Today’s Menu: Bluegrass Lean Bratwurst w/ Bourbon and Brown Sugar Grillin’ Beans

 

 

 

Sort of pressed for time, some family problems. For Dinner tonight I prepared some Bluegrass Lean Bratwurst w/ Bourbon and Brown Sugar Grillin’ Beans.

 

 

 

 

 

 

I used Blue Grass Lean Bratwurst which are 100 calories and 4 carbs per Brat, not bad at all for Brats. To prepare them; Just add the Brats to a large skillet and add water, until the Brats are half way covered. Bring them to a brisk boil but then immediately turn down the heat to a very low boil, more of a simmer than an active boil. Simmer for about 15 to 20 minutes, then finish off in a pan with just the Brats and a little Extra Virgin Olive Oil to get a nice crispy finish. Love this method, if you can’t grill them. Delicious, plump, and they cook up great! Served it on a Kroger Whole Grain Hot Dog Bun topped with French’s Spicy Brown Mustard.

 


Then for a side I prepared some Bush’s Grillin’ Beans Bourbon and Brown Sugar. Not sure if I’ve had these before or not, but they sure are good! As all Bush Beans are. I just emptied the can into a small sauce pan and heated them until they started to simmer, and serve. Then for Dessert later a Weight Watcher’s Divine Triple Chocolate Ice Cream Bar. Love these, only 80 calories and 12 net carbs per bar!

Today’s Menu: Bluegrass Lean Bratwurst w/ Bourbon and Brown Sugar Grillin’ Beans

 

 

For Breakfast this morning I made Breakfast for everyone. Mom and Dad usually have McDonald’s but this morning I’m making Breakfast. I prepared a package of Jennie – O Turkey Breakfast Sausages, made Scrambled Eggs for everyone, made some packages of Instant Grits, toasted 2 types of Bread – Raisin Bread and Aunt Millie’s light Whole Grain Bread. Mom and Dad wanted the Raisin Bread, not a big fan of it myself. I also made Coffee for the Folks and a cup of Bigelow Decaf Green Tea for myself. Outside it’s in the 90’s, very humid, and rain on and off. So between the rain and humidity there wasn’t a lot going on outside. So I did some cleaning inside, vacuum and dusted. Then took the brushes out of the vacuum and cleaned them and washed out the vacuum filter. Moved on to the Pantry and straightened it up. Full day today. For Dinner tonight its Bluegrass Lean Bratwurst w/ Bourbon and Brown Sugar Grillin’ Beans.

Then for a side I prepared some Bush’s Grillin’ Beans Bourbon and Brown Sugar. Not sure if I’ve had these before or not, but they sure are good! As all Bush Beans are. I just emptied the can into a small sauce pan and heated them until they started to simmer. For Dessert/Snack later I’m having a 100 Calorie Mini Bag Jolly Time Pop Corn. I hadn’t been able to find this anywhere until I found some at Jungle Jim’s International Market yesterday.

Today’s Menu: Bluegrass Lean Bratwurst w/ Baked Vegetarian Beans

 

 
For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. After Breakfast headed to Meijer for a few items, stopped and got gas, then stopped at McDonald’s and picked up Breakfast for Mom. High of 75 degrees with showers on and off. Made Dad a couple of small loaves of Pillsbury Nut Quick Bread, his favorite. Then later in the afternoon took them over to him. It looks as though he’s got a couple more weeks of rehab before possibly coming home. Back home did a few things around the house. For Dinner tonight its Bluegrass Lean Bratwurst w/ Baked Vegetarian Beans.

