It’s a beautiful and Sunny day out but really cold! But the days are getting longer so the change of season’s is getting closer. For dinnerIi prepared Bison Sirloin & Sauteed Mushrooms w/ Green Beans, Skillet Fried Red Potato Wedges, and Baked Garlic Knot Bread. I was using my last Bison Sirloin that I had in the freezer and like clock work I received my order from Wild Idea Buffalo!

 
The Bison Sirloin was Great Range Brand Bison meat.I seasoned the Sirloin with McCormick Grinder Steakhouse Seasoning and pan fried it in Canola Oil, about 3 1/2 minutes per side to medium rare. It was a thinner Steak so it didn’t take long to fry. I topped it with some Sauteed Baby Bella Mushrooms. I can eat saute Mushrooms with every meal, I love Mushrooms!

 
For sides with my Bison I prepared Green Beans, Red Potato Wedges, and garlic Knot Bread. The Green Beans were Del Monte Single Serving. First time I prepared the Red Potatoes, they were Simply Potatoes brand. They come packaged, cut, and seasoned. Just prepare them how you like, bake or fry, or in Potato Dishes. I’ll have to get more of these they turned out delicious! I also baked some more of the Walmart Bakery Garlic Knot Bread. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Really enjoyed the day, out spreading Christmas Cheer! I was out delivering Christmas cards and Gifts this afternoon. I love giving friends and family gifts, It’s my favorite part of Christmas! I dropped off Candy and Gift Cards to my Family Doctor and his staff and cards and candy to my long time Oncologist along with his staff. Also while at my Oncologist, as I always do every month, I dropped off a huge box of Snacks – Doritos, Lay’s Potato Chips, Cheese Crackers, and such the treatment center in his office. It’s so sad, they enlarged their in office treatment center for cancer patients and it’s still not large enough to treat all the patients fighting cancer. I received treatment there myself once and I hold a very soft spot in my heart for all those fighting the various forms of cancer. So I make sure I drop off snacks for the patients to snack on while receiving their treatments. I finished up my gift deliveries by dropping a few cards off to my neighbors. I’ve got some great neighbors, they are always there to help and assist me with what ever help I need. Being in a wheelchair having good neighbors like I do is a blessing!

 

Well for dinner I prepared Mushroom & Smoked Cheddar Bison Burgers w/ Crinkle Fries. yes I’ve got my Mom eating a Bison Burger, she’s coming around! I used Great Range Ground Bison Sirloin. I seasoned it with McCormick Grinder Steakhouse Seasoning and pan fried them about 3 – 4 minutes per side, 3 minutes for mine I like medium rare. I served them on a Healthy Life Whole Grain Bun and topped them with Sauteed Baby Bella Mushrooms and a slice of Borden Smoked Cheddar Cheese.

 

For a side I baked some Alexia Crinkle Fries with a dipping side of Hunt’s Ketchup. For a dessert/snack later I prepared some BBQ Bison burger great range 001Pineapple Turkey Meatballs. 3 ingredients; 1 package Honeysuckle White Turkey Meatballs, 1 bottle BBQ Sauce (I used Montgomery Inn Sauce), and 1 small can Dole Pineapple Tid Bits. Just add all ingredients to a medium size sauce pan set it on low and let it simmer till warmed through out. Makes a great little quick snack or appetizer.

Another rainy and gloomy day outside around here again. From what the news says we have about 3 or 4 more days of this, Blah! Oh well just hunker down and make the best of it. So there’s nothing better to beat the blahs than a good meal!
So for dinner I prepared a Smoked Cheddar & Mushroom Bison Burger w/ Crinkle Fries! I used Great Range Ground Bison Sirloin. I seasoned it with McCormick Grinder Steakhouse Seasoning, then pan fried it in Canola Oil about 4 minutes per side to medium rare. Served it on a Healthy Life Whole Grain Bun topped with Sauteed Baby Bella Mushrooms and a slice of Bordon Smoked Cheddar. LOVE BISON and Bison Burgers!
For a side I baked some Alexia Crinkle Fries. For dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with some fresh sliced Peaches!

