Cinnamon Pork Roast
A surprising pleasant, touch of cinnamon sweet, mildly hot flavor is imparted in this very special, savory roast.

Recipe Ingredients:
3 1/2 to 4 pounds boneless pork loin roast
2 tablespoons ground cinnamon
2 tablespoons salt
1 teaspoon freshly ground white pepper
2 tablespoons granulated sugar
1 onion, finely grated
4 garlic cloves, minced
1 to 2 tablespoons soy sauce

Cooking Directions:
1 – Combine cinnamon, salt pepper, sugar, onion, and garlic. Blend in 1 tablespoon soy sauce. If not spreadable, add another tablespoon of soy sauce. Rub mixture into loin. Refrigerate 3 hours to overnight.
2 – Grill pork over medium-low indirect fire 1 1/4 to 1 1/2 hours (about 20 minutes per pound) or until the internal temperature is 155°F (approximately 65°C).
3 – Allow to rest for 5 to 10 minutes before cutting into thin slices.
Serves 10 to 12.

Roast Pork Loin Southwest Style
Your family will shout ‘olé!’ when they taste this Southwestern roast. Enjoy with seasoned corn on the cob and baked sweet potatoes.

Recipe Ingredients:
1 (4-pound) boneless pork loin roast
1 tablespoon olive oil
2 medium tomatoes, seeded and chopped (about 2 cups)
1 medium onion, chopped (about 1 cup)
1/2 cup chopped fresh cilantro
1 tomatillo, peeled, chopped (about 1/3 cup; optional)
4 cloves garlic, minced
1 jalapeño pepper, chopped, seeded (optional)
1 (4-ounce) diced green chiles, drained
1/2 teaspoon dried oregano leaves
1/2 teaspoon ground cumin
1/2 teaspoon ground red pepper
1/2 teaspoon ground coriander

Cooking Directions:
1 – Heat oil in a large skillet over medium heat. Add tomatoes, onion, cilantro, tomatillos, garlic, jalapeño pepper and chiles; cook about 2 minutes or until onion is tender, stirring frequently. Add oregano, cumin, red pepper and coriander; mix well. Refrigerate mixture until thoroughly chilled.
2 – Preheat oven to 325°F (160°C). Spray shallow baking pan with nonstick cooking spray.
3 – Using sharp knife, cut 8 to 10 slits about 1 inch long and 1 inch deep in top and sides of pork roast. Press heaping teaspoonful of cold vegetable mixture into each slit; spread remaining mixture over top and sides of roast. Place in prepared pan. Roast for about 1 1/2 hours, or until meat thermometer registers 155°F (approximately 65°C).
4 – Let stand 10 minutes before slicing.
Makes 16 servings.

Stuffed Pork Loin Genoa Style
This colorful, Italian-style stuffed roast makes a flavorful centerpiece to your next gathering. Treat your guests by serving this along side of sautéed patty-pan squash.

Recipe Ingredients:
4 to 5 pound boneless pork loin roast
1/2 cup fresh basil, chopped
1 cup fresh parsley, chopped
1/2 cup pine nuts
6 cloves garlic, peeled and chopped
1/2 cup freshly grated Parmesan cheese
1/2 pound ground pork
1/2 pound Italian sausage
1 cup dry bread crumbs
1/4 cup milk
1 large egg
1/4 cup fresh parsley, chopped
Kosher or sea salt to taste
1 teaspoon ground black pepper

Cooking Directions:
1 – In a food processor or blender, blend together the fresh basil, 1 cup parsley, pine nuts, garlic and Parmesan cheese. Set aside.
2 – Mix together well the ground pork, Italian sausage, bread crumbs, milk, egg, remaining parsley, salt and pepper.
3 – Butterfly pork loin by cutting through roast horizontally to within 1/4-inch of the other side. Do not cut all the way through. Open out to roughly a rectangle. Spread with the herb-cheese mixture and place the ground pork mixture along center of loin. Fold in half, tie; roast at 350°F (175°C) for 1 1/2 hours. Slice to serve.
Makes 10 servings.

Grilled Greek-Style Pork Roast with Yogurt Sauce
Lemon, garlic and oregano are the ‘trinity’ of Mediterranean cooking. And this culinary triumvirate marries perfectly with pork. If desired, thinly slice leftovers and tuck into pita pocket bread, topped with Yogurt Sauce. Serve roast with Italian bread, marinated tomatoes, rice pilaf and roasted asparagus.

