Today’s Menu: Black Bean and Turkey Flatbread Wraps

It’s been one rough 24 hour period for me as the Phantom Pains kicked in last night around 8:00 and have continued through out today. I had a bout with these earlier in the week, so it’s unusual for them to start again so close together. Just hoping they ease up before I go to bed, if not it makes for one long and uneasy night! On to dinner, I had Tacos the other night with a lot of the ingredients leftover. So tonight I gathered up all the leftovers and prepared Black Bean and Turkey Flatbread Wraps.

 

 

I used the remainder Jennie – O Extra Lean Ground Turkey Breast, I had this leftover from the other night. I fried it in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix I also added a 1/2 can of the Bush’s Low Sodium Black Beans that were leftover, I drained and rinsed them before I added them. As usual Black Beans with Ground Turkey make the perfect pairing. Mixed well until everything was coated and then simmered another 5 minutes until heated through.

 

 

For my other toppings I used 1 small can of Mario Sliced Black Olives, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, Dole Shredded Lettuce, Old El Paso Taco Sauce, and a teaspoon of Daisy Reduced Fat Sour Cream to top everything off. Served everything on a Joseph’s Flax, Oat Bran, and Whole Wheat Pita Bread. This my favorite Pita Bread, this stuff is great! It stays fresh, you can freeze it, and it’s only 50 calories and 4 net carbs for one kind and only 60 calories and 4 net carbs for a bit bigger size. After adding all my toppings I just folded them half, like a soft taco. Really enjoyed these! For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Today’s Menu: Black Bean and Turkey Tacos

Rainy day around here today. We needed some rain though it was getting a little dry around here. Not much going on, just bummed around doing odds and ends till football started up in the afternoon. For dinner I prepared Black Bean and Turkey Tacos.

 

 

I used Jennie – O Extra Lean Ground Turkey Breast, I had this leftover from the other night when I made Stuffed Peppers. I fried it in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, I drained and rinsed them before I added them. Black Beans with Ground Turkey is a perfect pairing for Tacos. Mixed well until everything was coated and then simmered another 5 minutes until heated through.

 

 

For my other toppings I used 1 small can of Mario Sliced Black Olives, 1 small diced Tomato, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, Dole Shredded Lettuce, Old El Paso Taco Sauce, and all in a Ortega Whole Grain Corn Taco Shells. I love these Tacos! The crunch of the shells and all the different flavors and spices make a perfect Taco. For dessert later a Jello Sugarless Double Chocolate Pudding.

Another perfect day outside, hope our streak continues! Moving sort of slow earlier today, stayed up late watching the Cincinnati Reds and Cardinals play a 16 inning ball game last night. Managed to go to the store and picked up a few items to make a Cheesecake for dessert tonight. For dinner it’s one of my favorites, Black Bean and Turkey Tacos.

 

 

I used the leftover Jennie – O Extra Lean Ground Turkey Breast from last night when I made a Turkey Burger. I fried it in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, I drained and rinsed them before I added them. I love pairing the Black Beans with Ground Turkey. Mixed well until everything was coated and then simmered another 5 minutes until heated through.

 

 

For my other toppings I used 1 can Green Giant Steam Crisp Super Sweet Yellow and White Whole Kernel Corn, 1 small can of Mario Sliced Black Olives, 1 small diced Tomato, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, a bag of Dole Shredded Lettuce, and all in a Ortega Whole Grain Corn Taco Shells. I love these Tacos! The crunch of the shells and all the different flavors and spices make a perfect Taco. For dessert later Cheesecake. I’m back up to par today! My voice is back and full of energy. Well we’ve ben lucky avoiding the heat and humidity for the most part this Summer but our luck has run out. High 80’s to low 90’s and very humid most of this week, thank goodness for air – conditioning. For dinner I prepared Turkey and Black Bean Tacos w/ Refried Beans.

 

 

I love Tacos! So versatile, you can put about anything you want in them and so many varieties of Taco Shells. For my Tacos I used Jennie – O Extra Lean Ground Turkey Breast, 120 calories and 0 carbs. My favorite Ground Turkey there is. I fried it in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As i added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, i drained and rinsed them before I added them. I’ve found Black Beans are a perfect pairing with Ground Turkey.

