Today’s Menu: Turkey Frank Dogs w/ Baked Steak Fries

What a perfect Summer Day outside today! It was in the 60’s this morning and a high of 71 degrees for the day! Same weather for tomorrow also. Had a light Breakfast and did the morning workout. Headed to Kroger for Mom and myself and back home. Got a few things done around the house and got the cart out for the day. And what a perfect day to ride around the neighborhood and down by the lake. For dinner tonight it’s Turkey Frank Dogs w/ Baked Steak Fries

 
I used Ball Park Smoked White Meat Turkey Franks. I prepared the Turkey Franks by boiling them in water, boiled about 5 minutes and done. Delicious and Plump Turkey Franks! Only 45 calories and 3 net carbs per Frank. Served them on a Kroger Lite Wheat Hot Dog Bun and topped with French’s Yellow Mustard.

For a side I baked some Ore Ida Steak Fries. Seasoned these with Sea Salt and Ground Black Pepper, with a side of Hunt’s Ketchup for dipping. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Wow, what a long night! Had a bad bout with those Phantom Pains all last night and into the early afternoon today. It started last night around 7:00 and as the night wore on the pain kept getting worse. I ended with maybe an hours worth of sleep. So most of my afternoon was catching up on some much needed sleep. Sure wish they would come up with a cure to battle Phantom Pains, but no proven cures out there. We had another day in the 40’s but it gradually got colder as the day went on. For dinner tonight I tried a new recipe, Chili Dog Casserole.

 

 
I came across the recipe from a Kraft Foods Recipe Email, 4-Ingredient Chili Dog Casserole. To Chili Dog Casserole 006prep it I’ll need just 4 Ingredients; 2 cans (15 oz. each) Hormel Turkey Chili with Beans, 3 Ball Park Smoked White Turkey Franks, 3 Flour Tortillas (6 inch), 1/4 cup Sargento Reduced Calorie Shredded Sharp Cheddar. To prepare it couldn’t be much easier. Place 1 Turkey Frank on each Tortilla; roll up. Place, seam sides down, over chili. Sprinkle with cheese; cover. Baked for about 25 min., the Chili and Franks were are heated through and cheese melted. This makes one delicious Casserole dish! Just like having a Cincinnati Style 3 Way Coney, only with a Tortilla instead of a Bun. A Keeper Recipe! The original Kraft Recipe and web link is at the end of the post. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

What you need
2 cans (15 oz. each) chili with beans
5 OSCAR MAYER Wieners
5 corn tortillas (6 inch)
1/2 cup KRAFT Shredded Mild Cheddar Cheese
Make it
* HEAT oven to 425ºF.

* SPREAD chili onto bottom of 8-inch square baking dish.

* PLACE 1 wiener on each tortilla; roll up. Place, seam sides down, over chili. Sprinkle with cheese; cover.

* BAKE 25 min. or until wieners are heated through and cheese is melted.

SERVING SUGGESTION Don’t let the fun stop at the entrée! Round out the meal with a fun salad bar. Set out a large bowl of torn mixed salad greens and small bowls filled with chopped fresh vegetables. Then let everyone pick their favorite salad toppers and make their own fun salad.
MAKE AHEAD This is a perfect make-ahead recipe. Throw this four-ingredient family pleaser together the night before, then refrigerate until ready to bake as directed.
NO BEANS PLEASE Prepare using chili without beans.

Spent the day on a project I’ve been meaning to do for a while now. I refinshed a small book-case I have. The top of it had watermarks on it that had ruined the finish. For dinner I prepared Pita Bread Chili Dogs.

 

 

I’ve using Pita Bread instead of Buns lately, lower in calories, fat, and carbs. So I thought why not try a Chili and Cheese Dog. I used Ball Park Smoked White Turkey Franks, which I use whenever I eat Hot Dogs, best tasting Turkey Frank there is. You can grill them or boil them, I boiled these. Then for my Chili I used Hormel Turkey Chili with Beans and Sargento Reduced Fat Shredded Sharp Cheddar along with some French’s Yellow Mustard. While warming the Chili up I added a few shakes of Frank’s Red Hot Sauce, everythings better with Frank’s! Then for my Pita Bread I used Joseph’s Flax Oat Bran and Whole Wheat Pita Bread. I’ve been dropping a few pounds and Joseph’s helps by cutting the calories, fat, and carbs from sandwiches or anything else I would normally use a Bun for. Turned out delicious! I’ll have these again soon.

 

 

For a dessert/snack later a new product, Keebler Town House Oven Baked Pita Crackers w/ Sea Salt. I had those and dipped them in some Helluva Good Bacon and Horse Radish Sour Cream Dip. Made a nice combo, the Crackers are 70 calories and 11 carbs for 6 Crackers.