Recipe Ingredients:
1 (3-pound) boneless pork loin roast
1/4 cup olive oil
1/4 cup lemon juice
1 teaspoon oregano
1 teaspoon salt
1 teaspoon ground black pepper
6 garlic cloves, crushed
1 cup plain yogurt
1 cucumber, peeled, seeded and chopped
1/4 cup minced red onion
1 garlic clove, crushed
1/2 teaspoon ground coriander
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes

Cooking Directions:
1 – Place pork in large self-sealing bag. Add olive oil, lemon juice, oregano, salt, pepper and 6 garlic cloves to bag; seal bag and toss gently to combine thoroughly. Refrigerate 8 to 24 hours.
2 – Remove pork from marinade; discarding marinade.
3 – Prepare medium-hot banked fire in covered kettle-style grill.
4 – Grill pork over indirect heat, away from fire, for 45 minutes to 1 hour, until internal temperature reads 150°C to 155°F (approximately 65°C).
5 – Let rest 10 minutes before slicing to serve with Yogurt Sauce.
6 – For Yogurt Sauce: Stir together yogurt, cucumber, onion, 1 garlic clove, coriander, salt and red pepper flakes. Cover and refrigerate until ready to serve.
Makes 8 servings.

Mediterranean Grilled Pork Roast
A grilled pork roast gives you and your guests time to mingle and savor the outdoors.

Recipe Ingredients:
1 boneless pork loin roast, 3 to 4 pounds
Zest of two lemons
5 garlic cloves, peeled
1/3 cup fresh rosemary leaves
1/4 cup fresh sage leaves
1/4 cup coarsely ground black pepper
1 tablespoon kosher or sea salt

Cooking Directions:
1 – Pat pork roast dry.
2 – In bowl of food processor, place remaining ingredients and process until fairly fine. Pat seasoning mixture over all surfaces of roast and place on medium-hot grill over INDIRECT heat. Close grill hood and grill for about 1 to 1 1/4 hours, until internal temperature (measured with a meat thermometer) reads about 155°F (approximately 65°C).
3 – Remove pork from grill and let rest about 10 minutes before slicing to serve.

Maple-Mustard-Glazed Pork Roast
Every weeknight cook’s dream—a dinner complete from the oven! Leftover roast, thinly sliced, makes great sandwiches for tomorrow’s lunches.

Recipe Ingredients:
1 (2 to 3 pound) boneless pork loin roast
2/3 cup maple-flavored syrup
3 tablespoons Dijon-style mustard
2 tablespoons cider vinegar
2 tablespoons soy sauce
Salt and pepper
1 pound carrots, pared and quartered lengthwise*
4 to 6 medium red potatoes, scrubbed and halved

Cooking Directions:
1 – Stir together maple syrup, mustard, vinegar, soy sauce, salt and pepper. Spread evenly over pork roast and place in a shallow roasting pan, surrounded by carrots and potatoes.
2 – Roast in a 350°F (175°C) oven until internal temperature of pork, measured with a meat thermometer, reaches 155°F to 160°F (approximately 65°C to 70°C) and vegetables are tender, about 45 minutes to 1 1/4 hours.
3 – Remove from oven; slice roast to serve with vegetables.
Makes 6 to 8 servings.

Cuban Glazed Pork Loin
Recipe Ingredients:
3 1/4 to 3 1/2 pounds boneless pork loin roast
1 lime
2 tablespoons frozen orange juice concentrate, thawed
1 tablespoon garlic, minced
1 tablespoon olive oil
1 1/2 teaspoons ground cumin
3/4 teaspoon salt
1/2 teaspoon ground black pepper
2 medium sweet potatoes, peeled and cut into chunks (optional)
1 large red onion, cut into 1-inch wedges (optional)

Cooking Directions:
1 – Preheat the oven to 350°F (175°C). Arrange the pork roast in the center of a shallow roasting pan.
2 – Grate the zest of the lime into a small bowl. Juice the lime and add 1 tablespoon to the bowl; reserve remaining juice for another use. Stir the remaining ingredients into the bowl. Spread the citrus mixture over the surface of the pork. Surround the pork with the sweet potatoes and onion if desired.
3 – Roast 20 minutes per pound or about 65 to 70 minutes (22 minutes per pound if roast is rolled and tied) until the internal temperature on an instant read thermometer reaches 145°F (62.7°C).
Remove from oven and let the roast rest for 10 minutes before slicing to serve.
Makes 12 servings.

Serving Suggestion: Slice slightly over a third of the roast, surround with roasted vegetables if desired; and serve. Reserve the remaining roast, cut in cubes and refrigerate, covered, for two additional meals.