 

 

For my other toppings I used 1 can Green Giant Steam Crisp Super Sweet Yellow and White Whole Kernel Corn, 1 small can of Mario Sliced Black Olives, 1 small diced Tomato, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, a bag of Dole Shredded Lettuce, and all in a Ortega Whole Grain Corn Taco Shells. Add it all up and you have yourself some down right delicious Tacos! I also heated up a can of Old El Paso Fat Free Refried Beans. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.

Another beautiful cool morning here. Got out early and hit the stores. Started at Walmart for some of the Meat, Bakery, and basic staples for the pantry. Then off to Kroger for the rest of the Meats, Produce, Cheese, and Deli. I’m still amazed at the big difference in prices between Walmart and Kroger. Anymore I only buy what I can’t find at Walmart. You can save hundreds by purchasing center aisle products from Walmart, Pasta, Can Goods, Paper Products, and such. Stay out of Kroger center aisles! For dinner one of my favorites, Black Bean and Turkey Tacos.

 

 

I used Jennie – O Ground Turkey, 99% Fat Free (120/0). I pan fried it in Canola Oil and I seasoned it a bit with Cilantro, Sea Salt, and Smoked Ground Cumin and I used 1 packet of Old El Paso Taco Seasoning. As the Turkey was finishing up I added a can of Bush’s Low Sodium Black Beans, before adding them I rinsed them off with cold water in a strainer. I mixed the Turkey and Black Beans in the pan until well mixed and continued cooking until the Turkey was done and the Beans were heated.

 

 

I used Ortega Whole Grain Corn Taco Shells. Their a good size Taco Shell with 110 calories and 12 Net carbs per serving (2 Shells). Fewer calories and carbs than the Old El Paso Taco Shells. For the Taco fillers I had Green Giant Summer Crisp White and Yellow Kernel Corn, sliced Black Olives, shredded Lettuce, Sargento Reduced Fat Mexican 4 Cheese, and Old El Paso Medium Taco Sauce. To assemble my Taco I first layered the bottom with shredded Lettuce, the Lettuce helps soak up any moisture so the bottom of your Taco doesn’t get soggy. After the Lettuce I layered in my ground Turkey/Black Beans, then Black Olives, Corn, Taco Sauce topped with the Shredded Cheese! Love these Tacos! I also heated up a can of Old El Paso Fat Free Refried Beans for Mom and Dad. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt Cup.

Last day of the heat and humidity for at least a few days they say, at last! We even had a couple of real heavy showers throughout the day, which we needed. Me I went to Walmart early this morning but not my usual Walmart I normally go to. I switched Walmarts, the one I normally go to was going down hill fast. The produce department wasn’t stocked a lot of times with near expired fruits and vegetables and the other aisles were hardly ever fully stocked. Worse of all was their electric carts, which I need being an amputee. Of late the carts are broke or won’t charge, always having to switch carts at least twice on every visit. So I go to a different one now and it’s great. Plenty of working carts and everything well stocked! For dinner it’s Tacos! I prepared Black Bean and Ground Turkey Tacos.

I used Honeysuckle White Ground Turkey, 99% Fat Free (130/0). I pan fried it in Canola Oil and I seasoned it a bit with Cilantro, Sea Salt, and Smoked Ground Cumin and I used 1 packet of Old El Paso Taco Seasoning. As the Turkey was finishing up I added a can of Bush’s Low Sodium Black Beans, before adding them I rinsed them off with cold water in a strainer. I mixed the Turkey and Black Beans in the pan until well mixed and continued cooking until the Turkey was done and the Beans were heated.

Making Tacos also gave me the chance to use my new Taco Holders! I had never seen these before I purchased them at Walmart earlier today. Their made of hard plastic and you just sit your Taco Shell in it and it keeps it upright, a lot easier to load up the Taco and keeps it together when your eating it and you want to sit it down. For dessert/snack later some Ritz Whole Grain Crackers topped with some Philly Reduced Fat Cream Cheese.