 

 

It’s Brats and Beans for Dinner! Last time I was at Jungle Jim’s I picked up a couple of packages of Bluegrass Deliciously Lean Bratwurst. I had them in the freezer and got a couple of the Brats out and let them thaw overnight in the fridge. Love using these Blue Grass Lean Bratwurst, which are 100 calories and 4 carbs per Brat. To prepare them; Just add the Brats to a large skillet and add water, until the Brats are half way covered. Bring them to a brisk boil but then immediately turn down the heat to a very low boil, more of a simmer than an active boil. Simmer for about 15 to 20 minutes, then finish off in a pan with just the Brats and a little Extra Virgin Olive Oil to get a nice crispy finish. Love this method, if you’re not grilling them. Then for a side I prepared some Bush’s Reduced Sodium Vegetarian Baked Beans. Love these Beans, great flavor! Plus they are only 130 calories, 0 fat, and 24 net carbs per serving. To prepare the; just open the can and empty the Beans Into Saucepan. Heat To Simmer until heated through. Love these Beans! So to start my morning off I Scrambled some Egg Beater’s Egg Whites, seasoned with Sea Salt and Ground Pepper. After Breakfast I headed up to the assisted living center to see my friend, still not much change in him yet. On the way back home stopped by Kroger for a few items and then stopped by the bank before heading back home. Not a lot to do today, I was caught up on everything. So I got the cart out drove around the neighborhood and then down by the lake for a while. Mostly sunny and near a record high for this date, 86 degrees! I don’t think I have ever seen so many Squirrels. All of them were running back and forth between all the Oak Trees we have in the neighborhood gathering Acorns. For Dinner tonight I prepared some Bluegrass Lean Bratwurst with a side of Baked Ruffle’s Potato Chips.

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin that I topped with Smucker’s Sugarless Blackberry Jam. Really love Smucker’s sugar-free Jams and toppings, you can’t taste a difference between the sugarless and regular Jam products. I also had that morning cup of Bigelow Decaf Green Tea. Another product I love having every day. Big change in the weather out there today! Mostly sunny, a high of 79 degrees, and the big thing low or no humidity! About time. Got some cleaning done inside and then some cleaning outside. Everything done I got the cart out and spent most of the afternoon riding around enjoying this beautiful day! For Dinner tonight I prepared Bluegrass Lean Bratwurst w/ Baked Crinkle Fries.

For Breakfast it was a couple of Jennie – O Turkey Breakfast Sausage links and a toasted Healthy Life Whole Grain English Muffin. Along with my morning cup of Bigelow Decaf Green Tea, I was set to start my day. After Breakfast I Bluegrass Lean Bratwurst w Baked Potato Puffs 008headed up to the local Kroger, I needed a few items and Mom needed a couple of things. Back home got everything put away and did some light cleaning. I spent the afternoon yesterday over seeing Dad at the rehab center. He’s finally getting stronger and walking with a walker on his own. He’ll be home Tuesday! So anyway I didn’t get a whole lot of sleep last night, Phantom Pains started a little after midnight. Hate dealing with those, so painful and aggravating! For dinner tonight I prepared a Bluegrass Lean Bratwurst w/ Baked Potato Puffs.

While digging in the freezer I found a couple of packages of Bluegrass Deliciously Lean Bratwurst. These are so hard to find in this area, I had to write Blue Grass Meats last year because no local stores had any of them in stock. Finally Kroger started to carry them for a while so I had bought a couple of packages of them and forgot I had them, until yesterday!

Then for a side dish I prepared something new, Alexia Potato Puffs. To prepare them; Preheat the oven to 425 Bluegrass Lean Bratwurst w Baked Potato Puffs 002degrees F. Arrange the frozen potatoes in a single layer on a baking sheet lined with foil. Baked for 25, stirring halfway through the cooking time. And Bam got another Keeper Potato Product! Browned up perfect with excellent seasoning. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Today’s Menu: Bluegrass Lean Bratwurst w/ Baked Ruffle’s Potato Chips

It was one of those long and sleepless nights for me as I battled with a very bad case of Phantom Pains. They started last night around 8:00 and continued through most of today. So little to no sleep last night. About 4:30 this morning I had just managed to doze off and we got hit by one strong thunderstorm, and I mean strong! The thunder was so loud it was rattling pictures and the China in Mom’s China Cabinet. We had to well over 1-2 inches of rain. Then through the day we had rain on and off. Good day to stay in and get caught up on some sleep and relaxation. For dinner tonight I prepared a couple of Bluegrass Lean Bratwurst w/ Baked Ruffle’s Potato Chips

