per side. Served on a Healthy Life Whole Grain Bun and topped with a slice of Bordon‘s Smoked Cheddar, Sauteed Portobella Mushrooms, and a slice of Turkey Bacon. Now that’s loaded! I’ve switched over to Bison from Beef for a few years now. I just love the taste of Bison and how easy it is to prepare, and also the healthier benifits it has over Beef. I still have Beef from time to time but it’s mainly Bison.

For a side I had Ore Ida Steakhouse Seasoned Griller Potatoes. Another one I’ve recently staerted using. Nice thick cut potatoes and well seasoned. Dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with some of those delicious South Carolina Peaches!

Today’s Menu: Fried Ocean Perch Sandwich w/ Pineapple Salsa and Cheese & Shells Pasta

 

 

While at Jungle Jim’s a while back I purchased some beautiful Ocean Perch fillets. I usually only find small fillets of Ocean perch but these were all good size fillets. I fried 2 of the fillets, one for dinner tonight and one for lunch tomorrow. I first scored the skin side of the Perch. By scoring the flesh side with a sharp knife it helps to keep the Perch from curling up so bad on the sides. If you have real small walleye fillets they will do this also. Next I rubbed a very light coat of Extra Virgin Olive Oil on the fillets. I then seasoned them with McCormick Grinder Sea Salt and Black Peppercorn. To finish I rubbed a light coating of Italian Style Bread crumbs on them. i fried the Perch in extra Virgin Olive Oil for 8 minutes, turning once. After turning after 4 minutes I a few drops of Sriracha Hot Chili Sauce, a few drops of this plenty! I served it on a Sara Lee Deli Roll with a slice of Bordon Sliced Smoked Cheddar and topped with Pineapple Salsa. I don’t know if I was starving or it was just that good! I practically inhaled it. Came out golden brown and delicious with just a hint of heat from the Sriracha and the sweetness of the Pineapple Salsa. I’ll have to try this combo of Sriracha Sauce and pineapple Salsa on Pork Chops sometime soon.

The Pineapple Salsa I used was Amish Wedding Old Fashioned Pineapple Salsa. This is another item I picked up from Jungle Jim’s my last visit. Amish Wedding has a huge line of products including, Salsaa, Pickles, Cider, Relish, and Jams just to name a few. I’ve left the web site link at the bottom of the post. For a side to Perch Sandwich I had a Velveeta/Kraft Shells and Cheese (2% Milk Cheese * 1//2 The Fat). For dessert/snack later some good old fashioned Peanut Butter and Crackers using Jif Reduced Fat Peanut Butter and Ritz Whole Wheat Crackers.