Today’s Menu: Grilled Buffalo Terres Major Filet w/ Quinoa and Black Beans and Diced New Potatoes

 

 

Terra Major and Quinoa 007Rainy day out all day. Couldn’t get outside to do much today so I banged around the kitchen looking for something I haven’t tried before for dinner tonight. I had been wanting to try Quinoa for a while so today was the perfect day to try it. Scanned the internet looking for Quinoa recipes a came across a few that sounded good, I went with the Quinoa and Black Beans. So for dinner tonight I prepared Grilled Buffalo Terres Major Filet w/ Quinoa and Black Beans and Diced Potatoes.

 
The Terres Major Filet is a Buffalo Steak I first tried a couple of weeks ago. I heard that it was tender but that doesn’t begin to describe how tender and delicious this cut of Buffalo is! As usual it’s from Wild Idea Buffalo, which I’m going to have to place another order with soon. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn and I then fired up the grill and grilled it. It’s a very lean cut as are most cuts of Buffalo so you have to keep a close eye on it so not to over cook it. I grilled it about 3 1/2 minutes per side and then let it sit for 5 minutes before slicing it. It came out a perfect juicy medium rare with that delicious sweet flavor.

 
To go with my Steak I prepared Quinoa and Black Beans, for the first time. Besides the Quinoa (3/4 cup) I’ll need 1 teaspoon vegetable Terra Major and Quinoa 003oil, 3 cloves garlic, peeled and chopped, 1 1/2 cups vegetable broth, 1 teaspoon roasted ground cumin, 1 teaspoon ground nutmeg, 1/4 teaspoon cayenne pepper, sea salt and pepper to taste, 1 cup corn kernels, 1 (15 ounce) cans black beans, rinsed and drained, and 1/2 cup chopped fresh cilantro. Nothing but good and healthy things in this recipe! Easy to prepare I just heated the oil in a medium saucepan over medium heat. Stirred in the garlic, and sautéed until lightly browned. Mixed the quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer for 20 minutes. Stir in the corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro and continue to stir until all ingredients are heated through. One delicious and healthy dish! The Quinoa had sort of nutty taste to it and combined with all the other ingredients made a very filling and hearty dish. I also heated up a can of Del Monte Diced New Potatoes. For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.

Quinoa and Black Beans

 

 

INGREDIENTS:Terra Major and Quinoa 001
1 teaspoon vegetable oil

1 1/2 cups vegetable broth
1 teaspoon roasted ground cumin
1 teaspoon ground nutmeg
1/4 teaspoon cayenne pepper
sea salt and pepper to taste
1 cup corn kernels
1 (15 ounce) cans black beans, rinsed
and drained (low sodium)
1/2 cup chopped fresh cilantro

 
DIRECTIONS:
1. Heat the oil in a medium saucepan over medium heat. Stir in the garlic, and saute until lightly browned.
2. Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes,

Today’s Menu: Chicken & Black Beans and Rice w/ Cornbread

Black Beans and Rice! It just sounds like a comfort food. i used my favorite Black Bean and Rice mix, Grandma Maude’s. Grandma Maud’s is easy to fix and makes one delicious dish. Just boil your water, add your mix, boil and simmer for about 30 minutes and your done. Plus it’s only 100 calories and 20 carbs! I’ve left the full recipe at the end of the post. I added seasoned boiled chicken breast’s to dish also. I seasoned the breast’s with Sea Salt, Ground Black Pepper, and Roasted Ground Cumin. I boiled the chicken until done and I also added a packet of Swanson Chicken Flavor Boost as it was boiling. I shredded the chicken and added it to the Black Bean and Rice just as it was getting done. I served it with aside of the leftover Cornbread I had for dinner the other night. For dessert/snack later I’ll be having Ruffles Reduced Fat Potato Chips along with reduced fat Hidden Valley Ranch Dip that I made earlier.

 
Grandma Maud’s Black Beans and Rice

Ingredients:

1 Packet of Granma Maud’s Black Bean and Rice
1 Tablespoon of Butter
Optional Meat, Ground Hamburger, Chicken, Seafood

Instructions:

1) Bring 3 cups of water and 1 tablespoon of margarine or butterto a boil in a sauce pan.

2) Stir in contents of package. Continue boilingover medium heat, stirring occasionally, for 15 minutes.

3) Cover, reduce heat and simmer for an addtional 15 minutes. Stir well and let cool for 5 minutes before serving.

* Note * If adding any meat to the dish add it to Rice just as it is done.
