Today’s Menu: Cast Iron Skillet Baked Pork Chop w/ Sliced New Potatoes, 3 Bean Salad, and Whole Grain Bread.

I had a Pork Chop stored in the freezer that I put in the fridge to thaw overnight. Next day I marinated the Chop in JB’s Fat Boy Haug Waush BBQ Sauce for 4 hours in the fridge. To prepare it I used a Cast Iron Skillet, just something about the Cast Iron Skillets that I love using them. Added about 1/2 tablespoon of Canola Oil to the Skillet and browned both sides I then moved to the oven, which I had preheated on 400 degrees. I then baked it for about 22 minutes. I pulled it out when it hit 155 degrees (internal temperature) and let it set for 5 minutes to let it finish cooking. I love Chops marinated in JB’s BBQ Sauce, and this one was delicious! The JB’s BBQ Sauce is the perfect marinade for any Pork.

 

 
For one side dish I heated up a can of Del Monte Sliced New Potatoes, boiled until heated and seasoned with Sea Salt, Ground Black Pepper, and Parsley Flakes. I also prepared a can of Read 3 Bean Salad. It comes in a can and you can prepare it various ways. I just opened the can and put it in a plastic bowl, put the lid on, and set in the refrigerator to chill for a couple of hours or so. I served these cold. I also had a slice of Klosterman Wheat Bread that I buttered with I Can’t Believe It’s Not Butter. For dessert later a Del Monte No Sugar Added Peach Chunk Cup.

Rain and humidity throughout the day and night, Blah! A very laid back of a yawner day around here today. Still purchasing those White Seedless Grapes but starting to see less of them at Kroger. But the good news on the Apple front is that Gala Apples are starting to come in and they are delicious! For dinner tonight, Alaskan Snow Crab Legs w/ Sliced New Potatoes, Green Beans, and Pasta Salad.

 

 

I purchased some Alaskan Snow Crab Legs from Kroger yesterday for dinner tonight. Delicious and easy to prepare, you got to love that! To prepare them I needed about 2 lbs snow crab legs (more or less is ok, however many you can eat), 1 cup Old Bay Seasoning, Ground Pepper (to taste), and a couple of dashes of garlic salt, oh and 1 big pot of boiling water. To prepare just fill cooking pot big enough to fit crab legs with water, bring to boil and add seasoning. Careful not to let it boil over, which happens very easily. Then put the clusters of crab legs in and let them simmer for about 8 mins. Remove crab legs from water, shake them a little to remove water they were cooking in and served while hot! The meat is so tender and sweet! Plus as most Seafood it’s low in calories, carbs and fat.

 

 

To go with the Crab Legs I prepared a can of Del Monte Sliced New Potatoes, Del Monte Cut Green Beans, and I had a lot of the Italian Pasta & 3 Bean Salad leftover so we also had that. Potatoes and Green Beans just seem like a natural to go with any Seafood or Fish. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.

OVERVIEW

Snow crab – named for their sweet, delicate, snow-white meat – is one of Alaska’s signature crab fisheries. Although the Alaska snow crab fishery has had its ups and downs over the years, management has effectively responded to these fluctuations. Every year, scientists determine the abundance of the snow crab resource. Using these abundance estimates, managers set a harvest limit for the following fishing season. So in 1999 when scientists found that the snow crab stock had fallen below the minimum stock size threshold (i.e., had become overfished), managers cut harvests for the following fishing seasons to a level that would allow the stock to recover. Under conservative harvest levels, Alaska snow crab has rebounded and is now above its target population level. This is good news for the resource and for fishermen, too. An abundant resource can sustainably support higher harvests, and managers boosted the harvest limit for 2011/2012 by 64 percent to nearly 90 million pounds.
In 2005, the derby-style fishery – where anyone could enter the fishery and the fishery was closed when the catch limit was reached – was replaced with an individual fishing quota (IFQ). Under the IFQ management system, individual fishermen are given a share of the harvest and can catch their share at any time during the fishing season. This has resulted in a safer and more efficient fishery, as fishermen can take weather and economic factors into account when deciding when to fish.

My parents were out on a Church function so I spent the day catching up on all the housework, cleaning and the laundry! Then went to store real quick to pick a couple of items up and done for the day. Feels a lot more like August Weather today, HUMID! For dinner a new one, Italian Pasta & 3 Bean Salad w/ Whole Grain Chicken Breast Strips.

