Today’s Menu: Buttermilk Marinated Chicken Thighs w/ Cut Green Beans, Diced Potatoes, and Glazed Apples

 

 

For Breakfast This morning I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had my morning cup of Bigelow Decaf Green Tea. Big change in our Weather, Fall is really here! We had a high of 59 degrees, mostly sunny and very windy. The winds kept the temperatures feeling like 50 degrees. The low overnight will be in the 30’s, times are a changin! Anyway after Breakfast I did a load of laundry for Mom. Mom slept most of the day, upset stomach and just not feeling real good. So I took good care of her today. For Dinner tonight I prepared Buttermilk Marinated Chicken Thighs w/ Cut Green Beans, Diced Potatoes, and Glazed Apples.

 

For the Chicken; I started at Noon today. I grabbed a large Hefty Bag and added a 1/2 Pint of Buttermilk to the bag. I then added several shakes of Frank’s Hot Sauce to it and shook the bag to blend it together. I then added my Chicken Breasts and let it Marinate in the fridge until it was time to use. I used my favorite, Katie’s Best Chicken Thighs.

 

I usually prepare the Thin Sliced Chicken Breast with Buttermilk Marinade. But what is good for the Breasts is good for the Thighs! So Chicken Thighs it is.  To prepare the Chicken Thighs I grabbed a Cast Iron Skillet. Sprayed with a coat of Pam Non Stick Cooking Spray. Then I started heating the skillet on medium heat. Next I added a tablespoon and a half of Olive Oil Cooking Oil. As the skillet heated I got the Chicken out of the fridge and removed it from the bag of Marinade, shaking off the excess. Then I grabbed a pie pan and added Flour to it and seasoned the Flour with Paprika. Took the Chicken Thighs and rolled them in the Seasoned Flour until well covered.

 

Added the Chicken to the heated Skillet. I cooked the Chicken for 4 minutes and then flipped them over and cooked them for 4 more minutes, until golden brown and the meat thermometer read 165 degrees. The Chicken turned out so very good! Cooked up perfect, nice crust, and love the seasoning! Served it with Kraft Hickory Smoked BBQ Sauce for dipping.

 

For a side I heated up a can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and heat until heated through. I just love Green Beans, all Beans!

 

 

For another side it was Del Monte Diced New Potatoes. I’ve had these many times and as always, delicious! To prepare these; empty the Potatoes into a small sauce pan and heat on medium heat until heated through.

 

 

 

I also heated up some Bob Evan’s Glazed Apples, it comes in a microwavable container and is a quick and delicious way to have Glazed Apples. Apples are perfect for any Pork dish! Quite a dinner tonight! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple.

Today’s Menu: Cumin Spiced Pork Chop w/ Baked Potato and Glazed Apples

 

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. Another windy day but sunny and 62 degrees out. Did a load of laundry after Breakfast. Later made a Pick Up order from Kroger. They were out of a lot of items, picked the order up at 2:00. Did some yard work also. For Dinner tonight it’s a Cumin Spiced Pork Chop w/ Baked Potato and Glazed Apples.

 

While at Meijer I picked up a couple of huge Bone – In Pork Loin Chops To prepare my Chops I’ll need; The Cumin Spiced Rub which consists of 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it, preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add pork to the pan; cook for 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 20 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 10 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork!

 

For a side I baked a Russet Potato for a side with Steak. Seasoned with McCormick Grinder Sea Salt and Peppercorn Medley, and topped with I Can’t Believe It’s Not Butter and Daisy Light Sour Cream.

 

I also heated up some Bob Evan’s Glazed Apples, it comes in a microwavable container and is a quick and delicious way to have Glazed Apples. And Apples are perfect for any Pork dish! Quite a dinner tonight! Also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. Perfect Bread with any Dish. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Cumin Spice Pork Chops w/ Loaded Baked Potato Casserole and Glazed Apples

 

 

For Breakfast this morning I toasted a Thomas English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. Mostly sunny and 64 degrees on this 1st day of October. Another day of dealing with Phantom Pains. They started around 5:00 this morning and didn’t stop until around 6:00 this evening. I would give anything for a way or cure to stop these! For Dinner tonight I prepared Cumin Spice Pork Chops w/ Loaded Baked Potato Casserole and Glazed Apples.

