Today’s Menu: Seasoned Fried Haddock w/ Macaroni and Cheese and French Bread

Beautiful outside and spent most of it at a local County Park, Winton Woods. It’s located in the neighboring County, Hamilton County. It’s the largest County Park around. A good size lake and some beautiful scenery. Another 2 or 3 weeks and the leaves will have turned colors and it will be a gorgeous site. For dinner I prepared a Seasoned Fried Haddock w/ Macaroni and Cheese and French Bread.

 

 

Love that Haddock that I’ve been buying from our local Kroger Seafood Department. To prepare it I rinsed the fillet in cold water and patted dry with a paper towel. Then sliced the fillet into four pieces. I then seasoned it with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. I then pan fried them in Canola Oil, frying them about 3 minutes per side until golden brown. Delicious! Haddock and Zatarain’s is a perfect combo!

 

 

I had been craving some Macaroni and Cheese for some time now. So for a side I heated up an individual cup of Bob Evan’s Macaroni and Cheese. Just microwave for 1 1/2 minutes and you have your Mac. First time I tried the Bob Evan’s Mac and Cheese and was very pleased with it. Excellent Cheesy flavor and the Pasta was spot on, Good job there Bob! I baked a loaf of Pillsbury Rustic French Bread also. For dessert/snack tonight some Cheese and Crackers! Bought some Boar’s Head Colby Longhorn Cheese, at Jungle Jim’s Market, and served it on some Ritz Whole Grain Crackers. My favorite pair of sweat pants, t-shirt, remote, and in my favorite chair, it’s going to be a good night!

Today’s Menu: Roasted Boneless Skinless Turkey Breast w/ Mashed Potatoes, Green Beans, and Garlic Knot Rolls

 

 

 

 

With Mom and Dad both still under the weather I wanted to fix them a hot and hearty dinner. I went to Meijer early this morning and purchased a Jennie – O Oven Ready Boneless Skinless Turkey Breast. They both love Turkey so I knew they would enjoy this meal. I prepared; a Roasted Boneless Skinless Turkey Breast w/ Mashed Potatoes, Green Beans, and Garlic Knot Rolls.

 

 

I love using the Jennie – O Oven Ready Boneless Skinless Turkey Breast. It’s an easy and delicious way to get your Turkey on! Comes inJennie O turkey Breast 005 an Oven Ready Bag that you bake at 375 degrees for about 2 to 3 hour until it reads 170 degrees. It also now has a pop up inserted in the breast that pops up when done. The Turkey came out juicy and delicious, excellent flavor!

 

 

To go with the Turkey Breast I prepared a side of Bob Evans Mashed Potatoes. My favorite Mashed Potatoes over any other or homemade. Just heat for a total of 6 minutes in the microwave and their ready! I also heated up a can of Del Monte Green Beans along with baking some Walmart Marketside Garlic Knot Rolls. For dessert later a Jello Sugar Free Double Chocolate Pudding.

Cooking Instructions:

 

OVEN COOKING METHOD:
Preheat oven to 375 °F.
Remove frozen turkey from white outer package.
Do not remove turkey from FOOL PROOF. cooking bag.
Place in a roasting pan with at least 2″ high sides.
Note – Do not increase oven temperature, cooking bag may melt at higher temperatures.
Cut three 1/2 inch slits in top of FOOL PROOF. cooking bag.
Place pan in oven, allowing room for bag to expand without touching the oven racks or walls.
Roast the turkey until a meat thermometer reaches 170°F.
Note – Meat temperature increases rapidly during last hour of cooking.
Let turkey rest 10 minutes, cut open top of oven bag.
Watch out for hot steam and juices.
Heat gravy as directed on pouch.

First flu – free day in a while and it feels great! Plus it’s a beautiful and sunny day outside, about 50 degrees! I was even able to get out and enjoy that sunshine for a while. For dinner I prepared a Herbed Pork Chop w/ Mashed Potatoes, Green Beans, and Glazed Apples. Classic comfort food alert!

 
About 10 o’clock this morning I made my marinade for the Pork Chop. easy and quick marinade to whip up all you need is; 1/4 cup Kraft Free Italian dressing and 1 tablespoon each of fresh herbs, chopped (any combination – chives, basil, oregano, rosemary). Then I placed the chop in a resealable plastic bag. Added dressing and herbs; seal and refrigerate 8 to 24 hours. Remove the chop from marinade; discard marinade. Grill chop over medium-high heat (or broil 4 inches from heat) for 8 to 9 minutes, turning once until internal temperature on a thermometer reads 145 degrees Fahrenheit, followed by a 3-minute rest time. You then have one great tasting Chop! The marinade is perfect for Pork. It comes out very tender and the flavor is incredible! I prepared it on a cast iron griddle and was really pleased on how it grilled. I’ll be using this more often. This is about my favorite Pork Chop recipe and I found it at the Pork Be Inspired web site. I left the Chop recipe, which is for 4 Pork Chops, and a link to the web site at the end of the post.
I prepared 3 easy to fix side dishes to go with the Pork Chop; Mashed Potatoes, Green Beans, and Glazed Apples. I only had a half a serving of the Bob Evans Glazed Apples. The Mashed potatoes and Glazed Apples were Bob Evans Brand. Both come in a microwavable package and both taste as good homemade. the Apples are always a perfect pairing with Pork. I’ll be using some of the Glazed Apples for dessert tonight also. I also used Del Monte Cut Green Beans. Then for dessert later tonight I’ll be having Breyer’s Carb Smart Vanilla Ice Cream topped with a tablespoon of the Bob Evans Glazed Apples.

 

 

 

 

Herbed Pork Chops

Prep Time: 10 minutes prep, Cook Time: 15 minutes cook
Ingredients:

4 pork loin chops, 3/4-inch thick
1 cup reduced fat Italian dressing