 

 

I used Blue Grass Lean Bratwurst which are 100 calories and 4 carbs per Brat. To prepare them; Just add the Brats to a large skillet and add water, until the Brats are half way covered. Bring them to a brisk boil but then immediately turn down the heat to a very low boil, more of a simmer than an active boil. Simmer for about 15 to 20 minutes, then finish off in a pan with just the Brats and a little Extra Virgin Olive Oil to get a nice crispy char and finish. Love this method, if you can’t grill them. Delicious, plump, and they cook up great! Served it on a Kroger Lite Wheat Bun topped with French’s Spicy Brown Mustard. Also had a few slices of Jalapeno and a few Baked Ruffle’s Potato Chips. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Started my morning off with some Waffles. I used Bisquick Heart Healthy Mix to make them. I also had a couple of Eckrich Smoked Turkey Sausage Links and my morning cup of Bigelow Decaf Green Tea. Cleaning today, vacuum, dusting, and such. Out in our backyard we have 2 different Rabbit nests, 1 nest is already gone it had about 6 or 7 babies in it. Mostly cloudy out had a high of 78 degrees, a bit cooler. Had the cart out later in the day. For dinner tonight Bluegrass Lean Bratwurst w/ BBQ Baked Beans.

For a side to go with my Brats I prepared some BBQ Baked Beans. I made a very small amount, I used a 2 Serving Bluegrass Lean Bratwurst w BBQ Baked Beans 002can of Bush’s Original Baked Beans Seasoned with Bacon and Brown Sugar. Just the right size if cooking for one. I emptied the can into a small sauce pan. I added 3 tablespoons of Jack Daniels Honey Smoked BBQ Sauce to it, stirred until well mixed. Simmered for about 8 minutes and it’s done. The BBQ Sauce gives it a nice Smokey Flavor. Makes a nice little side, easily made and easy clean-up. Brats and Beans on a Saturday! For dessert later a Jello Sugar Free Dark Chocolate Pudding. Love these Sugarless Pudding Cups, only 60 calories and 10 net carbs per cup.

Our warmest day in quite sometime around here, 70 degrees and sunny! Started the day off with a Poached Egg on a Healthy Life Whole Grain English Muffin, and my usual cup of Bigelow Decaf Green Tea. Got some things done inside and then got the 4 wheel cart out for most of the afternoon, good to get out in beautiful weather! For dinner tonight it’s Bluegrass Lean Bratwurst w/ Potato Pancakes.

 

 
I used Blue Grass Lean Bratwurst which are 100 calories and 4 carbs per Brat. To prepare them; Just add the Brats to a large skillet and add water, until the Brats are covered. Bring them to a brisk boil but then immediately turn down the heat to a very low boil, more of a simmer than an active boil. Simmer for about 15 to 20 minutes, then finish off in a pan with just the Brats and a little Extra Virgin Olive Oil to get a nice crispy char and finish. Love this method, if you can’t grill them. Delicious and they cook up great! Served them all on Aunt Millie’s Reduced Calorie Hot Dog Buns and topped with Private Selection Sweet Hot Stone Ground Mustard.

 

 

 

Haddock Potato Pancakes 001
For a side I prepared some Manischewitz Potato Pancake Mix, my favorite (Never made a cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes). For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Manischewitz Potato Pancake MixMANISCHEWITZ Potato Pancake Mix

Ingredients
Potatoes ( Contains Sulfites to Maintain Whiteness), Potato Starch, Salt, Onion, Vegetable Shortening (Partially Hydrogenated Cottonseed Oil).

Directions
Makes 18-24 pancakes. You Will Need: Medium bowl, 2 eggs, 2 1/4 cups cold water, vegetable oil, large skillet. 1. Mix: In a medium bowl, beat two eggs with a fork until blended. Add 2 1/4 cups cold water and mix well. Stir in the contents of this package. Allow batter to thicken for 3 to 4 minutes. Stir. 2. Fry: Drop tablespoons of batter into 1/8 inch hot vegetable oil in a large skillet and brown on both sides.
