Buying Blackberries……….

Choose deeply colored, glossy berries that show no signs of having been crushed or bruised. As with all berries, check for mold before buying. Look for bright, uniform color; pass on darkened, dull berries.

It is best to store your blueberries in the fridge and wash just prior to eating. Berries are delicate and very perishable. If you wash them first and plan to store them for a long period of time in the refrigerator they can start to break down faster. Blueberries should last a week and a half or more!

Summer Fruit Salad

Ingredients
Preparation time: 30 minutes (includes standing time)

1/2 cup fresh blueberries
1/2 cup fresh blackberries
1/2 cup fresh raspberries
1/2 cup fresh strawberries, hulled and sliced
2 medium-size ripe peaches, thinly sliced
1 cup seedless grapes
2 tablespoons fresh lime juice
2 tablespoons granulated sugar

Directions
Yield: 4 servings
Serving size: 1 cup

1 – Combine the fruit in a large bowl. Combine the lime juice and sugar. Add to the fruit mixture and toss to blend. Allow the fruit salad to stand for 20 minutes before serving to allow flavors to blend.

Colorful Fruit Medley for Diabetics
Yield: 12 cups
Serving size: 1/2 cup
Preparation time: 30 minutes

Ingredients
2 cups strawberries, sliced
1 cup blackberries
1 cup green grapes
1 kiwifruit, peeled, halved lengthwise, and sliced
3 cups cubed cantaloupe
1 can (11 ounces) mandarin oranges in juice, drained
1 can (8 ounces) pineapple chunks in juice, drained
1 red apple, cubed
1 nine-inch banana, sliced
Artificial sweetener (optional)

Directions
1 – In a large bowl, combine all ingredients and toss to mix. Sweeten to taste with artificial sweetener, if desired. If not serving immediately, wait and add apple and banana at serving time.

This week’s Diabetic Dish of the Week is a Grilled Salmon Fillet with Chili-Infused Blackberry Sauce. Delicious Salmon topped with a Chili-Infused Blackberry Sauce. To make the Sauce you’ll need; Fresh Blackberries, White Grape Juice, Lemon Juice, Honey, Extra Virgin Olive Oil, and Sweet Chinese Chili Sauce. The dish is 238 calories and 12 net carbs per serving. Grilled Salmon Fillet with Chili-Infused Blackberry Sauce

Preparation time: 5 minutes. Cooking time: 10 minutes.

Ingredients
4 four-ounce salmon fillets (or steaks)
1 cup fresh blackberries, washed and drained
1/4 cup unsweetened white grape juice
1 tablespoon fresh lemon juice
1 tablespoon honey
1 tablespoon extra-virgin olive oil
1 tablespoon sweet Chinese chili sauce

Directions
1 – Heat gas or wood grill. Grill salmon fillets on hot grill until they reach desired doneness. (For well-done, grill for approximately 4–5 minutes on each side for 1-inch-thick fish).

2 – Sauce: In a food processor or blender, combine sauce ingredients and blend until smooth. To serve, top each cooked fillet with 3 tablespoons of sauce.

Yield: 4 servings.

Serving size: 1 fillet or steak.

Fruit Salad with Creamy Banana Dressing

Ingredients
2 cups fresh pineapple chunks
1 cup cantaloupe cubes
1 cup honeydew melon cubes
1 cup blackberries
1 cup sliced strawberries
1 cup seedless red grapes
1 medium apple, diced
2 medium ripe bananas, sliced
1/2 cup vanilla nonfat Greek yogurt
2 tablespoons honey
1 tablespoon lemon juice
1/4 teaspoon ground nutmeg

Directions
1 – Combine pineapple, cantaloupe, honeydew, blackberries, strawberries, grapes, and apple in large bowl; gently mix.

2 – Combine bananas, yogurt, honey, lemon juice, and nutmeg in blender or food processor; blend until smooth.

3 – Pour dressing over fruit mixture; gently toss to coat evenly. Serve immediately.

Yield: 8 servings.
