Today’s Menu: Seasoned Gulf Coast Grouper w/ Savory Herb Potatoes and Cut Green Beans

 

 
It was scrambled Eggs and Toast for Breakfast this morning. I Scrambled 2 medium-sized Eggs and topped them with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese. Then I toasted 2 slices of Healthy Life Seasoned Gulf Coast Grouper w Savory Herb Potatoes and Cut Green 004Whole Grain Bread, lightly buttered with I Can’t Believe It’s Not Butter. Also the morning cup of Bigelow Decaf Green Tea. What a beautiful Summer morning! I went out about day break to get the morning papers and the East horizon was just bursting with dazzling colors – Blues, Pinks, Reds, and Orange had it lit up! Another nice day again, sunny and 79 degrees and a hair more humid. After Breakfast I headed to Meijer for most of the groceries and then by Kroger for a couple of items. Back home got the cart out and did what yard work I could get to and tided up the shed. Kept the cart out and rode around for a bit. For Dinner tonight I prepared a Seasoned Gulf Coast Grouper w/ Savory Herb Potatoes and Cut Green Beans.

I love having Fish and Seafood, especially this Florida Gulf Coast Grouper my friends keep bringing me back! I had it in the freezer so I grabbed a fillet and let it thaw overnight in the fridge. It’s another one of those beautiful Grouper fillet! To prepare the fillet I seasoned it with just a bit of Sea Salt and put the fillet in a Hefty Zip Plastic Bag where I then added Zatarain’s Seafood Breading Mix Seasoned. Shook until all it was well coated. Shook off the excess and pan fried it in Extra Virgin Olive Oil, frying about 3 minutes per side until golden brown. Grouper is so meaty and flavorful. Love Fish, Love Seafood! Plus as you can tell as big as these fillets are there will be plenty of leftovers for lunch tomorrow!

While at Jungle Jim’s I picked up a package of the Little Potato Company Savory Herb Potatoes. I had these once before and really enjoyed them. The Potatoes come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good item to have in the pantry! So easy to prepare and no clean up.

Then I also heated up a can of Del Monte Low Sodium Cut Green Beans. For dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream.

Microwave

In three easy steps, you have perfectly steamed and seasoned potatoes!

1. Simply remove the cardboard sleeve and seasoning pack. The plastic film stays on to aid in steaming the potatoes.

2. Place the convenience tray in the microwave. Cook on high for 5 minutes*.

3. Let the tray rest for 2 minutes then carefully remove plastic film and stir in seasoning pack. Caution – the contents will be very hot. If desired, add 1 tbsp. of butter or olive oil.

For Breakfast this morning I prepared some Fried Kahn’s Fried Bologna, a Scrambled Egg (2 Eggs), toasted 2 slices of Healthy Life Whole Grain Bread (Lightly Buttered), and a cup of Bigelow Decaf Green Tea. It’s a very sad day for our family today. My Aunt passed away last night. She was in an assisted living center, she had dementia. We are all glad she is no longer suffering but she is so, so, missed. For Dinner tonight I prepared Blackened Gulf Coast Grouper w/ Hash Browns and Cut Green Beans.

Just can’t get enough of Fish and Seafood, especially this Florida Gulf Coast Grouper my friends keep bringing me back! I had it in the freezer so I grabbed a fillet and let it thaw overnight in the fridge. It’s another one of those beautiful Grouper fillet! To prepare it I rinsed the fillet off in cold water and patted it dry with paper towel. I then seasoned them it with a bit of Sea Salt. Then I melted 1 tablespoon of Blue Bonnet Lite Butter and rolled the fillet in the Butter. I then added the Zatarain’s Blackening Seasoning, coating both sides of the fillet.

 
I prepared it in a preheated Cast Iron Skillet that I sprayed with Pam Cooking Spray. When the pan was fully heated, on medium heat, I added my Grouper. At this point turn on your Stove Overhead Exhaust Fan on, because it will Blackened Gulf Coast Grouper w Whole Kernel Sweet Corn and Seaso 004start smoking from the seasoning. Cooked it about 4 minutes per side, and it was ready! Cast Iron Skillets are perfect to use for any cooking but especially when you Blacken something. The Skillet heats up and holds it heat and the heat evenly distributes across the Skillet, perfect for Blackening Meats. This is one delicious Grouper! The fresh taste of the Grouper, so meaty, along with the Blackening Season are a perfect combo. Love Fish, Love Seafood! Plus as you can tell as big as this filet was I only had half of it for dinner. The other half for lunch tomorrow!