Today’s Menu: Cumin Spiced Boneless Pork Loin Roast w/ Cut Green Beans & Potatoes and Savory Herb Stuffing

 

Cumin Spiced Boneless Pork Loin Roast 015
Our morning started off sunny and humid but as the morning went on the clouds started rolling in and we had rain coming in for the day. Layed back day, not a lot going on. After Breakfast and the morning workout I went outside and did some cleaning and sweeping. Then back inside pulled everything out of the fridge and gave it a good cleaning and straightened up a couple of storage cabnets for my day. For dinner tonight a favorite of mine, Cumin Spiced Boneless Pork Loin Roast w/ Cut Green Beans & Potatoes and Savory Herb Stuffing.

 

 

I’ve been using the Cumin Spice Rub for a while now, my favorite Rub for Pork. I had come across the recipe a while Cumin Spiced Boneless Pork Loin Roast 001back on-line, and use it all the time now. It gives the Pork a fantastic crust and great seasoning. I purchased the Pork Tenderloin Boneless Roast from Kroger yesterday. To prepare it I’ll need; 1 Pork Tenderloin Roast, 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combined all the ingredients; rub it all over the Pork. Let stand 20 minutes. To Roast it I used a mall Broiler Pan with a Wire Rack in it. Sprayed the Rack with Pam Cooking Spray and put the Pork on it. I baked it for about 1 hour, until my thermometer registered 145° (slightly pink) Let stand 10 minutes before slicing. Then got ready to enjoy one delicious Pork Tenderloin Roast! Fantastic combo of Spices, which made one incredible Crust on the Pork with the inside being so tender and moist!

 

Cumin Spiced Boneless Pork Loin Roast 009
For one side I heated up a can of Del Monte Cut Green Beans and Potatoes. A combination of two of my favorite Vegetables all in one can! Then for another side I prepared a box of Stove Top Savory Herbs Stuffing. So easy to make and love the Stuffing. For dessert later a bowl of Del Monte Sliced Peaches.

The Mother’s Day Menu: Cumin Spiced Boneless Pork Loin Roast w/ Sugar Snap Peas, Roasted Carrots, Mashed Potatoes, and French Bread

A very Happy Mother’s day to all the Moms out there! And a Very Special Happy Mother’s Day to a Very Special Mom, My Mom! I love you Mom! Mom and Dad went to Church this morning, due to a couple of health issues I don’t go much. So while they were out I went to Kroger, I was out of Carrots. Came back and cleaned the house and did a small load of laundry. Being Mother’s day I wanted to make Mom a really delicious Dinner. So I prepared a Cumin Spiced Boneless Pork Loin Roast w/ Sugar Snap Peas, Roasted Carrots, Mashed Potatoes and French Bread.

Cumin Spiced Boneless Pork Loin Roast Sugar Snap Peas, and Roast 004
I also prepared some Sauteed Sugar Snap Peas & Walnuts. I took a 1/4 cup of Walnuts and gave them a rough chop, and set aside. I then heated 1/2 tablespoon of Extra Olive Oil in a large saute pan over medium-high heat. Added the Sugar Snap Peas, Sea Salt, Pepper and Walnuts and sautéed, tossing occasionally for 5 to 6 minutes, until the Sugar Snap Peas were crisp tender. Love this recipe!

 

 

 
I used a real easy and simple recipe for the Carrots. I needed; 3 tablespoons Extra Virgin Olive Oil, 1 teaspoon Sea Cumin Spiced Boneless Pork Loin Roast Sugar Snap Peas, and Roast 001Salt (or to taste), 1 teaspoon Black Pepper (or to taste), 2 teaspoons Rosemary, 2 teaspoons Thyme, and 2 teaspoons Sage. To prepare them I heated the oven to 350 degrees. Sliced the Carrots into smaller pieces. Then in a large bowl, tossed the Carrots with the Olive Oil, Salt, Pepper, Rosemary,Thyme, and Sage. Spread mixture on a large foil lined cookie sheet. Roast until tender, about 30–35 minutes. These are too good! The Carrots with the added herbs make a perfect side dish. Dad wanted some Mashed Potatoes so I prepared some Bob Evan’s Mashed Potatoes. Then to top everything off I baked a loaf of one of Mom’s favorite Breads, Pillsbury Rustic French Bread. Took some time and work but it was worth it as Mom loved everything! For dessert later a Healthy Choice Chocolate Swirl Frozen Greek Yogurt.