 

I had picked some Pork Chops a while back at Jungle Jim’s and them in the freeze. Laid 2 of the Chops in the fridge overnight to thaw. To to prepare my Chops I’ll need; The Cumin Spiced Rub which consists of 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. From the stove to the oven and bake at 400° for 15 minutes until the thermometer registered 160°, turning after 5 minutes. Let stand 10 minutes before slicing. Fantastic combo of Spices, which makes one incredible tasty Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork!

 

For a side dish I prepared a box of Idahoan Loaded Potato Homestyle Casserole. I love all the Idahoan Potato Products. A very quick and easy way to prepare some delicious piping hot Potato Dishes. A very quick and easy way to prepare some delicious piping hot Potato Dishes.

 

I also heated up some Bob Evan’s Glazed Apples, it comes in a microwavable container and is a quick and delicious way to have Glazed Apples. And Apples are perfect for any Pork dish! Quite a dinner tonight! For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Spring bypassed us and Summer has slid right in! It’s 86 degrees and sunny out there today. Not a lot going on today around the house. I went to Kroger, I forgot to pick a couple of Birthday cards yesterday when I was up here. It’s my Aunts Birthday tomorrow. Her and my Dad are in the same rehab center, the family is having a Birthday Party tomorrow for her. So anyway I did a few things around the house and outside. For dinner tonight I prepared Tuscan Seasoned Pork Medallions w/ Hash Browns, Glazed Apples, and Italian Loaf Bread.

On my last visit to Costco I bought another package of the Tuscan Seasoned Pork Loin Medallions. They cut it and seasoned it as I shopped. The package had 20 slices in it and have them in the Freezer. So Last night I grabbed a package out of the freezer and let it thaw overnight in the fridge.

To start I preheated the oven on 400 degrees. To prepare them I used a Cast Iron Skillet. Sprayed it with Pam Cooking Spray and added 1 tablespoon of Extra Virgin Olive Oil and heated it on medium heat. I then lightly Salted the Pork with Sea Salt and a sprinkle of McCormick Dried Parsley. Added the Pork to the skillet and cooked it for 2 minutes a side, as it just started to brown. Then from the stove to the oven, love Cast Iron Skillets! I then backed them to a medium rare, 145 degrees in the center of the medallions using a meat thermometer. Pork Tenderloin is one of my favorites. The Pork is so tender and flavorful. Seasoned just right and so moist.

Then for one side I prepared some Simply Potatoes Hash Browns. I had these yesterday for dinner and were so good I’m having them again for dinner tonight. Fried them in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. I love Hash Browns, they make the perfect side for any Dish.

Today’s Menu: Fried Walleye w/ Hash Browns, Sliced Carrots, and Glazed Apples

It was 51 degrees this morning when I went out and got the morning paper. Another beautiful day out, sunny and a high of 81 degrees! Took Mom shopping, she needed a new Vacuum Sweeper. Brought her back home and assembled the sweeper, always fun. Then went and got her car washed inside and out. Spent the rest of the day outside enjoying the sunshine! For dinner tonight it’s Fried Walleye w/ Hash Browns, Sliced Carrots, and Glazed Apples.

 

 

I had some Walleye that I had purchased from Costco last week in the freezer. I laid one bag in the fridge to thaw overnight. Walleye is such a meaty Fish with great flavor so it doesn’t need much breading, just enough to give it a nice crust. I rinsed the fillets off in water and patted dry with a paper towel. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then dusted them with a light coat of Flour. I panned fried them in Canola Oil about 3 1/2 minutes per side, to a nice golden brown. Walleye has that wild fresh taste about it, and these were delicious!

 

 
For one side I prepared some Simply Potatoes Hash Browns, my favorite Potatoes by far. Then as my Hash Browns were frying I heated up a small can of Walmart Brand Sliced Carrots. I also heated up some Bob Evan’s Glazed Apples, it comes in a microwavable container and is a quick and delicious way to have Glazed Apples. Quite a dinner tonight! For dessert later a bowl of Breyer’s Carb Smart Vanilla Bean Ice Cream topped with a tablespoon of the Glazed Apples I had prepared for dinner earlier.
