Today’s Menu: Grilled Pastrami and Swiss Sandwich w/ Chips and Ranch Dip

 

 

 

To start my morning off I prepared a Poached Egg, toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, and made that morning cup of Bigelow Decaf Green Tea. After Breakfast I headed up to McDonald’s and picked up Breakfast for Mom. Outside it’s partly cloudy with passing showers, 75 degrees. But the pollen and mold count is sky high! My allergies kicked in this morning when I went out to grab the morning newspapers. I started sneezing all day and a headache. Stayed in all day and dealt with that. My allergies have never been this bad! For Dinner tonight I prepared a Grilled Pastrami and Swiss Sandwich w/ Chips and Ranch Dip.

 

 

 

 

I love Pastrami Sandwiches so when I went to Kroger the other day I purchased some more of the Boar’s Head Cap-Off Top Round Pastrami and Boar’s Head Imported Switzerland Swiss Cheese. Besides the Pastrami and Swiss Cheese I’ll need; Aunt Millie’s Light Whole Grain Bread, French’s Spicy Brown Mustard, and Blue Bonnet Light Butter.

 

 

 

 

 

To prepare it I used my flat top griddle. I gave it a light spray of Pam Non Stick Cooking Spray and a 1/2 tablespoon of the Blue Bonnet Butter. Heated the griddle on medium heat. Next I got 2 slices of the Aunt Millie’s Bread and spread the Brown Mustard on the inside of 1 slice. Added a slice of the Swiss Cheese and then the Pastrami. Top with another slice of bread. Finally I spread the Blue Bonnet Butter on the outside of both slices of Bread.

 

 

 

 

 

With the griddle heated and ready I grilled my Sandwich. Grilled each side until The Bread is toasted and the Cheese melted. Grilled and Ready! The Sandwich was delicious. The Pastrami and Swiss was so good, with the Spicy Brown Mustard adding all kinds of flavor. Swiss Cheese provides such great flavor, especially when it starts to melt. So Good!

 

 

 

 

 

To go with the Sandwich I had some Mike Sells Reduced Fat Potato Chips. I don’t have Potato Chips that often but with any Sandwich they go great! I also had some Lay’s Ranch Chip Dip for my Chip Dip. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn along with a Peach Diet Snapple to drink.

Dinner Tonight: Grilled Pastrami and Swiss Sandwich w/ Italian Pasta Salad

 

I just had a cup of Bigelow Decaf Green Tea for Breakfast. I didn’t want anything too heavy I had to be at the Hospital for a EMG/Nerve test at 8:30 this morning. They want to make sure my Diabetes 2 isn’t creating any nerve damage. I also had blood work done. Beautiful day out today, mostly sunny and 65 degrees. Got the cart out and did some yard work and later took a spin in the cart around the neighborhood. So good to be able to get out again without having to bundle up! For Dinner tonight its a Grilled Pastrami and Swiss Sandwich w/ Italian Pasta Salad.

 

 

 

 

 

To make my Grilled Pastrami and Swiss Sandwich I’ll be using; French’s Spicy Brown Mustard, Boar’s Head Top Round Pastrami, Boar’s Head Swiss Cheese, Blue Bonnet Light Butter, and Klosterman Rye Bread to make my Sandwich.

 

 

 

 

 

 

To prepare it I started by buttering the outside half of a slice of the Rye Bread. Next spread the Mayo on the bottom slice of Bread, next layered the Pastrami, spread the Brown Mustard, and added a slice of the Swiss. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a large skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Swiss Cheese melted. Love these Grilled Sandwiches!

