Clean Up Hint……………

Cleaning up after a delicious scrambled egg breakfast? Use cold water. It cleans dried egg off pans and utensils better than hot water, which causes the protein to bind to surfaces and harden.

Reheating rolls…………….

The quickest way to reheat biscuits or rolls is to sprinkle them lightly with water and wrap them in foil. It should take about 5 minutes in a preheated 350 degree oven.

Today’s Menu: Smoked Turkey Sausage Dogs w/ Baked Fries

 

 

For Breakfast this morning I prepared a Buffalo Breakfast Sausage and Diced Potato Skillet. I used Wild Idea Buffalo Ground Breakfast Sausage , Simply Potatoes Seasoned Diced Potatoes, Sunny Side Up Egg, Sargento Off the Block 4 State Cheddar Cheese, and Ortega Smoky Chipotle Taco Sauce. I love this Buffalo Breakfast Sausage, One delicious Breakfast! I also had a cup of Bigelow Decaf Green Tea.

 

Rain, windy, and 70 degrees out today. We had about 2 inches of rain along with a couple of Thunderstorms. Couldn’t do anything outside so I was inside all day. Did a load of laundry and cleaned the house today. For Dinner tonight it’s a Smoked Turkey Sausage Dogs w/ Baked Fries.

 

I used the always delicious Butterball Hardwood Smoked Turkey Sausage. I cut the Sausage Links into Bun length pieces. I absolutely love the Butterball Hardwood Smoked Turkey Sausage and I had been wanting some for a while. It’s got such a fantastic flavor and always cooks up just right. To prepare them I used a large skillet, added about a 1/2 tablespoon of Extra Virgin Olive Oil and preheated it on medium heat. Put the Sausage in the skillet when it was heated up and covered with a lid. I turned the Sausage every few minutes to get an even char on them, cooked about 11 minutes total. As always they came out just bursting with flavor and flat-out delicious! I served it on a Aunt Millie’s Reduced Calorie Whole Grain Hot Dog Bun and topped with French’s Spicy Brown Mustard. I love these Smoked Sausages.

 

I also prepared some Ore Ida Golden Crinkle Cut French Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Keto Chocolate Chip Cookies
Looking for a diabetes-friendly treat? These keto cookies use an almond flour base and sugar-free chocolate chips to make a delightful dessert that’s low in carbs but high in flavor!

Ingredients
1 cup almond flour
4 tablespoons sugar-free chocolate chips, such as Lily’s brand
2 tablespoons powdered erythritol, or equivalent of stevia
1/8 teaspoon baking powder
Pinch of salt
2 tablespoons butter, melted (or melted coconut oil)
1 teaspoon pure vanilla extract
3 teaspoons whole milk (or nondairy milk)

Directions
Yield: 12 servings
Serving size: 1 cookie

1. Preheat oven to 325°F.

2. Stir dry ingredients in a large bowl.

3. Add in wet ingredients to form a dough.

4. Shape into 1-inch balls.

5. Place cookie balls on a cookie tray and bake on center rack for 10 to 12 minutes.

6. Allow cookies to cool and firm up for 8 to 10 minutes.

For a super tender Pork Loin……………….

When roasting a pork loin, cook it with the fat side down for the first 20 minutes, so that the fat begins to liquefy. Then turn the roast over for the balance of the cooking time, and the fat will baste the meat.

Today’s Menu: Applewood Smoke Bacon and Sharp Cheddar Cheese Ground Chicken Burger w/ Baked Fries

 

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. I had to have Mom at her Family Doctor’s at 8:30 this morning. Her blood pressure was a little high so they are starting her on new medication. They are also looking at some type of treatment to help with her arthritis. Back home took it easy, I had a headache all day. More than likely it’s my sinuses. Anyway for Dinner tonight I prepared a Applewood Smoke Bacon and Sharp Cheddar Cheese Ground Chicken Burger w/ Baked Fries.

 

I had purchased a package of Smart Ground Chicken from Meijer a while back and had it in the freezer. I set the package in the fridge overnight to thaw. To make the Burger I’ll need; the Ground Chicken (1 lb. package), Litehouse Poultry Herb Seasoning, McCormick’s Grinders of Sea Salt and Peppercorn Medley, and Meijer Italian Style Bread Crumbs. For toppings I’m using Kraft Reduced Fat Mayo w/Olive Oil, Heinz 57 Sauce, John Morrell Applewood Smoked Bacon, and Kraft Deli Style Sharp Cheddar Cheese. Served it on a Healthy Life Wheat Hamburger Bun.

 

First thing I did was fry the Bacon. I’m using John Morrell Applewood Smoked Bacon. I rarely use John Morrell but you have to use what you can find in stock right now at the stores. John Morrell Bacon is great tasting Bacon, just don’t use it. So I grabbed a large skillet and sprayed it with Pam cooking Spray. Then heated it on medium heat. When the skillet was heated I added the Bacon. Mom loves Bacon so I just fried the whole package. Fried up great and was delicious! I set it aside until I needed it.

