Hint #1 – Does your gravy separate? If so, simply add a pinch or two of baking soda to emulsify the fat globules in a matter of seconds.



Hint #2 – Gravy is so delicious, yet so easy to mess up. To help prevent lumpy gravy, add a pinch of salt to the flour before using any liquid. If lumps persist, use your blender to smmooth it out. I your gravy burns, just stir in a teaspoon of peanut butter to cover up the burnt flavor without altering the meaty taste.

Hint #1 – When your done with an afternoon of baking, sprinkle your messy countertop with salt, and the doughy, floury mess that you’ve left behind can be easily wiped away with a damp sponge.



Hint #2 – The quickest way to reheat biscuits or rolls? Sprinkle them lightly with water and wrap them in foil. It should take about 5 minutes in a preheated 350 degree oven.

Today’s Menu: Chicken Fried Steak w/ White Peppered Gravy, Mashed Potatoes, Sugar Snap Peas, and Biscuits
I wanted a tasty down home meal for dinner and this is what I prepared, Chicken Fried Steak w/ White Peppered Gravy, Mashed Potatoes, Sugar Snap Peas, and Biscuits. I used a Kroger’s Private Selection Cubed Veal Steak. To prepare it I used the 3 bowl method. I first seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then rolled it in flour (1), shaking off the excess, and then rolled the Veal in Egg Beater’s with added Paprika (2) and finally rolling it in a Italian Style Bread Crumb and Parmesan Cheese mix (3). I then pan fried it in Extra Virgin Olive Oil, turning once making sure both sides were a golden brown. Golden brown is what it was and with the combination of all the seasonings and coatings it turned out delicious! Veal at times can be a bit tough but this was fork tender. I topped it with White Gravy. I used Pioneer Brand White Peppered Gravy. I love this Gravy! It’s easily prepared and is a thick and well seasoned Gravy.

For side dishes I had Bob Evan’s Mashed Potatoes topped with the White Peppered Gravy. Bob Evan’s Mashed Potatoes are as good home made Mashed Potatoes and a lot easier and quicker to make. I also warmed up the Sugar Snap Peas that were leftover from the other night along with a small can of Pillsbury Grand JR’s Biscuits.The leftover Veal, Gravy and Biscuits will make a great Breakfast in the morning! For dessert a slice of the Pillsbury Nut Quick Bread with a scoop of Breyer’s Carb Smart Ice Cream.

A Beautiful Morning!

Sunny and 62 degrees is a great way to start the morning! While at Walmart yesterday I came across Pillsbury Grand Jrs Biscuits! Their 100 calories and 14 carbs per Serving (1 Biscuit). I purchased a small can that contained 5 Biscuits. So for Breakfast I baked the Biscuits, they came up full and fluffy. I cut in half and topped it with a 1 Egg Scrambled Egg, 1 slice of Jennie – O Turkey Bacon, and a slice of Sargento Ultra Thin Swiss Cheese. Along with my usual morning cup of Bigelow Decaf Green Tea and the Morning Papers I was ready to go! Have a good morning everyone!

1 ½ c flour
¼ c honey
2 ½ Tbsp baking powder
¼ Tbsp salt
6 Tbsp Earth Balance Butter (cut into pieces)
½ c almond, soy, or rice milk
Strawberries, sliced and chilled

Directions: Set aside the strawberries and honey and combine all remaining ingredients in a mixing bowl. Form 8 biscuits with the resulting dough and place them on a floured cutting board while you work. Transfer the biscuits to an oiled cookie sheet

Add sliced strawberries on top and drizzle honey on each warm cake. Enjoy!

Breakfast Idea: Country Ham, Polenta, and Biscuits

Was looking for something a little different for breakfast this morning and ended up fixing Country Ham, Polenta, and Biscuits. really tasty and fits in my diabetic menu plans. I used Clifty Farm Country Ham, Quinoa Fat Free Organic Polenta, Pillsbury Country Style Biscuits. Another breakfast option!

Today’s Menu: Baked Chicken Breast Strips w/ Mashed Potatoes, Brown Mushroom Gravy, and Cheddar – Garlic Bisquits

I used Pigrims Pride Southern Style Chicken Breast Strips. Great tasting and a breeze to fix. Just heat them up in the oven at 350 degrees for 30 minutes and you have Chicken. For sides I had some leftover Mashed Potatoes along with some Mushroom Brown Gravy that I warmed up. Along with Busquick Cheese – Garlic Biscuits. Another quick and easy item! Just add a half a cup water to the mix and stir until it turns to dough. Use a tablespoon to spoon each biscuit on to a cookie sheet, it makes between 6-8 biscuits depending on the size. I actually got 10 biscuits out of it I made the portions a bit smaller to cut the calories and carbs a bit. The biscuits tasted like Red Lobster‘s Cheddar Biscuits! For dessert later a combo of Dole Sugarless Sliced Peaches and Dole Sugarless Sliced Pears.

Today’s Menu: Baked Catfish Tenders w/ Diced New Potatoes and Cheddar – Garlic Biscuits

With the heat index at 104 degrees out I wanted something that didn’t take a lot of effort. So I tried Kroger Brand Southern Fried Breaded Catfish. I baked it at 425 degrees for 20 minutes and it turned out great. They were breaded and seasoned just right! On the package there was a recipe for a Remoulade Dipping Sauce which turned out to be a huge free extra. The sauce was fantastic and would be great for many dishes. I’ll leave the recipe at the end of the post. Along with the Catfish I had Diced New Potatoes that were leftover from the previous night and Buisquick Cheese – Garlic Biscuits. First time I tried the Busquick Complete Cheese – Garlic Biscuits Mix also.Another quick and easy item! Just add a half a cup water to the mix and stir until it turns to dough. Use a tablespoon to spoon each biscuit on to a cookie sheet, it makes between 6-8 biscuits depending on the size. Well the easily made dinners sometimes turn out to be one the best! Dessert later a bowl of Del Monte Sugarless Sliced Peaches.

Remoulade Sauce
1 Cup Mayonaise
2 Tbsp. Chili Sauce
1 Tsp. Garlic Salt
1 Tsp. Curry Powder or more to taste
1 Tbsp. Hot Prepared Horseradish
1 Tsp. Dry Mustard
*Mix all ingredients in a sealable container or jar. Refrigerate overnight.
* Note * I made the sauce and just refrigerated it for three hours, turned out great!