 

 

 

 

 

To go with my Grilled Sandwich I had prepared some Italian Pasta Salad, made about noon today. A Light and tasty dish that includes Ronzoni Smart Taste Rotini Pasta, Black Olives, Green Olives, Kalamata Olives, Hormel Turkey Pepperoni, Anchovy Paste, Kraft Reduced Fat Grated Parmesan Cheese, Kraft Zesty Italian Fat Free Dressing, McCormick Grinder Italian Seasoning, and topped with Kraft Reduced Fat Grated Parmesan Cheese. Boiled the Pasta according to the box and added all the ingredients and tossed until well mixed. Then refrigerated until ready to use. Really enjoyed the Dinner tonight of a Grilled Pastrami and Swiss Sandwich along with some Italian Pasta Salad. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

To start my Sunday morning off I prepared Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. Topped it off with a Sunnyside Up Egg and also made that morning cup of Bigelow Decaf Green Tea. After Breakfast I headed up to the local Kroger for a few items and picked up Breakfast for Mom at McDonald’s. Outside it’s mostly Sunny, humid, and 88 degrees. I got the cart out and did some yard work this afternoon.I had a few things to do in the front yard. The Landscaper is coming tomorrow to redo our front flower bed for us. More detail on that tomorrow. For Dinner tonight I prepared a Grilled Pastrami and Swiss Sandwich w/ Chips and Ranch Dip.

 

I’ve been wanting a Pastrami Sandwich so when I went to Kroger this morning I purchased some Boar’s Head Cap-Off Top Round Pastrami and Boar’s Head Imported Switzerland Swiss Cheese. Besides the Pastrami and Swiss Cheese I’ll need; Aunt Millie’s Light Whole Grain Bread, French’s Spicy Brown Mustard, and Blue Bonnet Light Butter.

To go with the Sandwich I had some Ruffle’s Reduced Fat Ruffle’s Potato Chips. I don’t have Potato Chips that often but with any Sandwich they go great! I also had a tablespoon of Lay’s Ranch Chip Dip. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn along with a Mango Diet Snapple to drink.

Today’s Menu: Pastrami and Swiss Buffalo Burger w/ Baked Crinkle Fries

 

 

 

To start my morning off I Poached an Egg and served it on a slice of Aunt Millie’s Light Whole Grain Bread. I also heated up a couple of Johnsonville Turkey Breakfast Sausage Links along with a cup of Bigelow Decaf Green Tea. Weather wise its about the same Hot and Humid. They say our hottest days will be Wednesday and Thursday. So after Breakfast I started touching up the shutters outside. Nothing major, just a few places on them needed some paint. I’m having the ramp leading to the Kitchen revarnished Tuesday, my neighbor is doing it for me. Anyway I got everything done outside before it became too hot and humid. For Dinner tonight I tried something new. I prepared a Pastrami and Swiss Buffalo Burger w/ Baked Crinkle Fries.

 

This recipe was inspired from one of the Diners, Drive-Ins, ans Dives, one of my favorite shows! I’ve come across so many recipes watching this show. It’s sort of a strange combo but it looked great on TV and thought I would give it a try. For my Burger I’ll need; the Wild Idea Buffalo 1/3-Lb Buffalo Burger, Boar’s Head Pastrami and Boar’s Head Imported Switzerland Swiss Cheese (That I purchased at Kroger yesterday), French’s Spicy Brown Mustard, and Aunt Millie’s Reduced Calorie Hamburger Buns.

 

 

 

As always I’m using the Wild Idea Buffalo 1/3-Lb Burgers. Just love these Buffalo Burgers; meaty, juicy and just flat out delicious! Preheated up a skillet that I sprayed with Pam Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it about 3 1/2 minutes per side, and done. After I flipped the Burger I added a slice of Swiss Cheese on top.

 

 

 

 

As my Burger was cooking I got a small skillet and sprayed it with Pam Non-Stick Cooking Spray. Then heated the pan on medium heat. With the pan heated I added the Pastrami and heated it up. I flipped several times. I just wanted to warm it up being sure not to over cook it.

 

 

 

 

 

To put the Buffalo Burger together I used a Aunt Millie’s Reduced Calorie Hamburger Bun. I served the Swiss and Buffalo Burger on the Bun. Topped it with Pastrami. I then took the Spicy Brown Mustard and added to the backside of the top Bun., and done! A delicious change of pace for my Wild Idea Burger. As usual the Burger came out a beautiful medium rare. The added Pastrami, Swiss, and Spicy Brown Mustard worked great! Gave it another depth of flavor to an already delicious Burger. I’ll have this again!

 

 

 

I also baked some Ore Ida Crinkle Fries, served these with a side of Hunt’s Ketchup for dipping. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Peach Diet Snapple to drink.