 

Next I made my Chicken Burger patties. To prepare them, in a large bowl, combine Chicken, Ground Cumin, Paprika, Garlic Powder, Dried Oregano, Sea Salt and Peppercorn Medley, and Italian Style Bread Crumbs. The Seasonings amount are to taste and 2 tablespoons of the Italian Style Bread Crumbs. Make a little depression with your thumb in the center of each burger so they cook evenly. Divide the mixture into 4 patties.

 

In a Cast Iron Skillet over medium heat, heat oil. Add burger patties and cook, flipping once, until golden and a thermometer inserted into the center registers 165°, 8 to 10 minutes. Top with Cheddar and cook until just started melting, 2 minutes. Remove from heat and transfer patties to a plate. Serve on the Buns and top with Mayo, Heinz 57 Sauce, and the Bacon. The Ground Chicken Burger is juicy, moist, and flavorful! I’ll have to start having a lot more often!

 

 

To go with the Chicken Burger I prepared Ore Ida Golden Crinkle Cut French Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Heinz 57 Sauce. For Dessert later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Coke Zero to drink.

JAMAICAN SOUP
Take the chill off with a taste of the Caribbean. Loaded with flavor, vegetables and goodness. This is one for the recipe file!

Ingredients:

1 – 3 lb. Wild Idea Buffalo Chuck Roast, remove netting, rinse and pat dry

2 – tablespoons olive oil

4 – tablespoons jerk seasoning

4 – cups buffalo bone broth or organic chicken broth

2 – cups water

4 – cups yams, chopped

3 – cups carrots, chopped

2 – cups celery, chopped

2 – cups onion, chopped

1 – can black beans, drained and rinsed

1 – head cilantro, chopped

Preparation:

1 – Preheat oven to 500°. While oven is heating roll the roast in two tablespoons of the oil and rub with 2 tablespoons of jerk seasoning in a heavy pot.
2 – Place the pot in the preheated oven and roast uncovered for 15 minutes.
Add two cups of broth and one cup of water to the pot and continue to cook for 10 additional minutes.
3 – Reduce the oven temperature to 350°, cover the pot and continue to roast for 2½ hours.
4 – Toss the chopped vegetables (except the cilantro) with the remaining two tablespoons of jerk seasonings. Cover and set aside.
5 – Remove the pot from the oven and turn the roast over in the juices. Cover and allow it to rest for 10 minutes.
6 – Remove the roast from the juices and place on a cutting board. Place the pot with the juices on the stovetop over medium high heat and add the prepped vegetables.
7 – Chop or pull the meat apart and add back to the pot.
8 – Once the soup reaches a full boil, reduce heat to simmer until vegetables are tender. About 20 minutes.
9 – Add the black beans and the cilantro and stir to incorporate.
10 – Taste and season to your liking. (I added another teaspoon of salt.)
11 – Serve and accompany with crusty bread.

Jerk Seasoning

A wonderful aromatic blend of spices with a little kick!
Ingredients:

1 – tablespoon onion powder

1 – tablespoon garlic powder

1 – tablespoon brown sugar

2 – teaspoon red pepper flake

2 – teaspoons salt

1 – teaspoon black pepper

1 – teaspoon allspice

1 – teaspoon cumin

1 – teaspoon thyme

1 – teaspoon paprika

1 – teaspoon crushed fennel

½ – teaspoon cinnamon

½ – teaspoon ginger

* Sift spices together and store until needed.

Three Cheese Asparagus Gratin with Gouda, Muenster and Asiago
An elegant side dish of tender asparagus spears enrobed in a creamy, two cheese sauce topped with asiago cheese and buttery bread crumbs.

Recipe Ingredients:
4 tablespoons butter
2 pounds (approximately) asparagus, washed and tough ends removed
1 cup milk
1 teaspoon cornstarch mixed with 2 tablespoons cold water
1 cup (4 ounces) Wisconsin Gouda (plain or smoked) cheese, shredded
1 cup (4 ounces) Wisconsin Muenster cheese, shredded
1 teaspoon salt
1 cup coarse bread crumbs
1/2 cup (2 ounces) grated Wisconsin asiago cheese
1/4 teaspoon freshly ground black pepper

Cooking Directions:
1 – Preheat oven to 425°F (220°C). Grease a 9x9x2-inch glass baking dish with 1 tablespoon of butter.
2 – Arrange the asparagus in the baking dish.
3 – Gently simmer milk over medium heat. Stir in the cornstarch mixture to thicken slightly. Add the Gouda and Muenster cheeses and whisk in until smooth and creamy; season with the salt. Pour the cheese sauce over the asparagus.
4 – Melt the remaining 3 tablespoons butter. Toss with the bread crumbs, Asiago and pepper. Sprinkle over the asparagus mixture.
5 – Bake for 20 to 25 minutes, or until bubbly and lightly browned.
Makes 6 servings.