 

 

 

First time making the Italian Pasta & 3 Bean Salad. Came across several recipes for this so I took a few ideas from them and added my own touches to it and it came one delicious recipe! I used Ronzoni Garden Delight Trio Italiano Pasta, Mezzetta Pesto Sauce, Peppadews, 1 Can Read 3 Bean Pasta, 3 thinly sliced Mini Sweet Peppers, 7 Marinated Ciligine Balls (cut in half), fresh Shredded Cave Aged Gruyere, and 1 California Sour Dough Boule. To prepare I just cooked Pasta according to package directions (boiled 11 minutes); drained and rinsed under cold running water. Then in a bowl, combined Pesto with Pasta and folded until it was well coated. Then combined Pasta with Bean Salad, discarding liquid. Stirred in Peppadews, sliced Sweet Mini Peppers and Ciligine; and refrigerated. To serve, sprinkled Cheese (Gruyere), over top. If you like Pasta Salads you’ll love this version! This is the second time I’ve had the Peppadews and I am in love with these things, you have to try them! I served the Pasta in a hollowed out California Sour Dough Boule. Some other ingredients that you could add to this would be perhaps some toasted Walnuts, Pine Nuts or Sardines.

 

 

I also baked a couple of Perdue Whole Grain Chicken Breast Strips which I sliced up and added to my Pasta Salad. Another must try are these Perdue Whole Grain Chicken Breast Strips. I think possibly the best premade Chicken Strip I’ve ever had! They come breaded and just bake them for 12 minutes, flipping them over after 6 minutes. Great for salads, sandwiches, or just by their selves. Good item to have in the fridge or frozen. For dessert later a Healthy Choice Chocolate Swirl frozen Yogurt.

Yesterday when I went to Kroger I picked up some more of the White Seedless Grapes. I’ve been purchasing the Grapes for about 3 weeks now and they are the best Grapes I think I’ve ever had, and I’ve had a lot of Grapes in my life! Their huge and busting with flavor. i hope this Grape crop keeps coming in! Now for the Apples to start coming in, poor choices right now in the stores. For dinner tonight one of my favorite Steaks, the Wild Idea Buffalo Terres Major Filet. Dinner tonight; Buffalo Terres Major Filet and Sauteed Mushrooms w/ Mashed Potatoes, 3 Bean Salad, and Whole Grain Bread.

 

 

As I said I used the Wild Idea Buffalo 8oz. Buffalo Terres Major Filets. Beyond any doubts one of the most tender cuts of any steak, Beef or Buffalo, I’ve ever had. I pan fried it in Canola Oil and seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I fried it 4 minutes on one side and about 3 1/2 minutes on the other side, it gets done very quickly because it’s so lean. The Filet came out medium rare with a beautiful char on it! I topped it with Sauteed Baby Bella Mushrooms.

For side dishes tonight I warmed up some leftover Bob Evan’s Mashed Potatoes, leftover from dinner a night or two ago. I also had 3 Bean Salad, which I love. It comes in a can and you can prepare it various ways. I just opened the can and put it in a plastic bowl, put the lid on, and set in the refrigerator to chill. I served cold. The only place I’ve come across them is at Walmart. I also had a couple of slices of healthy life Whole Grain Bread. For dessert/snack later some Ritz Whole Grain Crackers topped with Philadelphia Fat Free Cream Cheese.

2 Bean Salad

Ingredients:

1 cup finely chopped Red Onion
2 tablespoons Extra Virgin Olive Oil
1/3 cup Red Wine Vinegar
1/4 cup chopped Red Pepper
2 tablespoons minced Parsley
2 Cloves Garlic, minced
2 tablespoons Equal® Spoonful™
1/4 teaspoon Sea Salt
1/4 teaspoon freshly Ground Pepper
1 (15-ounce) can Great Northern beans, rinsed, drained
1 (15-ounce) can Low Sodium Black Beans, rinsed, drained
Red Pepper Rings
Directions:

Sauté onions in oil until crisp-tender in medium skillet; remove from heat and cool until warm.
Stir vinegar, red pepper, parsley, garlic, Equal® Spoonful™ , salt and pepper into onions.
Pour onion mixture over combined beans in bowl; mix well. Garnish with pepper rings.
Makes 8 servings.