Today’s Menu: Bison Sirloin and Sauteed Mushrooms w/ Cauliflower & Cheese Sauce, Baked Potato, and Whole Grain Bread

 

 

 

Excellent dinner tonight! Bison Sirloin and Sauteed Mushrooms w/ Cauliflower & Cheese Sauce, Baked Potato, and Whole Grain Bread. I used Great Range Bison Sirloin. I seasoned it with McCormick Grinder Steakhouse Seasoning and pan fried it in a tablespoon of Extra Virgin Olive Oil about 4 minutes per side to a medium rare. As far as I’m concerned you can’t beat the taste and tenderness of Bison. Just wish you could find it more in this area.

For my side dishes I prepared Green Giant Cauliflower & Cheese Sauce, a Baked Potato, and Healthy Life Whole Grain Bread. I’m not a huge Cauliflower fan but I love this Green Giant Cauliflower & Cheese Sauce! It comes frozen and in a microwavable bag. Just make a small slit in the bag and heat on high for 5 1/2 minutes. The Cauliflower comes out crisp and with the Cheese Sauce added delicious. I left the product description at the end of the post. I also had a Baked Potato topped with Salt and Pepper along with I Can’t Believe It’s Not Butter. Also 2 slices of Healthy Life Whole Grain Bread. For dessert later I’m fixing some Breyer’s Carb Smart Vanilla Ice cream topped with Smucker’s Sugarless Hot Fudge Topping.

Today’s Menu: Bison Sirloin Steak & Sauteed Mushrooms w/ Baked Potato, Sugar Snap Peas, and Whole Grain Bread

 

 
A cold and rainy day around here today so I warmed it up in the kitchen! I prepared a Bison Sirloin Steak & Sauteed Mushrooms w/ Baked Potato, Sugar Snap Peas, and Whole Grain Bread. I used Great Range Brand Bison Sirloin, sold by Kroger.Seasoned it with McCormick Grinder Steakhouse Seasoning and a couple of dashes of Sea Salt. Pan fried in Extra Virgin Olive Oil about 4 minutes per side. Came out just like I like them, medium rare (pink in the center) with a nice char on the outside. Served it with a side of Sauteed Baby Bella Mushrooms.

 

For sides I had a Baked Potato that I seasoned with Sea Salt and Black Pepper and topped with I Can’t Believe It’s Not Butter. I also had some leftover Sugar Snap Peas that I reheated in the microwave and a couple of slices of Healthy Life Whole Grain Bread. For dessert a bowl of Blue Bunny Chocolate/Vanilla Swirl Frozen Yogurt.

Today’s Menu: Black and Blue Bison Burger with Sauteed Mushrooms w/ Ore Ida Griller Seasioned Potatoes

 

 

It was a beautiful day in the neighborhood today! A picture perfect day, sunny, about 82 degrees with a slight cool breeze. For dinner I prepared a Black & Blue Bison Burger topped with Sauteed Mushrooms and served on a Healthy Life Whole Grain Bun. I used Great Range Ground Bison Sirloin that I seasoned with Cajun‘s Choice Blackened Seasoning. While making the pattie I made a hole in the center about halfway through the pattie. I then filled it with Murray’s Maytag Crumbled Blue Cheese and topped it off with the Ground Bison. So as the Burger was frying the Blue Cheese was melting on the inside and Blackened on the outside. Served it on a Healthy Life Whole Grain Bun and topped off with Sauteed Mushrooms, another one that’s too good. The Burger tasted fantastic! It had that Blackened taste along with the pure taste of the Bison and the sharp taste of the Blue Cheese. For a side I had Ore Ida Griller Seasoned Potatoes. For dessert later a Pillsbury Reduced Fat Cinnamon Roll, not too bad at 130 calories and 24 carbs per serving.

