A lot of sunshine but one cold wind blowing out there today. I woke up feeling so much better today, looks like I’m shaking the flu off. So many people with it right now. Went to Kroger for a few items and the bank and back home. Did a couple of loads of laundry for Mom and ran the vacuum for her. For dinner tonight nothing but a Comfort Food!, I prepared a Grilled Ham and Cheese Sandwich w/ Chunky Baked Potato & Cheddar and Bacon Bits Soup.

 

 

Just seemed like a Comfort Food Day and what better to have than a Grilled Ham and Cheese Grilled Ham and Cheese Potato Soup 003Sandwich w/ Chunky Baked Potato & Cheddar and Bacon Bits Soup. Always a hearty, quick and easy dinner! I used Boar’s Head Smoked Honey Ham, Kraft Sliced Sharp Cheddar Cheese, Litehouse Lite Thousand Island Dressing, and Klosterman Wheat Bread to make my sandwich with. Thousand Island Dressing is a great way to liven up any sandwich, especially when you can find a great tasting Lite or Reduced Fat one. The Litehouse Lite is only 70 calories and 4 carbs per serving. To make the sandwich I buttered both pieces of the bread with I Can’t Believe It’s Not Butter and then on the unbuttered sides I spread the Thousand Island Dressing, then layered the Ham, and then the Cheese. I heated a small frying pan and grilled the Sandwich on both sides until they are golden brown and the Cheese is just starting to melt. A Grilled Cheese is good anytime of the day but one with added Ham and the Thousand Island Dressing gives it that extra kick.

Along with the sandwich I had a bowl of Campbell’s Chunky Baked Potato with Cheddar and Bacon Bits Soup, 190 calories and 19 net carbs per serving. One of Campbell’s Better Soups. Very good tasty, thick and hearty Soup. I topped with a some Kraft 2% Shredded Sharp Cheddar Cheese. A warm and hearty meal! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

 

 

 

 

 

Baked Potato with Cheddar and Bacon Bits Soup

White Cheddar and Chive Potato Soup w/ Ham Sandwich

Started off the morning with some Simply Potatoes Hash Browns and a couple of Jennie – O Turkey Sausage Breakfast Links and a cup of Bigelow Decaf Green Tea. 12 degrees this morning but little to no wind chill. Mostly sunny but more snow coming in Sunday. Ran an errand for Mom and stopped off and got my Saturday Night Lotto Tickets. I’ll buy a couple every now and then and watch the Ohio Lottery Show on Saturday Evening. For dinner tonight a new recipe, (Home Made) White Cheddar and Chive Potato Soup w/ Ham Sandwich.

 
Came across the White Cheddar and Chive Potato Soup Recipe in an issue of Cooking Light. I love a good Thick Potato Soup. Actually Campbell’s Chunky Baked Potato with Cheddar and Bacon Bits is my favorite Potato Soup. So when I came across this one it seemed like a winner, and it was!

 

 

White Cheddar and Chive Potato Soup 001

Start with with Shallots and Garlic

The recipe calls for; 1 tablespoon Extra Virgin Olive Oil, 1/3 cup chopped Shallots, 2 Garlic Cloves (minced), 2 tablespoons All-Purpose Flour, 3 1/2 cups chopped Yukon Gold Potatoes (about 1 pound), 1 3/4 cups 1% Low-Fat Milk, 1 1/2 cups Organic Vegetable Broth (such as Swanson), 3/8 teaspoon Kosher Salt, 1/4 teaspoon Black Pepper, 2 ounces Sharp White Cheddar Cheese (shredded about 1/2 cup), 1/3 cup Fat-Free Sour Cream (divided), and 2 tablespoons minced fresh Chives.

 

 
To prepare it heat a medium saucepan over medium-high heat. Add oil; swirl to coat. Add shallots and garlic; sauté 1 1/2 minutes or until tender. Sprinkle flour over pan; cook 1 minute, stirring constantly with a White Cheddar and Chive Potato Soup 002whisk. Add potatoes, milk, broth, salt, and pepper to pan; bring to a boil. Cover, reduce heat, and simmer 10 minutes or until potatoes are tender. Remove pan from heat. Mash potato mixture with a potato masher to desired consistency. Stir in cheese until melted. Stir in 1 tablespoon sour cream. Place 1 cup soup in each of 4 bowls. Top each serving with about 1 tablespoon sour cream and 1 1/2 teaspoons minced chives and serve! Makes a delicious, thick, and chunky Potato Soup. If you like you can add some crumbled Jennie – O Turkey Bacon to it for even more flavor. Got one of those Keeper Recipes here.

