Today’s Menu: 8 oz. Buffalo Top Sirloin Steak w/ Scalloped Potato Casserole and Cut Italian Green Beans

 

 

8 oz. Buffalo Top Sirloin Steak 007
I had a bowl of Kroger Brand Bran Flakes for Breakfast. Also my morning cup of Bigelow Decaf Green Tea. Did some housework, and got that out of the way. Then got the leaf blower out and cleaned of the wooden deck and around the driveway. Not a bad day out today, sunny and 85 degrees. Plus lower humidity! All the cleaning done I got the cart out for a while this afternoon. It’s nice to be outside without that high humidity! For dinner tonight it’s an 8 oz. Buffalo Top Sirloin Steak w/ Scalloped Potato Casserole and Cut Italian Green Beans.

 

 

Buffalo 10 oz. New York Strip Steak 014

I prepared one of the Wild Idea Buffalo 8 oz. Top Sirloin Steak tonight. I had it in the freezer so I let it thaw overnight in the fridge. So easy to prepare these. I start by rubbing a very light coat of Extra Virgin Olive Oil on it and then season it with McCormick Grinder Sea Salt and Peppercorn Medley. I pan fried in a medium size skillet. I added a 1/2 tablespoon of Extra Virgin Olive Oil to the pan and preheated the skillet on medium heat, added the Steak and fried it about 4 minutes per side. I topped it with some Sauteed Mushrooms that I prepared. Love the combo of Steak and Mushrooms! Came out a perfect Medium Rare, nice char on the outside with a pink moist and juicy center. You just can’t beat the Wild Idea Buffalo Steaks.The Steak was nice size so with the leftovers I’ll have Steak and Eggs in the morning for Breakfast

 

Idahoan Scalloped Potato Casserole
For one side I prepared a box of Idahoan Scalloped Potato Casserole. Another easy to prepare and delicious Potato dish from Idahoan. A breeze to make just mix the ingredients and bake at 450 degrees for 25 minutes and you have some delicious Scalloped Potatoes. Plus their only 140 calories and 19 net carbs.

 

 

 

 

Fried Walleye w Cut Roma Beans and Baked Roasted Fingerling Pota 003
For another side I heated a can of Allens Cut Italian Green Beans, our family’s favorite Bean Side. To prepare them just empty the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

So I started my day off with some Jennie – O Turkey Breakfast Sausage Links, Breakfast2Simply Potatoes Hash Browns, a slice of Buttered Klosterman Wheat Bread, and a cup of fresh brewed Bigelow Decaf Green Tea. Pancakes and Turkey Bacon this Morning!

It has been way, way, too long since I’ve had some Pancakes! The other day I bought a box of Bisquick Heart Smart. It’s a Low Fat and 0 Cholesterol pancake mix. There are 190 calories and 32 net carbs per serving, 3 Pancakes per serving. I used Egg Beater’s instead of 1 Egg to prepare the mix with. I used my flat top griddle to cook them on, along with my Jennie – O Turkey Bacon. For the Pancakes I topped them with I Can’t Believe It’s Not Butter and Joseph’s Maple Sugar Free Syrup.

 

 
The pancakes came out nice and fluffy, they hit the spot! And if you have Diabetes 2, like myself, you have to try this Joseph’s Sugar Free Maple Syrup! No difference in taste from regular Syrup and it’s only 35 calories, 0 fat, and 9 carbs per serving. Everything hit the spot, It won’t be so long in between Pancakes!

Eng Muff Egg Bologna 002

I love Breakfast and the early mornings! It’s the quietest part of the day and the beginning of a new day, full of hope and surprises. I like starting off with Breakfast and one of my favorites is making a Breakfast Sandwich. There’s endless toppings and ingredients you can use to make one. I made one this morning consisting of a Healthy Life Whole Grain English Muffin, Scrambled Egg (1 Egg), and Fried Kahn’s Deluxe Bologna (Sliced Thin). I use a Medium Size Egg (it’s only 60 calories) and season it with a splash of 2% Milk (to make the Egg fluffier), a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar, and Sea Salt and Ground Black Pepper. I get the Bologna sliced very thin. I find that when you get it sliced thin it fries up better, it gives it a nice char on the outside. Put all the ingredients together and you have a delicious and healthy way to start your day, along with a cup of fresh brewed Bigelow Decaf Green Tea.

Started the morning off with something new, Jimmy Dean Delights Fully Cooked Applewood Smoke Chicken Sausage Links. I found them at tyhe Kroger up the road the other day. They’re fully cooked so all you do is warm them up in the microwave or by skillet, which is what I did this morning.

 

 

The fried up in 8 minutes and really browned up beautifully. There 102 calories and 3 carbs per serving, which is 3 links. Tender and full of great flavor, great new item to have in the freezer! Served them with a Pillsbury Grand JRs Biscuit and a cup of Bigelow Decaf Green Tea. Give them a try great new Breakfast item!

 

 

 

Jimmy Dean DELIGHTS FULLY COOKED APPLEWOOD SMOKE CHICKEN SAUSAGE LINKSJimmy Dean Applewood Smoked Chicken Sausage Links
Tasty mornings made easy. Applewood smoke chicken sausage links with just 120 calories per serving.
Preparation:

Always follow heating instructions. Do not refrigerate longer than expiration date on package.
* Instructions were developed using an 1100-watt microwave oven. Ovens vary; heat times may need to be adjusted.

Microwave Instructions*(one serving):
1. Remove 3 links from plastic pouch.
2. Place on a microwave-safe plate and cover with a paper towel.

A Beautiful Morning!

Sunny and 62 degrees is a great way to start the morning! While at Walmart yesterday I came across Pillsbury Grand Jrs Biscuits! Their 100 calories and 14 carbs per Serving (1 Biscuit). I purchased a small can that contained 5 Biscuits. So for Breakfast I baked the Biscuits, they came up full and fluffy. I cut in half and topped it with a 1 Egg Scrambled Egg, 1 slice of Jennie – O Turkey Bacon, and a slice of Sargento Ultra Thin Swiss Cheese. Along with my usual morning cup of Bigelow Decaf Green Tea and the Morning Papers I was ready to go! Have a good morning everyone!