Then for one side I prepared some Simply Potatoes Hash Browns. Fried in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. I love Hash Browns, they make the perfect side for any Fish Dish. I also heated up a can of Del Monte Low Sodium Cut Green Beans. I also had a slice of Healthy Life Whole Grain Bread (Lightly Buttered) and a Diet Trop-A-Rocka Snapple to drink. For dessert later a Jello Sugar Free Dark Chocolate Mousse.

Another night of heavy rains that finally ended around 6:00 this morning. For Breakfast I just had a cup of Bigelow Decaf Green Tea. After that I headed up to our local Kroger, needed a few things. Back home gave Mom a hand with some laundry and did some light cleaning. After lunch I headed over to neighboring Fairfield and went to my cousins for a while. Her and my cousins were having a Yard Sale. I wanted to see all my cousin’s kids, which were all there. Good seeing the kids, they are really growing! Not much going on the rest of the day. So for dinner tonight I prepared a Blackened Grouper Sandwich w/ Baked Crinkle Fries.

Good friends of mine always brings me Grouper or Snapper from the Florida Gulf Coast when they return from Florida, thank you Jim and Linda! I got one of the fillets out of the freezer and let it thaw overnight in the fridge. It’s one beautiful Grouper fillet! I served it on a Kroger Whole Grain Mini Sub Buns and I topped the fillet with some McCormick Tarter Sauce.

I also baked some Ore Ida Crinkle Fries along with a side of Hunt’s Ketchup. For dessert later a bowl of Breyer’s Low Carb Chocolate Ice Cream.

A taste of Spring was in the air! It’s been a sunny day out with a high in the mid 50’s! Which is nice but you have to remember it’s only February and a whole lot of Winter left. Went to Meijer and Kroger early this morning for a few items. Came back home and took my Mom’s car up and had washed. Spent some time outside enjoying the Weather and then came back in and baked a pan of Philadelphia Marble Walnut Brownies! For dinner tonight I prepared a Blackened Grouper w/ Whole Grain Medley and Sugar Snap Peas.

I’ll be using the Gulf Coast Grouper that I in the freezer. It’s the last piece of the Fillets a friend of mine gave on their return from Florida. I put it in the fridge to thaw overnight. To prepare it I rinsed the fillets off in cold water and patting dry and cut it into smaller pieces. I melted a tablespoon of butter, Blue Bonnet Light Stick Butter. I then brushed both sides of the fillets with the Butter and seasoned them with Sea Salt and then with Zatarain’s Blackened Seasoning. I then I got out my favorite skillet, The Cast Iron Skillet. When the pan was fully heated, on medium heat, I added my Grouper. At this point turn on your Stove Overhead Exhaust Fan on, it will start smoking from the seasoning. Cooked it about 4 minutes per side, and it was ready for the table! Cast Iron Skillets are perfect to use for any cooking but especially when Blacken something. The Skillet heats up and holds it heat and the heat evenly distributes across the Skillet, perfect for Blackening Meats. This fish turned out so good, hard to describe! Moist and bursting with flavor. Just something about Gulf Seafood. The Zatarain’s Seasonings are perfect for any Seafood.

For one side I prepared some Uncle Ben’s Ready Whole Grain Medley. I love the Whole Grain Medley, It has Brown Rice,Red Rice, Wild Rice. It’s only 210 calories and 35 net carbs per serving. It comes in a microwave pouch, just heat for 90 seconds and it’s ready! I also heated up a bag of Walmart Marketside Sugar Snap Peas, just microwave in the steamable bag for 2 minutes and done! For dessert later, I baked a pan of Philadelphia Marble Brownies, I’ll have a Brownie Square. I’ll post the recipe for these on the next post.

COOKING INSTRUCTIONS
