Today’s Menu: Baked Ham and Swiss Mini Sub w/ Creamy Tomato Soup

Potato and Ham Skillet
For Breakfast I made my Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. You can serve this topped with a fried Egg, diced Onions, or Shredded Cheese. I topped mine this morning with Sargento Reduced Fat Shredded Colby – Jack Cheese and a Fried Egg Sunnyside Up. And Breakfast is served! Had my morning cup of Bigelow Decaf Green Tea.

Cleaned the kitchen after Breakfast, did the morning work out, and then took Mom’s car up to the Car Wash and had it cleaned for her. Back home tidied up around the house. Had lunch and I headed out for a while. It’s a beautiful day out, sunny and around 50 degrees! Got out in the car and went for a drive out to my old neighborhood, Ross Ohio. It had been a while since I had been out there so I took advantage of this beautiful day and went out to the old homestead. Ross isn’t a very big place but as all small towns it’s gradually getting bigger. Back in the day when I was growing up there it was farming community. We had a Dairy Queen, an Ival’s Pizza, The Castle Bar/Diner, an IGA Market, and a small Deli Carry-Out. And that was it now there’s quite a few more places to eat and more on the way as more housing are being built and less farm land. Anyway back home and tonight I prepared a Baked Ham and Swiss Mini Sub w/ Creamy Tomato Soup.

Baked Ham and Swiss Mini Sub w Creamy Tomato Soup 003
To make the Sub I’ll need; Boar’s Head Maple Glazed Honey Coat Ham, Sargento Ultra Thin Swiss Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, and Aunt Millie’s Deli Style Whole Grain Mini Sub Buns.

I used Boar’s Head Maple Glazed Honey Coat Ham. I had purchased the Boar’s Head Maple Glazed Honey Coat Ham at Kroger, on sale the other day. I love all the Boar’s Head Meats and Cheese. Always fresh and lower in calories and sodium, the Ham is 60 calories per serving. I also used Sargento Ultra Thin Swiss Cheese which is only 40 calories per slice. Topped it with Kraft Reduced Fat Mayo w/ Olive Oil. To help the bun brown a bit I brushed the top with Extra Virgin Olive Oil. I had already preheated the oven to 400 degrees, I then laid the Sub on a small baking sheet and baked it for about 12 minutes. Took it out and the Sub was a light golden brown and the Cheese was melted. Love these Ham and Swiss Subs!

Then I also heated up some Amy’s Organic Creamy Tomato Soup. My favorite Tomato Soup by far. I’ve been using this a few years now. Creamy with a fantastic flavor and it’s 110 calories and 19 carbs. I also had a Diet Dr. Pepper to drink. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Grilled Ham and Cheese w Baked Crinkle Fries 013
Started my day off with a Jennie- O Turkey Breakfast Sausage Patty, an Egg Beater’s Egg White Scrambled Egg topped with a slice of Sargento Ultra Thin Swiss Cheese and served on a Healthy Life Whole Grain English Muffin. Also my morning cup of Bigelow Decaf Green Tea. A very good start to the day! Cold all day and snow setting in the late morning. Went to Kroger for a few items after Breakfast. On the way home stopped at McDonald’s to pick up Breakfast for Mom and Dad and stopped by Dunkin Donuts for them. It was clean the house today on the inside. Dusted, vacuumed, and cleaned fridge today, For dinner tonight, I prepared a Grilled Ham and Cheese w/ Baked Crinkle Fries.

I used Boar’s Head Maple Glazed Honey Coat Ham, Kraft Sharp Cheddar Cheese, and Aunt Millie’s Whole Grain Bread. I had purchased the Boar’s Head Maple Glazed Honey Coat Ham at Kroger, on sale the other day. I love all the Boar’s Head Meats and Cheese. Always fresh and lower in calories and sodium. To make the sandwich I buttered one side of both slices of bread with I Can’t Believe It’s Not Butter and then on the unbuttered sides layered the Ham and then the Cheese. I then grilled the sandwich in a preheated pan that I had sprayed with Pam Cooking Spray. Grilling both sides until golden brown. I love a Grilled Cheese Sandwich, but the Ham kicks it up another notch!

Today’s Menu: Chunky Baked Potato with Cheddar and Bacon Bits Soup w/ Grilled Ham and Swiss Cheese Sandwich

Grilled Ham and Swiss Pot Soup 001
Rolled out to grab the morning papers and it wasn’t quite as cold as it has been, in the low 20’s. For breakfast I prepared a packet of my favorite gravy, Pioneer White Peppered Gravy. Along with 2 slices of toasted Healthy Life Whole Grain Bread and my morning cup of Bigelow Decaf Green Tea. Had a high in the 40’s today with plenty of sunshine. Finally starting to melt our snow on the ground that’s been sticking around. Straightened up the pantry and cleaned the fridge today. Ran a couple of errands for Mom and stopped by the bank before heading back home. For dinner tonight I prepared Chunky Baked Potato with Cheddar and Bacon Bits Soup w/ Grilled Ham and Swiss.

Chunky Baked Potato with Cheddar and Bacon Bits Soup w Grilled H 001
I used Boar’s Head Maple Glazed Honey Coat Ham, Hellmann’s Light Mayonnaise, Kraft Sharp Cheddar Cheese, and Aunt Millie’s Whole Grain Bread. I had purchased the Boar’s Head Maple Glazed Honey Coat Ham at Kroger. I love all the Boar’s Head Meats and Cheese. Always fresh and lower in calories and sodium. To make the sandwich I buttered one side of both slices of bread with I Can’t Believe It’s Not Butter and then on the unbuttered sides layered the Ham, a bit of Hellmann’s Light Mayonnaise, and then the Cheese. I then grilled the sandwich in a preheated pan that I had sprayed with Pam Cooking Spray. Grilling both sides until golden brown. I love a Grilled Cheese Sandwich, but the added Ham makes it even better! A Classic Comfort Food Sandwich.

Grilled Ham and Swiss Pot Soup 004

I also used my favorite Potato Soup, Campbell’s Chunky Baked Potato with Cheddar and Bacon Bits. Love this Soup, it’s nice and thick with some big chunks of Potato with just the right amount of Cheddar and Bacon Bits. Plus it can’t be much easier to prepare, just open the can and heat it up in a small sauce pan. Love the taste and it’s only 190 calories and 19 net carbs. A good meal for a Cold Winter’s Day! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Ham and Swiss Wrap w Cream of Tomato Soup 007
Had a light Breakfast of a Healthy Life Whole Grain English Muffin topped with I Can’t Believe It’s Not butter and a cup of Bigelow Decaf Green Tea, After Breakfast I headed to Meijer. I had went a couple of days ago and they had Walleye on sale, which we had last night. It was some of the freshest and best tasting Walleye we had ever had! So I went back up to Meijer to pick up a couple of more fillets that I’ll be putting in the freezer. Back home I did a little house cleaning inside and leaf cleaning outside. After that I got the cart out to enjoy another perfect Autumn Day. Sunny and 70 degrees, perfect! For dinner tonight I prepared a Ham and Swiss Wrap w/ Cream of Tomato Soup.
Ham and Swiss Wrap w Cream of Tomato Soup 002

Then I topped it with Lettuce and Kroger Private Selection Sweet Hot Stone Ground Mustard. I use the Flatout Foldit Artisan Flatbread – 5 Grain Flax quite often for lunch, love this with the Flax and 7g of Fiber! These are always so fresh and they several different types. I find them at Meijer, Walmart, and Kroger (Limited Types).