Today’s Menu: Blackened, Smoked Cheddar, Mushroom Bison Burger!

 

Not much of an appetite tonight. Went with a Bison Burger. Seasoned with Blackening Season and fried in Extra Virgin Olive Oil about 4 minutes per side. I served it on a Healthy Life Whole Grain Bun and topped it with sautéed Baby Bella Mushrooms and a slice of Bordon Smoked Cheddar Cheese. I just love the taste of Bison! I always use Great Range Fresh Ground Bison. I purchase it from Kroger. Kroger, at least around here, is the only store that sells fresh Bison. They carry the Ground Bison and Bison Sirloin. If you’ve never tried Bison you should give it a try, you’ll never use Beef unless you have to again. For dessert later a bowl of Blue Bunny Chocolate/Vanilla Swirl Frozen Yogurt.

Today’s Menu: Grilled Bison Sirloin & Sauteed Mushrooms w/ Boiled Potatoes, Green Beans, and Whole Grain Bread

Another Summer grilling day! Grilled one of my favorites, Bison Sirloin. Seasoned the fillet with McCormick Grinder Steakhouse Seasoning and grilled it on about medium high for 4 minutes per side, medium rare. Nothing better than a flame cooked Bison Sirloin! “Save the Cows, Eat More Bison!” Topped it with Sauteed Baby Portobello Mushrooms. I sauteed the Mushrooms in a 1/4 cup of Low Sodium Swanson Beef Broth and seasoned them with Morton’s Salt Substitute, Ground Black Pepper, and Parsley.

For sides I boiled 3 whole Golden Gourmet Potatoes. I boiled them for 20 minutes and with the bottom of a coffee cup I smashed them open and seasoned them with Morton’s Salt Substitute, Ground Black Pepper and I Can’t Believe It’s Not Butter. Along with the Potatoes I had Green Beans and Healthy Life Whole Grain Bread. For dessert later a Jello Sugar Free Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Bison Sirloin & Sauteed Mushrooms w/ Glazed Carrots, Green Beans, and Whole Grain Bread

Spent the day cleaning, defragmenting, deleting files on the computer most of the day and was ready to get back doing what I enjoy most, Cooking! So for dinner I had a 6 oz. Bison Sirloin that I seasoned with McCormick Grinder Steakhouse Seasoning and pan fried in Extra Virgin Olive Oil about 4 minutes per side, medium rare. i just love the taste of Bison Meat! Whether your grilling it, frying it, or any other way of preparation it just can’t be beat and healthier than other cuts of meat. Anyway I topped the Sirloin with Sauteed Baby Bella Mushrooms that was sauteed in I Can’t Believe It’s Not Butter and Extra Virgin Olive Oil and seasoned with Sea Salt, Ground Black Pepper, Parsley, Ground Smoked Cumin, and Mince Garlic.

Tried a new side tonight from the Pillsbury web site, Honey-Mustard Glazed Carrots. Another keeper recipe here! The Honey and Dijon Mustard are a great combo that makes the Carrots just explode with flavor. It’s only 80 calories and 13 carbs. I left the recipe and a link to the Pillsbury web site at the end of the post. Along with the Carrots I had Green Beans and a slice of Healthy Life Whole Grain Bread. For dessert later a Jello Sugar Free Chocolate Pudding topped with Cool Whip Free.

Honey-Mustard Glazed Carrots

INGREDIENTS:
1 bag (1 lb) ready-to-eat baby-cut carrots
2 tablespoons honey
1 tablespoon olive or canola oil
2 teaspoons Dijon mustard
1 tablespoon fresh chopped parsley
1/4 teaspoon sea salt
1/8 teaspoon pepper

DIRECTIONS:

*In 2-quart saucepan, heat 1/2 cup water to boiling. Add carrots. Cover; simmer 10 to 15 minutes or until tender. Drain.
*In medium bowl, mix remaining ingredients. Add carrots; toss lightly to coat.