Boar’s Head Smoked Honey Ham,

To go with the Soup I made a Ham and Swiss Sandwich. Using; Boar’s Head Smoked Honey Ham, Sargento Ultra Thin Swiss Cheese, Kroger Brand Whole Grain Hamburger Buns, and topped with Kroger Private Selection Sweet Hot Stone Ground Mustard. (my favorite Mustard.) For a dessert/snack later Organic Whole Grain Tortilla Chips with Simple Truth Organic Black Bean and Corn Salsa.

 

 

 

 

White Cheddar and Chive Potato Soup
Luscious, creamy potato soup uses just one pan for fast weeknight comfort and even faster cleanup. We love the look and tang of sharp white cheddar.

Yield: Serves 4White Cheddar and Chive Potato Soup

Ingredients:

1 tablespoon canola oil
1/3 cup chopped shallots
2 garlic cloves, minced
2 tablespoons all-purpose flour
3 1/2 cups chopped Yukon gold potatoes (about 1 pound)
1 3/4 cups 1% low-fat milk
1 1/2 cups organic vegetable broth (such as Swanson)
3/8 teaspoon kosher salt
1/4 teaspoon black pepper
2 ounces sharp white cheddar cheese, shredded (about 1/2 cup)
1/3 cup fat-free sour cream, divided
2 tablespoons minced fresh chives
Preparation:

Winter has kicked in big time here in West Chester! I went out to get the paper this morning and it was freezing. The morning news said it was 9 degrees with a wind chill ranging from -5 to -10 degrees, and that was our high as it going to continue to drop throughout the day. Not a good day to be working outdoors. Cleaned house today and that was about it. For dinner tonight Toasted Ham and Cheese w/ Roasted Fingerling Potatoes.

 

 

 

Grilled Ham and Cheese just sounded good for dinner tonight! I used my new favorite Ham, Boar’s Head Smoked Honey Coated Ham. I started using this a few weeks ago and have been hooked on it ever since! With the Ham I used Boar’s Head Colby Longhorn Cheese, Kroger Private Selection Sweet Hot Stone Ground Mustard, Kraft Reduced Fat Mayo w/ Olive Oil, and Klosterman Wheat Bread.

 

I started by toasting the Bread. As that was toasting I added my Ham to a small skillet and heated up the Ham, on medium high heat, for about 5 minutes. Grabbed the Toast from the toaster I spread the Mayo on the bottom slice of Bread, the Ham, Longhorn Cheese, and the Stone Ground Mustard on the top slice of Bread. And I now have one delicious Sandwich! The Boar’s Head Ham can’t be beat, as all their products, and I think I could have the Kroger Private Selection Sweet Hot Stone Ground Mustard on any meat and make it taste even better.

I also had baked some Roasted Fingerling Potatoes. I cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Crumbled Bleu Cheese to top the Potatoes with. Using a large cookie sheet I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. For dessert later a new one, Breyer’s Carb Smart Vanilla Bean Ice Cream in a Waffle Bowl topped with Smucker’s Sugar Free Hot Fudge Chocolate Topping. Came across the Keebler Waffle Bowls at Kroger the other day. They’re Waffle Cones shaped into a bowl, you can eat the bowl as your eating the Ice Cream.

 

 

 

 

Oven-Roasted Fingerling Potato Fries

Ingredients:

Fingerling Potatoes
Extra Virgin Olive Oil
Garlic Powder
Sea Salt
Pepper
Chili Powder
Crumbled Bleu Cheese

Directions:

1.) Thoroughly clean and scrub the potatoes.

2.) Cut the potatoes in half. This will allow the fingerlings to cook faster and also gives them a nice crisp.

3.) Toss in olive oil. I used about 1 tablespoons, but this will vary by how many potatoes you use. Just use enough oil to give the potatoes a nice coat. Add your seasonings.

4.) Put on a baking sheet.

5.) Roast in the oven for 25-35 minutes at 450 degrees. The potatoes should be tender in the middle when done. Sprinkle with Crumbled Bleu Cheese when done.
