I have a recipe for a Summer Fruit Dip to pass along. To make this recipe you’ll be needing Berries, Peach, Melon Chunks, Fruit, Honey, Vanilla Yogurt, Almond Extract, Vanilla Extract, and Wisconsin Mascarpone Cheese. Summer Fruit Dip
Fresh fruits of the summer are puréed and combined with yogurt and mascarpone cheese for a delightful summertime fruit dip.

Recipe Ingredients:
2 cups fresh fruit (sliced berries, sliced peaches, melon chunks, etc.)
1 tablespoon honey
1/2 cup vanilla yogurt
1/4 teaspoon almond extract
1/2 teaspoon vanilla extract
1 cup (8 ounces) Wisconsin Mascarpone Cheese, softened
Additional assorted fruit cut into slices for accompaniment: cantaloupe, honeydew melon, pineapple, apples, berries, etc.

Cooking Directions:
1 – In food processor or blender, pulse together 2 cups fruit and honey, until coarsely chopped.
2 – Add yogurt and extracts; pulse until desired consistency.
3 – Stir in Mascarpone.
4 – Serve with additional sliced fruit for dipping. Store leftover dip in airtight container up to 3 days in refrigerator.
Makes 2 3/4 cups.

Variation: For winter fruit dip, prepare as above using fruits available in winter. Consider combining tangerines and dried cherries, apples with cinnamon, or oranges and grapefruit. When choosing citrus, you may wish to increase honey.

Mojito Blueberry and Watermelon Salad
Inspired by the classic mojito cocktail, this festive and healthy fruit salad gets zing from rum, lime and mint. The optional piment d’Espelette–a sweet, spicy ground pepper from the Basque region of France–adds a hint of heat that’s a nice contrast to the sweet fruit. Look for this spice at specialty stores, well-stocked markets or online. You could also swap in chile-lime seasoning blend (such as Tajín) for a similar subtle kick or omit the spice altogether. Feel free to skip the rum if you prefer an alcohol-free salad. With or without the rum, this salad has summertime backyard BBQ written all over it…………..

Pineapple and Cucumber Salad
Enjoy this sweet, refreshing salad alongside grilled meat or fish to cut through the richness and refresh the palate. If you like a little heat, adding jalapeño will give you the kick you crave. While packs of prechopped pineapple are convenient, they’re almost always more expensive. When pineapple is in season, it’s best to buy fresh and chop it yourself. Look for a pineapple with a golden-yellow exterior, which is a good indicator of ripeness……………….

Blackberries………

Buying Blackberries – Black berries are available from May to September, but peak in June and July; look for shininess, as the blackberry’s dull color is a good sign of its age. Blueberries: Purchase smooth-skinned, dark blue or purple berries, making sure to avoid juice-stained containers, from mid-June to mid-August.

To store blackberries, put them in a shallow container and place them in a cool spot or in the refrigerator as soon as you can after picking. Fresh blackberries are very perishable and should be eaten or frozen with two or three days of picking.

Strawberry storage hint…….

Remove the Strawberries from their original container, and store them whole and unwashed in a partially-closed container lined with paper towels to absorb any excess moisture, preferably in a single layer so they don’t get crushed. They should last up to five to seven days.

Chocolate Zucchini Cake Recipe for Diabetics
Get your chocolate fix and the nutritional benefits of peak-season zucchini in this crave-worthy cake!

Ingredients
Preparation time: 8 minutes
Cooking time: 35 minutes.

Nonstick cooking spray
2 cups finely grated zucchini (from about 2 medium, 6-inch-long, unpeeled)
1/2 cup canola oil
2 whole eggs plus 1 egg white
1/2 cup unsweetened applesauce
1 cup skim milk
1 1/2 teaspoons vanilla
2 1/2 cups all-purpose flour
1 cup Splenda, No Calorie Sweetener, Granular
1/2 cup white sugar
1/2 cup cocoa powder
1/2 teaspoon salt
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon cinnamon
Fat-free, nondairy whipped topping (optional)
15 berries of any kind (optional)

Directions
Yield: 15 servings
Serving size: 3″ x 2 1/2″ Square

1 – Preheat oven to 350°F. Spray a 9″ x 13″ baking pan with nonstick cooking spray. In a large bowl, combine the first six ingredients and mix well. Add remaining ingredients and stir until well blended. Pour into prepared pan. Bake for 30–35 minutes, until an inserted toothpick comes out clean. Cool. Cut into 15 servings (5 rows in one direction and 3 in the other). If desired, top each piece of cake with 1 tablespoon fat-free nondairy whipped topping and a berry of your choice. (Topping provides less than 5 grams of carbohydrate and is considered a free food).
